Quality Characteristics of Low-fat Ground Pork Patties Containing Milk Co-precipitate

  • The optimum level of fresh granulated low-calcium (0.2%) skim milk co-precipitate, as fat substitute in low-fat ground pork patties was determined on the basis of physico-chemical, cooking and sensory properties. Low-fat ground pork patties (<10% total fat), formulated with 15 per cent water, 4 per cent added fat, 1.5 per cent salt and 4-10 per cent milk co-precipitate, were evaluated for proximate composition, cooking characteristics and compared with control patties with 15 % added fat. The moisture and protein content of raw and cooked low-fat patties were significantly (p<0.05) higher than control. The incorporation of milk co-precipitate in low-fat patties improved cooking yield, fat and moisture retention and reduced shrinkage. The sensory properties of low-fat patties were comparable with control patties. The overall acceptability of low-fat patties formulated with 7% milk co-precipitate was significantly (p<0.05) higher than patties with 10% level and non-significantly (p<0.05) higher than low-fat patties containing 4% milk co-precipitate and control. Instrumental Texture Profiles of developed low-fat patties and control patties were comparable with slight increases in hardness and gumminess of the low-fat product. The developed low-fat ground pork patties (7% milk co-precipitate) had lower TBA values, better microbiological and sensory refrigerated storage stability than high-fat control patties packaged in air permeable films for 21 days.

  • This study was conducted to investigate the quality characteristics of low- fat pork patties containing fat replacers. Carrageenan(CA) in combination with pectin(PE) or potato starch(PO) was added as fat replacers and physicochemical properties were evaluated in low-fat pork patties cooked by oven-roasting or pan-frying. Uncooked and cooked pork patties formulated with fat replacers were higher in moisture and ash content and lower in fat content than those of control. The cooking yield and reduction in diameter of pork patties were significantly improved by the addition of fat replacers(p<0.05). Pork patties formulated with CA had the highest fat retention, while CA+PE had the highest water holding capacity. Hunter s L(lightness) value was not different from among patties and a(redness) and b(yellowness) values were higher in carrageenan-based patties than those of control patties. Hardness was higher in carrageenan-based patties than that of control and cohesiveness and springiness showed no difference among patties. Sensory analysis showed that flavor, juiciness and palatability of carrageenan-based patties were superior to control patties and combined use of CA with PE or PO provided improved acceptability of low-fat pork patties over that from using single carrageenan.

Gum류가 저지방 계육 Patty의 품질에 미치는 영향 (Effects of Gums on the Quality of Low Fat Chicken Patty)

  • 저지방 계육 patty는 지방 10%에 sodium alginate(SA구), arabia gum(AG구) 및 xanthan gum(AG구)를 각각 0.5%씩 첨가하여 제조하였으며, 대조구는 지방 20%를 첨가하여 제조하였다. 생육, 가열육 및 재가열육 patty의 수분함량은 대조구가 gum류 첨가구보다 낮았고, gum류 첨가구 사이에는 유의한 차이가 없었다. 조지방 함량은 대조구가 gum류 첨가구보다 높았으며, 조단백질 함량은 patty들 사이에 유의한 차이가 없었다. 생육 patty의 Hunter's $L^{*}$ (명도)값은 대조구가 gum류 첨가구보다 높았고, $a^{*}$ (적색도)값은 patty들 사이에 차이가 없었으며, $b^{*}$ (황색도)값은 대조구가 gum류 첨가구보다 높았다. 그러나 가열육 및 재가열육의 Hunter's $L^{*}$ , $a^{*}$$b^{*}$ 값은 patty들 사이에 유의한 차이가 없었다. 가열육 patty의 수율은 대조구가 gum류 첨가구보다 낮았으며, 지방 보유율도 대조구가 gum류 첨가구보다 낮게 나타났다. 재가열육 patty의 수율 및 지방 보유율도 대조구가 gum류 첨가구보다 낮았으며, 최종 수율도 gum류 첨가구가 대조구보다 높게 나타났다. 가열육 patty의 경도는 patty들 사이에 차이가 없었지만, 탄성, 응집성 및 씹힘성은 gum류 첨가구가 대조구보다 높았다. 가열육 patty의 보수력도 gum류 첨가구가 대조구보다 높았다. 그리고 재가열육 patty의 경도는 patty들 사이에 유의한 차이가 없었으며, 탄성은 AG구가 가장 높고, 대조구가 가장 낮았다. 재가열육 patty의 응집성, 씹힘성 및 보수력은 대조구보다 gum류 첨가구가 높게 나타났다. 계육 patty의 지방산 조성비율은 oleic acid( $C_{18:1}$), palmitic acid( $C_{16:0}$), linoleic acid( $C_{18:2}$), stearic acid( $C_{18:0}$)의 순으로 많았고, 아미노산 조성은 glutamic acid, aspartic acid, lysine, leucine, arginine, alanine의 순으로 많았다. 향기는 patty들 사이에 차이가 없었으나, 조직감은 gum류 첨가구가 대조구보다 높았으며, gum류 첨가구 사이에는 조직감의 차이가 없었다. 그리고 다즙성, 맛 및 전체적인 기호성은 지방이나 gum류의 첨가가 영향을 미치지 않았다.않았다.않았다.

펙틴 및 감자전분 첨가가 저지방 돈육 패티의 품질에 미치는 영향 (Effects of Pectin and Potato Starch on the Quality Characteristics of Low-Fat Pork Patties)

  • This study was conducted to investigate the quality characteristics of low-fat pork patties containing fat replacers. Pectin(PE) and potato starch(PO) were added as fat replacers and physicochemical properties of the patties were evaluated after oven-roasting or pan-frying. Uncooked and cooked pork patties formulated with the fat replacers were higher in moisture and ash content and lower in fat content than those of the control. The cooking yield and reduction in diameter of the patties were significantly improved by the addition of PE or PO and oven-roasting exhibited a higher cooking yield and lower reduction in diameter than pan-frying (p<0.05). Water holding capacity(WHC) and fat retention were highest in the patties formulated with PE, while the control had the lowest WHC when cooked by oven-roasting. The Hunter L (lightness) values were not different among the patties but the Hunter a (redness) and b (yellowness) values of the low fat pork patties were higher than those of the control and oven-roasting produced higher redness values than pan frying. Hardness and brittleness were lowest in the patties with PE, while cohesiveness and springiness showed no difference among the patties (p<0.05). The sensory analysis results showed that the use of PE or PO improved the overall acceptability of the low-fat pork patties. After 30 days of storage at $-20^{\circ}C$, pH and cooking yield decreased slightly, while hardness increased in all the patties.

Evaluation of Sodium Alignate as a Fat Replacer on Processing and Shelf-life of Low-fat Ground Pork Patties

  • Low-fat ground pork patties, LFGPP (<10% total fat) formulated with 0.1, 0.2 and 0.3 percent sodium alginate (SA) were processed and compositional, processing and sensory characteristics were compared with control patties containing 20% fat. The moisture content of raw and cooked LFGPP were significantly (p<0.05) higher than control patties because of greater amount of added water in the formulation. The cooking yield, moisture and fat retention also increased linearly in different treatments of LFGPP. The dimensional parameters such as gain in height, decrease in diameter and shrinkage were significantly (p<0.05) lower in LFGPP in comparison to control. Amongst the sensory attributes, flavour showed a declining trend with the increase in concentration of SA in LFGPP. However, low-fat patties with 0.1% SA rated similar to high-fat control. The lipid profile revealed 49.78 and 43.22% decrease in total lipids and cholesterol content respectively, compared to control. The calorie content was reduced significantly (p<0.05) in LFGPP. The texture profile of LFGPP with 0.1% SA was similar to that of high-fat control. The LFGPP remained stable without any appreciable loss of physico-chemical, microbiological and organoleptic quality during refrigerated storage ($4{{\pm}}1^{\circ}C$) for 21 and 35 days in aerobic and vacuum packaging respectively.

Efficacy of Sweet Potato Powder and Added Water as Fat Replacer on the Quality Attributes of Low-fat Pork Patties

  • The present study was conducted to investigate the efficacy of sweet potato powder (SPP) and water as a fat replacer in low-fat pork patties. Low-fat pork patties were developed by replacing the added fat with combinations of SPP and chilled water. Three different levels of SPP/chilled water viz. 0.5/9.5% (T-1), 1.0/9.0% (T-2), and 1.5/8.5% (T-3) were compared with a control containing 10% animal fat. The quality of low-fat pork patties was evaluated for physico-chemical (pH, emulsion stability, cooking yield, $a_w$), proximate, instrumental colour and textural profile, and sensory attributes. The cooking yield and emulsion stability improved (p<0.05) in all treatments over the control and were highest in T-2. Instrumental texture profile attributes and hardness decreased, whereas cohesiveness increased compared with control, irrespective of SPP level. Dimensional parameters (% gain in height and % decrease in diameter) were better maintained during cooking in the low-fat product than control. The sensory quality attributes juiciness, texture and overall acceptability of T-2 and T-3 were (p<0.05) higher than control. Results concluded that low-fat pork patties with acceptable sensory attributes, improved cooking yield and textural attributes can be successfully developed with the incorporation of a combination of 1.0% SPP and 9.0% chilled water.

Effect of Cooking Methods and Fat Levels on the Physico-chemical, Processing, Sensory and Microbial Quality of Buffalo Meat Patties

  • Buffalo meat patties with two fat levels, F1 (15% added fat) and F2 (5% added fat and 3% tapioca starch), were cooked in a pre-heated hot air oven (HO) at $175{\pm}2^{\circ}C$ for 15 min, in a microwave oven (MO) for 70 sec and by pressure cooking (PC) at 15 psi pressure for 10 min. and compared for physico-chemical, processing, sensory and microbiological quality attributes. F2 had significantly (p<0.05) higher value for the moisture and moisture protein ratio than F1. However, MO and PC patties had significantly (p<0.05) higher moisture content than HO-cooked buffalo meat patties irrespective of fat content. Highest fat percentage was in MO patties while the minimum was in PC patties. Moisture and fat retention and cooking yield were highest in MO patties irrespective of added fat content in the formulation. Cooking yield and dimensional parameters were better maintained in F2 than F1. Sensory scores viz. appearance and color, flavour, juiciness and texture for HO patties were better than other cooking methods. Sensory panelists rated overall acceptability of HO patties very good to excellent, whereas PC and MO patties were rated as good to very good irrespective of fat content. Microbiological quality was comparable in both groups irrespective of cooking methods used.

식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성 (Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties)

  • 본 연구는 동물성 지방 대체제로서 식물성유 유화물인 올리브유(OPP), 대두유(SPP) 및 카놀라유(CPP) 유화물을 첨가한 돈육 패티의 품질 특성을 조사하였다. OPP, SPP 및 CPP의 수분 함량이 CON보다 높고, 지방 함량은 낮았다. OPP, SPP 및 CPP는 CON보다 보수력, 수율, 수분 보유율, 지방 보유율이 높았으며, 직경 감소율과 수축율은 낮았다. 가열 전후의 돈육 패티의 백색도와 적색도는 CON이 OPP, SPP 및 CPP보다 높고, 가열 전 돈육 패티의 황색도는 OPP가 가장 높았다. 돈육 패티의 포화지방산은 palmitic acid가 가장 많이 함유되어 있었다. 불포화지방산은 CON (42.84%), OPP (65.41%), CPP (48.63%)의 경우 oleic acid가 가장 많았으며, SPP는 linoleic acid (41.17%)가 가장 많이 함유되어 있었다. 돈육 패티의 불포화지방산 함량은 식물성유 유화물의 대체로 증가하였다. 경도, 응집성 및 저작성은 시료들 사이에 차이가 없었으며, 탄력성은 CON보다 OPP, SPP 및 CPP가 높았다. 맛, 풍미, 전체적인 기호도는 OPP 및 CPP가 CON 및 SPP보다 높게 나타났다. 따라서 식물성유를 겔화시켜 동물성 지방을 대체하면 이화학적·관능적 특성이 향상되고 지방산 조성이 개선되어 소비자들이 요구하는 건강에 유익한 저지방 육제품의 제조가 가능하다.

Hysrocolloid류가 돈육 Patty의 이화학적.조직적.관능적 특성에 미치는 영향 (Effect of Hydrocolloids on Physicochemical, Textural and Seneory properties of Pork Patties)

  • 본 연구는 친수성 콜로이드의 첨가가 저지방 육제품에 품질에 미치는 영 향을 검토하였다. 생육, 가열육 및 배가열육 patty의 수분함량은 대구조가 낮은 반면 지방함 량은 높았다. 생육 및 재가육의 면도(L값)는 sodium alginate 첨가구가 다른 patty들에 비해 현저하게 낮았고, 황색도(b값)는 대조구가 현저하게 낮았다. 가열육 patty의 수율 및 최종수 율은 친수성 콜로이드 첨가구가 대조구보다 현저하게 높았다. 가열육 patty의 지방 보유율 은 대조구가 91.3%로서 친수성 콜로이드 첨가구보다 낮았으며, 재가열육patty의 자방 보유 율은 모든 patty가 89.7~93.1%사이였다. 가열육 및 재가열육 patty의 경도는 xanthan gum 첨가구가 현저히 낮았으며, 저작성은 대조구, CMC, sodium alginate 및 xanthan gum 순으 로 높았다. 보수력의 경우 친수성 콜로이드를 첨가한 가열육 및 재가열육 patty가 대구조보 다 현저하게 높았다. 관능검사 결과 향, 조직감 및 전체적인 기호성은 patty들 사이에 현저 한 차이가 없었으나, 다습성은 xanthan gum, sodium alginate, CMC 및 대조구 순으로 우수 하였다. 전체적인 결과 지방율 20%첨가한 대조구보다 지방 10% 및 물 10%에 친수성 콜로 이드를 각각 1%씩 물 10%에 친수선 콜로이드를 각각 1%씩 첨가한 patty가 조직적.관능 적 특성이 우수하였다.

Gum류를 첨가한 우육 Patty의 품질 특성 (Quality Characteristics of Beef Patty Containing Gums)

  • In order to investigate the possibility of low fat meat products, beef patties were prepared with gumssuch as carrageenan, methyl cellulose, and xanthan gum. The quality characteristics of beef patties were examined. Moisture contents of raw and cooked patties of control were lower than those of patties containing gums. and fat content was higher than those of containing gums. There was no significant difference in the protein contents of patties. In case of L-value(lightness) of raw patty, the control was higher than those patties containing gums. a- ( redness) and b-value(yellowness) among patties were not significantly different. Cooking yield, fat retention, and water holding capacity of beef patties containing gums were higher than control beef patty, but salt soluble protein and gel strength were not significantly different. Significant difference did not exist among beef patties in hardness, but the chewiness and gumminess of patties containing gums were higher than control. In case of sensory evaluation, there was no significant difference among patties in aroma and palatability. Texture of control was higher than patties containing gums, and juiciness of control was higher than patties containing carrageenan.
