변성전분을 이용한 저지방 마요네즈의 개발 (Development of Low Fat Mayonnaise Made with Modified Starch)

  • This study was examined closely physiological activation and intended to present the possibility of developing food low-fat food. Developing carbohydrate fat replacer as materials for low-fat food made of Korean potato starch, it is expected that the new demand of fat replacer will be created. Potato starch was modified by chemical modification. The calorie of starch of GPS was measured to be 3.0 kcal/g, those of chemically modified starch, HPR showed 2.5 kcal/g respectively, suggesting that calorie is decreased by modified treatment. The appropriateness of processing food was experimented by substituting the existing oil and fat containing food with gel of starch and modified starch in constant rate through utilization of modified starch. When producing mayonnaise by substituting edible oil with gel of modified starch in 10-50%, calorie was reduced by 44${\sim}$45% when substituted by 50%, suggesting the potential of low-fat food. Measuring viscosity of mayonnaise by Brookfield viscometer, the mayonnaise with HPR showed high viscosity and the chemical modified starch group of EZ also showed high viscosity. Generally, the material property of mayonnaise tended to reduce in all measured items when oil and fat are substituted by starch substituting materials and the substituting materials increase. When it comes to the emulsification stability of mayonnaise with starch substituting materials, emulsification stability of all mayonnaise with starch substituting materials is lower than that of compared group. While the group with NL as commercial fat replacer showed emulsification stability which was slightly higher than group with modified starch and the substitution group of HPR showed higher emulsification stability. Sensory evaluation for low-fat mayonnaise by substituting oil the products substituted by modified starch was more preferred than general starch substituting products such as GPS. While NL as commercially fat replacer showed the hight preference, products with H40, EZ were also highly preferred.

  • The effects of size distribution of oil particles on the emulsion stability of mayonnaise were studied as follows; The stability of mayonnaise has concerned closely with the viscosity and the size distribution of oil particles. Mostly, if the viscosity was increased, the stability was improved, and the distribution of oil particles was uniform and the less the variation, the more the stability. 75% of oil concentration of sample showed the highest viscosity, also the size of sample was the most uniform, compared to other concentration. Mayonnaise prepared with whole egg was unstable, and the size of oil particles was double larger than the case prepared with only the yolk. Addition of xanthan gum increased, the viscosity and the stability by centrifuge so that the more stable mayonnaise could be prepared. The result of using log-normal density function by Heldmann represented that the normal size of sample adding 0.6%-soluble starch and sample N in non-adding control was increased, while those of sample adding xanthan gum and soluble starch at the same time didn't change.

국내외(國內外) Mayonnaise의 성분(成分)에 관한 연구(硏究) (A Study on the Components of Various Domestic and Foreign Made Mayonnaises)

  • Six bands of domestic and American mayonnaises, four brands of Japanese mayonnaise and one home made mayonnaise were analyzed for chemical and fatty acid and sterol compositions. The results obtained as follows; 1. Moisture content was observed $13.3{\sim}22.4%$ of total samples, but H and L samples of American mayonnaise was observed 54.4 and 62.3% for the purpose of low caloried products. 2. Linoleic and linolenic acid were 50.3 and 7.9% and P/S ratio was observed $3.50{\sim}4.32$ over ideal ratio. 3. Cholesterol contents in O and N samples of Japanese mayonnaise were 166.07 mg/100 g product, 155.89 mg/100 g product. These figures are 3 times of domestic samples, and 4.8 times of American samples. Cholesterol content in home made mayonnaise was 90.75 mg/100 g product. 4. Little variation in stigmasterol content was observed among the brands of mayonnaise in contrast there was wide variation in sitosterol content ranged from 38.37 mg/100 g product to 409.16 mg/100 g product.

전분 다이어트 마요네즈의 제조 및 다이어트 효과 검색 (Manufacturing of Dietary Mayonnaise used for Corn Starch and Identification of Dietary Effect)

  • 식용유, 난황 및 각종 조미료를 주원료로 한 마요네즈는 높은 열량으로 인한 비만과 각종 성인병을 유발할 수 있는 가능성을 내포하고 있다. 이에 전분을 이용하여 제조한 전분풀을 적용하여 마요네즈 고유의 맛과 향을 유지하며 열량이 낮은 새로운 형태의 다이어트 마요네즈를 제조하였다. 여기에 다이어트 효과가 입증된 바 있는 O.R.capsicum과 붉은색을 나타내는 지용성 천연색소인 O.R.paprika를 접합시켜 매운맛 다이어트 마요네즈의 제조도 가능하였다. 식용유의일부를 전분풀로 대체한 본 시제품의 경우 그 열량은 일반마요네즈가 748kca1인데 비하여 237∼240kca1로 약 1/3 수준에 그쳤으며, 이러한 다이어트 효과는 실험용 쥐를 이용한 동물실험에서도 재확인이 가능하였다.

Formulation of functional mayonnaise with defatted wheat germ flour as egg yolk substitute: Rheological, textural and stability analyses

  • The aim of this research was to study the feasibility of the defatted wheat germ flour (DWGF) alone or in combination with xanthan gum (XG) as egg yolk substitutes in mayonnaise formulation. In this research, DWGF was used at different levels (0, 25, 75 and 100%) alone or in combination with the XG (0.2%) as egg substitutes. The effects of these substitutions on the stability, textural and rheological characteristics of mayonnaise were investigated. According to the results, DWGF can be used as an egg yolk substitute in mayonnaise. Combining DWGF and XG as egg yolk substitute, improved the stability, textural and rheological properties. Mayonnaise with 100% egg yolk replacement showed the hardest structure, while the lowest firmness value was obtained in the control containing 100% egg yolk. Also, the highest adhesiveness value occurred in the sample with 100% DWGF. The thixotropic behavior was observed for all investigated mayonnaise samples over the all ranges of the studied shear rate (0.05-450/sec). Furthermore, the highest content of consistency coefficient value was observed in the sample with 100% DWGF and 0.2% XG. Therefore, it can be concluded that low-cholesterol mayonnaise with proper stability, textural and rheological characteristics are achievable by applying of the desirable combination of DWGF and XG.

식초 첨가량에 따른 마요네즈 드레싱의 유화 안정성 (The Effect of Vinegar Concentration the Emulsion Stability of Mayonnaise Dressing)

  • The effect of vinegar concentration (+30%, 0% and -30%) on the emulsion stability of mayonnaise dressing was studied by the measurement of theological test and sensory evaluation. The emulsion stability of mayonnaise dressing increased with increase in vinegar concentration. The results of steady shear theological test indicated that C sample of the highest vinegar concentration (+30%) exhibited higher emulsion stability than other samples. The dynamic shear datas were similar to steady shear theological data. The mayonnaise dressing samples showed time dependence, which was quantitatively described by the Weltman model. Parameters A and B indicated that the structure of C sample exhibited more stable than that of A (-30%) and B (0%) samples. The amount of oil separation was less than that of A and B samples. The results of sensory evaluation were similar to those of theological and emulsion tests.

녹차분말 농도에 따른 마요네즈의 품질 특성 (Quality Characteristics of Green Tea Powder on Mayonnaise)

  • The purpose of this study was to investigate the sensory and mechanical characteristics of mayonnaise containing various levels of green tea powder The highest viscosity of mayonnaise was obtained at the green tea powder concentration of 0.5% The emulsion, stability was increased with the addition of green tea powder. In the sensory evaluation, overall acceptabilty appeared to be the highest when 0.1% of green tea powder was added. There was a significant difference between the samples (P<.05) In terms of change in color, the values of L, a, b, and ΔE decreased as the amount of green tea powder increased. In the measurement of the texture, the hardness of mayonnaise was highest in the control of green tea powder, and the springiness appeared to be higher in the mayonnaise with 0.1% of green tea powder. The odor acceptabilty in the sensory evaluation showed a negative correlation with the values of gumminess in the mechanical characteristics. The subjective parameters that affect overall quality on sensory evaluation were determined by, and they were odor acceptabilty, after taste, oily taste, sour odor. sweet taste. egg odor, color acceptabilty, and salty taste. These results showed that mayonnaise made with 0.1% green tea powder, salad oil 474.5ml. egg golk 85g, sugar l0g, salt 7g, and vinegar 23m1 with the addition of 0.6g green tea powder was the most effective compared with other treatments.

된장분말을 첨가한 두유마요네즈와 일반마요네즈의 저장안정성 비교 (Comparison of Storage Stability between Soy Milk Mayonnaise and Mayonnaise contained Soybean Paste Powder)

  • 마요네즈 제조 시 유화제로 사용되고 있는 난황이 콜레스테롤을 다량 함유하고 있는 점을 개선하기 위하여 난황 대신 두유를 사용하였고, 된장의 항산화 효과로 인해 마요네즈의 저장성을 증진시켜줄 수 있을 것이라는 점에 착안하여 된장분말을 첨가하여 마요네즈를 제조한 후 유화제 종류와 된장분말의 첨가가 마요네즈의 품질 및 저장성을 향상시킬 수 있는지 조사하고자 연구를 시행하였고, 그 결과는 다음과 같다. 1. 과산화물가, TBA가, 산가는 저장기간 동안 점차 증가하였다(p < 0.001). 과산화물가는 66배$\sim$140배, TBA가와 산가는 2배$\sim$3배의 증가를 보였다. 된장분말의 첨가량이 증가할수록 과산화물가, TBA가, 산가의 증가가 적은 것으로 나타났다(p < 0.001). 2. 탁도는 초기에 E3와 S3에서 높게 나타났다. E군은 S군보다 탁도가 높았고, 된장분말의 첨가량이 높을수록 탁도는 높게 나타났으며, 저장기간에 따라 감소하였다(p < 0.001). 3.점도는 E군이 S군보다 높았고, 된장분말의 농도가 증가할수록 점도도 증가하였다. E3에서 $65.18{\times}10^3\;cp$로 가장 높은 점도를 나타내었으며, S1에서 $19.19{\times}10^3\;cp$로 가장 낮은 점도를 나타냈다. 된장분말의 첨가량은 저장기간에 따른 점도의 감소를 지연시키는 것으로 나타났다(p < 0.001). 연구 결과를 종합해 보면 된장분말의 첨가에 의해 마요네즈 저장 중의 산화안정성이 향상되었고, 점도 감소율도 낮아졌다. 따라서 된장분말을 첨가하고 두유로 제조한 마요네즈는 저장성을 향상시켜 품질개선에 기여할 수 있을 것으로 사료된다.

충전컬럼 및 모세관컬럼 가스크로마토그라프에 의한 마요네즈 중의 스테롤 분석연구 (Studies on Analysis of Sterols in Mayonnaise by GLC with Packed and Capillary Column)

  • 가스크로마토그라프법으로 마요네즈 중의 스테롤을 정량하는데 있어서 충전컬럼과 모세관 컬럼을 사용하여 비교 연구하였다. 두 컬럼의 경우 4종의 스테롤(cholesterol, campesterol, stigmasterol, ${\beta}-sitosterol$)이 모두 뚜렷히 분리되었으나 모세관 컬럼이 신속성, 재현성, 분리능 면에서 우수하였다. 한편, 제품에 적용하여 분석한 결과, 측정된 cholesterol 함량으로부터 추정한 시판 마요네즈 난황사용량은 충전컬럼의 경우 $2.69{\sim}7.11%$, 모세관 컬럼의 경우 $2.42{\sim}6.08%$ 범위이었으며, 스테롤 조성으로부터 마요네즈 제조에 사용된 식용유는 대두유 및 면실유임을 알 수 있었다.

마요네즈 제조시 들기름 혼합유의 산화안정성 (Oxidative Stability of Perilla Blended Oils in Mayonnaise Preparation)

  • 마요네즈 제조시 일반적으로 사용되는 식용유 중에서 들기름과 혼용시 산화안정성에서 가장 효과적인 식물유를 선발하고자 하였다. 들기름과 대두유, 채종유, 옥배유 해바라기유 및 들기름과 이들 식물유를 동일 중량비로 섞은 들기름 혼합유에 대한 산화안정성을 비교하였다. 비교한 들기름 혼합유 중 대두유 혼합 들기름이 가장 효과적이었으며, 이것은 대두유의 천연 토코페롤 함량이 가장 많은 것과 관계가 있는 것으로 추정되었다. 들기름에 대두유를 같은 비율로 섞은 혼합유와 들기름만을 사용한 마요네즈를 제조해 이들의 $37^{\circ}C$ 보존 중 과산화물가와 토코페롤 함량의 변화를 측정하여 비교하였다. 들기름과 대두유의 혼합유를 사용한 마요네즈가 들기름만을 단독으로 사용한 마요네즈 보다 과산화물가 및 토코페롤 함량의 변화도 적은 것으로 나타나 마요네즈 제조시에 들기름 혼합유 사용 가능성을 제시해 주었다.
