Effect of Storage Temperature, Time and Natural Additives on the Changes in Flavor of Lentinus edodes (저장온도, 시간 및 천연첨가제가 표고버섯의 향 변화에 미치는 영향)

  • This study was carried out to investigate the flavor changes of Lentinus edodes at different storage temperatures, time and natural additives using an electronic nose with six metal oxide sensors. To preserve good quality of modified atmosphere packaged Lentinus edodes, Four natural additives(Artemisia princeps, Artemisia capillaries, green tea, and activated charcoal) were used. The mushrooms were packaged in polyethylene films with each treatment and were stored at 5, 10 and $20^{\circ}C$. Increase in storage temperature and storage time decreased the ratio of resistance in the electronic nose as well as first principal component scores. In addition, indicating quality of mushroom reduced at high temperature and long storage time. The results of the electronic nose and the principal component analysis(PCA) in the mushrooms with Artemisia princeps and Artemisia capillaries that were stored at $5^{\circ}C$, and green tea and activated charcoal which were stored at $10^{\circ}C$ showed the good effects to maintain the freshness along with reducing off-flavor. However, there were no differences between control and treatment groups at $20^{\circ}C$.

Effect of Pallet-unit MAP Treatment on Freshness Extension of Spring Chinese Cabbage (Pallet-unit MAP처리에 따른 봄배추의 선도 연장 효과)

  • Chinese cabbage is produced and consumed as a main material for kimchi and as a staple vegetable in Korea throughout the year. However, due to environmental changes unbalance between supply and demand is repeated annually, requiring development of long-term storage technologies. Chinese cabbages, were harvested, put in plastic boxes, and precooled at $2^{\circ}C$ for 24 hours using forced air precooler. After precooling, Chinese cabbages were MAP-treated with 0.02 mm HDPE film and functional film and stored at low temperature ($1{\pm}0.5^{\circ}C$). The weight-loss rates after 9-weeks of storage were 8.47% in the control group, 4.07% in the HDPE film-treated group, and 3.07% in the functional film-treated group, respectively, suppressing weight loss. Trimming loss rate after 6-weeks of storage was 6.86% in the functional film MAP-treated group and lower than 7.50% in the control group. In the sensory test with 7 points as the limit of commodity, the control group lost it after 6-weeks of storage while the MAP-treated groups retained over 7 points. The functional film MAP-treated group showed over 6 points for processing as kimchi until 9-weeks of storage, proving that Pallet-type MAP storage is effective for extending storage life of spring Chinese cabbage.

  • The safety and storage periods of various foods, including dairy products, can be affected by a variety of internal and external factors. Therefore, all foods have a risk of deterioration after storage for a certain period of time for many different reasons. Among dairy products, cheese is enriched in necessary nutrients; however, it can also easily undergo physical, chemical, and biochemical changes under various conditions. Therefore, the storage period of cheese is an important issue. If various factors that can affect the safety and storage period of cheese can be controlled, the safety of cheese can be preserved and its storage period extended. This review of the literature published on the issue summarizes various state-of-the-art technologies currently used to extend the storage period of cheese without affecting its quality. This basic data will inform future research concerning the storage period of various cheeses.

Effects of Modified Atmosphere Packaging on the Quality of Chitosan and $CaCl_2$ Coated Mushroom (Agaricus bisporus) (환경가스조절 포장이 키토산 및 $CaCl_2$로 코팅 처리된 양송이 버섯의 품질에 미치는 영향)

  • The effects of modified atmosphere(MA) packaging and coating on the quality of mushroom (Agaricus bisporus) were investigated. Whole mushrooms(100 g) were packed with polyvinyl chloride(PVC) film wrap, PD941 and PD961 film bags and were stored in a chamber at $12^{\circ}C$ and 80% RH for 6 days. Gas composition of packages, respiration rate, weight loss, color and maturity index of MA packaged mushrooms were examined. The wrap packaged mushrooms showed different level of internal $CO_2$ concentrations among water washed, chitosan coated and $CaCl_2$ coated subgroups significantly at 5% level. The maximum $CO_2$ concentration of PD941 and PD961 packages for all coated showed $4.1{\sim}4.7%$ and $10.4{\sim}11.7%$, respectively, for the first day. PD961 package showed the lowest $O_2$ concentration compared to other groups. There were no significant respiration rate differences between wrap packed and PD941 packaged. Respiration rate of water washed. chitosan coated and $CaCl_2$ coated in PD961 packaged was 192 mg, 226 mg and 245 mg, respectively. Maturity index of PD961 packaged were not significantly different among the water washed, chitosan and $CaCl_2$ coated packages. Chitosan coating showed a negative effect on color change of mushrooms. The weight loss of 961 packaged was lower $(7.0{\sim}8.0%)$ that those of wrap packaged and PD941 packaged.

Effect of PE film thickness and storage temperature in MAP deastringency of 'Sanggamdungsi' astringent persimmon (PE 필름 두께와 온도에 따른 '상감둥시' 감의 MAP 탈삽 효과)

  • We investigated the effect of PE film thickness on the modified atmosphere packaging (MAP) deastringency of 'Sanggamdungsi' (Diospyros kaki cv.) astringent persimmon at room temperature ($25^{\circ}C$) and low temperature ($-1^{\circ}C$). The fruits were individually packaged with PE film of which the thickness is 60, 80, 100, 115 or $130{\mu}m$ and stored at room or low ($-1^{\circ}C$) temperature. At room temperature, firmness shows the highest value (23.3-26.5) at $100{\mu}m$ thickness. Top flesh browning and decay was monitored at 20 days after storage, and peel blackening and style-end softening was negligible at optimal thickness. Therefore, optimal film thickness of deastringency at room temperature is $80-100{\mu}m$. At this thickness, the astringency was removed after 5 days and the fruits can be distributed until 10 days after the MAP. At low ($-1^{\circ}C$) temperature, firmness was maintained regardless of film thickness. However, the firmness is higher as the film is thicker. Top flesh browning and decay was not occurred even after 90 days after storage. Peel blackening and style-end softening was monitored at 90 days after storage. Off-flavor was monitored at 115 and $130{\mu}m$ thickness. Therefore, optimal film thickness of deastringency at low ($-1^{\circ}C$) temperature is $80-100{\mu}m$. At this thickness, the astringency was removed after 50 days and the fruits can be distributed until 80 days after the MAP.

Recent Research Status of Postharvest Management of Broccoli (브로콜리 수확후 관리의 최근 연구 동향)

  • Broccoli is considered as one of the functional foods to offer a hearty supply of the nutrient-rich vegetable in the world. Broccoli contains high level of phytochemicals, and that is selected as one of the top 10 vegetables for human health promotion. Especially, glucosinolates and flavonoids are well known as anti free oxygen radicals in vegetables and fruits. In Korea, broccoli consumption has increased to well known on the health-beneficial vegetables since 2000. However, broccoli has many problems of postharvest management since the quality of harvested heads quickly declines. Major problems are the floret yellowing, wilting, off-odor, and decay. The multiple postharvest applications improve broccoli quality and cold treatment including pre-cooling extends on the shelf-life with circumstance of optimum storage which is 0℃ temperature and a range of 95-100% relative humidity. Controlled atmosphere or modified atmosphere packaging can be used as supplemental treatments to extend postharvest life. 1-2% O2 + 5-10% CO2 is currently recommended for broccoli. Postharvest management is important for broccoli because price fluctuations depend on harvest time and quality. In this study, we tried to review physiological change of broccoli after the harvest, storage method, and various techniques to optimize quality during distribution.

Study on Strawberry 'Maehyang' Qualities Packed with MA film of Different Oxygen Transmission Rate during Simulated Export Distribution Conditions (산소투과도를 달리한 MA 필름으로 포장한 딸기 '매향'의 모의 수출 조건에서 품질 고찰)

  • This study was conducted to determine types of oxygen transmission rate (OTR) films suitable for modified atmosphere (MA) storage treatment of strawberries (cv. 'Maehyang') for export and examination related changes in quality of strawberries during simulated shipping distribution conditions ($2^{\circ}C$ for $10days{\sim}8^{\circ}C$ for 11 days). Strawberries were packed by 1,300, 10,000, 20,000, and $30,000cc/m^2{\cdot}day{\cdot}atm$ OTR films for MA storage treatment and perforated film as the control for MAP. Fresh weight loss rate was less than 0.5% in OTR films except for the perforated film. Carbon dioxide and oxygen content in packages prevailed in permissible range for strawberries under recommended CA/MA conditions (i.e., $CO_2$: 15~20%, $O_2$: 5~10%) at 10,000 cc, 20,000 cc, and 30,000 cc OTR films. Ethylene content in OTR films did not reveal significant differences during storage. The 1,300 cc OTR film revealed highest off-flavor and lowest fungal incidence rate by sensory evaluation. The firmness, soluble solids, and visual quality were preserved the highest at 10,000 cc OTR film. In conclusion, 10,000 cc OTR film preserved the highest quality and extended shelf-life by 13 days if compared with conventional distribution conditions.

Freshness of 'Fuji' Apples Packed MA Film Treated with Acid and Anti-fogging Agents (산 및 결로방지 처리한 기능성 MA포장으로 포장한 '후지' 사과의 신선도)

  • This study investigated the effect of functional MA films (FMA) masterbatched by zeolite powder treated with 1 N HCl solution and anti-fogging agent (CA) on the freshness extension of 'Fuji' Apples. Preference, weight loss, total ascorbic acid, sugar content, acidity, change of gas composition in package were evaluated during storage at $15^{\circ}C$. After 150 days of storage, the weight loss of LLDPE film (control, L) apples was 0.4%, and that of apple in FMA film (CA) was 1.1%. Total ascorbic acid content of apples in control after 150 days was 2.09 mg%, and those of apple in FMA film was 2.94 mg%. The titratable acidity of apple in FMA film was higher than that in control, while soluble solids content of packages was lower than that in control after 150 days. Ethylene gas adsorbability in control package was 192.2 ppm and those in FMA film was 165.6 ppm. Overall, apples in FMA film was better than that of control. It was verified that apples packed with LLDPE film(control) lasted about 130 days, while those with FMA film lasted about 170 days. Also, FMA film treated with anti-fogging agent achieved no significant effect on freshness extension compared to non-treated film, but quality of 'Fuji' Apples was improved by anti-fogging agent when compared to that of non-treated anti-fogging agent.

Freshness of Satsuma Mandarin Packed in Anti-fogged MA Film with Acid Treated Zeolite (산 처리된 제올라이트와 결로 방지제를 함유한 MA 필름으로 포장한 감귤의 신선도)

  • This study investigated the effect of functional MA films (FMA) incorporated with zeolite powder treated with 1 N HCL solution and anti-fogging agent on the freshness extension of Satsuma mandarin. Preference, weight loss, total ascorbic acid, sugar content, titratable acidity and gas composition in package of Satsuma mandarin were evaluated during storage at $15^{\circ}C$. After 120 days of storage, the weight loss of mandarin packed with LLDPE film (control, L) was 1%, FMA film (CA) was 1.6%. Total ascorbic acid content of Satsuma manderin in control was 19.97 mg%, those of CA was 24.25 mg%. The titratable acidity of Satsuma manderin in CA was higher than that of control, while soluble solids content of CA was lower than that of control after 120 days. Ethylene gas content of control was 89.5 ppm and those of CA was 73.6 ppm after 120 days. Quality of Satsuma mandarin packed with CA was better than that of control. It was verified that shelf-life of Satsuma mandarin in control was 100 days and those of CA film was 130 days. Quality of Satsuma mandarin was few different between treated with anti-fogging agent and non-treated, but commodity of film treated with anti-fogging agent was considered better than that of non-treated.

Effect of Hot-air Surface Drying on Storage and Freshness of Kimchi Cabbage (순간 건식 열처리가 배추의 저장성 및 선도에 미치는 영향)

  • To evaluate the quality changes of Kimchi cabbage, it was packaged in the modified atmosphere (MA) after hot-air surface drying (HASD) or differential pressure precooling (PC) and stored at 0℃ for 45 days. The respiration rate after PC was lower than that after HASD, but they were not significantly different. In both HASD and PC, the ethylene production rate was lower than that of the control group. The oxygen concentration decreased and the carbon dioxide concentration increased according to the storage period, but they did not show significant differences. The change of trimming loss and weight loss tended to increase as the storage period. No significant difference was shown between HASD and PC, but the corresponding result values of the treatment groups were significantly lower than those of the control group. There was no significant difference in electrolyte conductivity and texture between treatment groups, but HASD and PC were superior to the control group. These results suggest that HASD will be available on preprocessing method for long-term storage and freshness of Kimchi cabbage together with PC.
