저염 장아찌 개발을 위한 연령별 소비자 인식, 기호도 및 섭취빈도 조사 (Consumer's Perception, Preference and Intake Frequency of Jangachi(Korean Pickle) by Age for Developing Low Salt Jangachi)

  • 본 연구는 저염 식단을 통한 건강 식생활 실천을 목적으로 그 기능성과 식품학적 가치가 뛰어난 장아찌를 소재로 저염 장아찌에 대한 소비자 인식 및 종류별 기호도 및 섭취실태 및 향후 개발 방향 등을 연령별로 분석하였다. 그 연구 결과를 요약하면 먼저 좋아하는 장아찌의 절임형태는 간장절임이, 장아찌와 곁들여 먹으면 좋은 메뉴로는 밥 종류가, 장아찌와 함께 주로 먹어본 음식스타일은 한식이, 장아찌를 주로 섭취하는 용도는 밑반찬으로가, 장아찌를 즐기는 이유로는 입맛을 돌게 해서가 가장 높게 나타났다. 시판 장아찌의 문제점은 높은 나트륨 함량과 짠맛이, 저염 장아찌에 대한 관심도는 보통이다가, 향후 저염 장아찌 개발 시 구매 계획은 고려해 보겠다가 가장 높게 나타나 저염 장아찌 개발 시 향후 장아찌 시장은 더욱 활성화될 것으로 기대되었다. 장아찌에 대한 기호도와 섭취빈도는 마늘, 깻잎, 무말랭이 장아찌가 높은 반면에, 톳, 미삼, 산초 장아찌 등은 낮은 점수를 나타내었고, 50대이상이 높은 점수를 보였다. 시판 장아찌의 개선 사항은 "위생적으로 유통되었으면 한다."(4.07점), "너무 짜지 않게 짠 맛의 농도를 조절했으면 한다(4.06점)."가 높게 나타났고, 대부분의 항목에서 40대 집단이 다른 연령 집단에 비해 개선 요구도가 높게 나타났다. 저염 장아찌 개발 제조 시 요구되는 제조 품질 속성의 중요도는 제조 부문에서는 안전성이 가장 높았고, 품질 부문에서는 위생이 가장 높았다. 이상의 결과를 종합해 보면 향후 저염 장아찌를 개발할 때 조리법에서는 나트륨 함량을 줄이고, 제조법에서는 저염 장아찌를 담는 용기와 저장 온도를 표준화하여 위생적인 면을 우선시하는 것이 중요하다는 사실을 알 수 있었다. 또한 저염장아찌의 대중화를 위해서는 마늘, 깻잎, 무말랭이, 고추, 마늘쫑, 양파, 오이를 이용한 저염식 장아찌의 표준화된 레시피 개발과 이들 장아찌의 기능 우수성과 식품학적 가치를 홍보하고 다양한 매체를 통한 조리방법의 습득 기회를 부여하여 손쉬운 장아찌 조리법의 개발보급에 중점을 두어야 할 것으로 사료된다.

주박을 이용한 저염 야콘 장아찌의 저장 중 품질특성 (Quality Characteristics of Low-Salt Yacon Jangachi Using Rice Wine Lees during Storage)

  • 야콘의 침지액 소금물 농도와 주박의 소금 첨가량에 따라 제조한 주박 야콘 장아찌의 저장 중 품질특성을 분석한 결과는 다음과 같다. 야콘의 수분 함량은 81.08%, 조단백 함량은 0.77%, 조지방 함량은 0.14% 그리고 조회분 함량은 0.70%로 나타났다. 0%, 2%, 4% 소금물에 3시간 동안 침지한 야콘을 4%, 2%, 0% 소금을 섞은 주박과 각각 혼합하여 최종 염도를 일정하게 조절한 후 50일 동안 $18{\pm}2^{\circ}C$에서 측정한 야콘 장아찌의 염도의 경우 0% 소금을 첨가한 주박에 저장한 야콘 장아찌는 저장 10일 이후에는 큰 변화가 없었고, 2%와 4% 소금을 첨가한 주박에 저장한 야콘 장아찌는 저장기간이 길어질수록 증가하였으나, 저장 50일 동안 염도는 3% 이하로 나타났다. 반면에 50일 저장기간 동안 주박의 염도의 경우 0% 소금을 첨가한 주박은 저장기간 동안 큰 변화가 없었고, 4% 소금을 첨가한 주박은 저장기간이 길어질수록 염도가 감소하였다. 색도에서 L값은 저장기간이 길어질수록 감소하였고, a값은 저장 10일째에 가장 큰 폭으로 증가하였으며, b값은 저장기간이 길어질수록 증가하였다. 야콘 장아찌의 절단력은 저장기간이 길어질수록 증가하였다. 각각의 야콘 장아찌의 관능검사를 실시한 결과, 색에 대한 선호도는 저장 기간이 길어질수록 증가하였고, 맛에 대한 선호도는 저장 30일째가 가장 높았으며, 향미에 대한 선호도는 저장기간이 길어질수록 주박 특유의 향으로 인하여 감소하였다. 물성에 대한 선호도는 저장기간이 길어질수록 높았고, 전체적인 선호도는 주박에 0% 소금을 첨가한 야콘 장아찌는 저장 초기에는 선호도가 높았으나 저장기간이 길어질수록 선호도가 낮아졌고, 2%와 4% 소금을 첨가한 야콘은 저장기간이 길어 질수록 선호도가 높아졌다.

간장을 이용한 저염 야콘 장아찌의 품질특성 (Quality Characteristic of Low Salted Yacon Jangachi Using Soybean Sauce)

  • To evaluate the possibility of low-salinity of traditional fermented food, we investigated quality characteristic of low-salted Yacon Jangachi using soybean sauce with sugar or vinegar for 50 days. Sugar content, titration acidity, and salinity of all Yacon Jangachi was increased as storage time increased. All of the Yacon Jangachi had less than 3.0% salinity. Especially, the salinity of the Yacon Jangachi with sugar and vinegar was the lowest during storage time. The L value was decreased as storage time increased but the results of the a and b values were reversed. Cutting force was not significant among samples and storage periods. In the results of sensory evaluation, preference of all samples were increased as storage time increased. The preference of color was not significant among samples from 30 days but the taste was reversed. The preference of flavor was significant between samples in 40 days, texture was not significant during storage time. Overall preference was not significant after 30 days, which suggested that Yacon Jangachi using soybean sauce retains overall preference in steady level from 30 days. Yacon Jangachi using soybean sauce showed the highest preference when produced with sugar and vinegar.

청주박을 이용한 오이장아찌의 품질 특성 (Quality Characteristics of Cucumber Jangachi using Sake Cake)

  • In this study, cucumber Jangachi using Sake cake was prepared and its quality characteristics verified. After preparing various cucumber Jangachi with different salt concentrations, physicochemical characteristics, hardness and sensory evaluation were investigated. Five samples (0%, 3%, 6%, 9% and 12% brine) were used and designated as treatment plots (CJ0, CJ3, CJ6, CJ9 and CJ12, respectively). Higher concentration of brine was associated with reduced pH of cucumber Jangachi and higher total acidity. Salinity decreased significantly as storage period increased. On day 0, it shows similarity to the concentration of brine, whereas it was reduced after day 28. The soluble solid content increased significantly as the storage period increased and decreased slightly after 21 days. Regarding concentration of brine, a higher concentration shows a tendency to increase but the gaps are insignificant. Reducing sugar content increased significantly as the storage period increased. The hardness increased in all treatment plots up to the 14th day, decreased until day 21, and increased thereafter. Following the sensory evaluation, saltiness was not detected in the plots, and CJ6 showed the highest texture score ($4.46{\pm}1.41$). For overall acceptability, CJ6 showed the highest score ($4.33{\pm}1.13$). According to the above results, salinity content of cucumber Jangachi using Sake cake decrease to 0.69~1.52% in 0%, 3%, 6%, 9%, and 12% brine by the 28th day. Despite decreasing salinity, texture and overall acceptability scores were higher than the above results. Thus, we conclude that it is possible to produce low salt cucumber Jangachi of high quality using Sake cake instead of high salt one.

소금 농도와 삭힘 시간에 따른 깻잎 장아찌의 전처리 조건의 최적화 (Optimization for Pretreatment Condition according to Salt Concentration and Soaking Time in the Preparation of Perilla Jangachi)

  • Jangachi(salted and fermented vegetable) has been made by Korean traditionally using several kinds of vegetables, which is a good source of variety of nutrients and vitamins. There are many methods for making Jangachi. Generally soy sauce Jangachi is made through two steps. First, as a pretreatment, vegetables are soaked in salt water. Second, soaked vegetables are fermented in various ingredients like soy sauce, sugar, garlic, ginger and so on. This study was performed to observe changes in contents of chemical components and sensory evaluation of pretreated perilla leaf. Perilla leaf was soaked in water with different levels of salt concentration(2, 5 and 8 %) and soaking time(1, 3 and 5 days). The optimal level of salt and soaking time was determined with the results of sensory evaluation by response surface methodology and analysis of composition. The moisture contents decreased as the levels of salt and soaking time increased. The moisture content of untreated sample was 87.5 % and when soaked for 5 days in the water of 8 % salt concentration, it became 78.27 %. pH of Perilla leaf was high in high levels of salt concentration and short soaking time. Total acidity was so opposite to pH that was low in high levels of salt concentration and short soaking time. In the water of 8 % salt concentration, total acidity was 0.14 % when soaked for 1 day, 0.20 % for 3 days and 0.30 % for 5 days. Salt contents became greater as the soaking time increased. As the results of puncture test, soaked Perilla leaf's toughness increased as the levels of salt increased and soaking time decreased. Among the sensory attributes, greenness increased as the levels of salt concentration increased when soaked for more than 3 days. Saltiness and bitterness became greater as the levels of salt concentration increased. Perilla flavor decreased with the short soaking time. Off-flavor increased with the increased levels of soaking time and decreased salt concentration when soaked for more than 3 days. Toughness decreased as the levels of soaking time increased. Crispness increased with the increased levels of salt concentration. The condition of pretreated Perilla was optimum when it soaked for 42 hours in 4 % salt concentration.
