Preparation and Characterization of Jochung, a Grain Syrup, with Apple (사과 첨가 조청의 제조 및 특성)

  • This study was performed to investigate the effect of apple and maltitol as ingredients on the quality of Jochung, a grain syrup. Four kinds of Jochung products were prepared from steamed-rice, apple juice, heated-apple sarcocarp (at $70^{\circ}C$, 60 min), and a mixture (sarcocarp : maltitol=5:1, w/w) by saccharifying (at $55^{\circ}C$, 8 hrs) with a malt (100 g/500 g rice), mixing the ingredients (steamed-rice : ingredient=5:5, w/w), filtering, and heating the filtrate (at $95^{\circ}C$, 2 hrs): product (A) with apple juice added before saccharified, product (B) with apple juice added after saccharified, product (C) with heated-apple sarcocarp added after saccharified, and product (D) with the mixture added after saccharified. The product (D) had the lowest pH value ($4.60\pm0.01$) of any other products. The contents of reducing sugar and total phenolic compound were the highest in the product (A) among all the products, which comprised $68.10\pm6.71$% and $7.36\pm0.85$ mg/g, respectively, resulting in good quality. The solidity and the dextrose equivalence had the highest value in the product (B) and the product (C), respectively. The malic acid content ($4.10\pm0.02$%) of the product (D) was the highest of any other organic acids identified by HPLC. Hunter L, a, and b values of the product (D) were the highest compared to other products. In sensory evaluation, the product (A) had generally higher score in all sensory attributes. It was concluded from the chemical and sensory evaluation that adding the apple juice before saccharified might be an effective method for manufacturing good quality rice-Jochung.

  • In order to reduce malic acid in low-alcohol content appel wine $(6{\sim}9%)$ malate-decomposing yeast, Schzosaccharomyces japonicus var. japonicus St-3 was used. Fallen apples before the harvesting season were collected and extraction was made. The apple extract was fortified with sucrose to make final sugar concentration of 18% in case of 9% base wine. High acid content in the primarily fermented apple wine could be reduced by following with malo-alcoholic fermentation using Schizosaccharomyces japonicus var. japonicus St-3 in second half of alcoholic fermentation using Saccharomyces sp. R-11. Secondary fermentation was proceeded at low temperature $(7{\sim}8^{\circ}C)$ for 130 days using Saccharomyces sp. R-11. Prior to the secondary fermentation, two percent of sugar was added to the base wine in order to produce carbon dioxide gas. And each five percent of specially prepared malt extract and hop extract were added to the base wine in order to increase foam stability. Better shelf-life was observed by keeping high carbon dioxide pressure$(2.3{\sim}2.5kg/cm^2)$ in the bottle. It was assured that the better low-alcohol content apple wine could be brewed by the method which we used above.

Extraction Method of Anthocyanin and Tannin Pigments in Colored Rice (유색미 안토시아닌계 및 탄닌계색소의 추출법)

  • This experiment was conducted to establish the efficient extraction condition for anthocyanin and tannin pigments contained in rice bran of colored rices. Efficiency of the pigment extraction was maximum when the concentration of mired solvent of methanol(3) : ethanol(7) was 70%. In purple rite(anthocyanin pigment), ‘Kilimheugmi’, 80% ethanol containing 0.5% malic acid showed the highest extraction efficiency and stability with a maximum absorbance wavelength$(\lambda_{max})$ at 538 nm. In red rice(tannin pigment), ‘Jagwangdo’, 80% ethanol containing 0.01% citric acid showed the highest extraction efficiency and stability with a maximum absorbance wavelength$(\lambda_{max})$ at 456 nm. The relative optical density of the pigments increased until the solvent temperature was reached at $70^{\circ}C$, but drastically decreased over at $90^{\circ}C$ due to color change. The higher amount of the pigment was ertracted from the longer shaking time of the solvent. Ten minutes was enough for the grinding time of rite bran in solvent. Supernatant of the pigment extractives after one day storage at $4^{\circ}C$ in dark chamber revealed higher optical density than the filtration of the pigment extractives.

Catalytic Combustion of Soot Particulate over Perovskite-Type Oxides (폐롭스카이트형 촉매에서 입자상물질의 촉매연소반응)

  • We have studied the catalytic combustion of soot particulate over perovskite-type oxides prepared by malic acid method. The catalysts were modified to enhance the activity by substitution of metal into A or B site of perovskite oxide. In addition, the reaction conditions, such as temperature, $O_2$ concentration, space velocity have been studied. The effect of $SO_2$ pretreatment and water introduced into reactants were also examined. In the $LaCoO_3$ catalyst, the partial substitution of alkali metals into A site enhanced the catalytic activity in the combustion of soot particulate and the activity was shown in the order : Cs>K>Na; In the $La_{0.6}Cs_{0.4}CoO_3 $; catalyst, the substitution of Fe or Mn showed no effect on the ignition temperature. The ignition temperature decreased with increasing $O_2$ concentration and contact time. The introduction of water into reactants feed decreased the ignition temperature and the pretreatment of $SO_2$ showed no effect on the catalytic activity.
