Cholesterol-Lowering Effect and Anticancer Activity of Kimchi and Kimchi Ingredients (김치와 김치재료의 콜레스테롤 저하 및 항암효과)

  • The purpose of the paper is to explore the current knowledge on the nutritional evaluation, cholesterol-lowering effect and antitumor activity of kimchi and its ingredients(Korean cabbage, garlic, red pepper powder, ginger and onion). Kimchi contains high contents of nutrients such as vitamins(ascorbic acid, $\beta$-carotene and vitamin B complex), minerals(calcium, potassium, iron and phosphorous), essential amino acids and dietary fiber. Kimch also contains high levels of lactic acid bacteria, allicin, capsaicin, organic acid, phenol compounds, flavonoid and sulfur compounds. The dietary fiber and lactic acid bacteria isolated from kimchi are effective in improving intestinal microflora of human. Isoluble dietary fiber shows anticancer activity, but soluble dietary fiber shows hypocholesterolemic effect. Lactic acid bacteria isolated from kimchi acts as a hypocholesterolemic or anticancer agent. A major ingredient of kimchi is mainly cruciferous and allium family vegetables, which were also reported to prevent cancer and atherosclerosis. It is suggested that kimchi is important not only as one of the traditional fermented Korean food but also as therapeutic agent for carcinogenesis and hypercholesterolemic state.

Chemical Composition of Panax Ginseng-Leaf Tea (고려인삼 엽록차의 화학성분 조성)

  • Chemical composition was determined to evaluate the quality of Panel ginseng-leaf tea over green teas. Ginseng-leaf tea was shown to contain higher contents of soluble matter, ascorbic acid and lower contents of tannins, as compared to tea leaves. The profiles of ginsenoside and sugar of ginseng-leaf tea were noticeably different from those of ginseng roots and the sample maintained high levels of these components under the manufacturing process. Total unsaturated fatty acids and free amino acids were estimated to be decreased in ginseng-leaf tea as compared to those of ginseng leaves. The compositions of amino acids and minerals in ginseng-leaf tea were similar to those of tea leaves and glutamic acid, aspartic acid, leucine, calcium, potassium, sodium, and copper were found to be major components.

  • Consumers are increasingly quality orientated and an understanding of the factors that influence product quality is a prerequisite to the development of programs to produce quality pork to meet market requirements. Pork quality is comprised of many components and is multi-factorial in nature. This review focuses on genetic and environmental influences on muscle color, water holding capacity, and palatability attributes. The impact of genetic factors such as breed variation and the influence of major genes (the Halothane and Rendement Napole genes), as well as relationships between carcass leanness and quality, are considered. In addition, the effect of nutrition, including vitamins and minerals, feeding level, and dietary energy:protein ratio, on pork quality is reviewed. Finally, the impact of diet on fat composition and quality is summarized.

Effect of Quartz Porphyry Supplemented Diet on Mineral Content in Tissues of Common Finch (맥반석 첨가 식이가 십자매 조직의 무기질함량에 미치는 영향)

  • Quartz porphyry (QP) on the contents of mineral tissues of male common finch by feeding the basal diet (Control group) containing 3.0% QP (QP group) for 14 days was studied. The relative weight (mg/10 g body weight) of kidney and gizzard in the QP group were higher and lower than in the control group, respectively. However, the relative weight of liver and heart were not significantly different in the both groups. The mineral contents of liver, kidney, heart and gizzard were significantly higher in common finch fed with the diet containing quartz porphyry than that of control diet. The major minerals of these tissues were P, Ca and Fe.

  • palaeomagnetism is a major implement to define tectonic provinces and to estimate their past relative position quantitatively. In this sort of investigation it is tacitly assumed that the magnetization of the rocks under study was acquired at the time of their formation. However, because of the possibility of secondary alteration and/or replacement of magnetic minerals, this assumption is not always legitimate. To secure reliable palaeomagnetic data it is therefore fundamental to identify the carrier mineral of magnetization. This paper reviews magnetic mineralogy relevant to palaeomagnetism of terrestrial rocks. Under the heading of each mineral its genesis, crystal structure, magnetic properties, criteria for ore microscopic determination and secondary alteration are summerized. This paper should also be helpful in application of magnetic mineralogy to geothermometry and oxygen barometry in igneous petrology, diagenesis and provenance study in sedimentary petrology, metamorphic temperature determination and genesis study of ore deposits.

  • Weathering of biotite in Palgonsan granite was studied by using X-ray diffraction, optical microscopy, scanning electron microscopy, and electron probe micro analysis. Biotite altered to biotite/vermiculite regular mixed layer mineral (B/V) in the early stage of weathering. Although partially replaced by kaolinite with the progress of weathering. B/V is the major weathering product of biotite throughout the profile. During the formation of B/V, Mg, Fe and K are removed from a biotite layer to form a vermiculite layer by about 28%, 44% and 88%, respectively, whereas the Ti content is not changed. Considerable volume increase after the kaolinitization of B/V suggests that Al and Si are largely introduced from the external weathering solution. The silicate lattice templet of a weathering biotite facilitated the nucleation and growth of kaolinite. In the Palgongsan granite weathering profile, plagioclase weathered mostly into halloysite whereas biotite greatly contributes to the kaolinite crystallization though its small content in fresh rock.

Basic Studies On Uljin Pottery Stones (울진도석에 관한 기초적인 연구)

  • The fundamental studies for exploit natural resources was investigated on Uljin pottery stones that estimated the amount of mineral deposits at 350 million tons. The results obtained are as follows; In the chemical composition of Uljin pottery stones the amount of Al2O3 are a little compared with other pottery stones and that of Na2O and K2O are a large. Fe2O3 content is lower than 0.3 wt%, thus whiteness of its is 83. The major minerals composition of Uljin pottery stones are quartz and feldspar mineral. The refractoriness (SK) of its is 14. Lattice constants of quartz in Uljin pottery stones are 4.8865 $\AA$ in a-axis and 5.3852 $\AA$ in c-axis. Lattice constants were expanded by HCl treatment and sintering. Microstructures of Uljin pottery stones are linked up with the crystal particles under 10 microns in size.

Mineral Contents and Fatty Acid Composition of Jemsosojoo (흑염소 소주의 무기질 함량과 지방산 조성)

  • This study was undertaken to analyze proximate comosition, mineral contents and fatty acid composition of pure jemsosojoo(PJ) and jemsosojoo added medicinal herb(JMH). Mositure, ash, crude protein and crude fat of pure jemsosojoo were higher than those of the JMH, but carbohydrate content was higher in the JMH. Among minerals, Ca, Mg, Fe, Zn content of the JMH were higher than those of the PJ, while P and Na were higher in the PJ and those difference were significant between the PJ and the JMH(p<0.05). U/S (unsaturaed fatty acid/saturated fatty acid) ratio was higher in the JMH than those of the PJ, the ratio o fglycolipid was 1.75 in the PJ and that of neutral lipid was 3.07 in the JMH. Octadecenoic acid, hexadecanoic acid, octadecenoic acid and hexadecenoic acid were major fatty acids in the total lipids, neutral lipids glycolipids and phospolipids of the PJ and the JMH. Especially, octadecadienoic acid and octadecatrienoic acid were higher in the JMH than those of the PJ.

A Mixed Integer Programming Model for Bulk Cargo Ship Scheduling with a Single Loading Port

  • This paper concerns a bulk or semibulk cargo ship scheduling problem with a single loading port. This type of ship scheduling problem is frequently needed in real world for carrying minerals or agricultural produce from a major single production zone to many destinations scattered over a large area of the world. The first optimization model for this problem was introduced by Ronen (1986) as a nonlinear mixed integer program. The model developed in this paper is an improvement of his model in the sense that nonlinearities and numerous unnecessary integer variables have been eliminated. By this improvement we could expect real world instances of moderate sizes to be solved optimal solutions by commercial integer programming software. Similarity between the ship scheduling model and the capacitated facility location model is also discussed.
