Effect of Incorporation of Pomegranate Peel and Bagasse Powder and Their Extracts on Quality Characteristics of Chicken Meat Patties

  • This study was conducted to develop chicken meat patties by incorporating pomegranate peel and bagasse powders and their extracts. Patties were developed by incorporating pomegranate peel powder (PPP, 2 g), pomegranate aril bagasse powder (PABP, 4 g), pomegranate peel powder aqueous extract (PPAE, 6 g) and pomegranate aril bagasse powder aqueous extract (PABAE, 9 g) individually per 100 g of minced meat. Both types of powders and extracts treated patties had significantly higher total phenolic content than control and butylated hydroxytoluene (BHT) treated patties. Both types of powder (PPP and PABP) treated patties had significantly higher water holding capacity, ash, crude fibre content, and hardness values, and significantly lower moisture content and lightness values in comparison to control patties. Emulsion stability and cooking yield of PABP treated patties were significantly higher than control. Addition of extracts and BHT did not influence the physico-chemical properties and proximate composition of chicken patties. Both types of powders and extracts provided better protection to chicken meat patties against oxidative rancidity and microbial proliferation in comparison to control and BHT treated patties during refrigerated storage. It is concluded that pomegranate fruit byproducts in the form of peel powder, aril bagasse powder and their extracts can be successfully utilised in development of healthier chicken meat patties and these byproducts can also be effectively used as a replacement of synthetic antioxidants such as BHT.

  • 고등어를 보다 맛있고 편리하게 식용화할 수 있는 방안의 하나로 수세공정을 생략하여 영양성분의 유실을 막고, 유화커어드(emulsion curd)를 첨가하여 어획시기에 관계없이 제품의 지질함량이 일정함과 동시에 재품의 조직감을 개선하고, 향신료 및 부원료 등을 이용하여 어취차폐 및 결착성이 있으면서 또한 기름튀김하여 적색육어류의 특징적인 육색을 보완한 고등어버어거의 가공조건을 구명하였다. 채육한 고등어육(85%)과 돼지육(15%)의 혼합육에 대하여 유화커어드 18.3%, 대두단백질 3.0%, 식염 및 설탕 각각 2.0%, MSG 0.1%, 중합인산염 0.2%, sodium bicarbonate 0.4%, beef extract powder 0.5%, 그리고 어취교정을 위하여 양파가루, 마늘가루 및 생강가루 각각 0.1%씩을 첨가한 다음 잘 혼합하여 지름 80 mm, 높이 10 mm로 성형한 후 5 ppm의 실리콘유를 첨가한 $165^{\circ}C$ 부근의 튀김유에서 2분간 기름튀김하여 제조한 고등어버어거가 가장 좋았다.

Pumpkin Seed Oil as a Partial Animal Fat Replacer in Bologna-type Sausages

  • Beef fat was replaced with cold press pumpkin seed oil (PSO; 0%, 5%, 15%, and 20%) in the production of bologna-type sausages. A value of pH, water-holding capacity (WHC), jelly-fat separation, emulsion stability and viscosity values were determined in meat batters. Thiobarbituric acid reactive substances (TBARS), color, and textural characteristics (TPA, shear test, penetration test) were determined in end-product at 1, 7, 14, 21, and 28 days of storage at 4℃. The pH values were varied between 6.06 and 6.08. With the increase in the level of PSO in meat batters, there was a significant increase in WHC, jelly-fat separation and viscosity values (p<0.05) while a significant decrease in emulsion stability (p<0.05). TBARS values of sausages were found to be significantly higher than in the control group (p<0.05), and this trend continued during storage. Increasing of PSO level were caused a significant increase in L* and b* values while a decrease in a* value (p<0.05). Hardness, adhesiveness and chewiness values were significantly reduced whereas cohesiveness and resilience values increased (p<0.05). Maximum shear force and work of shear was significantly decreased as the level of PSO increased (p<0.05). Hardness, work of penetration and the resistance during the withdrawal of the probe values (penetration tests) increased significantly with the increase in the level of PSO (p<0.05). These results indicate that PSO has potential to be use as a replacement of animal-based fats in the production of bologna-type sausages.

NaCl 첨가량에 따른 돈육 유화물의 이화학적 특성 (Effects of NaCl Concentration on Physicochemical Properties of Pork Emulsion)

  • 본 연구는 돈육 유화물을 저염 육제품 개발의 기초자료로 활용하고자 돈육 유화물 제조 시 NaCl 첨가량에 따른 이화학적 특성을 조사하였고, 처리구별로 돈육 유화물 제조 시 NaCl 첨가량을 0%, 0.3%, 0.6%, 0.9%, 1.2%, 1.5% 첨가하여 6개의 처리구로 분류하여 제조하였다. 수분 함량은 NaCl 1.5% 첨가구가 대조구와 다른 처리구들에 비해 유의적으로 높은 값을 가졌다(P<0.05). 회분 함량은 NaCl 첨가율이 증가할수록 상승하는 추세를 보였으며, 단백질 함량은 NaCl 첨가에 따라 감소하는 경향을 나타내었다. 가열 전 pH는 NaCl 0.9%, 1.2%, 1.5% 첨가구가 유의적으로 낮았으며 (P<0.05), 가열 후에는 모든 NaCl 첨가구가 대조구에 비해 유의적으로 낮은 pH를 나타내었다(P<0.05). 색도 측정 결과 가열 전 명도는 모든 NaCl 처리구가 대조구에 비해 유의적으로 높은 수치를 나타내었으며(P<0.05), 적색도와 황색도는 대조구에 비해 유의적으로 낮은 수치를 나타내었다(P<0.05). 가열 후 명도와 황색도는 NaCl 첨가량이 증가할수록 감소하는 경향을 나타내었으며, 적색도는 증가 추세를 보였다. 보수력과 가열수율은 NaCl 첨가량이 증가함에 따라 증가하는 경향을 보였으며, 0.9% 처리구부터 유의적으로 높은 값을 나타내었다(P<0.05). 점도는 NaCl 1.2%, 1.5% 처리구가 69.60~71.41 Pa s로, 대조구와 NaCl 0.3% 처리구의 51.13~51.61 Pa s보다 높은 점도를 가진 것으로 나타내었다. 물성 측정 결과 탄력성과 응집성은 대조구와 처리구간에 유의적인 차이가 없었으며(P>0.05), 경도와 검성, 씹음성은 NaCl 1.5% 처리구가 대조구와 다른 처리구보다 유의적으로 높은 수치를 나타내었다(P<0.05). 이상의 연구 결과를 종합하면 돈육 유화물에 NaCl이 저염 수준인 0.9~1.2% 첨가되었을 때 NaCl 1.5% 첨가구와 이화학적으로 유사한 특성이 있는 것으로 나타나 돈육 유화물을 이용한 저염육제품 제조 시 염 농도를 0.9%, 1.2% 첨가하는 것이 바람직할 것으로 생각한다.

Effect of Gleditsia sinensis Lam. Extract on Physico-Chemical Properties of Emulsion-Type Pork Sausages

  • This study was performed to investigate the effect of Gleditsia sinensis Lam. extract on the physicochemical properties of emulsion-type pork sausages during storage at $10^{\circ}C$ for 4 wk. Treatments were as follows: (C, control; T1, sodium ascorbate 0.05%; T2, Gleditsia sinensis Lam. 0.05%; T3, Gleditsia sinensis Lam. 0.1%; T4, Gleditsia sinensis Lam. 0.2%; T5, Gleditsia sinensis Lam. 0.1% + sodium ascorbate 0.05%). The values of pH, moisture content, lightness, redness, and sensory attributes were all significantly decreased, while the yellowness, chroma, hue angle, and texture properties were increased during storage with increase of the Gleditsia sinensis Lam. extract added. In addition, the antioxidant activity and antimicrobial activity in the sausages displayed significant increases (p<0.05). Therefore, although it was concluded that the addition of Gleditsia sinensis Lam. extract is not effective for improvement of the physical properties compared to chemical additives in sausages, it could be applied to meat products as a natural preservatives.

Effect of Sodium Nitrite, Sodium Chloride and Concentrated Seawater on Physicochemical Properties of Meat Emulsion System

  • The objective of this study was to compare the effects of various salts on the physicochemical properties of pork emulsion sausages. Pork sausages were prepared using two different salts, sodium nitrite (SN) and sodium chloride (SC), and concentrated seawater (CSW). The CIE L*, CIE a*, and CIE b*, and chroma values of cooked and uncooked sausages with added CSW were significantly higher than those of the sausages with added SC (p<0.05). However, uncooked and cooked sausages with added SN and CSW had similar CIE a* values (p>0.05). The residual NO2- content of sausages with added CSW was significantly lower than that of sausages with added SN. Addition of CSW to sausages resulted in a higher cooking yield compared to the other treatments (p<0.05). Addition of SC resulted in significantly higher volatile basic nitrogen (VBN) and thiobarbituric acid (TBA) values compared to the other treatments. Furthermore, addition of CSW enhanced important physicochemical properties, including CIE a*, CIE b*, residual nitrite content, cooking yield, VBN, TBA, textural properties, and cross-sectional area.

Effect of Black Rice Powder Levels on Quality Properties of Emulsion-type Sausage

  • The effects of black rice powder on the quality of sausage were investigated. Samples were prepared with 0% (control), 1%, 3%, and 5% black rice powder. With increasing black rice powder content, the moisture and ash content of sausage increased, while protein con-tent was significantly less than that observed for the control (p<0.05). The fat content in samples containing 5% black rice powder was significantly less than that observed for other samples (p<0.05). With increasing black rice powder content, the pH of uncooked and cooked samples increased. In addition, lightness, redness, and yellowness decreased. With increasing content of black rice powder, emulsion stability decreased. On the other hand, with increasing black rice powder content, cooking yield increased. As compared to the other samples, those containing high content of black rice powder exhibited higher viscosity. With increasing black rice powder content, the hardness of samples decreased, while the gumminess and chewiness of samples containing black rice powder were less than those observed for the control (p<0.05). Moreover, with increasing black rice powder content, the flavor, juiciness, and overall acceptability of samples increased. In addition, the tenderness of samples containing 3% and 5% black rice powder was significantly greater than that observed for the control and sample containing 1% black rice powder (p<0.05). In addition to the economic benefits, black rice powder can be used to improve quality characteristics.

Effect of Cacao Bean Husk Powder on the Quality Properties of Pork Sausages

  • Cacao bean husk (Theobroma cacao L.) contains a high level of dietary fiber and therefore can be used as raw material in food processing. The objective of the present study was to measure the physicochemical properties and sensory traits of emulsion-type pork sausages with various levels of cacao bean husk powder (0.25%, 0.5%, 0.75%, 1%, and 2%). The moisture content in cooked sausages increased as the level of cacao bean husk power increased, whereas the protein content decreased (p<0.05). With respect to color, as the level of cacao bean husk power increased, there was a decrease in lightness and yellowness, but there was a considerable increase in redness (p<0.05). Cacao bean husk powder exhibited a positive effect on emulsion stability and apparent viscosity. In the sensory evaluation, increased level of cacao bean husk increased flavor acceptability; the 0.75% and 1% treatment groups showed significantly high overall acceptability (p<0.05). The thiobarbituric acid reactive species content of cooked sausages indicated that with the addition of cacao bean husk powder significantly inhibited lipid oxidation in the sausages during refrigerated storage (p<0.05). Overall, the findings of the present study suggest that adding 0.75% and 1% cacao bean husk powder as a natural ingredient in sausages can help develop meat products with excellent qualities.

Effects of Dietary Fiber Extracted from Pumpkin (Cucurbita maxima Duch.) on the Physico-Chemical and Sensory Characteristics of Reduced-Fat Frankfurters

  • In this study, we investigated the effects of reducing fat levels from 30% to 25, 20, and 15% by substituting pork fat with water and pumpkin fiber (2%) on the quality of frankfurters compared with control. Decreasing the fat concentration from 30% to 15% significantly increased moisture content, redness of meat batter and frankfurter, cooking loss, and water exudation, and decreased fat content, energy value, pH, and lightness of meat batter and frankfurter, hardness, cohesiveness, gumminess, chewiness, and apparent viscosity. The addition of 2% pumpkin fiber was significantly increased moisture content, yellowness of meat batter and frankfurter, hardness, cohesiveness, gumminess, chewiness, and apparent viscosity, whereas reduced cooking loss and emulsion stability. The treatment of reduced-fat frankfurters formulated with 20 and 25% fat levels and with pumpkin fiber had sensory properties similar to the high-fat control frankfurters. The results demonstrate that when the reduced-fat frankfurter with 2% added pumpkin fiber and water replaces fat levels can be readily made with high quality and acceptable sensory properties.

Effects of Sea Tangle (Lamina japonica) Powder on Quality Characteristics of Breakfast Sausages

  • Breakfast sausages containing 1, 2, 3, and 4% sea tangle powder (Lamina japonica) were prepared. No differences were found in moisture, protein, and fat contents among the control and treatments. However, the ash content increased with increasing amounts of sea tangle powder (p<0.05). The pH levels in the treated samples were lower than the control in both the meat batters and the breakfast sausages (p<0.05). The $L^*$ and $a^*$ values of the meat batters and breakfast sausages were decreased by the addition of the sea tangle powder, and the control had the highest $b^*$ value (p<0.05). The added sea tangle powder improved cooking loss and improved emulsion stability. The T4 sample (containing 4% sea tangle powder) was shown to have the lowest cooking loss and water loss (p<0.05). The hardness, gumminess, and chewiness of the treatments increased compared to the control due to the presence of dietary fibers in the sea tangle. In the sensory evaluations, the 1% sea tangle powder treatment received a lower color score, but received significantly higher scores for flavor, tenderness, and juiciness (p<0.05). Collectively, the breakfast sausage containing 1% sea tangle powder was determined to have the highest overall acceptability. Altogether, the best results, in terms of physicochemical and sensory properties, were obtained for the breakfast sausage containing 1% sea tangle powder.
