A Comparison of Characteristics of Minerals and Phytate between Korean and Imported Wheat Varieties (한국산 소맥과 수입 소맥의 무기질 특성과 phytate 비교)

  • A Comparative study was performed among five Korean wheat(Greu, Eunpa, Tapdong, Allgreu, Woori) and three imported wheat(Dark Northern Spring, Austrian Standard Wheat, Western White) to investigate the characteristics of minerals and phytate from Korean wheat varieties. Ash contents of kernel was higher in Korean wheat than in imported wheat and related to ash contents and darkness of flour. More contents of Fe, P, and Mg from Korean wheat grains and Fe from Korean wheat flours were observed in comparison to imported wheat varieties. Fe concentration in Korean flour show high, indicating Fe was distributed at endosperm layer of kernels and not eliminated with milling. In addition, phytate affecting availability of minerals was determined from kernels and flours. Even though Korean wheat kernels had more phytate than that of imported wheat kernels, it is believed that most of phytate was removed with milling and there was no major difference between Korean and imported wheat flours. We also observed that the content of phosphate closely parallels the content of phytate from both the flours and kernels.

Preparation of Matte with Pyrite and Chalcopyrite as sulfur source and Leaching behaviour (황(黃) 원료(原料)로서 pyrite와 chalcopyrite를 사용(使用)한 matte 상(相)의 제조(製造) 및 침출특성(浸出特性))

  • Artificial mattes were prepared with adding pyrite or chalcopyrite as sulfur sources with Cu-Ni-Co-Fe alloy. The major phases identified by X-ray diffraction pattern were $(FeSi)_9S_8$, $CuFeS_2$, FeS, $Co_4S_3$, $Ni_3S_2$ and $Cu_2S$ for both mattes, and the matte prepared by adding chalcopyrite showed the higher peak of $Cu_2S$ due to high content of copper. Under optimum conditions, more than 95% copper, 90% nickel and 90% cobalt were extracted into leaching solution and sulfur concentration in the mattes did not much affect the leaching efficiency of the metals. The increase of the amount of pyrite or chalcopyrite added decreased pH in leaching solution and increased the concentration of iron ion dissolved in the leaching solution and the amount of residue.

Genetic Environment of the Pailou Magnesite Deposit in Dashiqiao Belt, China, and Its Comparison with the Daeheung Deposit in North Korea (중국 다스챠오벨트 팰로우 마그네사이트 광상의 생성환경 및 북한 대흥 광상과의 비교)

  • World-class magnesite deposits are developed in the Dashiqiao mineralized district of the Jiao-Liao-Ji Belt in China. This belt extends to the northern side of the Korean Peninsula and hosts major magnesite deposits in the Dancheon region of North Korea. Magnesite ores from the Pailou deposits in the Dashiqiao district is classified into pure magnetite, chlorite-magnetite, chlorite-talc-magnetite, and dolomite groups depending on the constituent minerals. According to the result of petrographic study, magnesite was formed by the alteration of dolomite, and, talc, chlorite, and apatite were produced as late-stage alteration minerals that replaced the magnesite. Fluid inclusions observed in magnesite are a liquid-type inclusion, with a homogenization temperature of 121-250 ℃ and a salinity of 1.7-22.4 wt% NaCl equiv. The chlorite geothermometer, indicating the temperature of hydrothermal alteration, is 137~293 ℃, slightly higher than the homogenization temperature of fluid inclusions, and the pressure is calculated to be less than 3.2 kb. For magnesite mineralization in the study area, the initially formed-dolomite was subjected to replacement by Mg-rich fluid to form a magnesite ore body, and then it was enriched through regional metamorphism and hydrothermal alteration. It seems that altered minerals such as talc were crystallized by Si and Al-rich late-stage hydrothermal fluids. These results are similar to the genetic environments of the Daeheung deposit, a representative magnesite deposit in North Korea, and it is believed that the two deposits went through a similar geological and ore genetic process of magnesite mineralization.

Physicochemical Properties of Prepersimmon (적과 단감의 이화학적 특성)

  • To develop a new processed foods with prepersimmon, the contents of approximate composition, free sugar, organic acid, mineral and vitamins in prepersimmon(Diospyros kaki Thumb. cv. Fuyu) were investigated. The approximate composition was 89.08% of moisture, 0.26% of crude ash, 0.56% of crude fat and 0.75% of crude protein respectively. Free sugars were composed of glucose, fructose and sucrose. Glucose(3.34%) and fructose(3.01%) were major free sugars, and sucrose was detected a small quantities. The organic acids were composed of citric acid. maleic acid, fumalic acid and lactic acid. Lactic acid(68.65mg%) was major a organic acid and took 79% of total organic acid amount. Minerals were K, P, Na. Ca, Fe and Zn, and K was a major mineral and detected 126.l2mg%, and Fe and Zn were a small quantities. The content of vitamin A was 33.95 R.E., and less than that in hard persimmon, and the content of vitamin C was 171.01 mg%, 10 times higher in comparison with that in hard persimmon, and vitamin B$_1$ and B$_2$ were detected a small quantities.

Oral Administration of Glycine and Leucine Dipeptides Improves Skin Hydration and Elasticity in UVB-Irradiated Hairless Mice

  • Placenta is a special organ that contains many nutrients such as growth factors, minerals, and bioactive peptides. Dipeptides of glycine and leucine are major components of porcine placenta extracts (PPE) that has been used as an alternative of human placenta extracts. In this study, we investigated whether major peptides of PPE, Glycyl-L-Leucine (Gly-Leu), L-Leucyl-Glycine (Leu-Gly), and L-Leucyl-L-Leucine (Leu-Leu), affect skin hydration and elasticity in vitro and in vivo. We found that Gly-Leu and Leu-Gly dipeptides induced the expression of transglutaminase 1 in normal human epidermal keratinocytes (NHEKs) whereas Leu-Leu dipeptides did not. Treatment with Gly-Leu or Leu-Gly significantly increased hyaluronan (HA) synthesis in NHEKs and the upregulation of hyaluronan synthase 2 (HAS2) mRNA level was confirmed. In addition, elastase activity was inhibited in NHEKs treated with Gly-Leu or Leu-Gly dipeptides. Oral administration of Gly-Leu or Leu-Gly dipeptides increased skin hydration and elasticity in UVB-irradiated hairless mice. The significant upregulation of HA in UVB-irradiated hairless mice was observed in response to oral administration of Gly-Leu or Leu-Gly. These results suggest that the major dipeptides of porcine placenta, Gly-Leu and Leu-Gly, are potentially active ingredients for skin moisturization formulations.

Chemical composition of protein concentrate prepared from Yellowfin tuna Thunnus albacares roe by cook-dried process

  • Roe is the term used to describe fish eggs (oocytes) gathered in skeins and is one of the most valuable food products from fishery sources. Thus, means of processing are required to convert the underutilized yellowfin tuna roes (YTR) into more marketable and acceptable forms as protein concentrate. Roe protein concentrates (RPCs) were prepared by cooking condition (boil-dried concentrate, BDC and steam-dried concentrate, SDC, respectively) and un-cooking condition (freeze-dried concentrate, FDC) from yellowfin tuna roe. The yield of RPCs was in the range from 22.2 to 25.3 g/100 g of roe. RPCs contained protein (72.3-77.3 %), moisture (4.3-5.6 %), lipid (10.6-11.3 %) and ash (4.3-5.7 %) as the major constituents. The prominent amino acids of RPCs were aspartic acid, 8.7-9.2, glutamic acid, 13.1-13.2, and leucine, 8.5-8.6 g/100 g of protein. Major differences were not observed in each of the amino acid. K, S, Na, and P as minerals were the major elements in RPCs. No difference noted in sodium dodecyl sulfate polyacrylamide gel electrophoresis protein band (15-100 K) possibly representing partial hydrolysis of myosin. Therefore, RPCs from YTR could be use potential protein ingredient for human food and animal feeds.

Quality of Steam Cooked Surimi Gel Prepared using Sandfish Arctoscopus japonicus Meat (도루묵(Arctoscopus japonicus) 어묵의 제조 및 품질특성)

  • This study examined the effect of pretreated sandfish Arctoscopus japonicus meat as a surimi complex for preparing sandfish flavored fish paste. To prepare the sandfish-flavored paste, fine chopped sandfish meat including backbone was added in a ratio of 0 to 50 wt.% to thawed Alaska pollock Theragra chalcogramma surimi to make a mixed surimi gel. To prepare the sandfish-flavored paste, the mixed surimi was ground with salt using a silent cutter, mixed with starch and stabilizers 0.2% transglutaminase and gluconolactone 0.3%, stuffed in a rectangular container, left for 3 h at $25^{\circ}C$, cooked in hot water for 30 min at $90^{\circ}C$, and finally chilled for 20 min at $4^{\circ}C$. The effects of the pretreatment of sandfish meat were investigated by analyzing the quality of the paste produced. The proximate composition of FP (fish paste containing 40% steam-cooked sandfish meat and 0.3% gluconolactone) was moisture 76.1%, crude protein 12.0%, crude fat 3.8%, carbohydrate 6.1%, and ash 2.0%. The major minerals in FP were Na (23.77 mg/L), Mg (1.46 mg/L), Zn (1.04 mg/L), and Fe (0.41 mg/L), and the major free amino acids were taurine, anserine, alanine, and glutamic acid. The monounsaturated fatty acid content of FP was 566.22 mg%, and the polyunsaturated fatty acid content was 498.43 mg%. The n-3 fatty acid content was 398.01 mg%, and C20:5n-3 (218.85 mg %) was a major component.

Food Component Characteristics of Wild Hard-shelled Mussel Mytilus coruscus and Cultured Sea Mussel Mytilus edulis in Korea (자연산 홍합(Mytilus coruscus)과 양식산 진주담치(Mytilus edulis)의 성분 특성)

  • To characterize the food components of two mussels (wild hard-shelled mussel (HM) Mytilus coruscus, and cultured sea mussel (SM) Mytilus edulis) in Korea, we examined the proximate composition, fatty composition, amino acid/mineral content, texture, collagen content and chemical and taste compounds. Regarding the proximate composition, HM had lower moisture levels and higher crude protein and carbohydrate contents than SM. The amino nitrogen, volatile basic nitrogen and total amino acid contents of HM and SM were 250.6 and 227.3 mg/100 g, 11.2 and 12.0 mg/100 g, and 17,451.1 and 15,334.8 mg/100 g, respectively. The major amino acids were glutamic acid, aspartic acid, glycine, alanine, lysine and arginine. The major fatty acids of HM and SM were 14:0, 16:0, 16:1n-7, 20:5n-3, and 22:6n-3, which did not differ significantly between the two mussels. HM had a higher n-3 polyene ratio, and a lower saturate and monoene ratio than SM. Regarding the taste-active compounds, the free amino acid contents of HM and SM were 1,116.5 and 961.8 mg/100 g, respectively, and the major free amino acids were taurine, glutamic acid, glutamine, glycine, citrulline, lysine and arginine. The primary minerals in both HM and SM were Na, Cl, K and P which did not differ significantly between the two mussels. The soluble and insolube collagen contents of HM and SM were 265.8 and 228.4 mg/100 g, and 119.5 and 121.8 mg/100 g, respectively.

A proton induced X-ray emission (PIXE) analysis of concentration of major/trace and toxic elements in broiler gizzard and flesh of Tehsil Gujar Khan area in Pakistan

  • Ten gizzard and three flesh samples of the broiler were collected from different locations in Tehsil Gujar Khan District Rawalpindi, Pakistan. The samples were dried, crushed and ground. Pellets were prepared by pressing the powder of the samples and that of the Bovine liver 1577c reference material obtained from NIST, USA. Proton induced X-ray emission (PIXE) installed at National Center for Physics, Islamabad, Pakistan has been used as a reliable and improved technique to determine concentration of various major/trace and toxic elements e.g. S, Cl, K, Ca, Cl, Fe, Cu, Mn, Co, Zn, Ti, Cd, Ga, Cr, V and Ni, in the Gizzard and Flesh samples of the broiler. The concentrations of all the detected elements in the samples are statistically significant. The certified and measured values of the elements in the reference material were in agreement with each other within a deviation of 7%. S, Cl, K and Ca are within tolerable limits and are good for human consumption. Ti, V, Cr, Mn, Fe, Co, Ni, Cu and Zn were more than the acceptable limits of World Health Organization, WHO whereas Ga, As, Sn, Sb and Pb are not detected in most of the samples.

Comparison of Chemical Compositions of Houttuynia cordata Thunb Cultivated from Different Local Area (재배지역이 다른 어성초의 부위별 화학성분 비교)

  • Proximate composition , volatile compounds, free amino acids, fatty acids and inorganic compounds in leaf, stem and root of Houttyunia cordata Thunb cultivated from two different area, Bosung and Sunchon , were analyzed. Each part of Houttuynia cordata Thunb from both local area showed moisture contents of 80-84% and crude ash contents of 2.1 ∼2.8%. Crude fat and protein contents were less than 3 % showing slightly higher contents in leaf than in both stem and root . Twenty six volatile compunds were identified from the parts of the plant, the volatile contents were high in the oder of leaf, root and stem. Major volatile compounds were mostly derivatives of decanoic acid ; decanoic acid, 20 tridecanoie, decanal and dodecanoic acid. Of free amino acids in leaf asparagine was the highest, while in stem hydroxyproline, proline and arginine were the major free amino acids. Linoleic acid was the highest in the stem and root, and linolenic acid was highest in leaf. the major minerals of all parts were K, Ca. Mg, P, Fe, Zn and Cu, showing highest with K.
