Rheological Behaviour of Emulsions Containing Polyacrylamide (폴리아크릴아마이드를 함유한 에멀젼의 유변학적 거동)

  • We have investigated the rheological behaviours of emulsions containing polymers. The polymers used in this study were polyacrylamide and carboxy vinyl polymer. The emulsion with polyacrylamide shows better prior preference than that with carboxy vinyl polymer on the skin texture. In the toxicity test, such as, LLNA cell toxicity, skin organ culture and human patch test, polyacrylamide was the appropriate materials for the cosmetics. The viscosity of polyacrylamide shows maximum value in neutral pH and good stability against temperature. The decreasing effect of viscosity against salt was not good enough but showed a better result than that of carboxy vinyl polymer. Two times the amount of polyacrylamide should be used for the formation of a similar viscosity of carboxy vinyl polymer. Yield value of polyacrylamide was low and the effect for the stabilizing emulsions was also low.

Quality Characteristics of Dumpling Shells Containing Loquat Leaf Powder (비파잎 분말 첨가가 만두피의 품질 특성에 미치는 영향)

  • This study was conducted to investigate the effects of loquat (Eriobotrya japonica Lindl.) leaf powder (LLP) on quality characteristics of dumpling shells. Dumpling shell samples were prepared with wheat flour containing different amounts of LLP, and their characteristics were then investigated. Amylography revealed that the gelatinization temperature of the LLP-wheat flours composite increased, while the initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity, all decreased with increasing LLP content. As increasing amounts of LLP were added, the L and a values were reduced, whereas the b value was increased. Moreover, the addition of LLP increased hardness, cohesiveness, and adhesiveness, while it reduced springiness. Overall, sensory evaluation revealed that dumpling shells with 5% LLP were preferred more than other samples.

Production and Characteristics of Cellulose from Saprolegnia ferax (미생물 셀룰로오스의 생산 및 특성에 관한 연구)

  • This study was carried out to examine the optimum culture condition for the production of cellulose from Saprolegnia ferax and its physical characteristics. Conclusions obtained from the results of this study were as follows: In producing the cellulose from S. ferex, optimal pH and temperature were 7.0 and $26{\sim}30^{\circ}C$ with a maximum of $26^{\circ}C$, respectively. And, optimal culture period was 11days. WHC and OHC of biocellulose were 3.2(25.04 g/g) times and 3.5(25.75 g/g) times higher than those of commercial ${\alpha}-cellulose$(7.57, 7.25 g/g) respectively. The viscosity of biocellulose is lower than that of commercial ${\alpha}-cellulose$. And the effect of rpm on the viscosity of biocellulose was more than on the that of ${\alpha}-cellulose$.

Development of Shear Extrusion Test for the Texture Evaluation of Cooked Noddle (삶은 국수의 조직감 평가를 위한 층밀림 압출 실험)

  • An objective method for the evaluation of eating quality of cooked noodle was established by using a specially designed shear extrusion cell of Rheometer. From the force-distance curve, the maximum force, initial force, extrusion work, and the slope were determined. In a test with Korean dried noodles made from 17 types of Australian wheat flour, the maximum and initial forces and extrusion work could represent the firm-soft and chewy character, which govern mostly the preference of cooked noodle. On the other hand, the slope could distinguish the textural changes of cooked noodle during the storage after cooking. The parameters showed significant correlation with the protein content, water absorption, development time and extensibility of flour, but no correlation was obtained with the maximum viscosity of viscogram. For the estimation of textural preference, the correlation coefficient obtained from a multiple regression analysis using the maximum viscosity of viscogram and the maximum force of shear extrusion test as the two independent variables was not significantly higher than the coefficient obtained from a simple regression with the maximum force only.

  • The principal objective of this study was to evaluate the quality characteristics of dried noodles when different concentrations of Loquat (Eriobotyya japonica Lindley) leaf powder (LLP) were added to the wheat flour. The cooking quality, mechanical texture properties, and viscosity were measured, and a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite LLP-wheat flours were shown to increase. As measured via amylograph, viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity values of those samples decreased as the LLP content increased. As increasing amounts of LLP were added, the L and a values were reduced, whereas the b value was increased and the color values, weight, and volume of the cooked noodle increased, as did the turbidity of the soup. With regard to the textural characteristics, the LLP additive increased hardness and cohesiveness, and reduced adhesiveness and springiness. Overall, the noodles prepared with 5% LLP were preferred more than the others, according to the results of our sensory evaluation.

Dilute Solution Properties of Biopolymer Produced by Alkali-Tolerant Bacillus sp. (알칼리 내성 Bacillus Sp.에 의한 생물 고분자의 희석용액 특성)

  • Highly viscous biopolymer from alkali-tolerant Bacillus sp. was purified and its solution properties were investigated. The intrinsic viscosities for crude biopolymer and biopolymers purified by dialysis or CPC(cetylpyridinium chloride) treatment were 58.24, 73.60 and 42.18 dL/g, respectively. The intrinsic viscosity of biopolymer showed the maximum value at the neutral pH but it was decreased remarkably at the alkaline or acidic pH. Biopolymer exhibited the property of polyelectrolyte, showing the sharp decrease of intrinsic viscosity by the addition of NaCl. Intrinsic viscosity of dilute solution at the low NaCl concentration was exponentially dependent on temperature and its temperature dependency was increased with NaCl concentrations. The chain stiffness, coil overlap parameter, and critical concentration were 0.09, 5.25 and 0.07g/dL, respectively. Temperature dependency on intrinsic viscosity of biopolymer solution was different each other at $45^{\circ}C$. Flow activation energies at temperatures above $45^{\circ}C$ were constant, while those at temperatures below $45^{\circ}C$ increased with increase of added NaCl concentration.

  • This study investigated the quality of noodles containing different amounts of Lagocephalus lunaris powder (LLP). Noodles were prepared at ratios of 0, 1, 3, 5 and 7% LLP based on flour weight, after which cooking quality, mechanical texture properties, and viscosity were measured, and a sensory evaluation was performed. The gelatinization points of the composite LLP-wheat flours were shown to increase. Additionally, measurement of the viscosity at 95, viscosity at 95 after 15 minutes, and the maximum viscosity values decreased, as the LLP content increased. As increasing amounts of LLP were added, the L and a values decreased, whereas the b value increased and the color values, weight, and volume of cooked noodle increased, as did the turbidity of the soup. Finally the LLP additive increased hardness and decreased adhesiveness, cohesiveness and springiness. Sensory evaluation showed that high quality cooked noodle could be produced by inclusion of 5% LLP.

Quality Characteristics of Dried Noodle Made with Dioscorea japonica Flour (마가루를 첨가한 국수의 품질 특성)

  • This study evaluated the quality characteristics of dried noodles made of wheat flour with different concentrations of Dioscorea japonica flour. Cooking quality, mechanical texture properties and viscosity were measured, and sensory evaluation was performed with the prepared noodles. Water binding capacity, solubility and swelling power of the composite Dioscorea japonica flour-wheat flours were higher than those of pure wheat flour. Gelatinization points of the composite Dioscorea japonica flour-wheat flours were increased and initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes and maximum viscosity of these composites were decreased, with increasing Dioscorea japonica flour content, as measured by amylograph. With increasing Dioscorea japonica flour content, L and b values were decreased, but a value was increased, for the color values, while weight and volume of the cooked noodles and turbidity of the soup were increased. For the textural characteristics, the addition of Dioscorea japonica flour increased the hardness and decreased the adhesiveness, cohesiveness and springiness. Overall, the noodles made with 10% Dioscorea japonica flour were preferred more than the other noodles, as tested by sensory evaluation.

Assessment of Quality Characteristics of Dried Shrimp Noodles for Elderly Foodservice Operations (노인급식에 적용하기 위한 새우 국수의 품질특성 평가)

The cooking quality, mechanical textural properties, and viscosity of the noodle samples were measured, and sensory evaluations were conducted with the prepared noodles. As measured by an amylograph, the gelatinization points of the composite shrimp powderwheat flour noodles increased, whereas viscosity at 95$^{\circ}$C, viscosity at 95$^{\circ}$C after 15 minutes, and maximum viscosity values decreased, with increasing shrimp powder content L and b color values were reduced, and the a value increased, with increasing amounts of shrimp powder, Also, greater concentrations of shrimp powder caused increases in the weight and volume of cooked noodles as well as the turbidity of the soup. With regard to the textural characteristics, the shrimp powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, according to the sensory evaluation results, the noodles prepared with 15% shrimp powder were more preferred than the other samples.

  • As a link in the studies on the extracellular polysaccharide by lactic acid bacteria, the experiment was conducted to investigate the viscosity variations and rheological properties of 10% reconstituted skim milk and 12% reconstituted whole milk, respectively. 1. 10% reconstituted skim milk cultured by Str. thrennophilus 510 showed strong flow property of pseudoplastic fluid depending upon the production of exopolysaccharide. And the viscosity reached the highest value within 14% concentration. 2. 12% reconstituted whole milk cultured by lactic acid bacteria indicated flow property of pseudoplastic fluid. But there was a big difference in the viscosity as compared with 10% skim milk. 3. The maximum consistency index (k) and the minimum flow behavior index (n) of the fermented milk by Str. thermophilus 510 were 43 and 0.09, respectively. They were 35 and 0.09, in case of Lb. bulgaricus.
