Effects of Partial Substitution of Lean Meat with Pork Backfat or Canola Oil on Sensory Properties of Korean Traditional Meat Patties (Tteokgalbi)

  • Korean traditional meat patties (Tteokgalbi) were prepared by replacing part of the lean meat content with either pork backfat or canola oil and the effect of substitution on sensory quality of the meat patties was investigated. Compared to the control patties, pork-loin Tteokgalbi with 10% pork backfat or 10% canola oil had significantly higher overall acceptability and higher perceived intensity of meat flavor, sweetness, umami, and oiliness. The pork-loin patties containing 10% fat also had lower perceived firmness, toughness, and chalkiness of than the control Tteokgalbi. The chicken breast Tteokgalbi with 10% canola oil had the lowest perceived firmness and chalkiness (control > pork backfat > canola oil). No significant difference was noted in the overall acceptability of chicken breast patties with 10% pork backfat and those with 10% canola oil. These results indicate that substituting 10% of lean meat of Tteokgalbi with fat improved the sensory acceptability of the product for Korean customers regardless of the lean meat and/or fat source used in the patties. Lean meat patties formulated with a limited amount of vegetable oil such as canola oil can be a healthy option for Korean consumers by providing desirable fatty acid profiles without sacrificing sensory quality of the product.

분리대두단백질 첨가방법과 냉동속도가 돼지고기 패티와 돈까스의 품질에 미치는 영향 (Effects of ISP Adding Methods and Freezing Rate on Quality of Pork Patties and Cutlets)

  • 재구성 돈까스 패티 제조시 돼지고기 대체원료로 사용되는 ISP의 첨가방법을 기존방법과 다르게 하여 패티의 특성을 조사하고, ISP 첨가방법으로 가장 적당한 방법으로 제조한 패티와 돈까스를 급속 및 저속냉동하여 냉동속도가 품질 특성에 미치는 영향을 조사한 결과를 요약하면 다음과 같았다. ISP 처리구의 단백질함량은 대조구와 별 차이가 없었고, pH나 보수력에도 유의성 있는 차이가 없었다. 패티의 가열 감량이나 외형변화는 meat(50%)나 meat(30%) 처리구에서 대조구보다 낮았다. 패티의 기계적 견고성은 meat(50%)나 meat(30%) 처리구가 대조구와 함께 낮았으며, 관능적 다즙성은 높았다. 이들 결과로 보아 ISP 첨가시 기존의 fat emulsion complex로 이용하는 방법 대신에 meat emulsion complex로 이용하는 것이 패티의 품질특성을 개선하는데 도움이 되었다. Meat(30%) formula로 패티와 돈까스를 만들어 냉동한 결과 저속냉동 시 외형변화는 많았으나 유의성이 없었고, 가열감량은 유의성 있게 높았다. 패티의 견고성은 저속냉동한 것이 유의성 있게 높았으나 다른 테스쳐 특성에는 차이가 없었다. 그러나 돈까스의 경우에는 냉동속도가 텍스쳐 특성에 별 영향을 미치지 않는 것으로 평가되었다.

Effect of Incorporation of Pomegranate Peel and Bagasse Powder and Their Extracts on Quality Characteristics of Chicken Meat Patties

  • This study was conducted to develop chicken meat patties by incorporating pomegranate peel and bagasse powders and their extracts. Patties were developed by incorporating pomegranate peel powder (PPP, 2 g), pomegranate aril bagasse powder (PABP, 4 g), pomegranate peel powder aqueous extract (PPAE, 6 g) and pomegranate aril bagasse powder aqueous extract (PABAE, 9 g) individually per 100 g of minced meat. Both types of powders and extracts treated patties had significantly higher total phenolic content than control and butylated hydroxytoluene (BHT) treated patties. Both types of powder (PPP and PABP) treated patties had significantly higher water holding capacity, ash, crude fibre content, and hardness values, and significantly lower moisture content and lightness values in comparison to control patties. Emulsion stability and cooking yield of PABP treated patties were significantly higher than control. Addition of extracts and BHT did not influence the physico-chemical properties and proximate composition of chicken patties. Both types of powders and extracts provided better protection to chicken meat patties against oxidative rancidity and microbial proliferation in comparison to control and BHT treated patties during refrigerated storage. It is concluded that pomegranate fruit byproducts in the form of peel powder, aril bagasse powder and their extracts can be successfully utilised in development of healthier chicken meat patties and these byproducts can also be effectively used as a replacement of synthetic antioxidants such as BHT.

쑥 분말 첨가와 도체등급이 돈육 패티(Patty)의 품질에 미치는 영향 (Effects of Addition of Mugwort Powder and Carcass Grade on the Quality Characteristics of Pork Patty)

  • 본 연구는 쑥의 첨가와 도체등급이 돈육 patty의 품질에 미치는 영향을 규명하기 위하여 쑥을 첨가하지 않은 B등급육 patty(A patty), 쑥을 첨가한 B등급육 patty(B patty), 쑥을 첨가하지 않은 E등급육 patty(C patty) 및 쑥을 첨가한 E등급육 patty(D patty)를 제조하고 일반성분, 열량, 아질산 잔류량, 표면색도, 조직감, 보수력 및 관능성을 실험하였다. 수분함량은 시료들 사이에 유의한 차이가 없었으며, 조지방 함량과 열량은 B등급육 patty가 E등급육 patty보다 높았다. 조회분은 patty들 사이에 유의한 차이가 없었으며, 아질산 잔류량은 쑥을 첨가한 patty가 첨가하지 않은 것보다 낮았다. 명도(L)및 황색도(b)는 B등급육 patty가 높았으며, 적색도(a)는 E등급육 patty가 높았다. 경도, 응집성 및 씹힘성은 B등급육이 E등급육 patty보다 낮았다. 돈육 patty의 향기, 맛, 조직감, 다즙성, 색깔 및 종합적인 기호성은 patty들 사이에 유의한 차이가 없었다.

Effect of Cooking Methods and Fat Levels on the Physico-chemical, Processing, Sensory and Microbial Quality of Buffalo Meat Patties

  • Buffalo meat patties with two fat levels, F1 (15% added fat) and F2 (5% added fat and 3% tapioca starch), were cooked in a pre-heated hot air oven (HO) at $175{\pm}2^{\circ}C$ for 15 min, in a microwave oven (MO) for 70 sec and by pressure cooking (PC) at 15 psi pressure for 10 min. and compared for physico-chemical, processing, sensory and microbiological quality attributes. F2 had significantly (p<0.05) higher value for the moisture and moisture protein ratio than F1. However, MO and PC patties had significantly (p<0.05) higher moisture content than HO-cooked buffalo meat patties irrespective of fat content. Highest fat percentage was in MO patties while the minimum was in PC patties. Moisture and fat retention and cooking yield were highest in MO patties irrespective of added fat content in the formulation. Cooking yield and dimensional parameters were better maintained in F2 than F1. Sensory scores viz. appearance and color, flavour, juiciness and texture for HO patties were better than other cooking methods. Sensory panelists rated overall acceptability of HO patties very good to excellent, whereas PC and MO patties were rated as good to very good irrespective of fat content. Microbiological quality was comparable in both groups irrespective of cooking methods used.

미역 페이스트 첨가에 의한 고기 패티의 품질변화 (Quality Changes of Meat Patties by the Addition of Sea Mustard Paste)

  • Sea mustard paste was prepared by treating wet and dried sea mustard with 0.1M Na2CO3, which mainly aimed to extract alginate from the cell wall of sea mustard. The pastes were added to beef, chicken and pork to manufacture the meat patties. The effects of adding the paste were investigated in terms of sensory properties, texture(hardness)and weight changes after cooking. The sensory attributes such as taste, color, texture and juiciness were generally enhanced by adding the paste. The hardness of cooked patties was significantly decreased, so the paste provided softer texture. The addition of paste also resulted in decreasing the weight loss of meat patties after cooking.

  • The meats of tuna Thunnus albacares and swordfish Xiphias gladius are ideal for fish patty production, offering high nutrition and other health benefits. Although red fish meat, including tuna, is added for cost-effectiveness, swordfish white meat is also used, as its aroma resembles that of market-sold beef patties. Here, we assessed the different blending ratios of tuna red meat and swordfish white meat (60:40, 40:60, 20:80, and 0:100) to find the optimal combination for fish patty production. Regarding color, the heated fish patties exhibited increased redness (a*) and yellowness (b*) compared with those of non-heated ones, with similar brightness (L*). The heated patties also scored higher concerning hardness, springiness, gumminess, and chewiness. A higher proportion of swordfish white meat resulted in a softer texture, particularly in patties with a ratio of 40% red meat to 60% white meat. Considering the results of the texture comparison analysis, it is recommended that the texture be improved by increasing the physical property "softness." Sensory evaluations revealed that the addition of white meat led to increased scores in terms of smell, beef taste, texture, and elasticity. These results suggest that swordfish white meat, with improved overall quality, is a suitable raw material for fish patties. Accordingly, the recommended ratio of 20% tuna red meat to 80% swordfish white meat is optimal for fish patty production.

토마토가 함유된 비가열 미트패티의 냉동 저장 중 품질특성 (Quality Characteristics of Non-cooked Meat Patties with Ground Raw Tomato During Freeze Storage)

  • 미트패티에 무첨가구(대조구)와 갈은 생토마를 각각 0.5, 1.0 및 1.5%씩 첨가하여 제품을 제조한 후 냉동 저장 중 물리화학적 및 관능적 품질특성을 조사하였다. pH, 명도 및 적색도는 토마토를 첨가한 제품에서 유의적으로 높게 나타났고(p<0.05), TBARS는 대조구에 비해 낮았다(p<0.05). 관능검사 결과 토마토 첨가는 전체적인 기호도에서 유의적 차이는 없었으나 다소 높은 점수를 얻었다. 이상의 결과에서 토마토를 함유한 기능성 미트패티 생산 시에는 첨가수준이나 첨가형태 등에 대한 더 많은 연구가 진행될 필요가 있다.

Evaluation of Rheological and Sensory Characteristics of Plant-Based Meat Analog with Comparison to Beef and Pork

  • This study explored the physicochemical, textural, and sensorial properties of a meat analog (MA) as compared to beef and pork meats. Results illustrate that MA patties had lower moisture, fat, and protein content, as well as higher ash and crude fiber than beef and pork. Likewise, MA patties had a higher pH, lightness (L*), and redness (a*) than either beef or pork. Pork meat exhibited the highest released water (RW) and cooking loss (CL) values, followed closely by MA with beef displaying the lowest values. Regardless of patty type, the post-cooking diameter patties were reduced significantly (p<0.05). However, the Warner-Bratzler shear force (WBSF), hardness, chewiness, and gumminess of beef were significantly higher than that of either pork or MA. The visible appearance of MA patties had more porous and loose structures before and after cooking. Consequently, based on sensory parameters, MA patties demonstrated the higher values for appearance and firmness, followed by beef and pork respectively, although the difference was not statistically significant. Therefore, the current study demonstrated that some physicochemical, textural, and sensory characteristics of beef and pork exhibited the most similarity to MA.

Effects of Addition of Herbs on Pork Patties during Storage

  • This study was conducted to investigate the effects of herbs (dill weed, fennel seed and rosemary) on color stability and lipid oxidation of ground pork patties during storage at $2^{\circ}C$ and $-20^{\circ}C$. Lipid oxidation was determined by the thiobarbituric acid reactive substances (TBARS) method. Fennel seed was identified as being the most effective ingredient in terms of meat redness (Hunter a-values) during storage at $2^{\circ}C$ (p<0.05). Patties treated with rosemary had lower Hunter a-values than control, and dill weed was the least beneficial in influencing meat redness, having significantly lower a-values than control patties. During frozen storage at $-20^{\circ}C$, no significant differences in a-values were observed between the control patties and those treated with fennel seed. Patties treated with rosemary had lower a-values than control and patties with dill weed had negative a-values throughout storage. The cooking process increased Hunter L-values and decreased a-values in all patty samples. TBARS values increased during storage. Rosemary displayed excellent antioxidative activity as evidenced by the completely inhibition of TBARS formation of cooked pork patties. Dill weed and fennel seed also exerted an intermediate but significant antioxidant effect during storage (p<0.05).
