하우스에서 재배된 새싹인삼의 재배시기별 생육, 유효성분 및 물성의 변화 (Changes in Growth, Active Ingredients, and Rheological Properties of Greenhouse-cultivated Ginseng Sprout during its Growth Period)

  • Background: The ginseng ginsenosides, which have various physiological activities, are known to be more abundant in the leaves than in the roots, and the consumers' interest in ginseng sprout as a functional vegetable has been increasing. Methods and Results: The aim of this study was to investigate the effects of growth period on growth properties, active ingredients and rheology of ginseng sprouts cultivated in a non-heated greenhouse equipped with a shade net for 60 days, starting from the end of May to the middle of July. The chlorophyll content of the leaves decreased, but their length and width increased with increasing cultivation days. In particular, growth increased significantly until 40 days, but only slightly after 50 days. The stem length did not increase greatly from the 20 th to the 30 th day of cultivation, but increased significantly from the 30 th to the 40 th day, and then further increased gradually. The weight of the leaves, stems, and roots increased slightly, but not change significantly. After 40 days of cultivation, the total ginsenoside content increased by 1.07 times in the leaves and decreased by 0.80 times in the roots with increasing cultivation days. The leaf contents of ginsenosides $Rg_1$, Re, $Rb_1$, Rc, $F_3$ and $F_4$ increased with increasing cultivation days. The rheological properties of ginseng sprout showed the greatest influence on stem hardening with increasing cultivation days. Conclusions: Therefore, based on the growth characteristics, active ingredients and physical properties, 40 days after sowing was considered to be an appropriate harvesting time for ginseng sprouts.

Characterization of Biocompatible Lipid-Based Vesicles Contained with Medicinal Herb Extracts

  • In order to increase the medicinal herbs efficiency of drug delivery, vesicles contained with medicinal herbs were prepared by phosphatidylcholines and surface active agent. Vesicles loaded with medicinal herbs were characterized by UV-spectroscopy, Zetasizer. The antioxidant activity of vesicles was measured by DPPH assay and ABTS radical scavenging assays. Also, an analysis was conducted to determine the effects of anti-inflammatory of vesicles contained medicinal herbs. In addition, the whitening effects of vesicles contained medicinal herbs extract were studied via tyrosinase inhibition assay. The results of vesicles were as follows. Vesicles appeared an average diameter of approximatively 164-599 nm. All studied vesicles contained with medicinal herbs showed antioxidant, anti-inflammatory and whitening effects in a dose-dependent manner. Therefore, this experiment achieves its purpose of synthesizing of vesicles. In conclusion, we recommended that the vesicles loaded with medicinal herbs have ability for anti-aging materials. Specifically, it will apply to cosmetic ingredients.

약죽요법에 관한 연구 (The study of a medicinal gruel therapy)

  • Objectives : There are a lot of food used herb medicine among the people in order to cure diseases. A medicinal gruel is the easiest and most universal among alimmentotherapy. The purpose of this thesis is to understand a medicinal gruel therapy. Methods: I researched the definition, history, ingredients, application and special feature. Result and conclusion : A medicinal gruel therapy is alimmentotherapy for diseases prevent and diseases treatment which get mixed with her medicine and rice, based on oriental medicine theory. A medicinal gruel therapy was put on record in ${\ll}$A historical book${\gg}$. A medicinal gruel therapy can be used in chronic diseases, convalescent stage, assistant treatment for acute disease, disease prevention, aging prevention, diet food and substitute food for breakfast.

오미자씨에서 추출된 유지의 성분 및 항산화 효과 (The Antioxidative Effect and Ingredients of Oil Extracted from Schizandra chinensis Seed)

  • The objectives of this study were to investigate the antioxidant activity of Schizandra chinensis seed oil and its active ingredients. Schizandra chinensis seed oil content extracted with hexane was 36.06%. Schizandra chinensis seed oil extracted with hexane was purified during 20 min at $85^{\circ}C$ with phosphoric acid 0.15% for degumming and 20 min at $80^{\circ}C$ with 3 M NaOH 1% for deaciding. The purified oil consisted of unsaturated fatty acid (88.7%), fatty acid (9.97%), and so on. The major unsaturated fatty acids of purified oil were linoleic acid (71.1%) followed by oleic acid (15.7%), while the main saturated fatty acid was palmitic acid (6.56%). The purified oil was found that contents of phenolic compounds, vitamin A, and E were 1.45 g/100 g, 1494.86 RE/100 g, and 0.58 mg ${\alpha}$-TE/100 g, respectively. Schizandra chinensis seed oil exhibited strong antioxidant activity (91.7%) as compared to grape seed oil and canola seed oil with 87.4% and 85.1% in the DPPH assays. Present results suggest that Schizandra chinensis seed oil could be potentially used as bioactive source for health and preventing numerous diseases.

전통주에 이용되는 한약재의 특성 연구 (A Study about Characteristic of the Medicinal Herbs Added in the Traditional Korean Liquor)

  • Objective : The aim of this study is to analyze medicinal herbs, the ingredients of traditional Korean liquor, focusing on efficacy in the traditional Korean medicine. Through this study, for vitalizing traditional Korean liquor market, the researchers attempt to explain the superiority of traditional Korean liquor and the advantages of using herbs to brew alcoholic beverages. Method : We conducted a research targeting traditional Korean liquors in domestic market from July through september 2012, and finally 70 kinds of liquor were selected and analyzed. Results : Among traditional liquors, fermented liquors are most common. When comparing regions of brewery, the central region of Korea, Gyeonggi-do and Chungcheongnam-do, is major brew area. 37 liquors contain just one medicinal herb. followed 10 liquors contain two medicinal herbs. The most frequently used medicinal herb is Ginseng Radix. And Lycii Fructus, Schisandrae Fructus, Angelicae Gigantis Radix and Chrysanthemi Indici Flos are well used medicinal herbs to brew traditional liquors. In the classification of efficacy of medicinal herbs, tonifying and replenishing medicinal herbs are most popular as ingredients in the traditional alcohols, astringent medicinal herbs, exterior releasing medicinal herbs and heat clearing medicinal herbs are also frequently used. Investigation of tastes and properties of the herbs, it reached a conclusion as below: sweet taste is most common, followed by sour taste and bitter taste. Warm property is account for 50% approximately, followed by cold property. Conclusion : Medicinal herbs have been widely used in the traditional Korean liquor. It came out into the open that the liquor with medicinal herbs is very good for our body in terms of longevity and invigoration. However, liquor consumers concern about not only the efficacy but also the taste, scent and color. Therefore, further study about these things would be required to demonstrate the superiority of the traditional Korean liquor.

강원 영동지역 학교급식 영양(교)사의 약선요리에 대한 인지도 및 활용실태 (Utilization Status and Awareness of School Foodservice Dietitians Regarding Medicinal Cuisine in Yeoungdong, Gangwon-do)

  • This study investigated the attitudes of dietitians regarding medicinal cuisine for school meal services. Data was obtained with self-administered questionnaires from 261 dietitians in schools located in Yeoungdong, Gangwon-do. Subjects were distributed into three groups (Elementary=116, Middle=106, High=39) and their awareness, satisfaction, cooking method, and utilization status of medicial cuisine were assessed. Regarding awareness, responders showed highest mean score of 4.57 in perceiving medical cuisines as healthy meal. The preferred cooking method includes medicinal cuisines as noodle, boiled in soy sauce, steaming, roasting, and dessert. Good taste, easy recipe, nutrition, and reasonable price were statistically significant reasons for their preference for medicinal cuisine. However, low preference of students for medicinal cuisine made it difficult to include them into school meals. Methods currently used to serve more medicinal cuisine include the application of different recipes using the same ingredients. The results of this study suggest that having dietitians with a higher preference for medicinal cuisine can serve as a strategy to increase the exposure of school students to medicinal cuisine. The development of recipes applicable to school foodservices by dieticians and the adoption of policies and education programs for medicinal cuisine by the government and associations are recommended.

사상체질에 근거한 노인의 한방약선죽 개발에 관한 연구 (Development of Oriental Medicinal Porridges Based on Sasang Constitutional Medicine for the Elderly)

  • The elderly population is rapidly increasing in South Korea, and interest in food development considering the Sasang constitution theory from oriental medicine and balanced nutrition is increasing. We developed the oriental medicinal porridges based on the Sasang constitution for the elderly. By Sasang constitutional medicine, Taeyangin has a large lung and small liver, and Soyangin has a large stomach and small kidney. Taeeumin has a small lung and large liver, and Soeumin has a small stomach and a large kidney. In this study, proper oriental medicine and food ingredients were identified, and a total of 12 oriental medicinal porridges were developed for 3 items by 4 Sasang constitution types. A single portion was developed based on about 600±66kcal, and the food ingredients were chopped. After cooking the menu developed based on the Sasang constitution, a sensory test was conducted. Five items, such as taste, appearance, aroma, texture, and overall preference, were evaluated on a 7-point scale. Sewage omegaenggul porridge among porridges for Taeyangin had the highest overall acceptance (6.17±0.7 points). Sukjihwang abalone black sesame porridge for Soyangin had the highest score(5.83±0.9 points). Sanyakyulmu hwangtae porridge for Taeeumin had the highest score(5.90±0.6 points). Ginseng chicken curry porridge among porridges for Soeumin had the highest overall preference in taste, appearance, aroma, texture, and overall acceptability (6.53±0.7 points). A limitation of this study was that the clinical trial could not be conducted on the elderly classified as Sasang constitution. In the future, the elderly will be able to have oriental medicinal foods according to the classification of Sasang constitution.

1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰 (A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.

문헌(文獻)속에 나타난 죽(粥)의 분석적(分析的) 고찰(考察) (Analytical Study of Jook(Korean gruel) Appeared in the Books)

  • In this study, the alteration of Jook was studied by analyzing and comparing ingredients of Jook appeared in the reference of cookbooks from 1611 to 1958. 121 kinds of Jooks were mentioned 371 times. The Jooks made only with grains, mostly Hin Jook (white Gruel) made of rice, were recorded 31 times in 10 kinds. Rice or processed rice appeared most (194 times) as main ingredients in Jooks other than Hin Jook. As for condiments, honey and sugar were mentioned 37 times, accounting for one third of the condiments recorded as used for Jooks. The basic ingredient of Jooks were rice, but mostly the Jooks were named after the subsidiary materials. Chinese medicinal ingredients were most among the subsidiary materials; 35 kinds of them were mentioned 73 times. As regards the ingredients of the Jook, the other ingredients were added to the grain ingredients between the 17th century and the 19th century whereas only grains were put into Jook during the 20th century.

국내 자생 약용식물의 식용부위와 조리방법에 대한 문헌 고찰 (A Study on the Edible Parts and Cooking Methods for the Korean Medicinal Plants)

  • Objectives : The aim of the research is to study the edible parts and cooking methods for the Korean medicinal plants using documents of Japanese occupation era. Through this study, we expect that it will be used as a basis data on further Korean traditional edible herb. Methods : The research analyze the usage of 74 species of medicinal plants that are listed in the 『Wild Food Plants of Chosen(Korea)』 along with analyzing 8 extra documents about famine relief plants and cooking method written during Japanese occupation. Results : The result shows that the sprouts and buds are the most popular for the edible purposes but they are never used for medical reason. Roots and fruits take the highest percentage when it comes to medical purposes. Types of medicinal plants that were used a lot of cooking methods were side dishes such as 'Namul, Saengchae, Jangajji'. Conclusions : Using medicinal plants for edible and medical purposes were traditionally familiar with Korean culture but the changes provoked by industrialization forbid the knowledge to pass through. However, recently, the trend of having a healthy life interests people to backtrack this traditional way of using medicinal plants with new purposes. To inherit traditional knowledge and for the future development of Korean traditional ingredients, further research should be conducted.
