중학생의 가족식사 횟수에 따른 식행동, 식품섭취 및 삶의 만족도 (The Relationships of Dietary Behavior, Food Intake, and Life Satisfaction with Family Meal Frequency in Middle School Students)

  • To study the importance of family meals in adolescents, 251 middle school students were surveyed through a questionnaire on their family meal patterns, dietary behaviors, food intake, and life satisfaction. The family meals were defined as "meals with all family members living together" by 62.2% of the students. For the frequency of family meals, 42.2% of the students replied having family meals "More than once a day". A common reason for the difficulty in having a family meal was a "lack of time" (73.3% of the students). Students tended to respond that they would be most fond in having meals with entire family members with traditional Korean food. Having more frequent family meals was found to benefit both individual and familial dietary behavior. In terms of food intake according to the frequency of family meals, the group having frequent family meals consumed significantly more rice, tofu, legumes, meats, fishes, eggs, green vegetables, seaweeds, fruits, milk, and milk products. This indicates that students can achieve a balanced diet through family meals. In terms of emotional status, the group having more frequent family meals showed a higher satisfaction with their daily life, health, nutritional status, and care from their relatives. In terms of personal mental status, the group having more frequent family meals was also found to be more effective at controlling undesirable emotions such as loneliness, indignation, and lethargy. As a result of this study, students in the group having more frequent family meals were found to have a positive dietary behavior, a balanced nutrition, a higher life satisfaction, and a more stable mental status. This result is useful as nutritional and educational information in schools to impress upon the public the importance of family meals for adolescents.

중.고등학생의 가족 식사에 대한 인식과 태도 연구 (A Study on the Perceptions and Attitudes of Middle and High School Students towards Family Meals)

  • This study investigated the overall conditions related to family meals, including perceptions, attitudes, and behaviors, among middle and high school students. The data were collected from 773 male and female students attending middle and high schools in Seoul and Kyunggi-Do from March to May 2006, using pre-tested self-administered questionnaires. The results are as follows: 78.9% of the subjects lived with their parents and siblings, and 75.7% regarded family meals as meals eaten with all family members living together in a household. As for the frequency of family meals, 40.1% of the middle school subjects answered that they ate with their family 'more than once per day' and 20.8% answered '1 or 2 time per a week'. However 21.0% of the high school students had family meals 'more than once per day', and 31.7% had family meals '1 or 2 times per a week', showing a significant difference between the groups(p<0.001). When the degree of satisfaction with life was evaluated using a Likert scale(strongly satisfied 5 point, strongly unsatisfied 1 point), the middle school students showed a significantly higher level of satisfaction than the high school students towards daily life, health, nutritive conditions, and family care. feelings, attitudes, and behaviors toward family meals were also evaluated(strongly agree 5 point, strongly disagree 1 point), and the results showed that the subjects had positive psychological feelings, with significant differences based on the frequency of family meals. Likewise, the groups who ate frequent family meals scored higher on aspects related to having positive attitudes and behaviors toward the family meal, implying that eating family meals is associated with promoting friendship, psychological stability, and positive thinking in adolescents. These findings suggest that attention needs to he directed toward increasing the frequency of family meals and creating a positive family meal environment.

소아자녀를 둔 장년기 어머니의 결식빈도에 영향을 미치는 요인 : 2010-2011년 국민건강영양조사 자료 이용 (Factors Affecting the Frequency of Skipping Meals of Prime-Aged Mothers with Children : Data from the Fifth Korea National Health and Nutrition Examination Survey, 2010-2011)

  • Objectives: This study was designed with the goal of understanding the factors affecting the frequency of skipping meals of prime-aged mothers with children as well as their nutritional status. Methods: Utilizing data from the 2010-2011 Korea National Health and Nutrition Survey, the frequency of skipping meals of mothers aged between 30 to 49 years with children aged between 3 to 11 years during a two day period was statistically analyzed. The number of meals skipped calculated and categorized into skipping no meals, skipping one meal, skipping two meals or more. Results: Compared to subjects who corresponded to mean nutrient adequacy ratio(MAR) of 4 quartile, subjects who corresponded to MAR of 2 quartile had 2.766 (95% CI: 1.552-4.931) probability of being in the 1 meal skippers group, while the probability of being in the more than 2 meals skippers group was 2.743(95% CI: 1.353-5.564). Also, compared to subjects who corresponded to MAR of 4 quartile, subjects who corresponded to MAR of 1 quartile had 3.471 (95% CI: 1.871-6.442) probability of being in the 1 meal skippers group, while the odds ratio for being in the more than 2 meals skippers group was 5.258(95% CI: 2.642-10.466). Conclusions: The results have the advantage of being generalized because the study selected subjects from probability sampling of the female population of Korea. The research results showed that the elements influencing skipping meals of prime-aged mothers with children were mean nutrient adequacy ratio and the number of nutrients, under estimated average requirement intake, and others. Therefore, to encourage dietary behaviors in the right direction, an integrated approach that considers the associated factors must be realized. Future studies are needed to understand how the frequency of skipping meals of mothers affects their children.

전자레인지 이용율에 영향을 미치는 관련변인에 대한 분석 (The Analysis of the Related Variables Affecting the Use of the Microwave oven)

  • The purpose of this study was to see that how about the related variables influence on the use of the microwave oven and how about the use of the microwave oven influence on the time spent in meal preparation and meal management. Questionaires were give to randomly selected homaker's, in kwangju in August, 1986. Data from the 149 response were analyzed according to multiple regression. The results were as follows; 1. The variables affecting the use of the microwave oven were family income, homaker's employed hours, homakers' education level, a period of use a microwave oven, congnition of a special character in a microwave oven, family style of participation in meal preparation, frequency in use of instant food. 2. The variables of the use the microwave oven was significantly influence on the time spent in meal preparation. 3. The variables of the use the microwave oven was not significantly influence on meal management.

강원지역 일부 고등학생들의 식습관에 따른 구강보건지식 수준 (Knowledge Level on Oral-Health of High-School Students according to Eating Habits in Some Regions of Gang-won Province)

  • 본 연구는 일부 강원지역 고등학생들의 식습관 실태 및 식습관에 따른 구강보건지식 수준에 대하여 조사한 결과 아래와 같다. 1. 학생들이 간식 섭취 결과, 간식을 하루에 한번 섭취하는 학생이 46.5%로 가장 많았으며, 학생들이 간식을 섭취하는 시기에 대해 살펴본 결과, 간식을 불규칙적으로 섭취하는 학생이 39.0%로 가장 많았다. 2. 학생들이 간식으로 섭취하는 음식에 대해 살펴본 결과, 간식으로 과자류를 많이 먹는 학생이 40.1%로 가장 많았으며, 성별(p<.001), 계열별(p<.05), 부모님 월수입별(p<.05), 한달 용돈별(p<.001)에 따라 유의한 차이가 있었다. 3. 학생들의 식습관에 대해 살펴본 결과, 10점 만점 중 전체 평균이 5.03으로, 학생들은 식습관이 그다지 좋지 않은 것으로 나타났다. 치아우식증에 영향을 주는 간식에 대해 학생들의 인식을 살펴본 결과, 치아우식증에 사탕과 초콜릿이 영향을 준다고 인식하는 학생이 49.2%로 가장 많았다. 학생들의 식습관 실태에 따라 구강보건지식에 대해 살펴본 결과 간식섭취 횟수별로는 간식을 3~4일에 한번 섭취하는 학생이 구강 보건지식이 가장 높았고, 일주일에 한번 이하 섭취하는 학생은 구강보건지식이 낮았으며, 간식섭취 횟수에 따라 유의미한 차이를 보였다(F=4.53, p<.05).

  • This study was carried out to identify dietary risk factors for childhood obesity. The study subjects were male children, aged 2-6years, who were enrolled in nursery schools and kindergartens. We obtained anthropometric measurements from 949 boys and dietary questionnaires from 253 boys. The subjects were classified into two groups using the BMI criteria, normal (n=200) group with the BMI below 85th percentile and the obese group with the BMI at 85th percentile and above (n=53). The logistic regression analysis showed that the odds ratios (OR) for obesity were, birth weight greater than 4.0㎏ (3.27) , increased meal speed (4.98) , the frequency of overeating more than twice a week (2.63), the consumption of cooked rice more than one bowl per meal (2.77), the consumption of milk and dairy products less than 5 times a week (2.81), and increased maternal meal speed (1.98). Stepwise multiple logistic regression analyses showed that the variables which contribute to obesity significantly were birth weight greater than 4.0 ㎏ (OR 5.19), the frequency of overeating more than twice a week (OR 2.51) , the consumption of cooked rice more than one bowl per meal (OR 2.74), and the consumption of milk and dairy products less than 5 times a week (OR 4.43) (p<0.0001) . The results of this study indicate that dietary habits of both children and of their mothers as well as child's birth weight are important variables that contribute to childhood obesity. 레스토랑 수익 관리를 위한 적정 식사 시간 측정에 관한 연구 (Measuring Expected Meal Duration for Restaurant Revenue Management)

  • Restaurants have two strategic levers for revenue management: duration control and demand-based pricing. Reducing dining times, especially during peak periods, can add considerable revenue for restaurants. Managing meal duration, however, can be far more complex than manipulating the price. This paper examines dining duration expectations for restaurants types(Family, Korean, Quick service restaurant), customers characteristics(gender, age, occupation, meal period, visiting frequency, dining occasion, dining companions) using an a adaptation of a price sensitivity measurement tool, naming it 'Time Sensitivity measurement tool' or TSM. The TSM is then used to derive the optimal time points, and the range of acceptable times. The results demonstrate that there is a relatively wide spread of acceptable dining duration times in family restaurant. Furthermore, the optimal time points was shorter than the mean expected dining times, which suggests that many restaurants may be able to shorten dining duration without compromising customer satisfaction. The paper explores whether demographic and dining variables have an impact on time preferences, and finds whether gender, age, meal periods, visiting frequency, and dining companion effects are significant. Specifically, women in their thirties tended to prefer a significantly longer dining times for dinner.

Energy intake and snack choice by the meal patterns of employed people

  • The aim of this study was to provide descriptive information on meal and snack patterns and to investigate snacks in relation to energy intake and food choice according to the meal patterns of employed people in Korea. 683 employed people (292 males, 391 females) were interviewed to collect one day dietary data by using 24-h dietary recall. A recorded day was divided into 3 meal and 3 snack periods by the respondent's criteria and the time of consumption. To analyze the eating pattern participants were divided as the more frequent snack eaters (MFSE) and the less frequent snack eaters (LFSE). They were also categorized into 6 groups according to the frequency of all eating occasions. The common meal pattern in nearly half of the subjects (47.6%) was composed of three meals plus one or two snacks per day. A trend of an increasing the number of snacks in between main meals emerges, although the conventional meal pattern is still retained in most employed Korean adults. Women, aged 30-39, and urban residents, had a higher number of being MFSE than LFSE. Increasing eating occasions was associated with higher energy, protein, and carbohydrate intakes, with the exception of fat intakes. 16.8% of the total daily energy intake came from snack consumption, while the 3 main meals contributed 83.2%. Energy and macronutrient intakes from snacks in the MFSE were significantly higher than the LFSE. Instant coffee was the most popular snack in the morning and afternoon, whereas heavy snacks and alcohol were more frequently consumed by both of the meal skipper groups ($\leq$2M+2,3S and $\leq$2M+0,1S) in the evening. In conclusion, meal pattern is changing to reflect an increase of more snacks between the three main meals. Meal and snack patterns may be markers for the energy and macronutrient intakes of employed people in Korea.

도시 저소득층 노인들의 영양 및 건강상태 조사와 급식이 노인들의 영양 및 건강 상태의 개선에 미치는 영향 -IV. 급식이 도시 저소득층 노인들의 무기질 영양 상태 및 임상 증상에 미치는 영향- (Nutritional and Health status of Korean Elderly form Low-Income, Urban Area and Improving Effect of meal Service on Nutritional and Health Status -IV.   • The effect of meal service for home-staying, urban elderly with low income on their mineral status and prevalence of clinical symptoms was evaluated. One hundred. One hundred and eighty three subjects were assigned to meal-served(served) and non-served(non-served)groups. A meal containing approximately one half of the RDA for energy, protein, calcium and iron was served as lunch every day to served group at a welfare center. Dietary, biochemical and clinical data were collected before and after 6 months of meal service and the changes of parameters were analyzed with paired t-test. served female showed significantly increased intake of calcium. The mean hemoglobin, serum iron, TIBC and serum copper of female were significantly increase with meal service. The proportion of anemic female compared to reference data on hemoglobin, hematocrit and serum iron were 45.5$\%$, 29.1$\%$ and 16.4$\%$ respectively, but were lowered to 18.2$\%$, 7.3$\%$, and 5.5$\%$ after 6 months of meal service. served male showed significant increase in MCHC, serum copper, and urinary Na. The urinary Ca/Creatinine, which is often used as an index of bone resorption, was decreased significantly in served group. The decrease in the proportion of served women suffering from edema of ankle and diarrhea was most apparent and less women reported feeling clinical symptoms of dizziness, constipation, difficulty in hearing, and coughing after meal service. The symptoms of benumbness of hands and feet and coughing was lowered most among men after meal service. Clinical symptoms of non-served elderly did not show improvement in feeling clinical symptoms except slightly decreased frequency in coughing of female and buzzing sound in the ears and diarrhea of male.

사료 공급율 및 공급횟수가 저수온기에 사육된 넙치 미성어의 성장 및 체조성에 미치는 영향 (Effects of Feeding Rate and Feeding Frequency on Growth and Body Composition of Sub-adult Flounder Paralichthys olivaceus in Suboptimal Water Temperature)

  • Two 15-week feeding trials were conducted to investigate feeding rate and feeding frequency for growth of sub-adult flounder in suboptimal water temperature ($12^{\circ}C$). In the first experiment, duplicated groups of fish (initial mean weight of 279 g) were fed a extruded pellet once a day at the different feeding rates of 0.1, 0.15, 0.2, 0.3% body weight per day (BW/d), and satiation (0.32% BW/d). Weight gain and feed efficiency were increased significantly (P<0.05) with increase in feeding rates from 0.1 to 0.3% BW/d, but there were no significant differences in weight gain and feed efficiency of fish fed the diet between 0.3% BW/d and to satiation. Crude protein content of dorsal muscle of fish fed the 0.1% BW/d diet was significantly (P<0.05) lower than that of the other groups. In the second experiment, duplicated groups of fish (initial mean weight of 281 g) were fed to apparent satiation with a extruded pellet at three different feeding frequencies (one meal every two days, one meal a day and two meals a day). Weight gain, feed efficiency and condition factor of fish fed one meal every two days were significantly (P<0.05) lower than those of fish fed one meal and two meals a day, but there were no significant differences in weight gain, feed efficiency and condition factor of fish fed between one meal and two meals a day. Based on the results of this study, optimum feeding frequency is one meal a day with satiation feeding for growth and feed efficiency of sub-adult flounder (270-350 g) in suboptimal water temperature ($12^{\circ}C$).
