  • The purpose of this study was to estimate the sodium and potassium intakes and their metabolisms of preschool children, and to evaluate the relationship between the blood pressure and the related variables. The subjects consisted of ninety-five preschool children aged two to six years (male 57, female 38). Twenty-four hour urines of subjects were collected for the measurements of their volume, sodium, potassium, creatinine and urea nitrogen. At the same time, the questionnaire was designed to assess the sodium and potassium intakes. The' results obtained were as follows; 1) The urinary excretion of sodium in 24 hours was 54.6$\pm$22.4mEq(orI255.8mg)and dietary sodium intake was 2147.0$\pm$518.4mg. The dietary sodium intake significantly increased with increasing age(p=O.0151). However, daily sodium intake per unit body surface area did not show significant difference by age. 2)The urinary excretion of potassium in 24 hours was 14.2$\pm$7.6 mEq (or 555.2mg) and the potassium intake was 1133.8mg. 3) The urinary excretions of creatinine and urea nitrogen were 240.2$\pm$126.2mg and 2946.7$\pm$1693.9mg, respectively. 4) The principal food SOUTce of sodium intake was the seasoning group, which con\ulcornertributed 49.9% to total sodium intake. 5) The main food source of potassium intake was milk and milk products; from which 28.6% of total potassium intake was obtained. 6) The blood pressure showed highly positive correlations with height, weight and body surface area (p$\leq$O.OOl) . In addition, the blood pressure was found to be correlat\ulcornered with urinary sodium excetion and dietary sodium intake (p$\leq$O.Ol).

  • The purpose of this study was to investigate factors associated with Bone Mineral Density (BMD) in Korean postmenopausal women. The data from 2008-2010 Korean National Health and Nutrition Examination Survey (KNHANES) were used for data analysis. Subjects were 2,701 postmenopausal women aged ${\geq}50$ years. BMDs at whole body, total femur, femoral neck, and lumbar spine were measured by Dual-energy X-ray absorptiometry (DXA). Dietary data from 24-hour dietary recall and a food frequency questionnaire containing 63 food items were used. The proportions of osteopenia at total femur, femoral neck, and lumbar spine were 37.4%, 54.5%, and 45.4%, respectively. The proportions of osteoporosis at total femur, femoral neck, and lumbar spine were 6.2%, 25.6%, and 34.3%, respectively. Age, anthropometric index including height, weight, and Body Mass Index (BMI), parathyroid hormone, and physical activity were related to BMD, but the relationships were site specific. Total femur BMD was explained by age, weight, parathyroid hormone and intakes of carbohydrate and fruits. Femoral neck BMD was related to age, weight, parathyroid hormone and intakes of riboflavin and fruits. Lumbar spine BMD was associated with age, weight, milk and dairy products, calcium intake, and exercise. These results indicated that adequate intakes of milk and dairy products, fruits, carbohydrate, calcium, riboflavin and exercise as well as weight maintenance might play an important role in maintaining optimum bone health in Korean postmenopausal women.

  • The food consumption of 148 healthy infants from 4 to 6 months of age have been measured. Three groups were assigned to change of feeding pattern. Formula group(FF, n=102) were fed formula from birth till 6 months of age. Convert 1 group (C1F, n=14) and Convert 2 group (C2F, n=32) were fed breast milk and mixed milk at 2months of age afterthat switched to formula milk, respectively. All infants received solids (solid foods) from 4 months of age. No significant difference was found in the intake of nutrients among three feeding groups excluding carbohydrate intake of C1F-female at 4 months of age. No significant difference was found in the intake of nutrients among three feeding groups excluding carbohydrate intake of C1F-female at 4 months of age. The FF-female(70.9g/d) and C2F-female(66.9g/d) had significantly higher carbohydrate intake when compared to the C1F-female (54.3g/d). The average total energy intake at 4, 6 months were 648.3 and 709.7kcal/d among all infants. At 4 and 6 months of age, mean intake of nutrients was as follows. Calcium intake was 526.7mg/d and 760.0mg/d at 4 and 6 months of age respectively. Iron intake was 8.3mg/d and 10/5mg/d at 4 and 6 months of age respectively. Calories from solids provided 22.5% of total energy intake at 4 months of age, and nearly 32% at 6 months of age. The average energy and protein intakes of all infants were less than the RDA for calcium and iron at 4, 6 months of age.

  • The purpose of this study is to provide useful information which will aid in the promotion of nutritional policy in the Korean rural area which are derived from a survey of intake and source of protein in some Korean rural adults and the correlations between their protein nutrition and various nutrients, the uses of tobacco, alcohol, coffee, etc. The survey was conducted from July, 24 through July, 18, 1989. The healthy subjects were 45 males(average age 42.3, average BMI 22.1kg/m2) and 55 females (44 years, 21.2 kg/m2) residing in Sungjoo Kyun, Chulanam-Do, Korea. The subjects were examined for the anthropometric, food Intake and food habits. Their daily diets were measured by 24-hr recall method. The results can be summarized as follows : The daily mean protein intakes of male and female subjects were 9595 of RDA(66, 5g) (16. 7% of total food intake per day) and 102.3Bh of RDA(61g) (14.8% of total intake per day) respectively. The order of sources of animal protein in all subjects was fish(47.9%), meat(29.8%), milk (12%), and egg(10.3%). Among protein sources the intake frequencies of fork and chicken were higher than those of others. The protein nutrition of the subjects showed positive correlations with energy and fat, carbohydrate, fiber at the level of significance of 1%. The protein nutrition of the male subjects showed no correlation with age, BMI, uses of alcohol, coffee, medicine, but the plant protein nutrition showed a positive correlation with smoking and exercise(at 5%). And the protein nutrition of the male subjects showed no correlations with uses of tobacco, alcohol, coffee, medicine and their opinion of their present state of their health, but the age of the male subjects showed negative correlations with milk(at 1%) and egg(at 5%). In conclusion, the daily protein Intake was good and the main sources of animal protein were fishes in rural adults. The protein nutrition of the subjects showed a correlation with energy, fat, carbohydrate and in the case of female, milk and egg intakes showed the negative correlation with age.

  • This study was conducted to identify the characteristics of Korean diet in the view of food and food group intakes. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Rice was a major contributor to many nutrients intake because of the amount of consumption. Vegetable oil made great contribution to fat intakes and eggs, squid, and anchovy supplied much cholesterol compared to other foods in all the age groups. Milk was major contributor of fat and cholesterol as well as calcium in younger age group, and seasoning gave much contribution to iron intakes. Mean dietary variety score(DVS) was 32 for EC group and 17 for subjects over 70 years, and tended to decrease along the increasing age. EC group consumed most variable number of foods of all groups but they consumed many junk foods, therefore the MAR value was low despite their high DVS value. Mean dietary diversity score(DDS) of each age group from PC group to subjects over 70 years was 4.34, 4.28, 3.79, 3.89, 3.76, 3.56, and 3.25, respectively. Food group, which was consumed below the minimum amount, was mainly fruits in all the age groups, and many subjects in HS group and over 30 years consumed dairy products below the minimum amount. From these results, age specific nutritional problems were found. PC group and subjects over 50 years seemed to need more diverse food intake than now, EC group did nutrient dense food, and HS group and subjects over 30 years did dairy products. Also, subjects took various nutrients from rice and seasoning contributed to some nutrients intakes. (Korean J Nutrition 34(5) : 568∼579, 2001)

  • This study is conducted to compare the problems affecting dietary habits and health status between a long-term exercise group and non-exercise group of males older than 50 years. Most subjects of the two groups consider regular exercise to be the most important factor for maintaining health, and recognize hypertension as the number one concern. The most common nutritional supplement among subjects is multiple vitamins, and sleeping time range from 6~8 hours. Breakfast fasting rate was 15.9% among non-exercise group (NEG), where overeating and eating out rates were higher among exercise group (EG) when comparing to NEG. Fasting rates of breakfast, and consumption rates of milk and dairy products, vegetables such as kimchi, and fruits and fruit juices are higher among the EG. Overeating and eating out rates are lower among NEG, whereas eating rates of proteins like meat, fish, eggs, beans, fried foods, high-fat meats carbonated drinks, ice cream, and salt intakes are higher. Rates of health, dietary habits, and nutrient intakes are higher among EG. Energy intakes among the two groups were below the standard level, Vitamin $B_2$ intake is low in EG, and folic acid and calcium intakes were higher in NEG. The exercising group care more about health, eating habits and nutrient intakes, and low smoking rates are being observed. Thus, specific dietary improvement programs for adult men, are required, and it is necessary to consider the practice of nutrition education.

  • The health-related habits dietary behaviors and nutrient intakes of the elderly living in Cheongju were investigated by interviews with a questionnaire from August to September in 1996. The responses of 169 free-living elderly aged over 65(male 91, female 78) were analyzed. Thirty-six percent of the subjects smoked currently, 33$\%$, drank alcoholic beverages, and 52$\%$ exercise regularly. Exercise was mostly in the from of walking for $\frac{1}{2}$-1 hour. Significantly higher proportions of males smoked, drank, and exercised as compared to females. Food groups eaten at every meal were examined on a 5-point scale, and the consumption scores were compared with groups according to sex, age, smoking, drinking, and exercise habits. The elderly who exercised regularly got significantly higher scores in their calcium intakes and the variety of the 6 food groups than the elderly who did not exercise. The dietary assessment data showed that the energy intakes of males and females were 81.9$\%$and 72.8$\%$ of the RDAs, respectively. The proportions of the elderly consuming less than 75$\%$ of RDAs of vitamin A and calcium were 96.5$\%$ and 91.1$\%$ of the total subjects, respectively. Higher educational status, more pocket money and regular exercise had positive effects on nutrient intakes, while smoking and drinking among females, but not males, had negative effects. Therefore, to improve nutritional status of the elderly, intake of vitamin A-and calcium-rich food such as milk with regular exercise should be emphasized on the education program. • This study was conducted to investigate the effects of replacing whole crop corn silage (WCCS) with whole crop rice silage (WCRS) in the total mixed ration (TMR) on nutrient intake, milk yield and its composition in Holstein cows. The Chucheong rice variety (Oryza sativa L. Japonica) and corn (Pioneer 32 P75) were harvested at yellow-ripe stage and were ensiled in round bales and in trench silos, respectively. Two TMR containing either WCCS or WCRS were prepared. These diets were randomly assigned to 16 midlactating Holstein cows (8 cows per treatment) and were fed for 120 days. The first 20 days were used for dietary adaptation and for the next 100 days daily feed intake, milk yield and its composition were recorded. The pH, lactic acid, NDF, ADF, CP, Ca and P contents were similar in WCRS and WCCS. The DM, ash and EE contents of WCRS were greater compared with WCCS. Nutrient (DM, NDF, TDN and CP) intakes were similar in cows fed WCCS- and WCRS-based TMR. Daily and 4% fat corrected milk yield were not affected by the treatments. Milk composition (percent milk fat, protein, lactose and total solids) was similar in cows fed either WCCS- or WCRSbased TMR. The concentration of milk urea N was greater in cows fed WCRS-based TMR than those fed WCCS-based TMR. In conclusion, round-baled WCRS can replace WCCS in the diet of mid- to late-lactating Holsteins without any deleterious effects on feed consumption, milk yield and its composition. The present findings raise the possibility that WCRS can be used as an alternative roughage source in the diets of dairy cows in countries with surplus rice production.

  • Six Holstein$\times$indigenous multiparous dairy cows, $60{\pm}8$ days in milk, were used in a double $3{\times}3$ Latin square design to investigate the efficiency of milk production. The dairy cows were randomly allocated to total mixed rations (TMR) containing ground corn, ground corn plus cassava chips 50:50 and cassava chips as main sources of total non-fiber carbohydrates. Ether extract and calculated energy intakes for dairy cows fed TMR containing cassava chips were lower (p<0.05) than those fed TMR containing ground corn and ground corn plus cassava chips 50:50. There were no differences (p>0.05) in daily DM intake (3.51, 3.41 and 3.29% BW), in 4% fat corrected milk (19.66, 20.59 and 20.23%), in milk protein (3.37, 3.27 and 3.33%), and in solids-not-fat (9.03, 8.90 and 8.99%) but there were differences in cost of diets per kg of 4% fat corrected milk (40.75, 34.33 and 28.17%; p<0.01) for dairy cows fed TMR containing ground corn, ground corn plus cassava chips 50:50, and cassava chips. It can be concluded that the efficiency of milk production (4% fat corrected milk per dry matter intake) for dairy cows fed TMR containing cassava was greater than for those fed TMR containing corn.
