Major foods enriching the dietary fiber were as following; kimchi & bean sprouts soup and sweet potato for menu 1, chamcheunamul and grape for menu 2, mushroom and kimchi for menu 3, dried radish leaves and green pepper for menu 4. One portion of calorie, carbohydrate, protein and fats for the aged were calculated as 567 kcal, 92.8 g, 21.3 g and 12.6 g, respectively based on recommended daily allowances for adults. Dietary fiber content increased in the menus 1, 2, 3 and 4 were 17.27%, 20.84%, 16.91%, and 23.64%, respectively. The menu 1 had significantly the highest acceptance scores among the rice, soups, side dishes and overall desirability with the acceptance sores of 4.77, 4.58, 4.62 and 4.69, respectively(p<0.05). Female showed significantly the higher acceptance scores of all of the enriched fiber menu than those of male. Moisture contents of the boiled rice with barely in menu 3 had significantly the highest value of all(p<0.05) and the side dishes of all menus did not show any significant differences at p<0.05. The pH value of boiled rice with barely in menu 3 was significantly the highest and menu 1 of kimchi & bean sprouts soup had significantly the lowest pH values(p<0.05). Hunter L value was significantly the highest in boiled rice with barley. The dietary fiber enriched menus were successfully developed for application and standardization in the meal service planning for the aged as one of trials of basic data collection.

  • With the increasing number and variety of internet users as well as the development of internet technology, web contents have been taking a more comprehensive, integrated, and practical form. This change has brought to our attention the importance of the information architecture and menu design, both of which are required for the users to navigate vast amount of data promptly, correctly and easily for effective communication in the web sites. In this study, web sites were categorized by the service levels provided to the users, and sampling was performed accordingly. Then, information architecture, the layout and the presentation of the menu design were analyzed. The result of the analysis show that there are distinguishable characteristics in how the menus were expressed and designed, and that these characteristics reflect the users' characteristics in the web interface menu design. With the result of this study, we present a guideline for information architecture and web interface menu design, which reflects user characteristics thereby strengthening usability. Using this guideline, we expect the development of web interface design which should support more efficient communication on the web.

  • The primary purpose of this study was to investigate the job characteristics and competencies of a head-cook in contracted foodservice management company, identify the knowledge, abilities, skills and other characteristics (KASO) required to perform the duties of a head-cook, and provide training content and develop training program for job of head-cook in contract foodservice management company (CFMC). A survey instrument including identified KASO was used in the study. The questionnaire was delivered by using e-mail to 165 head-cooks employed by CFMC. The factor analysis resulted in a three-factor structure of the instrument such as 'basic foodservice operation duties' 'personal characteristics' 'managing of expanded duties-menu, customer and business'. This result suggested the education and training program for head-cook in CFMC should be composed of 'basic foodservice operation duties' on 'bulk preparation', 'procurement, inventory management', 'facility and equipment management', and 'sanitation and safety management', 'personal characteristics' on 'personality management' and 'moral duties', and 'managing of expanded duties-menu, customer and business' on 'menu management', 'customer service management', 'cost management', and 'administrative ability'. Therefore, it will be expected that the management of human resources in the contract foodservice industry would be developed by the application of recommended education and training program.

  • This study was conducted for the purpose of deriving the existing ScienceON elements and reorganizing them to increase user convenience and utilization. Towards this end, implications were derived by analyzing the current status of the ScienceON's website, case studies and analysis of major similar institution websites, and user satisfaction surveys. Based on the derived contents, key terms were analyzed and redefined, the menu system was reorganized, and the menu names were redefined, and the menu system was reorganized to match the direction and identity of the redefined ScienceON. The study results based on such are as follows. First, the ScienceON's brand selection criteria and direction were based on service sustainability, service inclusiveness, recognition of portal characteristics, user friendliness and intuitiveness. Considering the meaning of branding, branding strategy, and selection criteria for ScienceON branding, ScienceON, Ontong ScienceON, ScienceONPlatform, science information portal, ScienceON, Mecca of science and technology information, and 5 brand names such as ScienceON were proposed. Second, to improve accessibility, usability, and satisfaction, it would be necessary to redefine current terms. Towards this end, it would be necessary to change the terminology of knowledge infrastructure search and to unify and organize the terminology. Third, in the current menu, the services provided as analysis services and curation services are organized in the beta service menu, and data such as papers, patents, reports, and trends are also serviced only through integrated search, and hence, each data type and service type classification must be improved.
