Mineral Contents in Soybeans with Different Cooking Methods (조리방법에 따른 콩의 무기질 함량)

  • The purpose of this study was to compare the of ash and minerals contents in different types of soybeans (Baektae, Seoritae, Heuk Tae and Seomoktae) with different cooking methods. Raw, boiled and pan-fried soybean samples were prepared by the Rural Development Administration. Samples were digested by using a microwave and analyzed using ICP-OES and ICP-MS for determining the ash and minerals contents. Ash content in four raw soybeans ranged from 5.07 to 5.59 g/100g. There was no significant difference in the ash contents in raw and pan-fried soybeans (p>0.05). However, the ash content of boiled soybeans was 9 to 14% lower than that of raw soybeans (p<0.05). The minerals contents of Baektae and Seomoktae were high and the major minerals of various soybeans were K, P, Mg, and Ca, which accounted for ash 60.80-65.61%, 20.73-24.26%, 6.90-8.46% and 5.79-8.60%, respectively. The mineral contents of soybeans were significantly different depending on the type of cultivar (p<0.05), but the tendency was not constant. Because the process of soaking and boiling of soybeans made the soluble minerals elute, the ash and mineral contents were reduced. As the soybeans are cooked by pan-frying, the water in the soybeans is evaporated and the mineral content is concentrated or kept constant. These results can serve as the basic data of mineral content during processing and cooking of soybeans.

  • This study is designed to find out the mineral contents in Korean foods. In this report, Part I, Sodium and Potassium contents in vegetables and fruits commonly used in Korean households are analysed. The data analysed are shown in the table 1,2, and 3 in this report and these will be used as a fundamental guide-index in planning sodium-restricted diet in Korea.

Changes of Chromaticity and Mineral Contents of Laver Dishes using Various Cooking Methods (조리 방법에 따른 김의 색도와 무기 성분 함량 변화)

  • The purpose of this study was to investigate the effect of various cooking methods(roasted, salad, deep-fried seasoned-roasted and commercial laver) on mineral contents, color and sensory evaluation of laver. The contents of mineral of dried laver by various cooking methods were analyzed using the Inductively Coupled Plasma(ICP) system. The results were summarized as follows : The content of crude protein, moisture, ash and crude fat in dried laver were 35.1%, 10.6%, 9.7% and 0.8%, respectively. Among the minerals of dried laver, the content of poassium was the highest (2268.0mg/100g d.w.) and those of calcium and iron were comparatively high (495.1mg/100g, 13.5mg/100g). Ca/P ratio of dried laver was about 1:1 levels. Among various laver dishes, the total mineral content was the highest in the roasted laver, but low in the deep-fried laver. Among color values by cooking methods, "L(lightness)" and " - a(greenness)" values were the highest in the roasted laver, and "b(yellowness)" was the highest in the deep-fried laver. The seasoned-roasted laver was highly scored by the sensory evaluation.

  • With a purpose of finding out the effects of cattle slurry application on thc nutrient contents of herbages and energy productivity in grassland, a field experiment was conducted with two times and five levels of cattle slurry application. The experimental field was designed in a split-plot with threc replications, and lasted from September, 1986 to October, 1990 at the Livestock Experiment Station in Suweon, The results obtained are summarized as follows: 1. The net energy(NEL, StE and TDN) contents of grasses in the plots with cattle slurry application just after cutting were slightly higher when compared to manuring 15 days after cutting. but DCP content has reverse trend. 2. Average net energy(NEL. StE and TDN) and DCP production of the plot with cattle slurry application 15 days after cutting were insignificantly increased by 26 % than those of manuring just after cutting. The energy and DCP yields in the plot with cattle slurry and with slurry + mineral fertilizer were decreased by 21 -27 % and 8- 11 %, respectively than those of the plot with single dressing of mineral fertilizer. 3. Mineral contents of grasses were not significant difference among the treatments of cattle slurry. but considering nutrient balance of animals, application of cattle slurry of 30-$60m^3$/ha with mineral fertilizer was profitable as compared to the other treatments.

General Geochemical Characteristics of Dashinchilen Nb-Ta and Sant Cu Occurrences in Southeastern Part of Khangai Area, Mongolia (몽골 항가이 남동부 지역 다신칠렌 탄탈륨-니오븀 및 산트 동 산출지의 지구화학적 특성 개요)

  • We performed reconnaissance survey on Dashinchilen Nb-Ta REE area and Sant Cu area which are located in southeastern part of Khangai rare metals mineralized belt. In Dashinchilen area, Nb and Ta have been found in pegmatitic granite that is largely distributed in the survey area and muscovite in pegmatite which is an intrusion in paleozoic sedimentary rocks which are mostly composed of sandstone. While grades of Nb and Ta are not high, an outcrop that has high Th and U contents (542 ppm of Th and 56.9 ppm of U) has been found. Average and maximum REE contents in the survey area is three times and seven times, respectively, larger than average REE contents in the crust of the Earth. In Sant area, copper oxides such as malachite has been found in quartzite in paleozoic sedimentary rocks. A sedimentary rock formation that has high grade of Mn (12.4-34.6 %) has been found in the survey area. This sedimentary rock formation is the same formation with that of Ugii Nuur Fe-Mn mineralization which is located about 200 km northwest of the survey area. Average and maximum REE contents in the survey area is two and half times and seven times, respectively, larger than average REE contents in the crust of the Earth. According to the factor analysis for the data of the geochemical analysis, Nb and Ta in Dashinchilen area are highly correlated with muscovite and Cu in Sant area is highly correlated with Mo, Sn, and Bi. Furthermore, the factor analysis results show that Fe in Sant area was deposited with rare earth elements.

Changes in Vitamin C and Minerals Content of Perilla Leaves by Different Cooking Methods (조리에 의한 깻잎의 비타민C 및 무기성분의 변화)

  • The purpose of this study was to investigate the differences in vitamin C and mineral contents in perilla leaves as a result of different cooking methods. The results are summarized as follows. In cutting up the perilla leaves, the vitamin C content decreased by 40% with no significant difference made to the mineral content. Steaming was more effective in retaining vitamin C compared to blanching. With increasing treatment times. decreasing amounts of vitamin C remained. There was no significant change in mineral contents except for potassium. In the case of treating with vinegar or lemon juice, more vitamin C remained than when not treated, and there was little influence on the mineral contents. In the solubilization effect of calcium seasoned with acid, rice vinegar was most effective followed by lemon juice, apple juice, brown rice vinegar, then persimmon vinegar. There was a little or almost no vitamin C remaining in kkaennip kimchi. In terms of storing time, raw seasoned kkaennip kimchi had higher mineral contents than blanched or steamed kkaennip kimchis.

  • This study was carried out to survey the contents of mineral and heavy metal of the commercial salt and salted-fermented shrimp. Mineral and heavy metal contents of Korean products and imported salts, and their effects on shrimps were analyzed through ICP-AES/MS. K and Mg contents of Korean salts and salted-fermented shrimp were relatively higher than those imported ones, However, no significant differences were found for mineral of commercial salted-fermented shrimps between Korean products and imported ones. Heavy metal contents of commercial salts lower than the maximum permissible limit set by KFDA. As, HB, and Ni were not detected in both commercial and lab-made salted-fermented shrimps. Cd were detected ranges of ND-0.5 ppm (average 0.1ppm) for commercial salted-fermented shrimps. Pb were detected ranges of ND-0.8ppm(average 0.28ppm) for lab-made salted-fermented shrimps.

The Effect of Roasted Soybean Flour Supplimentation to Jeolpyons(Korean Rice Cake) on Changing the Contents of Amino Acid, Amylose, and Minerals (볶은 콩가루 첨가가 절편의 아미노산, 아밀롯 및 무기물 함량에 미치는 영향)

  • This study was undertaken to determine the changes in amino acids, amylose and mineral contents of Jeolpyons(Korean rice cake) supplemented with various levels of roasted soybean flour (RSF). Amino acids content of Jeolpyons increased as RSF content increased. Especially the contents of total essential amino acids of Jeolpyon supplemented with RSF(5, 10, 15 and 20%) increased 1.22 to 2.74 times greater than those of the ocntrol. Amylose, which is related to retrogradatin effect on rice products decreased about 0.9 to 4.7% by increasing the soybean flour contents. Mineral contents by jeolpyon containing RSF increased as RSF contents increased.

  • Minor elements such as Ag, As, Au, Bi, Cd, Cu, Co, Ni, Pb, Rb, Sb, Sr and Te were analyzed by atomic absorption spectrophotometry and induced coupled plasma spectrophotometry in order to investigate pathfinders for gold in quartz porphyry, granite porphyry and vein materials in Jeonjuil gold - silver mine, and in altered biotite granites and vein materials in Dukum gold - silver mine. In Dukum gold - silver mine, it is observed that Au contents have positive relation with As, Co, and Rb contents, but negative relation with Bi contents in altered biotite granites. Au contents have positive relation with Ag, As, Co and Te contents in vein materials. In Jeonjuil gold - silver mine, it is observed that Cd, Rb, Sr and Te are enriched near ore vein in quartz porphyry and granite porphyry. Au contents have positive relation with As, Cd, Cu, $Fe_2O_3$ and $K_2O$ in vein materials.

A Study on the Effect of the Kinds and Replacement Ratios of Mineral Admixtures on the Development of Chloride Invasion Resistance Property of Concrete Immersed in Salt Water (혼화재 종류 및 치환율이 염수에 침지한 콘크리트의 내염성능 향상에 미치는 영향에 관한 연구)

  • This paper investigate that the effect of the concrete containing mineral admixtures(pozzolanic materials such as fly-ash, ground granulated blast-furnace slag, silica fume and meta kaolin) on the resistance properties to chloride ion invasion. The purposed testing procedure was applied to the concrete added mineral admixtures for $3\sim4$ replacement ratios under W/B ratios ranged from 0.40 to 0.55. Specimens were immersed in $3.6\%$ NaCl solution for 330 days, and penetration depth, water soluble chloride contents and acid soluble chloride contents were measured in 28, 91, 182 and 330 days. Then, diffusion coefficient were calculated using total chloride contents. As a results. the kinds of mineral admixture and replacement ratios had a great effect on the resistance property of the concrete to chloride ion invasion compared with the plain concrete. And the optimal replacement ratios of mineral admixture had a limitation for each admixtures. The amount of acid soluble chloride ions and water soluble chloride ions were varied with the kinds of mineral admixtures and the penetration depth from the concrete skin. Chloride diffusion coefficient of each concretes decreased with the time elapsed. and the diffusion coefficients of the concrete immersed salt water for 330 days had a establishment with the compressive strength measured before immersing.
