대학생의 즉석섭취식품류 소비 실태와 김밥류의 미생물학적 품질 평가 (A Survey on the Ready-to-Eat Foods' Consumption Practices of University Students and Microbiological Quality Assessment of Kimbab)

  • This study was conducted to investigate the consumption practices of ready-to-eat (RTE) foods and to analyze the microbiological hazard of kimbab, a Korean dish, and the most popular of the RTE foods eaten by participants in this study. A questionnaire was distributed to 230 university students who had previously purchased RTE foods, and 224 were collected (response rate: 97.4%). Statistical analyses were conducted on the questionnaires using the SPSS program, and a total of 135 kimbab products were sampled for aerobic plate counts, coliforms, E. coli, E. coli O157:H7, Staphylococcus aureus, Salmonella spp., and Listeria monocytogenes. The results of the analyses are as follows. Kimbab (87.0%), sandwich (86.4%), hamburger (89.8%), lunchbox (81.5%), and sushi (87.4%) were most often eaten immediately after purchasing. Additionally, the results of the microbiological hazards analysis of kimbab showed that the aerobic plate counts were significantly different according to the purchasing price (p<0.01). The coliform levels were significantly different according to the place of purchase (p<0.01) and the major ingredients of kimbab (p<0.05). In addition, Staphylococcus aureus and E. coli were detected in 5.9% and 5.2% of the tested samples, respectively. However, E. coli O157:H7, Salmonella spp., and Listeria monocytogenes were not detected in any of the samples. In conclusion, the manufacturers of RTE foods should apply the HACCP system for food safety.

병원 급식시설의 미생물적 품질관리를 위한 전산 프로그램개발에 관한 연구 (Development of a Computer-Assisted Microbiological Quality Assurance Program for Hosipital Foodservice Operations)

  • A computer-assisted microbiological quality assurance program was developed based on HACCP data obtained from a 500 bed general hospital by assessing time and temperature conditions and microbiological qualities of six categories of menu items according to the process of food product flow. The purpose of the study was to develop a computer-assisted microbiological quality assurance program in order to simplify the assessment procedures and to provide a maximum assurance to foodservice personnel and the public. A 16-Bit personnel computer compatible with IBM-PC/AT was used. The data base files and processing programs were created using dBASE III plus packages. The contents of the computerized system are summarized as knows: 1. When the input program for hazard analysis runs, a series of questions are asked to determine hazards and assess their severity and risks. Critical control points and monitoring methods for CCPs are identified and saved in Master file. 2. Output and search programs for hazard analysis are composed of 6 categories of recipe data file list, code identification list, and HACCP identification of the specific menu item. 3. When the user selects a specific category of recipe from 6 categories presented on the screen and runs data file list, a series of menu item list, CCP list, monitoring methods list are generated. When the code search program runs, menu names, ingredients, amounts and a series of codes are generated. 4. When the user types in a menu item and an identification code, critical control points and monitoring methods are generated for each menu item.

병원급식의 미생물적 품질보증을 위한 HACCP 전산프로그램의 개발 (The Development of a Computer-Assisted HACCP Program for the Microbiological Quality Assurance in Hospital Foodservice Operations)

  • This study was carried out to develop the computer-assisted Hazard Analysis and Critical Control Point (HACCP) program for a systematic approach to the identification, assessment and control of hazards for foodservice manager to assure the microbiological quality of food in hospital foodservice operations. Sanitation practices were surveyed and analyzed in the dietetic department of 4 hospitals. Among them, one 762-bed general hospital was selected as standard model to develop computer-assisted HACCP program. All data base files and processing programs were created by using Foxpro package for easy access of HACCP concept. HACCP program was developed based on the methods suggested by NACMCF, IAMFES and Bryan. This program consisted of two parts: the pre-stage for HACCP study and the implementation stage of the HACCP system. 1. Pre-stage for HACCP study includes the selection of menu item, the development of the HACCP recipe, the construction of a product flow diagram, and printing the HACCP recipe and a product flow diagram. A menu item for HACCP study can be selected from the menu item lists classified by cooking methods. HACCP recipe includes ingredients, their amount and cooking procedure. A flow diagram is constructed based on the HACCP recipe. The HACCP recipe and a product flow diagram are printed out. 2. Implementation of HACCP study includes the identification of microbiological hazards, the determination of critical control points, the establishment of control methods of each hazard, and the complementation of data base file. Potentially hazardous ingredients are determined and microbiological hazards are identified in each phase of the product flow. Critical control points (CCPs) are identified by applying CCP decision trees for ingredients and each process stage. After hazards and CCPs are identified, criteria, monitoring system, corrective action plan, record-keeping system and verification methods are established. When the HACCP study is complemented, HACCP study result forms are printed out. HACCP data base file can be either added, corrected or deleted.

보육시설급식소의 HACCP시스템 적용을 위한 미생물적 품질평가 II. 비가열조리 공정을 중심으로 (Microbiological Quality Evaluation for Implementation of a HACCP System in Day-Care Center Foodservice Operations II. Focus on Non-Heating Process)

  • The objective of this study was to evaluate the microbiological quality of non-heat-processed foods for implementation of a HACCP (Hazard Analysis and Critical Control Point) system in day-care center foodservice operations. The evaluating points were microbial assessment of foods, utensils, and employee's hands during preparation, cooking, and serving. The temperature of non-heated food being served was also measured. Microbiological quality was assessed using 3 M Petrifilm/syp TM/ to measure total plate count and coliforms for food and utensils and Staphylococcus aureus for hands in five Gumi day-care centers. Results showed low microbiological quality of non-heated foods. This was probably due to contaminated raw ingredients and cross-contamination that occurred during preparation and cooking (e.g., unsatisfactory washing and disinfection of raw materials and utensils). These results suggest that it is essential to educate employees on good personal hygiene (hand washing) , prevention of cross-contamination through use of properly washed and sanitized utensils, and proper washing and disinfection of raw vegetables. Establishing Sanitation Standard Operating Procedures (SSOPs) are an essential part of any RACCP system in day-care center foodservice operations.

고등학교 위탁급식에서 이용되는 식재료의 전처리 유무에 따른 품질 연구 (A Study on the Quality Depending on Preparing of Food in High School Contract Food Service.)

  • With the rapid growth of high-school food service in a short period as a result of the extensive implementation of school service, contract food service as well as the use of pre-prepared food ingredients has been increased. The purpose of this study was to evaluate the time required in various phases of product flow, temperature, pH, Aw, microbiological quality of foods served in high school in Seoul area and to analyze the hazardous factors to find out efficient control methods. Comparison was made between the schools using prepared food and raw materials in terms of microbiological quality. However, no distinguishable difference in the quality of foods was found between them. Therefore, the use of prepared food seemed no impose more hazard than using raw materials.

대학생 대상 급식시설의 김밥 생산과정에 따른 계절별 미생물적 품질평가 (The Seasonal Microbiological Quality Assessment of Kimbap(seaweed roll) Production flow in Foodservice facilities for Univ. students - HACCP model -)

  • The purpose of this study was to evaluate the microbiological quality of, and to assure the hygienic safety of, the kimbap production in the university foodservice facilities in accordance with the HACCP (Hazard Analysis Critical Control Point) Program. The time-temperature relationship and the microbiological quality (specifically, total plate count and coliform bacteria count) were assessed to find the critical control point (CCP) during each of the production phases. The average of the daily longest duration time of the kimbap at the facilities was 23.4 hours in summer, while 29.6 hours in winter. In the purchasing phase of the raw materials, the microbiological quality of laver, fish paste, carrot and cucumber in summer was not at an acceptable level according to the standard set by the Natick research center, especially the number of TPC and the coliform level of laver was higher than the threshold level. In the refrigerator storage phase, the temperature of the carrot was 7.4$^{\circ}C$. This temperature is far exceeding the standard so that the microbiological counts was increased by the 2 log cycle during the average storage time of 17 hours or more. In the preparation phase, the temperature of the blanching is too low compared to the standard. In the holding phase before serving, its time-temperature relationship was out of the FDA food code standard both in winter and summer. In the sewing phase, the number of microbiological count was higher than the threshold level in summer while that in winter was up to standard. According to the Harrigan and McCance standard, the number of microbiological count of the utensils was higher than the threshold level in summer while that in winter was up to standard.

유치원 급식시설.설비에 대한 미생물학적 위해분석 (Microbiological Hazard Analysis of Foodservice Facilities and Equipment at Kindergarten Foodservice Establishments)

  • 유치원 급식소 위생관리의 문제점을 파악하고 그에 대한 개선방안을 모색하고자 대구 경북지역 유치원 급식소를 대상으로 급식시설 설비 및 조리환경에 대한 미생물학적 위해분석을 2008년 5월에서 7월 사이에 실시한 결과는 다음과 같다. 조사대상 급식소에서 일반세균수와 대장균군수의 한계관리기준을 초과하여 관리되고 있다고 분석된 항목은 전처리용 칼, 조리용 칼, 조리용 도마, 전처리용 작업대, 조리용 작업대, 냉장고(안), 바트, 바구니, 식판 등 총 9개 항목이었다. 이 중 부적합율이 높은 항목은 조리용 도마(37.5%), 조리용 작업대(37.5%), 전처리용 작업대(33.3%)의 순이었다. 조사대상 유치원 급식소의 모든 검체에서 대장균과 리스테리 아균, 살모넬라균은 검출되지 않았으나, B 급식소의 조리용 고무장갑과 트렌치에서 황색포도상구균이 검출되었다. 조사대상 급식소의 공중낙하균 검사결과 일반세균수는 관리권고기준 이하로 적합한 수준이었고, 황색포도상구균은 모든 검사구역에서 검출되지 않았으나 한 곳의 급식소 조리실에서 진균수가 관리권고기준 이상으로 검출되었다. 위의 연구결과를 종합해볼 때 유치원의 급식관리자는 미생물학적 위해분석 결과 부적합하게 관리되고 있다고 분석된 전처리용 칼, 조리용 칼, 조리용 도마, 전처리용 작업대, 조리용 작업대, 냉장고(안), 바트, 바구니, 식판, 음용수, 조리용 고무장갑, 트렌치 등 총 12개 항목에 대한 위생관리를 우선적으로 개선할 필요가 있다고 판단된다. 또한 조사대상 급식소의 위생관리 현장심사 평가 결과 양호하다고 평가된 항목에 대한 미생물 검사 결과 한계관리기준을 초과하는 경우가 있었으므로 급식소의 위생관리 평가 시 현장심사와 함께 주요한 미생물 수준 부적합 항목에 대한 미생물 검사를 병행할 필요가 있다고 생각된다. 그리고 유치원 급식소의 위생관리 수준 개선을 위해 급식소 운영 특성을 고려한 위생관리지침서를 개발 보급하고 급식관리자는 최종 조리음식에 대한 교차 오염과 식중독균의 혼입을 방지하기 위해 위생관리지침서를 올바르게 적용해나가야 할 것이다. 이와 함께 우리나라 급식소 환경에 적용하기에 적합한 조리시설 설비의 미생물수준 및 공중낙하균에 대한 한계관리기준을 마련하기 위한 후속 연구도 활발하게 진행될 필요가 있다고 판단된다.

어린이집 급식실 정수기의 미생물학적 오염 평가 (Prevalence of Microbiological Contamination on Water Purifiers at Lunchroom in Child Care Center)

  • In this study, the prevalence of microbiological hazard on water purifiers at lunchroom in child care center was investigated. A total of 49 water purifiers and their purified cold water were sampled to test about the total aerobic bacteria, coliform bacteria, Bacillus cereus, Staphylococcus aureus, and Salmonella spp. Total aerobic bacteria was detected over 2.0 log CFU/mL in 6 out of 49 purified cold water (12.2%), ranged from 2.0 to 2.4 log CFU/mL, and the average number of total aerobic bacteria was showed to be 3.3 log CFU/drain spout. The drain spout turned out to be a major contaminant in water purifier and needs to be improved. Coliform bacteria were also detected in 7 out of 49 cold faucets (14.3%) and 7 out of 49 drain spouts (14.3%), but not detected in purified cold water. All samples were not contaminated with the pathogens tested in this study, except for B. cereus, which was contaminated on 2 out of 49 cold faucets (4.1%) and 4 out of 49 drain spouts (8.2%). All of B. cereus isolates produced enterotoxin, such as heamolysin BL enterotoxin (HBL) or non-heamolytic enterotoxin (NHE). The HBL was detected in 5 out of 6 B. cereus isolates (83.3%), including B. cereus PCF-11 and B. cereus PDS-30 isolate only produced NHE (16.7%). These results showed that the sanitary conditions of cold faucets and drain spouts should be improved promptly.

조미김의 HACCP 시스템 구축을 위한 생물학적 위해도 평가 연구 (A Study on Microbiological Risk Assessment for the HACCP System Construction of Seasoned Laver)

  • Objectives: The purpose of this study was to apply the Hazard Analysis Critical Control Point (HACCP) system to the production of seasoned laver products. The hazard analysis examined microbial evaluations and developed a HACCP management plan through the heating process. Methods: In this study we chose three companies and performed the analysis thrice. During this study, general bacteria along with other food poisoning bacteria such as Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus, E.coil, O157:H7, Vibrio parahaemolyticus, were studied at varying temperatures from 100 to $300^{\circ}C$. Results: The presence of general bacteria was detected in raw laver in the samples analyzed from all the three companies, and the number ranged from $10^5-10^7$. Bacillus cereus was detected in samples from only two of the three companies analyzed. However, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, E.coil, O157:H7, and Vibrio parahaemolyticus were all negative. General bacteria was reduced to $10^5$ after being subjected to temperatures of $100-250^{\circ}C$, but heating to over $270^{\circ}C$ reduced the number to below $10^3$, and the other microbes such as Bacillus cereus were not detected. Conclusions: In conclusion, the heating process ($270-280^{\circ}C$) along with RPM of 100-1200 were identified as CCP to reduce biological hazards.

대전지역 일부 재래시장과 대형마트에서 시판되는 반찬류의 미생물학적 위해도 분석 (Microbiological Hazard Analysis of Commercial Side Dishes Purchased from Traditional Markets and Supermarkets in Daejeon)

  • 본 연구는 시판되는 반찬류의 오염도를 조사하기 위하여 대전지역 재래시장과 대형마트에서 시판되는 반찬 중 소비자들이 선호하는 생채류 3제품, 볶음류 2제품, 조림류 4제품, 장아찌류 5제품, 김치류 2제품, 젓갈류 3제품으로 총 19제품을 대상으로 총균, 대장균군에 대하여 미생물학적 위해도를 분석하여, 시판 반찬류의 문제점을 살펴보고자 하였다. 총균의 오염수준은 재래시장 $1.85{\sim}6.21$ log CFU/g, 대형마트 $<1{\sim}6.77$ log CFU/g을 나타내었다. 대장균군에서는 진미채볶음에서만 4.82 log CFU/g의 대장균군이 검출되었다. 총균에는 부패단계에 해당하는 제품은 없었으나, 대장균군에서는 진미채볶음이 기준치 이상으로 검출되었다. 결론적으로 시중에서 판매되고 있는 반찬류의 위생상태는 좋지 않은 것으로 판단된다. 따라서 식품의 제조단계에서 원료의 세척 및 제조, 가공과정에서 오염되지 않도록 철저히 하고, 유통 및 최종 판매 단계까지 냉장온도 관리를 철저히 하여 미생물의 재오염이 일어나지 않도록 하면 식중독을 일으키는 미생물의 위해도를 감소시킬 수 있을 것으로 사료된다.
