Fatty acid composition of goose meat depending on genotype and sex

  • Objective: The aim of this study was to compare male and female geese of two contrasting genotypes in terms of fatty acid composition, indexes related to human health, lipid metabolism and oxidative stability of the meat. Methods: The experiment was carried out on total of 120 geese of two different genotypes; the native breed Czech goose (CG) and commercial hybrid Novohradska goose (NG). One-d-old goslings were divided into 4 groups according to genotype and sex, and 8 birds from each group were slaughtered at 8 weeks of age. Results: The effects of the interactions between genotype and sex were observed on growth performance and carcass traits. Final body weight (p<0.001), daily weight gain (p<0.001), daily feed intake (p<0.001), slaughter weight (p<0.001), and cold carcass weight (p<0.001) were highest in NG males and lowest in CG females. The meat fatty acid composition results showed effects of both genotype and sex on the total n-6 and the total polyunsaturated fatty acid (PUFA) content, as well as the PUFA n-6/PUFA n-3 ratio. Regarding genotype, the total n-6, the total PUFA content and the PUFA n-6/PUFA n-3 ratio were higher in CG, and higher values were found in females. In terms of the lipid metabolism, ${\Delta}^5-{\Delta}^6$ desaturase (p = 0.006) was higher in males. The meat oxidative stability results revealed an interaction between genotype, sex and storage time (p<0.001). The highest (13.85 mg/kg) malondialdehyde content was measured in the meat of CG females after 5 days of storage and was presumably related to a higher PUFA content. Conclusion: NG had a relatively higher growth rate and meat oxidative stability, whereas the advantage of CG meat is its favourable fatty acid profile characterized by a higher PUFA content.

Growth, Feed Efficiency, Behaviour, Carcass Characteristics and Meat Quality of Goats Fed Fermented Bagasse Feed

  • The effects of long-term feeding of diets based on bermudagrass hay supplemented with lucerne hay cube (LH) or fermented bagasse feed (FBF) on the growth rate, feed efficiency, behaviour, gut development, carcass characteristics and meat quality of goats were investigated. Six spring-born 8-month-old male crossbred (Japanese Saanen${\times}$Tokara native goats) bucks weighing mean 21.6 kg were allotted to 2 treatment groups (3 animals each) and each animal had ad libitum access to feeds, i.e. bermudagrass hay (basal diet)+LH or FBF throughout the experiment. The FBF was produced by the solid-state fermentation of substrates containing dried sugarcane bagasse mixed with wheat bran in a ratio of 1:3 (w/w DM) with Aspergillus sojae. The live body weight, final weight and average daily gain were not different between treatments. Average basal diet intake of goats fed FBF diet was significantly higher than that fed LH diet (p<0.05), but average dry matter intake (DMI; g/day and g/$W^{0.75}$), feed conversion ratio, digestible crude protein (DCP) and total digestible nutrients (TDN) intake of experimental diets were not significantly different between treatments. Goats fed on LH and FBF diets had similar eating, rumination, resting and drinking behaviours, and blood constituents except for phosphorus content. Slaughter and carcass weights, net meat percentage [(total meat/carcass weight)${\times}$100], loin ratio [(loin/total meat)${\times}$100] and rib-eye area were not different between treatments. However, goats fed FBF diet had lower dressing percentage and higher bone/muscle ratio compared with goats fed LH diet (p<0.01). Empty gut and guts fill of goats fed FBF diet were significantly greater (p<0.05 and p<0.01, respectively) than those fed LH diet. The weights of rumen and abomasum were also significantly heavier in goats fed FBF diet (p<0.05), but the length and density of papillae of rumen in goats were not different between treatments. Although meat composition of loin was not different in both groups, the meat of goats fed FBF diet was superior to that of LH diet in flavor, aroma and overall quality of loin (p<0.01). In conclusion, the nature of the diet consumed voluntarily did not affect subsequent growth, nutrient intake and behaviour of goats but had an influence on carcass traits and sensory evaluation of meat partly, when either of LH or FBF was fed with bermudagrass hay.

Investigation of Physicochemical and Sensory Quality Differences in Pork Belly and Shoulder Butt Cuts with Different Quality Grades

  • The objective of this study was to investigate the effects of quality grade (QG) on the physicochemical composition and eating quality attributes of pork belly and shoulder butt. Seventy-two growing-finishing crossbred pigs were slaughtered and their carcasses were graded according to the Korean pork carcass grading system. Based on the grading criteria, the carcasses were classified into: QG 1+ (n=23), QG 1 (n=23) and QG 2 (n=26) groups. At 24 h postmortem, belly and shoulder butt cuts were collected from the QG groups and used for analysis of meat quality, flavor compounds and eating quality attributes. Results showed that the variation in fat content among QG was approximately 2% in the both cut types. The QG showed no effects on all the quality traits: cooking loss, pH and color of the belly or shoulder butt (p>0.05). Thirty-five flavor compounds comprising mainly fatty acids oxidation/degradation-derived products (e.g., aldehydes) and only few Maillard reaction-derived products (e.g., sulfur-and nitrogen-containing compounds) were identified. However, the QG showed a minor effect on the flavor profiles in both the belly and shoulder butt. Regarding the sensory quality, no effects of the QG were found on all the eating quality attributes (color, flavor, juiciness, tenderness and acceptability) for both the belly and shoulder butt cuts (p>0.05). Thus, it may be concluded that the current pork carcass grading standards do not reflect the real quality and value of the belly and shoulder butt cuts.

한우에서 혈중 호르몬 및 대사물질 농도와 성장 및 도체 형질에 대한 표현형 상관에 관한 연구 (Phenotypic Correlation for Concentrations of Hormones and Metabolic Materials and Growth and Carcass Traits in Hawoo)

  • 혈액성분과 경제형질들 간의 상관관계를 규명하는 일은 한우의 능력을 예측하고 예견되는 능력에 맞추어 사양관리와 판매처를 결정할 수 있고, 기존의 종축선발 체계와 결합시킴으로서 선발의 정확도를 향상시킬 수 있는 효과를 기대할 수 있으므로 나름대로 중요한 의미를 갖는다. 본 연구는 축산기술연구소에서 사육하고 있는 한우 866두의 혈액 중 호르몬과 대사물질을 분석하여 혈액성분과 경제형질과의 표현형 상관관계를 분석하고 혈액 내 유용한 생리적인 형질을 발굴하여 능력이 우수한 개체의 조기선발 가능성 구명과 선발 기술을 개발하여 한우개량에 또 다른 방법을 제시 하고자 실시하였다. 혈청성분들과 경제형질들 간의 표현형 상관계수를 거세우와 비거세우로 구분하여 추정한 결과 혈청성분들과 도체형질들 간의 주요 상관은 다음과 같다. 24개월 출하체중과 상관도가 높은 혈청은 거세우에서는 BUN이었고 비거세우에서는 albumin과 IGF-1이었으며, 비육말기 21∼24개월령의 일당증체량과 상관도가 높은 혈청은 거세우에서는 cal-cium이었고 비거세우에서는 albumin으로 증체와 관련 있는 혈청은 거세우에서는 calcium 비거세우에서는 albumin으로 나타났다. 육질과 관련 있는 등지방 두께 및 지방교잡도와 상관도가 가장 높은 혈청은 거세우와 비거세우 모두 BUN이었고, 육량등급의 근간이 되는 육량지수와 상관도가 높은 혈청은 거세우에서는 calcium이었으며 비거세우에서는 testosterone이었으나 육질과 상관이 높은 BUN은 거세우와 비거세우 모두가 육량지수와는 음의 상관을 나타내었다.

한우에서 TG와 EDG1 유전자의 단일염기다형 확인 및 도체형질과의 연관성 분석 (Identification of SNPs in TG and EDG1 genes and their relationships with carcass traits in Korean cattle (Hanwoo))

  • Thyroglobulin (TG) gene was known to be regulated fat cell growth and differentiation and the endothelial differentiation sphingolipid G-protein-coupled receptor 1 (EDG1) gene involves blood vessel formation and known to be affecting carcass traits in beef cattle. The aim of this study was to identify the single nucleotide polymorphisms (SNPs) in both TG and EDG1 genes and to analyze the association with carcass traits in Korean cattle (Hanwoo). The T354C SNP in TG gene located at the 3' flanking region and c.-312A>G SNP located at 3'-UTR of EDG1 gene were used for genotyping the animals using PCR-RFLP method. Three genotypes were identified in T354C SNP in TG gene and only two AA and AG genotypes were observed for the c.-312A>G SNP in EDG1 gene. The results indicated that T354C SNP in TG gene was not significantly associated with carcass traits. However, the c.-312A>G SNP in EDG1 gene had significant effects on backfat thickness (BF) and yield index (YI). These results may provide valuable information for further candidate gene studies affecting carcass traits in Korean cattle and may use as marker assisted selection for improving the quality of meat in Hanwoo.

Association between PCR-RFLP Polymorphism of the Fifth Intron in Lipoprotein Lipase Gene and Productive Traits in Pig Resource Family

  • The study was aimed at detecting polymorphism of the fifth intron in lipoprotein lipase (LPL) gene and analyzing association between the polymorphism and productive traits. A pair of primers was designed for amplifying the fifth intron. Sequence analysis indicated that a G1171C substitution existed in Large White breed. The mutation was detected by PCR-AfaI-RFLP. Polymorphism analysis in a pig resource family showed that there existed significant effects on carcass and meat quality traits. Thoraxwaist fat thickness of BB genotype was significantly higher (14.2%, p<0.05) than that of AA on carcass traits, while BB genotype was significantly lower (3.6% p<0.01, 4.1% p<0.01; 2.3% p<0.01, 1.9% p<0.01; 1.8% p<0.01, 1.4% p<0.05) than AA and AB genotype in pH of m. Longissimus Dorsi (LD), m. Biceps Femoris (BF), m. Semipinali Capitis (SC). The allelic frequencies were also significantly different between indigenous Chinese breeds and exotic breeds. Data analyzed revealed that the mutation locus affected production traits mostly by additive effects. Based on these results, it is necessary to do more studies on LPL gene before making the LPL locus into the application of marker-assisted selection (MAS) programs.

Analysis of the influence of sex, slaughter season, and feeding system on carcass traits in Hanwoo

  • This study was conducted to investigate the effects of sex, environmental factors, and feeding system on the carcass traits of Hanwoo (Korean Native Cattle). Data were collected from 7,866 heads slaughtered in Chungnam province during one-year period. Using the collected carcass traits data which greatly influence a Hanwoo's carcass grade, the effects of sex class, slaughter season, and feeding system were estimated. Backfat thickness of steers was significantly higher than that of bulls (p < 0.05). Marbling score was also the highest in steers when compared with cows and bulls (p < 0.05). Live weight and carcass weight were significantly higher in winter than in summer (p < 0.05). However, backfat thickness was significantly lower in summer than in other seasons (p < 0.05). Marbling score was higher in spring and fall than in summer and winter (p < 0.05). In terms of feeding systems, TMR (Total mixed ration) and TMF (Total mixed fermentation feed) fed groups showed the highest carcass grade (p < 0.05). However, the group fed TMR and formula feed at the final fattening period showed the lowest performance (p < 0.05) and it is assumed that some stress was associated to the feed change. The results reconfirm that castration may be recommended in order to improve meat quality and marbling scores in bulls. There was no consistent trend of seasonal effects of slaughter on carcass traits although some traits were significantly affected. Regarding the feeding system, either TMR or TMF can be supplied to achieve high feed efficiency and good carcass characteristics in Hanwoo.

CARCASS CHARACTERISTICS AND BEEF PALATABILITY AS INFLUENCED BY FEEDING RICE STRAW AND ALFALFA

  • Ninety feeder steers, predominantly Herefords weighing 280 kg, were assigned at random to each of nine diets: basal (high concentrate); 25 or 50% of untreated rice straw (25- or 50 URS) or ammoniated rice straw (25- or 50 ARS); a 50:50 mixture of URS - alfalfa or ARS - alfalfa replacing a proportion of the basal at 25 and 50%. Animals were slaughtered after 154 or 161 days of feeding. The cattle fed 50% URS had the lowest (P<.05) carcass weight, dressing & external fat thickness, kidney, pelvic and heart fat, rib eye area, marbling score, quality and yield grades, followed by cattle fed 50% ARS, 50% rice straw/alfalfa, and 25% rice straw alone or 25% rice straw/alfalfa mixture. Ammoniation of rice straw improved all measured traits. A 25% substitution of basal diet with untreated or ammoniated rice straw and a 50% substitution with rice straw/alfalfa mixture did not significantly affect carcass traits compared to the basal group. Only 50% ARS and 50% URS cattle showed differences in body composition (P<.05) with lower fat and higher water and protein contents. No significant differences were found in shear value, panel tenderness, connective tissue, juiciness, flavor and overall palatability of meat from steers fed the basal, ARS or URS diets.

팜유의 급여가 한우의 도체 및 육질에 미치는 영향 (Effect of Dietary Palm Oil Supplementation on the Quality of Carcass and Meat of Hanwoo (Korean Cattle))

  • 팜유의 급여가 한우의 도체성적 및 육질에 미치는 영향을 구명하고자 실시하였다. 30개월령 거세 한우를 팜유의 급여(100 g/head/d) 유무에 따라 3개월 동안 공시하였으며, 시료는 등심(M. longissimus) 부위를 $4^{\circ}C$에 9일 동안 저장하였다. 도체성적, 총육색소 함량, pH, 총환원력 및 근소편화지수는 팜유의 급여에 따른 차이가 없었다. 일반성분 함량은 팜유 급여구의 조지방 함량이 대조구에 비해 높았으며(p<0.05), 이로 인해 보수력과 연도는 팜유 급여구가 높았다(p<0.05). 지방산 조성은 팜유 급여구에서 대조구에 비해 높은 palmitic acid(C16:0) 함량과 낮은 다가 불포화지방산(PUFA) 함량 을 보였다 (p<0.05). 저장 중 품질은 팜유 급여구가 대조구보다 높은 지방산화 안정성, 육색소산화 안정성 및 육색 안정성을 보였다. 따라서 한우에게 팜유를 급여했을 때 쇠고기의 마블링 및 저장성은 증가되었으나, 다가불포화지방산은 감소되었다.

Comparison of Meat Quality Traits, Free Amino Acid and Fatty Acid on Longissimus Lumborum Muscles from Hanwoo, Holstein and Angus Steers, Fattened in Korea

  • This study was conducted to compare meat quality traits related to the tenderness of longissimus muscles obtained from domestic and imported steers. A total of 12 steers from three breeds were slaughtered, and were graded as quality grade 2. They were composed of 4 Hanwoo and 4 Holstein steers (domestic) as well as 4 Angus steers (imported from Australia and gained for six months in Korea until slaughtered). The longissimus lumborum muscles were separated and were stored at $4^{\circ}C$ for 7 and 14 d. Sarcomere length of Hanwoo was significantly shorter than Holstein and Angus at storage day 14 (p<0.05). The myofibrillar index was significantly lower on Hanwoo than Angus at ageing day 7, and was significantly lower than Holstein and Angus steers at storage day 14 (p<0.05). Total collagen contents of Hanwoo and Angus steers were significantly higher than Holstein on storage day 7 (p<0.05), whereas soluble collagen contents of Holstein were significantly higher than Hanwoo and Angus on storage days 7 and 14 (p<0.05). There was no significant difference in the fatty acid composition of the three breeds (p>0.05). Glutamic acid contents of Hanwoo and Angus steers were higher than those of Holstein steers at ageing day 7 and 14 (p<0.05). The results of this study have shown that there were no dramatic differences between beef from the three breeds that were fattened for 6 months under equal conditions.
