Effect of Medicinal Plant Extract Incorporated Carrageenan Based Films on Shelf-Life of Chicken Breast Meat

  • This study was performed to examine the possibility of water extracts for several medicinal plants, such as Amomum tsao-ko, Alpinia oxyphylla, and Citrus unshiu, as an active packaging ingredient for prevention of lipid oxidation. Chicken breast meats were packed with medicinal plant extracts incorporated carrageenan based films and their physico-chemical and microbial properties during storage at $5^{\circ}C$ were investigated. In chicken meat samples packed with A. tsao-ko (TF) or A. oxyphylla (OF) extract incorporated carrageenan based films, pH value, thiobarbituric acid reactive substances (TBARS), and the population of total microbes were significantly lower than those of the negative control (film of no extract was incorporated, CF) after 5 d of storage (p<0.05). Especially, TBARS value of TF ($0.12{\pm}0.01$ mg malonaldehyde/kg meat) was significantly lower than chicken meat samples packed with positive control (ascorbic acid incorporated film, AF, $0.16{\pm}0.01$ mg malonaldehyde/kg meat) at 3 d of storage, and it means TF has enough antioxidative activity to prevent the lipid oxidation of chicken meat. However, there was no consistent effect on VBN values of chicken meats packed with medicinal plant extracts incorporated films during storage. Based on the obtained results, it is considered that A. tsao-ko extract has potential for being used as a natural antioxidant ingredient in active packaging areas.

Antimicrobial Characteristics of Edible Medicinal Herbs Extracts (식용가능한 약용식물 추출물의 항균 특성)

  • To develop a natural food preservatives from medicinal herbs (62 species), antimicrobial test was performed with hot water and ethanol extracts against Escherchia coli, Listeria monocytogens and Candida albicans by paper disk method. And its result as a first screening test, 7 kinds of medicinal herbs were selected, and more precise analysis was conducted at last 3 kinds of medicinal herbs was finally selected. Therminalia chebula Retz and Rhus javanica has a broad antimicrobial spectrums and has a low MIC values. In growth inhibition test, they showed a very strong antimicrobial activity aganist Listeria monocytogens. If there has a elaborate approaches in its characteristics and properties, some good result must followed in making a powerful natural antimicrobial preservatives.

Anti-Inflammatory Activity of Acacia Honey through Inhibition of NF-κB and MAPK/ATF2 Signaling Pathway in LPS-Stimulated RAW264.7 Cells

  • Honey used as conventional medicine has various pharmacological properties. In the honey and anti-inflammatory effect, Gelam honey and Manuka honey has been reported to exert anti-inflammatory activity. However, the anti-inflammatory effect and potential mechanisms of acacia honey (AH) are not well understood. In this study, we investigated anti-inflammatory activity and mechanism of action of AH in LPS-stimulated RAW264.7 cells. AH attenuated NO production through inhibition of iNOS expression in LPS-stimulated RAW264.7 cells. AH also decreased the expressions of $IL-1{\beta}$, IL-6 and $TNF-{\alpha}$ as pro-inflammatory cytokines, and MCP-1 expression as a pro-inflammatory chemokine. In the elucidation of the molecular mechanisms, AH decreased LPS-mediated $I{\kappa}B$-${\alpha}$ degradation and subsequent nuclear accumulation of p65, which resulted in the inhibition of $NF-{\kappa}B$ activation in RAW264.7 cells. AH dose-dependently suppressed LPS-mediated phosphorylation of ERK1/2 and p38 in RAW264.7 cells. In addition, AH significantly inhibited ATF2 phosphorylation and nuclear accumulation of ATF2 in LPS-stimulated RAW264.7 cells. These results suggest that AH has an anti-inflammatory effect, inhibiting the production of pro-inflammatory mediators such as NO, iNOS, $TNF-{\alpha}$, IL-6, $IL-1{\beta}$ and MCP-1 via interruption of the $NF-{\kappa}B$ and MAPK/ATF2 signaling pathways.

The characteristics of the Medicinal in the Decoctions of 《Treatise on Cold Damage Diseases》 whose dosages were expressed in volume and the value obtained by converting the dosages into weight (《상한론》 탕제에서 복용량을 부피로 표기한 약의 특징과 무게로 환산한 값)

  • Objectives : It is very important to know the exact dosage of the Decoctions in 《Treatise on Cold Damage Diseases》. This study identified the characteristics of 15 Medicinal marked in volume and calculated their dosages in weight. Methods : The origin, processing methods, and properties of 15 Medicinal were identified. The shape of the appropriate container that measures the volume of one seung was estimated, and the dosage in volume was converted into weight. These were compared with the dosages indicated by weight or count. Results : The 15 Medicinal were categorized into liquids, powders, and grains. Ten items had only one dosage, of which three items had one seung, and seven items had 0.5 seung. Five items had two different dosages, of which four items had one or 0.5 seung, and only Suis Fel was 0.2 or 0.1 seung. Pinelliae Tuber and Urine were marked as 0.5 seung for convenience of measurement, although 0.4 seung were accurate. There were 20 different dosages in total, and when converted into weight, they matched 1, 2, 3, 4, 6, 8, or 16 Ryang, with none of 5 Ryang. Some exceptions that did not fit in the above were indicated by weight or count. Conclusions : In the Decoctions of 《Treatise on Cold Damage Diseases》, dosages of 15 Medicinal were easy to measure by volume, and when converted into weight, they were consistent with the dosages originally indicated in weight or count.

Chemical Properties of Medicinal Plant Cultivated Soils (약용작물(藥用作物) 재배지(栽培地) 토양(土壤)의 화학성분(化學成分) 함량(含量))

  • This survey was conducted to investigate the chemical properties of soils cultivated medicinal plants. The soils were collected at 254 sites(Angelica gigas : 81, Astragalus membranceus : 38, Platycodn glandiflorum : 36, Paeonia albiflora : 34, Codonopsis lanoceolata : 32, Ligusticum chuanxiong : 17. Bupleurum falcatum : 16, respectively) throughout the country by 0-15cm depth. The chemical properties of soils were pH 5.6, O.M 3.0%. Av.$P_2O_5$ : 405 mg/kg, Ex.K : $0.67cmol^+/kg$, Ex.Ca : $6.3cmol^+/kg$, Ex.mg : $1.6cmol^+/kg$. The percentage distribution of pH on the basis of soil sample numbers were much more at the 5.1-6.0 range than any other ranges, especially those of below pH 6.0 were 83-91% for Angelica gigas, Platycodn glandiflorum and Codonopsis lanoceolata. The distribution of OM and Av.$P_2O_5$ in soils were much at the 2.1-4.0% and above 500mg/kg ranges, respectively. And the content of those in soils cultivated with Platycodn glandiflorum were lower than any other medicinal plants. The distribution of exchangeable cations in soils were much at the 0.2-0.8, 2.1-4.0 and $0.5-2.0cmol^+/kg$ of Ex.K. Ca and mg. respectively, and the contents were higher in soils cultivated Astragalus membranceus. and lower in soils cultivated Platycodn glandiflorum and Codonopsis lanoceolata than any other samples.

Numerous phytochemicals present in edible plants have been reported to interfere with a specific stage of the carcinogenic process. Drying characteristics and physical properties of medicinal and edible mushrooms (약용버섯과 식용버섯의 건조방법에 따른 품질특성)

  • In this study, the drying characteristics of medicinal (Ganoderma lucidum, Phellinus linteus) and edible (Pleurotus eryngii, Lentinus edodes) mushrooms were investigated. Their shrinkage ratios, Hunter's color values, and rehydration ratios were evaluated. Mushrooms were cut with rectangular (1 cm) and square ($1{\times}1cm$) shapes, and dried in the room temperature and at $50^{\circ}C$ and $70^{\circ}C$ using hot-air dryer. Initial moisture contents of edible mushrooms were higher than those of medicinal mushrooms, whereas final moisture contents were vice versa. Drying rate was the highest when drying at $70^{\circ}C$ (p<0.05). Moreover the drying rate of square slices was higher than that of rectangular slices (p<0.05). The shrinkage ratios of both medicinal mushrooms and edible mushrooms were the least when drying at $50^{\circ}C$ and $70^{\circ}C$, respectively (p<0.05). The changes of color values were less in the medicinal mushrooms dried in the room temperature than in the hot-air dried medicinal mushrooms (p<0.05). However, in case of edible mushrooms, the changes of color values were less in the hot-air dried mushrooms (p<0.05). Rehydration ratios of medicinal mushrooms dried at $50^{\circ}C$ was the highest (p<0.05). In contrast, rehydration ratios of edible mushrooms was the highest when drying in the room temperature (p<0.05). Thus, the hot-air drying at $50^{\circ}C$ would be suggested as the efficient drying method for both medicinal mushrooms and edible mushrooms.
