중국 북경지역 대학 급식소 고객의 급식선택속성에 대한 중요도와 만족도 평가 (Evaluation of Perceived Importance and Satisfaction of Foodservice Selection Attributes in University Students in Beijing, China)

  • 중국 북경지역 대학 급식소의 음식과 서비스 품질 개선 방안을 마련하고자 중국 북경지역 3곳의 대학 급식소를 이용하는 고객 총 619명을 대상으로 설문조사 하여 통계분석 한 결과 조사대상자는 남자가 53.5%, 여자가 46.5%였고, 평균 연령은 만 23세였다. 전체 응답자 중 하루 세끼 식사를 하는 비율은 전체의 85.3%였고, 대학 급식소에서 점심을 하는 비율은 1주일에 평균 5회 이상인 경우가 전체의 85.5%였다. 그리고 점심비 평균은 5위안(원화 905원) 초과에서 8위안(원화 1,448원) 이하가 전체의 51.7%로 가장 많았으며 대학 급식선택속성에 대한 IPA(Importance-Performance Analysis) 결과 우선으로 개선이 필요하다고 평가된 항목은 '음식의 맛', '음식 재료의 신선도', '메뉴의 다양성', '식사 대기시간'과 '화장실의 청결' 등이었다. 그리고 조사대상자의 특성에 따른 급식선택속성 요인의 만족도 차이 분석 결과 '음식의 질과 메뉴' 요인에 대한 만족도는 평균 급식비가 8위안(1,448원) 초과한 그룹이 다른 그룹에 비해 유의적으로 낮았고(P<0.05), '물리적 환경' 요인에 대한 만족도는 대학 급식소에서 점심을 1주일 평균 4회 이하로 하는 그룹이 5회 이상 식사하는 그룹에 비해 유의적으로 낮았다(P<0.05). 또한 '서비스 질' 요인에 대한 만족도는 매일 대학교 급식소에서 점심식사를 하는 그룹이 다른 그룹에 비해 유의적으로 높았으며(P<0.05), '편리성과 가격' 요인에 대한 만족도는 평균 급식비가 5위안(905원) 이하인 그룹이 다른 그룹에 비해 유의적으로 높았다(P<0.05). 따라서 중국 대학 급식소의 급식관리자는 급식소 이용 고객의 만족도를 증대시키기 위해서 음식의 질 개선과 함께 적정한 가격에 다양한 메뉴를 제공하는 방안을 적극적으로 모색해야 할 것이다.

덮밥류 편의식에 대한 효과적인 소비자 조사 기법 비교연구 (Investigating the Efficiency of Various Consumer-acceptance Testing Methods while Developing a Ready-to-eat Meal)

  • 전반적으로 모든 소비자 군에서 카레덮밥을 가장 선호 하였으나 불고기덮밥은 20대 남자 소비자가, 해물덮밥의 경우 30대 여자 소비자가 선호하는 것으로 나타나 소비자 군에 따라 수용도의 차이를 보였다. 특히 곤약잡채와 해물 덮밥에 대한 소비자 평가는 연령에 따라 상이한 것으로 분석되었다. 9점 기호척도와 BWS의 결과가 유사하였으나 BWS의 경우 시료간의 선호도 차이를 더 확연히 나타냈다. 주관식 응답 설문 기법은 정량화하기는 어려우나 구체적인 개선 방안을 제시하기도 하여 의사 결정의 자료로 사용하기 보다는 제품의 개선 시 개선 방향에 대한 참고 자료로 유용할 것이라 판단된다.

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

한식상차림의 식기배치 분석 (Analyzing Tableware Arrangement in Korean Table Settings)

  • The purpose of this study is to analyze external elements of 'time series table serving' and to discover any problems in the table setting. We selected two traditional Korean restaurants in five-star hotels and two representative traditional Korean style restaurants and analyzed the tableware arrangement of their table settings. The results are as follows. In restaurant A, the arrangement of different styles of tableware made from a variety of materials seemed relatively natural. However, the dessert plates were 'Buncheong' ware made with 'Bakji' method; in this case, the pattern was larger than the size of the fruits served and made the food inconspicuous. Rather than using plates made with a 'bakji' method, using plates with small patterns in the 'johwa' method would complement the food. In restaurant B, the space between the tableware, spoon and chopsticks was narrow, and the spoon and chopsticks sets would not fit on the table pads when large dishes or multiple dishes were served. In this case, changing the dishes to smaller sized dishes, considering the size of the table pad, or not using the pad at all would solve the issue. In restaurant C, too many small dishes were laid on the table, making it look disorderly. We believe that recovering tableware that is no longer in use, laying dishes and cutlery inside of the table pads or not using the table pad would be better. In restaurant D, the same style and color of dishes were provided 9 times. The lack of variety could be tedious to customers. The forms and colors of dishes should be changed in accordance with the order of the meal served. However, when using tableware created by different methods such as 'Buncheong' ware or white porcelain, the same pattern should be chosen in order to elevate the dignity of the table menu through uniformity. These issues in tableware arrangement indicate that external forms of banquet table setup should be studied so that the culture of Korean traditional cuisine can be enriched.

백령도 주둔 신세대 장병의 군급식 만족도 및 식행동 (Satisfaction of Foodservice and Eating Behavior of Male Military Personnel in Backryung-do)

  • The purpose of this study was to provide basic references in order to improve the quality of military foodservice by investigating the eating behavior, preferred items for improvement and foodservice satisfaction of male military personnel in Backrung do. A total of 213 male military personnel (66 sergeants, 44 corporals, 80 privates first class and 27 privates third class) responded to a survey questionnaire. Frequencies, t tests, analysis of variance, and Cronbach's alpha, were carried out by SPSS Win V.18.0. The results of the study were as follows. The satisfaction level of military foodservice was slightly below 3 out of 5 points, and Korean cuisine was the favorite food. Military male personnel preferred frying and stewing as their favorite cooking methods. Sixty-six percent of subjects answered that their favorite principal ingredients were meat and fish. Therefore, as young soldiers' taste preferences were westernized, proper nutrition education programs for good health are needed. Further, the current military dining environment should be changed into a quiet and neat atmosphere, with clean dishes, nutritious meal items, and quick and proper serving methods, etc. Based on the results above, military authorities should develop an adequate menu for the male military personnel at Backrung do military base that includes a variety of foods, and cooking methods.

위탁급식업체의 급식유형별 고객만족도 비교 (Comparison of Customer Satisfaction by Type of Foodservices in a Contract Foodservice Company)

  • The purpose of this study was to gauge customers' satisfaction with the hospital, university, factory, and office foodservices from a contracted provider. Importance-performance analysis (IPA) evaluations were conducted. Questionnaires were returned from 1,808 customers in 46 foodservice locations. The average total scores of the importance and performance of seventeen quality characteristics were 4.14 and 3.23, respectively, on 5-point scales. The average total score of gap (gap = performance - importance) was -0.92. Analysis of significant difference according to the type of foodservices revealed that, hospital foodservices had more items with significant high scores than those of other groups in the average total scores concerning importance (p<0.01) and performance (p<0.01). The average total scores of gap showed no significant difference. Significant differences were evident in the food and personal service dimensions, and the scores of hospital foodservices trended significantly higher than those of other groups. Importance-performance analysis (IPA) analyses for hospital foodservice implicate 'variety of menu', 'cleanness of dishes', and 'taste of food' as items requiring prompt attention and improvement.

사용자 경험에 기초한 디지털 TV EPG 채널 정보구조 설계 (Design of EPG Information Architecture on Digital TV based on User's Experience)

  • 본 연구는 사용자의 경험에 의해 형성된 인지된 정보구조를 TV EPG 시스템에 적용한 것이다. EPG 시스템은 사용자에게 다양한 TV프로그램 시청 기회를 제공하는 반면에 기능 중심의 정보구조는 사용자가 원하는 채널 탐색 시 어려움을 가중시켰다. 이와 같은 이유는 EPG 시스템의 UI가 사용자의 인지된 정보구조와 일치하지 않은 메뉴정조를 제공하고 있기 때문이다. 이에 따라 본 연구에서는 사용자 경험 중심의 방법론 제시하였고, 사용자 중심의 EPG 시스템의 정보구조 설계 방향을 제안하였다. 이와 같은 연구결과는 디지털 TV 전자 프로그램 가이드 설계를 위한 새로운 접근방법론에 기여할 것이다.

재가노인을 위한 가정배달 급식관리체계 및 급식서비스 현황 조사 (Foodservice Management Systems of Home-Delivered Meal Service Program for Home-Bound Elderly)

  • The purposes of this study were to : a) examine the current foodservice management practices of twenty-one seniors centers in charge of hoke-delivered meal programs, b) evaluate the attitudes of one hundred and ten recipients of meal service program, and c) provide feedback for the efficient and effective foodservice management for the elderly. Statistical data analysis was completed using the SAS package program for descriptive analysis, T-test, and ANOVA. The results of quantitative analysis indicated that the costs of meals, containers and special foods were mostly dependent on the support from local government(Seoul city). The centers where the volunteers were over seventy five p ercent of the workers were frtty-eight percent and sixty-seven percent of the subjects in food preparation and food delivery to the homebound clients, respectively. Meal preparation and food purchasing were mainly practiced by social welfare worker. Standardized recipes were not developed and meal preparation was controlled under the cook' and volunteers' experiences. The survey results of recipients who participated the home-delivered meals program showed that the mean of meal satisfaction score was rated over three point five in the five-point scale. There were significant differences between dependent variables(volunteer's kindness, plate waste, menu variety) and independent variables(sex, receiving periods and family type of the subjects). 도시지역 직장남성의 외식 행동에 관한 연구 (A Study of Dining Out Behaviours of Businessmen in Urban Regions)

  • This study was to investigate dining behaviours of 420 businessmen living in urban regions (Taegu, Gumi, Young-Chon and Chang-Won) in Kyungbuk and Kyungnam. This survey was carried out by questionnaires. The results were summarized as follows; Among all respondents, dining out once a day was most frequent. Education (p<.05), age (p<.001) and marital status (p<.001) were significant. Socialization was the most frequent reason for dining out. In the choice of food, Korean food was the most frequent (68.1%). Taste (41.4%) was the most frequently cited reason for food selection followed by variety of food (18.8%) and price (8.8%). The respondents favorite foods were: Korean food; Doen Jug Soup (31.9%); Western food; Pork Cutlet (47.6%); Chinese food; Gan Ja Jang (31.2%); Flour-bared food; Kal Gook Su (55.4%), and Fast food; Ramen (26.4%). The most frequent choices of where to eat were the company cafeteria for lunch and Korean restaurant for dinner (p<.001). Responses to inquires concerning sanitation, facilities and service were mostly "normal". They wanted lower price (30.5%), a more variable menu (24.8%), and more vegetables and fruits (18.1%) in restaurant and cafeteria food. Age (p<.05) and marital status (p<.001) were statistically significant.

서울지역 대학생의 점심식사 실태에 관한 연구 (A Study on Lunch Meal Practice of the College Students in Seoul Area)

  • This study was conducted for the purpose of practice of nutrition education and dietary intake for college students. This survey was carried out through a variety of questionnaires by the subjects which consist of 249 male and 208 female college students in Seoul area. The results obtained were summarized as follows; 1. 75% of the subjects lived in their own houses; the monthly personal expenses were $110{\sim}200$ thousand wons. The appetite of the students who answered was normal in general. The pattern of dietary life shows that they take richer food at dinner than lunch and breakfast. 2. At school, 75% of students ate at the school cafeteria. Among several main dishes, rice was the most favorite food. Most of the subjects ate their lunch between 12 and 1 o'clock, and they spend approximately 11 to 15 minutes. Most of the students did not have lunch on time. The students ate lunch irregularly, because of the class schedule and poor appetite. 3. On weekends and vacations, 56% of the students ate lunch prepared by their mother at home. The two main reasons for skipping lunch during weekends and vacations were late breakfast and poor appetite. The frequency of eating out were $3{\sim}4$ times per week, because of social life and convenience of meal. 4. The majority of college students asked for the improvement of meal quality and the choice of menu in school cafeteria.
