Effect of KCl and NaCl on Uptake of Proline in Staphylococcus aureus

  • Staphylococcus aureus, the most salt-tolerant food-borne pathogen, produces enterotoxins which may cause symptoms such as vomiting, diarrhea, nausea, and cramps. Since this bacterium has been able to grow at extremely high osmolarity its identity in foods with low water activity values such as salted or dried foods is of great concern. In this study, the growth of S. aureus at high osmolarity has been studied and the doubling time of S. aureus grown at TSB medium containing 15% NaCl has been found to be increased to 4∼5 hours. The stimulation of proline uptake after exposure of cells to high concentration of both extracellular KCl and sucrose was not increased. Stimulation of proline uptake at these environment only occured when 25mM NaCl was present I transport buffer. In additional experiments, the time required to reach mid-logarithmic phase in defined medium of high osmolarity found to be reduce by the presence of glycine betaine, proline, and choline.

Taste Compounds of Alaska Pollack Sikhae during Fermentation at Low Temperature Conditions

  • Fermented fish (jeotkal) has been used as a method of preserving perishable fish and marine products. Recently, however, high salted jeotkal (20% and more) has avoided from consumer by reasons of organoleptic quality (high salinity), health value (degenerative chronic disease), and hygienic safety. Among these jeotkals, meanwhile, sikhae (lactic acid fermented fishes) has been traditionally favored in the eastern coastal area of Korea, which contain below 10% of salt content with acidic range (pH4∼5). Inhibition of Transglutaminase and Microbial Transglutaminase Activity by Garlic

  • Ground garlic inhibited the cross-linking reaction of myosin and incorporation of monodansylcadaverine (MDC) in salted Alaska pollack surimi catalyzed by transglutaminase (TGase). The component responsible for the inhibition was a thermostable, low molecular weight compound. The component also inhibited microbial transglutaminase (MTGase). The inhibition by garlic was reversibly recovered upon addition of 2-mercaptoethanol. The inhibitory component was therefore hypothesized to contain sulfhydryl groups within its structure. Alliin itself did not inhibit the cross-linking reaction. However, the addition of alliin together with garlic increased the inhibition. This result suggested that compounds derived from alliin was responsible for the inhibition of TGase activity.

젓갈산업의 현황 및 발전 방향 (The present condition and development prospect of the fermented fishery products)

  • The traditional Korean fermented fish products are classified into mainly three groups; Jeot-gal, Aek-jeot, and Sik-hae. Jeot-gal is a salt-fermented fish. Aek-jeot (Eoganjang) is actually a liquid part of Jeot-gal. Sik-hae is a salt-fermented whole or part fisheries with adjuncts. The production of jeot-gal products has been increased constantly. However, there is not enough fishery for raw materials. Recently, consumers have been preferred low-salted foods because they have become aware that high levels of salt cause adult diseases such as hypertension or gastric cancers. The main consumers of jeot-gal are adults above 40~50 years old. Young generation and school nutrition teachers dislike fishery products because of distinct fish smell, small bone, as well as food safety. Therefore, in order to increase the consumption of jeot-gal and extend its industry, jeot-gal should be developed to match the preference of new generation with good safety, health-oriented, and new concept.

열처리 및 겨자유의 첨가가 김치 발효에 미치는 영향 (The Effects of Low Temperature Heating and Mustard Oil on the Kimchi Fermentation)

  • 항균력을 지닌다고 보고된 겨자유는 김치의 주요 유산균인 락토바실루스 플란타룸(Lactobacillus plantarum), 락토바실루스 브레비스(Lactobacillus brevis), 페디오코커스 세레비지에 (Pediococcus cerevisiae), 로이코너스톡 메세테로이데스(Leuconostoc mesenteroides)에 항균력을 지니고 있었으며, 김치제조시 겨자유 및 겨자분을 첨가하였을 때 적숙기에 이르는 시간이 지연되었다. 겨자유의 매운맛은 배추, 무우의 매운맛 성분과 잘 조화되어 풍미에 좋은 영향을 줄 뿐 아니라 신맛을 약화시키는 효과도 지니고 있었다. 저온 열처리+겨자+과산화수소 처리 병용은 숙성이 완만하게 진행되어서 대조군에 비해 김치 적숙기에 이르는 시간이 2.5배 정도 연장되었다. 저온 열처리+겨자+과산화수소+후처리 병용군은 $15^{\circ}C$에서 저장하는 동안 발효가 천천히 진행되어 저장 15일 후에도 pH 4.32, 산도 0.4%로서 숙성 초기단계에 머물러 있었으며 대조군에 비해 김치적숙기에 이르는 시간이 5배 정도 연장되었다.

Changes in Microorganisms, Enzyme Activities, and Gas Formation by the Addition of Mustard Powder on Kochujang with Different Salt Concentration

  • Kochujang was fermented using hot red pepper, meju prepared with soybean and rice, and malt-digested syrup. To reduce salt content, mustard powder (1.2%, w/w) was added to Korean traditional kochujang with 4-10% salt, and microbial characteristics, enzyme activities, and gas formation in kochujang were evaluated during fermentation for 120 days at $25^{\circ}C$. Yeast numbers of all treatments maintained 2.43-2.86 log CFU/g up to 60 days fermentation, indicating salt concentration had no effect on yeast count. Activities of ${\alpha}$- and ${\beta}$-amylases, and neutral and acidic proteases of kochujang added with mustard powder were slightly higher than those of control group. Total accumulative volume of gas produced during fermentation of kochujang without mustard powder (control group) was 5,892 mL/pack, but decreased to 34-99 mL/pack in low-salted kochujang (4 and 6% salt) added with mustard powder. Major gas produced was carbon dioxide (79-80%) with oxygen content less than 1.25%(v/v). Results indicate salt concentration of kochujang could be lowered up to 6-8% by addition of mustard powder without gas formation and quality alteration during distribution.

한국성인의 혈청지질이상과 식품섭취 (The Specific Food Consumption Pattern and Blood Lipid Profiles of Korean Adults)

  • Unlike studies of Europeans and Americans, many epidemiological studies of the Korean population have indicated that their risk for cardiovascular disease does not decrease with a vegetable-rich diet. The different dietary practices of Koreans, who consume salted vegetables instead of fresh vegetables (common in the Western diet), has been suggested as a reason for this observation. Korea is in a period of rapid epidemiologic transition, which includes dietary and disease patterns; therefore, this study investigated differences in the food consumption pattern and blood lipid profiles of Koreans compared to Europeans and Americans. The identification of dietary patterns related to blood lipid abnormalities was carried out using the 2007~2009 Korean National Health and Nutrition Survey data from 14,056 subjects. Dietary patterns were analyzed according to food group and nutrient intake. Blood lipid abnormalities were classified into three groups: hypercholesterolemia, hypertriglyceridemia, and low HDL cholesterolemia (hypo-HDL-cholesterolemia). The prevalence of hypercholesterolemia, hypertriglyceridemia, and hypo-HDL-cholesterolemia was 12.4%, 16.2%, and 27.7% respectively. In our analysis, the low consumption of all food groups was related to hypercholesterolemia. The high consumption of vegetable-containing foods, alcoholic beverages, and the low consumption of milk products were associated with hypertriglyceridemia and hypo-HDL-cholesterolemia. Thus, unlike Europeans and Americans, the low consumption of all food groups is related to hypercholesterolemia and a low consumption of milk products is related to hypertriglyceridemia and hypo-HDL-cholesterolemia. Dietary pattern might play a role in epidemiologic transition of Korean. Also, this study implies necessity of further research using longitudinal data.

  • 정어리를 효율적으로 이용하기 위한 하나의 방안으로서, 식염농도가 낮은 정어리젓의 가공조건을 설정하고자 젖산, sorbitol, glycerin, 에틸알코올을 첨가하여 숙성 중의 pH, 휘발성염기질소 등의 변화를 관능검사와 더불어 실험한 결과 정어리젓의 최적가공조건은 정어리육에 대하여 젓산 $0.5\%$, sorbitol $6\%$, 에틸알코올 $6\%$를 젓담금할 때 첨가하여 60일간 숙성시키는 것이라는 결론을 얻었다.

발효주정 첨가 저염 미더덕(Styela clava) 양념젓갈의 제조 및 품질 (Processing and Quality Analysis of Seasoned Low-salt Fermented Styela clava Supplemented with Fermentation Alcohol for Extended Shelf-life)

  • In order to develop value-added low-salt fermented seafood with a long shelf-life, we prepared seasoned low-salt fermented Mideoduck (Styela clava) supplemented with fermentation alcohol (SME). The SME was produced by washing and dewatering shelled Mideoduck, followed by cutting and salting for 24 h at 0℃. The salted Mideoduck was seasoned and fermented with ingredients, including garlic, ginger, monosodium glutamate, red pepper, sesame, sorbitol and sugar, for 7-8 days at 0℃. After adding 3-5% fermentation alcohol, the Mideoduck was packed in a polyester container. The salinity, volatile basic nitrogen, and amino nitrogen content of the SME was 4.5%, 20.9 mg/100 g and 92.0 mg/100 g, respectively. In comparison with the control, the addition of 3-5% fermentation alcohol showed inhibitory effects of decreased freshness, texture degradation, and growth of residual bacteria. Additionally, the SME had good storage stability and organoleptic qualities when stored at 4±1℃ for 40 days. Therefore, it is suitable for commercialization as a seasoned low-salt fermented product with a long shelf-life. The total amino acid content of the SME was 11,774.5 mg/100 g, majorly comprising glutamic acid, aspartic acid, lysine, arginine, and leucine, and the free amino acid content was 506.4 mg/100 g, majorly comprising hydroxyproline, taurine, and glutamic acid.

  • 본 연구는 재래간장의 원료 대두로부터 자숙과 메주제조 과정중의 당류의 행동을 추적하고 가당에 의한 젖산발효와 알콜발효의 효과를 조사하기 위하여 실시되었다. G8메주와 SB메주 제조과정 중 수용성 당류함량이 대폭 감소하였다. G8메주와 SB메주로 만든 저염간장 소화액에 젖산균 Pediococcus halophilus와 효모 Zygosaccharomyces rouxii 및 Candida versatilis의 종모배양액을 접종한 결과, 5% glucose를 첨가한 G8간장과 SB간장에서는 모두 급속히 젖산발효와 알콜발효가 일어났으나 당 무첨가 간장에서는 발효가 일어나지 않았다. 종모배양액 접종 후 160시간 후 가당 G8간장과 가당 SB간장에서 각각 0.46%, 0.88%의 젖산과 1% 및 약 2%의 알콜을 함유하고 있었다.
