Quality properties of whole milk powder on chicken breast emulsion-type sausage

  • The aim of the study was to determine the effect of whole milk powder (WMP) as heterologous proteins on chicken breast emulsion-type sausages. The quality properties of WMP on such chicken breast emulsion-type sausages were investigated by measuring the proximate composition, pH, color, cooking yield, protein solubility, and by applying other methods, such as texture profile analysis (TPA), microphotograph, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and electronic nose. The crude fat, protein, and ash contents of 15% WMP samples were significantly higher than the control samples (p < 0.05). The redness of the cooked samples significantly increased with an increase in the WMP contents (p < 0.05). The cooking yield of WMP treated samples was significantly higher than the control sample (p < 0.05). Additionally, the hardness, gumminess, and chewiness of WMP treated samples were significantly higher than the control sample (p < 0.05). The sarcoplasmic and myofibrillar proteins of samples containing 15% WMP were significantly higher than the control samples (p < 0.05). The result of SDS-PAGE showed that the C protein, sarcoplasmic protein, actin, and tropomyosin increased with an increase in the WMP contents. The principal component analysis plot of WMP-treated samples was clearly different from that of the control samples. Based on these results, it was predicted that WMP could be useful as heterologous protein on emulsion-type sausage.

동결건조 보호제와 기질이 동결건조된 Bacillus sp. SH1RP8의 생존율에 미치는 영향 (Effect of Substrates and Lyoprotectant on the Survival Ratio of Lyophilized Bacillus sp. SH1RP8)

  • 본 연구는 식물성장촉진 근권세균인 Bacillus sp. SH1RP8를 친환경 생물비료로 이용하기 위하여 수행되었다. SH1RP8 균주를 동결건조시 세포의 용혈을 방지하도록 여러 가지 동결건조 보호제를 첨가하여 균주의 성장과 활성에 미치는 영향을 알아보았다. SH1RP8 균주의 동결건조 시 동결건조 보호제로 skim milk, glucose, peptone 등을 이용하였을 때, 그 중 5%의 skim milk를 첨가하였을 때 가장 높은 (30.6%)의 생존율을 보였다. 또한, 균주의 성장을 촉진하는 기질 그룹을 첨가하여 5%의 skim milk 단독으로 첨가한 경우와 기질 그룹을 각각 첨가한 경우의 동결건조 보호 효과를 비교하여 보았다. 그 결과 5% skim milk에 glycerol을 동시에 첨가할 경우 균주의 생존율이 skim milk 단독 첨가효과와 비교 시 214.29%의 향상율을 보여주었다. 또한 동결건조된 Bacillus sp. SH1RP8 은 매우 효과적인 PGPR로 활성을 보여주어 생물비료로서의 훌륭한 기능이 기대된다.

A Review on Processing Opportunities for the Development of Camel Dairy Products

  • Camel milk has a significant and pivotal role in the diet of people residing in semi-arid and arid regions. Ever since ancient times, marketing of camel milk has remained insignificant due to nonexistence of processing amenities in the camel nurturing areas, hence the utilization of unprocessed camel milk has continuously remained limited at family level by the nomads. Due to the superior medicinal values and health promoting effects, incredible growth in the demand of camel milk and dairy products have been noticed all over the world during last two decades. Such emergence has led dairy industry to provide diversified camel dairy products to the consumers with superior nutritional and functional qualities. In contrast to bovine, very few food products derived from camel milk are available in the present market. With the advancements in food processing interventions, a wide range of dairy and non-dairy products could be obtained from camel milk, including milk powder, cheese, yogurt, ice cream, and even chocolate. In some regions, camel milk is used for traditional dishes such as fermented milk, camel milk tea, or as a base for soups and stews. Current review highlights the processing opportunities regarding the transformation of camel milk into various dairy products via decreasing the inherent functionality that could be achieved by optimization of processing conditions and alteration of chemical composition by using fortification method. Additionally, future research directions could be devised to improve the product quality.

  • During the 2009 global economic downturn, the dairy industry was also affected. Global milk production had gradually decreased, and the dairy industry was failing. However, in 2010, China's sudden consumption increase of dairy products, the price of dairy products recovered due to the great demand in China. The Asian continent as a whole played a significant role in maintaining the health of the global dairy industry, by preventing its total collapse. Currently, the price of all dairy products, except that of whole milk powder, has increased. The International Dairy Federation (IDF) expects that milk production will grow by 2% annually over the next 10 years, owing to Asia's high demand for all kinds of dairy products.

탈지분유 전처리에 의한 면직물의 물성 (The Physical Properties of Cotton Fabric Pretreated with Skim Milk Powder)

  • The purpose of this study is to establish the scientific data of cotton fabric pretreated with skim milk powder and to improve the dyeability. The surface monophology, add on, whiteness, stiffness, air permeability, moisture regain and absorption of cotton fabrics were evaluated by varying concentration of SMP to get the optimal conditions in pretreatment. FT-IR of cotton fabrics pretreated with SMP were measured. Amino acid compositions, viscosity of SMP were evaluated. The K/S values by varying concentration of cinnamon cassia and subtract of dyed SMP-C were measured. I attempted to evalute the color fastness of untreated and AI. The results are as follow; The optimal concentration of SMP was 9%(w/v) to be pretreated with cotton fabrics. From FT-IR spectrum, formation of -NH$_2$ and -COOH was verified by SMP-C. Denaturalization of protein and condensation of carbohydrate, fat, etc. were found in a measurement of amino acid and viscocity. The K/S value of cotton fabrics pretreated with SMP was higher than that of untreated. Most of the color fastnesses were great.

  • 자색 고구마 분말을 0∼5%를 각각 첨가하여 만든 호상 요구르트를 제조하여 요구르트의 품질 및 기호성에 미치는 영향을 검토한 결과는 다음과 같다. 자색 고구마 첨가에 의해 산도, 당도, 유산균수가 대조구에 비해 높게 나타났으며 요구르트의 색택은 자색 고구마 첨가량이 많을수록 lightness와 yellowness는 감소되고 redness는 증가하면서 점도는 크게 상승하였다. 요구르트의 관능성을 보면 조직감과 색은 대조구보다 첨가구에서 양호했으며 맛에서는 차이가 없었고 전체적인 기호도는 자색 고구마 3∼4% 첨가구에서 가장 우수하였다.

유산발효유 제조 및 품질특성에 미치는 함초 추출물 첨가의 영향 (Supplemented Effect of Salicornia herbacea Extract Powder on Preparation and Quality Characteristics of Fermented Milk Product.)

  • 함초 추출물 분말을 0%∼0.4% (w/v) 농도별로 skim milk에 첨가하여 혼합균주인 larfotacillus acidophilus, Streptococcus thermophillus 및 Bifidobacterium lougum를 전배양 한 starter를 접종하여 37$^{\circ}C$에서 6시간까지 발효시키면서 배양시간에 따른 pH, 적정산도, 점도, 유산균 수 측정 및 관능검사를 실시하였다. 함초 분말 0.1% 첨가구에서 6시간 배양 후 가장 많은 유산균수(9.23 log CFU/ml)를 나타내었고, 가장 높은 산 생성 능력(pH 4.23, 적정산도 0.64%)을 보였다. 발효유의 점도 측정에서도 함초 분말 0.1% 첨가구에서 1,365 cps로 가장 높게 나왔다. 함초 분말 첨가 발효유의 선호도 조사에서는 0.1% 첨가구에서 가장 좋은 것으로 나타났다. 6$^{\circ}C$ 12일간발효유 저장 기간 중 저장기간 경과와 함께 pH 및 생균수는 약간씩 낮아지는 경향을 보였고, 산도는 약간씩 증가하는 경향을 보였다. 이상과 같이 함초 추출물 분말 첨가 발효유 제조에서 기호성과 품질 특성을 고려해 볼 때 0.1% 첨가가 가장 이상적인 것으로 사료되어진다.

Effect of Crosslinked β-cyclodextrin on Quality of Cholesterol-reduced Cream Cheese

  • This study was carried out to investigate the effects of different types of $\beta$-cyclodextrin ($\beta$-CD) treatments on chemical and sensory characteristics of cholesterol-reduced cream cheese. The cholesterol removal rates were 92.0% in cream cheese treated by powder $\beta$-CD, and 82.6% in cream cheese treated by crosslinked $\beta$-CD. Amounts of short-chain fatty acid and free amino acids were significantly lower in cream cheese made by crosslinked $\beta$-CD-treated milk, especially after 2 weeks storage, compared with those of no $\beta$-CD-treated control and cream cheese made by powder $\beta$-CD treated milk. Among rheological properties, cohesiveness was significantly higher, and gumminess in cream cheese made by crosslinked $\beta$-CD-treated milk was slightly lower than others. In sensory analysis, no difference was found in texture among treatments, while bitterness was lower in the early stage of storage, and overall quality was higher score, in cream cheese made by crosslinked $\beta$-CD-treated cream at 3 and 4 week storage, compared with those in control and powder $\beta$-CD-treated group. The present study indicated that crosslinked $\beta$-CD treatment resulted in an efficient cholesterol removal rate over 80% and a deceleration of ripening, which may provide a longer shelf life without significant adverse effects in chemical and sensory properties.

난백분말의 첨가가 호상요구르트에서 젖산균의 산생성과 요구르트의 품질에 미치는 영향 (The Effects of Egg White Powder Addition on Acid Production by Lactic Acid Bacteria and Quality of Curd Yogurt)

  • 본 연구에서는 우유에 탈지분유 또는 난백분말을 각각 첨가하고 젖산균(Lactobacillus 3종)으로 발효하여 호상의 요구르트를 만든 후, 난백분말의 첨가가 젖산균의 생육과 산생성 및 요구르트의 품질(점도, 관능성, 휘발성 향기 성분)에 미치는 영향을 조사하였다. 난백분말의 첨가로 젖산균의 산생성이 대조군(우유로만 만든 요구르트)보다 현저하게 촉진되었으며, 산생성 촉진 효과는 난백분말 첨가량에 비례하여 증가하였다. 난백분말이 첨가된 호상요구르트의 점도는 대조군보다 대체로 높았으며, L. acidophilus로 발효시켜 만든 호상요구르트는 thixotropic flow의 특성을 나타냈다. 관능검사의 결과를 보면 표준 시료보다 난백분말 첨가 시료가 우수하였고, 난백분말 첨가 시료 중에서는 2% 첨가 시료가 가장 우수하였다. GC에 의한 휘발 성분 분석에서는 호상요구르트로부터 acetone, ethanol, diacetyl, butanol 및 acetoin의 5가지 성분이 확인되었다.

Survey of Yogurt Powder Storage in Ambient Export Countries A Safety Evaluation Standard Compliance and Comparative Analysis

  • Yogurt powder is fermented milk processed in the form of dry yogurt, and has advantages such as stability, storability, convenience, and portability. China and Vietnam are important export target countries because of the increased demand for dairy products. Therefore, we surveyed dairy product standardization in order to establish an export strategy. Lactic acid bacteria counts are unregulated in Korea and Vietnam. In China, lactic acid bacteria counts are regulated at $1{\times}10^6$ colonyforming units (CFU)/mL and detected at $6.24{\pm}0.33\;Log\;CFU/mL$. All three countries have regulated standards for total bacterial counts. In China, total bacterial counts of milk powder are regulated to n=5, c=2, m=50,000, M=200,000 and detected at $6.02{\pm}0.12\;Log\;CFU/mL$, exceeding the acceptable level. Lactic acid bacterial counts appeared to exceed total bacterial counts. Coliform group counts, Staphylococcus aureus, Listeria monocytogenes, and Salmonella species were not detected. Acidity is not regulated in Korea and Vietnam. In China, acidity was regulated to over $70^{\circ}T$ and detected $352.38{\pm}10.24^{\circ}T$. pH is unregulated in all three countries. pH was compared to that of general fermented milk, which is 4.2, and that of the sample was $4.28{\pm}0.01$. Aflatoxin levels are not regulated in Korea and China. In Vietnam, aflatoxin level is regulated at 0.05 ppb. Therefore, all ingredients of the yogurt powder met the safety standards. This data obtained in this study can be used as the basic data in assessing the export quality of yogurt powder.
