A study on the Development of Antimicrobial Finished and Water Repellent Nonwoven Fabrics using Organic Silicon Quaternary Ammonium Salt (항균성 및 발수성 부직포 소재의 개발에 관한 연구 - 유기실리콘 제 4 차 암모늄염의 이용 -)

  • This study was performed for the development of antimicrobial finished nonwoven fabrics with water repellency. And it was aimed to examine the changes of moisture related properties and air permeability of the finished fabrics. Viscose rayon nonwoven fabrics were treated with organic silicon quaternary ammonium salt having carbon numbers of 16, which was synthesized for this study Antimicrobial activity was evaluated by shake flask method and the reactivity of antimicrobial agent was measured by degree of luminescence from inductively coupled plasma. Water repellency of treated specimen was evaluated by dynamic water absorption measurement and air permeability was measured by Frazier method. The results obtained from this study were as follows: 1. Excellent antimicrobial activity was obtained for the high concentration of treatment and the durability of finishing after laundering was better as the treatment concentration was higher 2. Silicon contents taken up by specimen increased with increased treatment concentration. 3. Dynamic water absortion of treated specimen decreased compared to that of untreated. And, it was lowered as the treatment of concentration increased and as the silicon content increased. 4. Moistuie regain and uptake with lapse of time of treated specimen increased compared to those of untreated. But, air permeability of treated specimen decreased.

Quality Characteristics of Bread Containing Sourdough Using Various Grain Flours (다양한 곡류의 Sourdough를 첨가한 식빵의 품질특성)

  • The principal objective of this study was to evaluate the effects of the addition of sourdough to various grain flours in bread, specifically, in regards to the physicochemical characteristics of bread dough, sensory evaluation, and bread storage. As the incubation time of sourdough increased, the total titratable acidity increased. Viable yeast counts of sourdough increased consistently until the third day, while lactic acid bacteria counts increased until the second day. The weight of breads containing sourdough made with rye flour, strong flour, and Korean wheat flour were higher than that of the control. However, the height, volume, and specific volume of control were higher than those of the groups with sourdough made with various grain flours. The pH of breads containing sourdough was lower than that of the control, while the total titratable acidity and moisture content were higher than those of the control. In analyzing the visible mold colony during the five days of storage at $30^{\circ}C$, mold growth in breads containing sourdough made of Korean wheat flour, barely flour, and rye flour was retarded. In the color measurement, the L values of the control and bread containing sourdough made with barley flour were higher than that of the other groups after five days. The a value of bread containing sourdough made of rye flour was higher, and the b values of breads containing sourdough made of Korean wheat flour, barley flour and rye flour were higher than those of the other groups after five days. The hardness of breads containing sourdough increased as storage time increased, where as breads containing sourdough made of Korean wheat flour, Korean whole wheat flour, and rye flour revealed no significant differences with control group. Sensory evaluation scores in terms of after swallowing, taste, and overall preference of bread containing sourdough made of Korean wheat flour was higher than those of the control group.

Quality characteristics of Jelly using the Tarak, Traditional Fermented Milk (전통발효유 타락을 이용한 젤리의 품질 특성)

  • Tarak is our own traditional fermented milk made through lactic acid fermentation by using makgeolli as inoculum for milk or using already made tarak as inoculum but it is hardly known to people as its related studies are also insufficient. Accordingly, the purpose of this study was to manufacture jelly by using tarak and analyze its quality characteristics for the diversification of consumption promotion and demand of traditional fermented milk tarak. Tarak jelly that was made according to the percentage of adding tarak showed a tendency that the content of crue protein, crude fat and crude ash except for moisture water meaningfully increased as the amount of tarak added increased (P<0.05). In the case of pH, it declines as the amount of tarak added was high. The chromaticity measurement result of tarak jelly was 54.32 in the case of control group for L, and it increased as the amount of tarak added increased. In the case of a, it decreased as tarak was added, whereas b meaningfully increased. There was meaningful difference between samples in the case of chewiness, fracturability and adhesiveness (p<0.05). The sensory test result showed that there was meaningful difference between samples in their appearance and taste but there was no meaningful difference in the case of overall preference, scent and texture.

Study on Quality and Sensory Characteristics of Seolgi Ttueok Added with Geuk (게욱 첨가 설기떡의 품질특성 및 관능적 특성 연구)

  • In this study, Seolgi Tteok was made in order to increase consumption of Geuk, which possesses numerous nutritional advantages, and its optimum content as a new food coloring for rice cake was determined. Quality characteristics and quantitative description analysis (QDA) of Seolgi Tteok, in which Geuk was added at 0, 4, 8, and 12%, was conducted. Consumer acceptability test was also conducted. As the amount of added Geuk increased, moisture content of Seolgi Tteok increased as well. Brightness (L-value) was the highest in the control group, and more Geuk resulted in higher values of red index (a-value) and yellow index (b-value), which corresponded to the results of the sensory evaluation. As result of the mechanical texture measurement, only adhesiveness and resilience show a significant difference. As a result of the QDA, 17 sensory characteristic terms were assessed. Among them, only 13 showed a significant difference. Among the different sensory characteristics, almost all of them except for taste characteristics were significantly influenced by the amount of Geuk. The aroma and taste of Geuk were not largely influenced. It can be suggested that Geuk is not a factor that strongly influences flavor. In conclusion, Geuk does not have a strong influence on the taste or aroma of Seolgi Tteok but does on color characteristics. It can be suggested that Geuk is qualified as a coloring material for food, and the reasonable addition amount is 8%. As a result of this research, Geuk can be considered as a coloring material for other types of rice cake, traditional Korean sweets, and even confectioneries as well as for Seolgi Tteok. This implies that Geuk can be utilized to develop various new products as a coloring material with abundant nutritional content, which will contribute to the promotion of Geuk consumption.

  • The assessment of wildland fire hazard is the first priority to be considered in the prevention, extinction and control of wildland fire. For the standard to measure wildland fire hazard, the wildland fire Warning System is currently being used in Korea which computes the wildland fire occurrence hazard index through a stick weight to moisture conversion formula. It shows the risk of fuel substance being exposed to fire by meteorological factors. For a comprehensive assessment of wildland fire hazards by area, the major factors'hazards need to be measured and the assessment of wildland fire needs to be conducted through historical statistic examination. Therefore, the wildland (ire outbreak frequency and its seriousness of damage are analyzed through historical statistic examination to conduct the assessment of a wildland fire hazard, and then the calorific value of a forest is analyzed through differential scanning calorimeter measurement which assesses the comparative calorific hazard according to the geographical distribution of vegetation.

Comparison of Quality Characteristics between Imported Skate Rays (수입산 홍어류의 품질 특성 비교)

  • This study was conducted to compare quality characteristics of imported skate rays. The moisture content was higher in imported skate rays than in domestic mottled skate, while the protein content displayed a contrasting pattern. From measurements of the volatile basic nitrogen content, pH, viable cell counts, and urea and ammonia contents, the freshness of skate rays imported from Chile, Canada and Uruguay was considered to be inferior to domestic mottled skate, while the freshness of skate rays imported from the USA was similar. The measurement of physicochemical properties revealed that four kinds of imported skate rays were of inferior quality, as compared to domestic mottled skate.

Quality Characteristics of Korean Wheat Bread prepared with Naturally Fermented Blueberry-Rice Starter and Purple Rice Flour (블루베리-쌀 천연발효종과 자광미 가루를 첨가한 우리밀 식빵의 품질 특성)

  • This study investigated quality characteristics of pan breads prepared with 0, 10, 20, 30 and 40% purple rice flour and naturally fermented blueberry-rice starters. RVA (Rapid Visco Analyzer) analysis showed that wheat flour retrogradation was not retarded by addition of purple rice flour. Using amylography, gelatinization tem. perature of purple rice flour samples was higher than that of the control, whereas maximum viscosity temperature. and maximum viscosity of purple rice flour samples were lower than those of the control. Weights of pan breads containing purple rice flour were lower than that of the control, whereas volume, specific volume and baking loss rate were higher than those of the control. The anthocyanin contents and antioxidative activites as measured by DPPH radical scavenging activity of breads increased as the concentration of purple rice flour increased. The moisture content of pan breads containing purple rice flour decreased as storage time increased. The pH of breads containing purple rice flour was higher than that of the control. Color L value decreased, whereas a and b values increased significantly, as storage time increased. In texture analyzer measurement, hardness of breads containing purple rice flour significantly increased as storage time increased. Breads containing 10~20% purple rice flour showed acceptable sensory properties, such as mouth feel, appearance, flavor, texture, taste and overall acceptability.

A Qualitative Investigation of Dongchunghacho Jelly with Assorted Increments of Paecilomyces japonica Powder (동충하초 분말을 첨가하여 제조한 젤리의 품질특성)

  • A qualitative investigation Dongchunghacho, Jelly combined with sericultural products prepared from assorted increments(0.5, 1, 1.5 and 2%) of P. japonica powder was performed. The qualitative parameters used to assess P. japonica powder increments included, hysicochemical, textural and sensory properties. The moisture and crude protein content of the Dongchunghacho Jelly were significantly greater than the control(p<0.05). Conversely, Dongchunghacho Jelly showed a propensity towards lower crude fat content than the control group. A positive trend was observed for both mineral content and dark color with increased P. japonica powder. In contrast, texture, hardness, gumminess and chewiness of the Dongchunghacho Jelly decreased with increasing levels of P. japonica powder. Color, taste, texture and overall preference of Dongchunghacho Jelly were optimal in the 1 % P. japonica powder mixture.

Quality Characteristics of White Bread Made with Makgeolli Sourdough (막걸리 사워도우로 제조한 식빵의 품질특성)

  • Purpose: This study developed sourdough bread according to consumers' preferencesby shortening the sourdough fermentation process time through addition of makgeolli to sourdough. Methods: Fermentation time was measured by adding makgeolli and water to wheat flour. Results: Fermentation time was shorter than that of starter made with only water and flour, with 5 hours of primary fermentation and 3 hours of secondary fermentation. The optimum mixing ratio was 400 g of flour, 192 mL of water, and 48 mL of makgeolli. An increase in makgeolli sourdough content decreased crude protein and moisture contents of white bread. Crude fat and ash contents increased, and volume of bread was decreased as sourdough increased. The height of bread prepared with makgeolli sourdough was lower than that of bread without makgeolli sourdough. According to the results of the texture measurement, hardness, gumminess, and chewiness of sourdough group were lower as the addition of sourdough increased. Addition of makgeolli sourdough to white bread resulted in decreased lightness, but increased yellowness of white bread. Preparation of white bread with addition of sourdough improved taste and flavor compared to bread prepared only with wheat flour. Conclusion: The highest sensory preference was observed for white bread prepared whit 5 g of sourdough.

Quality Characteristics of JungKwa Made with Ginseng by Different Manufacturing Methods (제조방법을 달리한 수삼 정과의 품질 특성)

  • Making jungkwa, a traditional Korean snack, is difficult and complicated. In this study, a rice cooker was used to simplify the process of making jungkwa made with ginseng. Comparing ginseng jungkwa cooked in a rice cooker with the control group cooked in a traditional way, their chewiness, browness, glossy and overall preference were similar when cooked for 160 minutes, 175 minutes, 190 minutes, 205 minutes, and 220 minutes. The moisture content of ginseng jungkwa cooked in a rice cooker decreased, while its sugar content increased with increased cooking time. Also, the ginseng jungkwa had lower lightness and higher redness and yellowness as its cooking time got longer. The ginseng jungkwa cooked for 205 minutes was most similar to the one cooked in a traditional way. In the measurement of texture, the ginseng jungkwa had higher hardness with increased cooking time, and, when cooked for 205 minutes, it was most similar to the one cooked in a traditional way in chewiness. The sensory evaluation showed that the one cooked for 205 minutes was most preferred in appearance, smell, taste, texture and overall preference. Based on these results, this study revealed that using a rice cooker can be substituted for the traditional way of making jungkwa.
