This work was to study the potential use of germinated and microwave-vacuum-dried brown rite as a raw material for enzyme food. Brown rice was soaked in water at $15^{\circ}C$ for 2 days and then germinated at $25^{\circ}C$ for 4 days. The germin ated brown rice was then dried by different drying methods: microwave vacuum drying 1(drying only), microwave vacuum drying 2 $(drying{\rightarrow}crushing{\rightarrow}drying)$, hot air drying, vacuum drying and freeze drying. Each drier except freeze drier was set to maintain the sample temperature to be $60^{\circ}C$. During microwave vacuum drying 1 and 2 the sample reached $60^{\circ}C$ much faster (5 min) and was dried much faster (2 to 3 hrs for microwave vacuum drying 1 and 2 than the other drying methods. The initial drying rate of microwave vacuum drying was ten times faster than that of hot air drying. The microwave vacuum drying produced a dry sample of the highly retained enzymic activity, followed by freeze drying, vacuum drying and hot air drying.
Changes in saponin composition and microstructure of ginseng by microwave vacuum drying were determined. Korean fresh ginsengs were subjected to four different processing : 3 min microwave vacuum drying and 2 min holding-24 hrs drying (MWVD1), 5 min microwave vacuum drying and 2.5 min holding-24 hrs drying (MWVD2), 3 min microwave vacuum drying and 2 min holding-12 hrs drying after hot air drying for 12 hrs drying at $45^{\circ}C$ (HMWVD1), 5 min microwave vacuum drying and 2.5 min holding-12 hrs drying after hot air drying for 12 hrs at $45^{\circ}C$ (HMWVD2). The water content was decreased until 16.82% without shrinkage and water activity was 0.54 after microwave vacuum drying. The lipid content was decreased after microwave vacuum drying (MVD). Glucose was increased after MVD while sucrose decreased. Ginsenoside-Rb1 and ginsenoside-Rc were decreased after MVD. Ginsenoside-Rg1 for MWVD2 and HMWVD2 was higher than that of MWVD1 AND HMWVD1. MWVD1 AND HMWVD1 dried ginsengs showed a more compact structure than the HMWVD2 and HMWVD2 ginsengs.

The specific objectives of this study were to dry yam chips using microwave vacuum drying, freeze drying and hot air drying, then to coat the dried yam chips with ascorbic acid cocrystallized sucrose, and finally to compare the quality of yam chip snack foods with respect to drying and coating characteristics. The microwave vacuum dried sample showed the highest drying rates and much less surface damage than the hot air dried one did. The shape and color of the microwave vacuum dried/coated sample were allocated between those of the freeze dried/coated sample and the hot air dried/coated sample. The freeze dried/coated sample scored excessively low in organoleptic hardness and chewiness to be suitable as a snack. The hot air dried/coated sample was too deep in color, wrinkled, excessively high in organoleptic hardness and chewiness, and excessively low in mouthfeeling. Therefore, the microwave vacuum dried/coated sample presented the best overall attributes as a snack, with respect to organoleptic characteristics, shape, color, and drying rates.

In Jeju province, the Citrus is widely spread crop which is the most popular fruit on the island. When the quality of a Citrus is not in a good condition or when its size exceeds or is lower than the set criteria, it is discarded as a waste. In this study, a drying machine for waste Citrus has been developed with 2.6 GHz microwave energy supply to the Citrus at vacuum environment. The vacuum environment of the drying chamber was maintained to reduce the energy supply to the Citrus by lowering the evaporating temperature of the water. The experiment was conducted with variation of the vacuum pressure, interior temperature of the drying chamber, and operating time of the microwave. As a result, the effect of the temperature was shown to be higher than the other two control methods, and it showed with 0.305 g/W evaporation efficiency.
A microwave vacuum (MW/V) dryer was developed for drying short roundwoods, from which woodcraft souvenirs in Korean market are mostly made, and which were hardly dried without defects in a conventional kiln. It consisted of three 1.5 kW magnetrons of 2,450 MHz, a vacuum pump, a load cell of 100 kg and a cavity of $580{\times}580{\times}1,360\;mm^3$. A computer program was developed to switch on or off the magnetrons according to drying schedules, those were based on microwave injection time or the average of wood temperatures. To evaluate the new MW/V dryer the roundwood specimens of rigida pine, poplar and birch were dried. Their log diameters and lengths ranged from 125 to 25 em and from 25 to 50 cm, respectively. In spite of the presence of minor drying defects, the MW/V drying is found to be an effective method for drying short roundwoods. Wooden turneries made of red alder and ash logs were also MW/V dried from green to 4%MC without any degradation. The rates of the MW/V drying were examined for three different lengths of poplar logs.

As interest in lunar exploration increases, studies on lunar surface environment simulation including a lunar soil simulant are being conducted. One of the problems when creating a vacuum environment with lunar soil is that it takes long time to reach high vacuum due to outgas from the soil. Most of the outgas is water, and the time to reach high vacuum can be significantly reduced by a pretreatment process that removes moisture adhering to the surface of the lunar soil before putting soil into a vacuum chamber. The existing soil drying methods were examined to determine how these methods were effective to remove moisture from the lunar simulant soil. Drying experiments of lunar soil samples were carried out using a dry oven, a microwave oven, direct heating method and a vacuum oven, and the results of the drying experiment were presented. Drying soil at 110℃ using a dry oven and drying soil by a microwave oven were not enough to remove moisture, and vacuum oven drying method and direct heating drying method at more than 200℃ were effective in water removal.

The purpose of this study was to develop the high efficiency of ginseng by using microwave low temperature vacuum drying technology. In red ginseng manufacturing processes, the study results compared the hot-air drying red ginseng dried during 24hours in $60-70^{\circ}C$ and redried during 72hours in $40^{\circ}C$ after the steaming ginseng with the red ginseng dried in microwave low temperature vacuum dryer on condition that 900 watt, 2.45 MHz, 50 mmHg during 5 hours and redried during 2 hours on 750 mmHg after the steaming ginseng about observation of tissue, sensory evaluation and a change of ginsenoside and crude saponin content. As a result, the red ginseng in microwave low temperature vacuum was had high brightness, the surface turned into porosity tissue and added more flavor, decreased bitterness highly on the contrary increased sweetness at the same time that elevated the comprehensive preference. Moreover, In a short time, the content of ginsenosides $Rg_1$ and $Rb_1$ increased about sixfold, eightfold in one time zone but there were no wide difference in content of $Rg_3$ as compared to the hot-air drying red ginseng. Finally, content of crude saponin was increased widely at 10-20 minutes and stayed high crude saponin content consistently. Therefore, this result indicated that the red ginseng in microwave low temperature vacuum increased extraction yields of the ginsenosides and crude saponin through a change of porosity tissue and improved flavor and texture compare with the general hot air dried red ginseng in a short time. According to these results, that provided that could increase the preference about red ginseng.
For the purpose of improving quality of dried anchovy, raw anchovies after hot air drying were subjected to six different processes: 5 min microwave and 1 min holding-12 times (MW5), 10 min microwave and 1 min holding-6 times (MW10), 5 min microwave with hot air and 1 min holding-12 times (MWH5), 10 min microwave with hot air and 1 min holding-6 times (MWH10), 5 min microwave vacuum and 1 min holding-12 times (MWV5), 10 min microwave vacuum and 1 min holding-6 times (MWV10) at 100 Watt and 2450MHz. There were no significant effects of different processes on water content, pH, color, acid value and volatile basic nitrogen. The sum of fatty acids on commercial anchovy occupied 38.34% of saturates 22.91% of monoenes and 22.91% of polyenes and dried anchovies subjected to microwave processes had similar compositions. Dominant fatty acids were palmitic acid and docosahexaenoic acid in each process. Among the free amino acids, alanine, arginine, lysine and leucine were dominant in all processes. Dried anchovies showed little significant differences in texture in all processes. Sensory evaluation data showed that the quality of dried anchovy subjected to microwave process was acceptable and microwave vacuum process was the most desirable one.
