Influence of different levels of corn steep liquor (CSL) on chemical composition of urea treated wheat straw (UTWS) and its dietary effect on nutrient intake, digestibility, milk yield and its composition were studied. The 5% UTWS was ensiled with 0, 3, 6 and 9% CSL on dry matter (DM) basis. Total nitrogen and neutral detergent fiber (NDF) contents of UTWS ensiled with 0, 3, 6 and 9% CSL increased linearly with the increasing level of CSL. Increase in NDF content was due to increased neutral detergent insoluble nitrogen contents. Four experimental diets were formulated to contain 35% UTWS ensiled without CSL (control), 45 (WS45), 55 (WS55) and 65% (WS65) UTWS ensiled with 9% CSL, respectively. Dry matter, NDF and acid detergent fiber (ADF) intakes by lactating buffaloes fed diets containing varying levels of UTWS ensiled with or without CSL remained similar across all treatments. However, DM, NDF and ADF intakes as a percent of body weight and digestible DM, NDF and ADF intakes were higher in animals fed WS65 diet compared to those fed other diets. Apparent DM, crude protein (CP), NDF and ADF digestibilities were higher in diets containing UTWS ensiled with CSL compared to control. These differences may be attributed to higher rates of degradability of UTWS ensiled with 9% CSL than that ensiled without CSL. The 4% fat corrected milk and CP were statistically higher with WS65 diet compared to other diets. Percent milk fat, solid not fat and total solid remained unchanged across all treatments.

This study was performed to investigate the relationship between milk consumption, dietary nutrient intake, and physical strength in Korean adolescents for dietary education of home economics subject at middle and high schools. Intake of milk and milk products, that of dietary nutrients, and physical strength records were surveyed for 298 high school students resided in small and medium-sized cities in Korea. Intake of milk and milk products was collected from three-day dietary survey, and daily dairy equivalent of calcium was calculated by dividing daily calcium intake(mg) from milk and milk products by calcium content(200 mg) of 200 mL milk. Dietary survey was performed during three days including two-weekdays and one-weekend by food record method. Dietary nutrient intake was analyzed by CAN-Pro 3.0. Physical strength records were offered from subjects' schools. Subjects were divided into low intake group(${\leq}0.29/d$), medium intake group(0.30-0.78/d) and high intake group(0.79-5.66/d) according to daily mean dairy equivalent of calcium taken by them, and most of them consumed milk and milk products less than '2' of the recommended value. Daily mean dairy equivalent of calcium was significantly related with high records of '50 m running' and 'stand long jump'(p<0.05), however it was not related with other records of physical strength. Intakes of energy, carbohydrate, protein, fat, calcium, phosphorus, iron, zinc, thiamin, riboflavin, niacin and vitamin E were significantly correlated with high record of '50 m running'(p<0.01). Intakes of nutrients were related with '50 m running' except fat were significantly correlated with high record of 'stand long jump'(p<0.05). Intakes of protein, phosphorus, iron, zinc, vitamin A, $B_6$ and E were significantly correlated with high record of 'long distance running'(p<0.05). In conclusion intake of milk and milk products was related with physical strength records('50 m running' and 'stand long jump') and intakes of most nutrients including energy nutrient, vitamin and mineral were correlated with physical strength records('50 m running', 'stand long jump' and 'long distance running') in Korean adolescents. Therefore, optimal consumption of milk and various nutrients for balanced nutrition during adolescents should be emphasized in dietary education of home economics subject for their strong physical strength.
BACKGROUND/OBJECTIVES: Over the past few decades, Malaysia has been experiencing an increased prevalence of overweight and obesity that threatens the health of Malaysians. Poor dietary intake is one of the major contributors to the development of obesity and many non-communicable diseases. The dietary intakes of adults in Malaysia were assessed to determine the association between the dietary intake variables and the body mass index (BMI) and waist circumference (WC) measurements. This study examined whether the dietary intake achieved the recommended nutritional guidelines and compared the intakes between both sexes. SUBJECTS/METHODS: The height, weight, and WC of four-hundred-and-ninety adults (n = 490) in Malaysia were measured using standard procedures. The three-day 24-hour dietary recalls were conducted on 422 out of the 490 adults and their dietary intakes were evaluated in detail. The selected dietary intake variables were used to determine the associations with the obesity indicators. RESULTS: Among the participants, 52.8% were overweight or obese. After data analysis, the mean energy intake was 1,550 kcal/day, in which male participants had a significantly higher energy and macronutrients intake than females. Protein consumption and its percentage of energy contribution exceeded the recommended range. The consumption of fruits, vegetables, and milk and milk products were lower than the recommended number of servings for a healthy diet. The male participants consumed significantly more servings of carbohydrate-based foods, meat, and fats, oils, and sweets than females. Among the selected dietary intake variables, only the carbohydrate intake was negatively associated with the BMI (Estimate b = -0.008) and WC measurements (Estimate b = -0.019) after adjusting for covariates. CONCLUSIONS: This study evaluated the dietary intakes of a sample of Malaysian adults and its association with the obesity indicators. The results highlight the need for improvements and modifications of the dietary intake of Malaysians to reduce the overweight and obesity rates.
Nitrogen(N) concentration of preterm(PT) and term (T) milk in various fractions, such as total, protein, nonprotein, whey protein and casein were determined at 2-5 days, 1, 2, 4 and 6 weeks of postpartum. The purpose of this study was to investigate the nitrogen concentration of human milk from mothers delivering at preterm and term, and the propriety of preterm milk for premature infants. The concentration of total N, nonprotein N, protein N, whey protein N and casein N in preterm milk was decreased significantly with time postpartum. Total N was 374mg/이 at colostrum, 232mg/dl at mature milk. Whey protein N was decreased from 42mg/dl at 2-5 days to 32mg/dl at 4-6 weeks. Protein N was 332mg/dl at colostrum, 202mg/dl at mature milk. The proportion of whey protein N and casein N were 39:61 at colostrum, 28:72 at mature milk. No difference were found between T and PT milk for total nitrogen excepted 2 weeks. In this report we show that nitrogen concentration except casetpt casein N is smaller in milk from mothers giving birth prematurely than in milk from mothers giving birth at term, over the first two weeks of lactationl But protein N was higher in preterm milk than term milk, whey protein nitrogen was lower. By comparing predicted nitrogen intakes to estimated requirements of preterm infants fed 150 to 200ml/kg/day of their own mother's milk, we predict that the quantities of protein provided would be adequate to meet the requirements of the prematured infants during the early weeks of life.
As the elderly population has increased in the advanced countries, food intake, relationship of nutrient intake and disease has become major problem in the aged. To investigate the dietary behaviors and the preference of food of the elderly for developing meal planning, the study was conducted through survey questionnaires including 24-hr dietary recall, dietary behaviors, food preference and frequency of food intake to 352 elderly (104 male and 248 female) who were more than 60 years old and living in Seoul. Most of subjects ate three meals regulary and the most preferred taste was sweet and the less preferred taste was sour. Dietary behaviors according to educational level were shown that the skipping meal time and duration time of one meal were significant difference in educational level. Most of the elderly subjects like kimchi and soybean paste soup. The more educated elderly were preferred milk. The reason of dislike of milk was bad flavor and diarrhea. Most of them who graduated from university and high school selected fishes because of good for health primary, otherwise no educated, elementary school and middle school graduated elderly selected vegetables primary. Meats, fishes, seaweeds, mushrooms, fruits, milk and milk products, eggs and vegetables intakes of total elderly subjects were significantly positively related to educational level. With respect to milk and milk products intakes, cheese, yogurt (curd) and milk intake of elderly was significantly negatively related to age. Therefore education for developing desirable dietary behaviors and improving the meal patterns should be in forced to elderly, especially who had poor educational background in order to manage the meal planning and to care for their health in the later life.
Two experiments were conducted to determine the validity of the deuterium oxide ($D_2O$) dilution method to estimate milk intake by pigs. A total of 39 piglets weaned from their dams 24 - 36 hours after birth and trained to drink from artificial nipples, were used for two experiments. Estimates of milk replacer consumption of individual piglets over 1, 3, 5 and 7 days were made by the $D_2O$ dilution method and by dissappearance. Milk intakes estimated by this $D_2O$ dilution method were significantly correlated ($R^2$ = 0.98-0.99) with milk intake measured by disappearance. The average difference between estimates by disappearance and estimates by the $D_2O$ dilution method were -1%, +0.5%, +0.5% and -2.1% for measurement period of 1, 3, 5 and 7 days respectively.
Dietary Variety Score (DVS) or Nutrient Adequacy Ratio (NAR) offers a way of comparing eating habits across populations and across countries. This study compared nutrients intakes, food intakes, DVS, and NAR between Korean and US adults using the large national survey data. 4662 Korean adults (men: 2201, women: 2461) aged 20-49 years were selected from the 'Korean National Health and Nutrition Survey,2001' and 4199 US adults (men: 2127, women: 2072) aged 20-49 years were selected from the 'US National Health and Nutrition Examination Survey (NHANES IV,1999-2002)'. The total plant food intakes were high in Korean adults, but the total animal food intakes were high in US adults. Intakes of legumes and nuts, vegetables and mushrooms were higher in Korean than in US adults. On the other hand, intakes of meats, milk and dairy products of US adults were higher than Korean. Beverage intakes were 8 - 10 times higher in US adults than in Korean. The mean DVS of Korean men and women were higher than US men and women. Intakes of fat, calcium and vitamin $B\_{2}$ of US adults were 1.5 - 2 times higher than those of Korean, which could probably related to larger consumption by US adults on milk and dairy product. While the intakes of carbohydrate and vitamin C of the Korean were higher than the US adults, which could presumably related to higher grain and vegetable consumption. Percent energy intakes from carbohydrate, protein, and fat were $64.1\%$, $15.8\%$, and $20.1\%$ for Korean men, $52.4\%$, $15.0\%$, and $32.6\%$ for US men, $65.9\%$, $14.9\%$, $19.2\%$ for Korean women, and $52.1\%$, $14.7\%$, $33.2\%$ for US women respectively, which showed higher $\%$energy from carbohydrate in Korean and higher $\%$energy from fat in US adults. Most nutrient intakes except energy and vitamin C expressed as $\%$RDA were higher in US than in Korean adults. Mean Adequacy Ratio (MAR) of US men and Korean men were both 0.85, while the MAR was 0.81 for Korean women,0.79 for US women. The Korean women's diet showed more diverse and adequate than the US women's diet.
Today’s teenagers were significantly deficient of calcium intakes, taking on the average only 55.4 percents of the recommended. Milk was the major source of calcium intakes, and therefore the school milk program need to be readdressed to remedy this problem. However, school milk program(SMP) was said to be simply the substitute for milk at home, so that no more than a minimal effect on total milk consumption be warranted. This Study aimed to find out whether or not the school milk program was an effective measure to increase teenager’s milk consumption and explored the relation between school milk and total milk consumption for 1,079 junior and senior high school students who were surveyed by questionnaire from 15th June to 15th July in 2006. A Tobit model was used for the statistical analysis. In this model, we first regressed milk consumption on 5 variables i.e. degree of satisfaction, participation in SMP, sex, school, region. But the variable region was not significant statistically. Then we regressed on 4 variables except for region. The results showed 4 variables were all significant and the marginal effect of variable ‘participation in SMP’ was 1.3. Especially, the marginal effect 1.3 means that the students participating in the school milk program consumed 1.3cups more than the non-participants, which indicated the effectiveness of school milk program to improve the calcium deficiency program of teenagers.
We assessed dietary patterns of 72 college students and 72 parents. The purpose of this study was to compare the difference in selected nutrient intakes and dietary atherogenicity between young and old generations. Three-day dietary records were used as a tool in collecting data and the diets were analyzed by the computer program Nutritionist IV. Average calori intakes of students and parents were 1,881.5kcal and 1,866.4kcal. Fat intakes were higher for students than those of parents, but problem intakes were higher for parents than those of students. Carbohydrate, protein and fat ratios in energy compositiion of students and parents were respectively 57.6:16.4:26.4 and 59.4:18.3:22.5. Students had slightly higher calcium intakes and consumed more milk exchanges than did parents, but students had lower values than parents when expressed as %RDAs for calcium. Our findings of higher consumptions of fat and sugar, lower fiber intakes, and higher atherogenic scores of diets such as cholesterol index, Keys score and Hegsted score in students than in their parents, would place our students at a higher risk for obesity and cardiovascular diseases.
Soybeans have been a major protein source for many centuries in Korea. Soybeans contain phytochemicals which are isoflavones, biochemically active component. Isoflavone is a kind of phytoestrogen, structurally and functionally similar to estrogen. It has been reported that the breast milk and blood of breast feeding mothers who consume soy products contain isoflavones. This study was conducted to investigate the effects of soy milk supplement on the isoflavones (daidzein, genistein) concentration of breast milk, plasma and urine from breast feeding woman. Seventeen healthy women who delivered at Kyung Hee Medical Center were recruited. For the first 2 weeks after delivery, seventeen women ingested 400 ml (isoflavone 43.2 mg) of soy milk on the given time starting from the day of giving birth. For the next 2 weeks, soy milk ingestion was withdrawn. Dietary intake and anthropometric data were checked and breast milk, blood, and 24 hr urine samples were collected on the day of giving birth, the 14th (the last day of the supplement phase) and 28th (the last day of the withdrawal phase) day, respectively. HPLC analysis was used to measure the concentration of isoflavones. Dietary intakes of the subjects were inadequate for the Korean RDA regardless of soy milk supplementation. Especially, intakes of vit A, calcium, and iron were very low. The Anthropometric data such as LBM, TBW, PIBW, BMI checked on the day of 14th decreased and maintained their levels by the 28th day. Daidzein concentration in breast milk was not affected by soy milk supplementation. However, genistein concentration decreased by the 28th day (14th day: 0.89 $\pm$ 0.10 $\mu$g/ml, 28th day : 0.48 $\pm$ 0.07 $\mu$g/ml) (p < 0.05). Plasma daidzein and genistein concentrations were not changed by the 14th day and decreased by the 28th day (14th day: 49.64 $\pm$ 3.30 ng/ml, 26.72 $\pm$ 2.90 ng/ml, 28th day: 38.30 $\pm$ 4.40 ng/ml, 6.51 $\pm$ 0.50 ng/ml, respectively) (p < 0.05). Twenty four hour urine concentrations of daidzein and genistein significantly increased by the 14th day and decreased by the 28th day (14th day: 5.80 :t 0.3 mg/d, 4.17 $\pm$ 0.2 mg/d, 28th day: 6.72 $\pm$ 0.4 mg/d, 5.09 $\pm$ 0.5 mg/d, respectively) (p < 0.001). The rate of urinary recovery of daidzein was greater than that of genistein. The results of this study indicate that the supplement of dietary soy milk to the lactating women elevates the contents of isoflavone in the breast milk.
