A Qualitative Research on Self-Awareness and Improvement in Local Food Utilization depending on the Experience of School Dieticians and Nutrition Teachers (학교급식 영양(교)사의 경험에 따른 로컬푸드 이용에 대한 인식 및 발전방향에 관한 질적 연구)

  • In the present study, we conducted in-depth interviews with school dieticians and nutrition teachers to determine the local foods they were aware of and their experiences with local foods. We also aimed to obtain more detailed measures for local food vitalization and suggestions for improvements. In-depth interviews were performed with 8 school dieticians and nutrition teachers, who stated that local food vitalization was needed for school food services, because it could be a foundation for securing safefood products, student healthi mprovements, environmental protection, and the establishment of a general consumption market. However, they were aware of a higher number of disadvantages than advantages in school situations and indicated the deterioration of the quality of food products as the biggest disadvantage. The most-suggested measurement items for local food vitalization in schools included improvement of the food distribution system, expansion of education, information sharing, prevention of monopolies, improvement of food-product quality, and mass production. In addition, it was suggested that school dieticians and nutrition teachers should invest efforts in the development of excellent recipes and varied diets utilizing local foods. Therefore, system supplementation is urgently required in order for school food service officials, and consumers, to efficiently introduce and vitalize local foods. It is also necessary to foster an environment that encourages trust-based relationships with producers to maximize the effect of system supplementation. This would be the foundation for improving the health of students, improving food-service quality, nutrition management, and vitalization of the regional economy in the future, and will positively affect students' food consumption patterns even after they become adults.

Study on Dish and Dining Table Development for Healing Foods Using Local Products -Focus on Forest Healing Tourism at Mount Chungnyeong, Jangseong- (지역 특산식품을 활용한 치유음식 메뉴 및 상차림 개발 -장성군 축령산 산림치유관광을 중심으로-)

  • The purpose of this research was to develop healing food dishes for the vitalization of forest healing tourism in agricultural areas by enhancing satisfaction of food experiences by visitors to Mount Chungnyeong, Jangseong. Results from site visitation by three professors from food-related departments, association opinions, Jangseong-gun policies, and research materials relating to healing foods were applied for the preparatory experimental cooking, and the final dishes were selected through a food demonstration event. As a result of observation during the site visitation, the main dishes of the subject restaurant appeared to be limited to Samchae Bibimbap, Samchae Ddeokgabi, and Korean set menu items, revealing a limited selection for tourists and referencing a failure to induce customer attraction and long-term stay. Development of a menu conforming to the image of forest healing at Mount Chungnyeong is desperately needed. As a result of applying the results of the surveys from visitors to Mount Chungnyeong, the types of dishes preferred appeared to be Korean table d'hote and Bibimbap, and pork was preferred as the $entr{\acute{e}}e$. The characteristics of preferred dishes appeared to be based on tradition and regionality. Thus, Forest Healing Savory Dish, Yellow Health Dish, and Samchae Kalguksu applying the policy direction of the Yellow City, Jangseong-gun and the image of Jangseong-gun based on Confucianism were developed. Tourists may further enhance the effectiveness of forest healing through foods based on dishes by adding traditional taste using seasonal food ingredients and local specialties, which can contribute to the vitalization of forest healing tourism.

Development of Evaluation Indicators for Industrialization of Local Cuisine (향토음식의 산업화가치 평가를 위한 지표 개발 연구)

  • The purpose of this study was to develop an evaluation indicator for the industrialization of local cuisine. We conducted a literature study, interviews with experts, and a Delphi survey. The resulting evaluation indicator was divided into four groups and nine sub-groups. The four groups were locality, taste and functionality, industrial base, and business value. The nine sub-groups were traditionality, regionality, eating quality, nutrition and functionality, condition of development, technological level, rights and policy, marketability, and ripple effects. Also 22 items were created as indicators for evaluating classes ; historicity, sustainability, rarity, awareness of local resident, the number of similar restaurant, appearance, taste, nutritional balance, health functionality, availability of raw materials, suitability of environmental exchange of market, standardization of recipe, simplification of recipe, storability, intellectual property rights, government's policy, appropriacy of price, popularization, possibility of franchise, globalization, improvement of local image, vitalization of local economy. The four most important classes corresponded to one of the four groups. These classes were sustainability, taste, state (local autonomy) policy, vitalization of local economy. The implications of this study are that the possibility of industrializing the local cuisine of each region can be evaluated and applied. Moreover, these indicators could promote the discovery of local cuisines, support planning for the commercialization of local cuisine.

A Study on the Strategic Vitalization Plan of Korean Integrated Medical Tourism

  • Objectives: As a newcomer to the medical tourism industry, Korea needs to differentiate itself from the leading competing countries to vitalize its early-stage medical tourism industry. This study aims to introduce a strategic plan to vitalize the Korean integrated medical tourism so that Korea can differentiate itself from competing countries and create high added value. Methods: The concept and actual conditions of medical tourism and Oriental medical tourism were examined. A plan to differentiate Korea from the competing countries in the medical tourism industry was studied to create high added-value through strategic vitalization of its medical tourism industry. Results: Korean integrated medical tourism must be developed differently from those of other South-East Asian countries in order to strategically promote the cash-cow medical tourism industry. In order to develop such medical tourism, Korean medical practice, which integrates Western and Oriental medicine, is to be developed through mutual understanding and fusion of other disciplines among medical doctors and Oriental medical doctors who are working in local healthcare for health promotion of local residents and disease prevention and control. This will play a key role in developing a unique medical tourism product of Korea by means of strategic alliances as an integrated medicine. Manpower specialized for integrated medicine is to be specially supplied for Oriental medicine-related business lines at city, county and borough levels, among local governments, that are enthusiastically carrying forward Oriental medical tourism with an interest to promoting more active and strategic business development and raise the effectiveness and efficiency of public health centers handling related medical tourism. Manpower specialized for Korean integrated medical tourism is to be specially supplied for the Ministry of Culture, Health and Tourism, a policy control tower to develop and vitalize high value-added fusion (theme) tourism products such as the Korean integrated medical tourism, in order to discover, promote and support Korean integrated medical tourism's differences from existing medical tourism. Conclusions: The differentiated integrated medical tourism that only Korea can offer in a variety of forms, in order to create a key area of high value-added medical tourism, should be strategically vitalized through a liaison between integrated medicine and tourism and the realization of patient-centered health care services with medical technology developed based on mutual understanding of Western and Oriental medicine.

A Study on the Effects of Health Functional Food Consumption Recognition and Purchase Distribution Pattern of the Elderly

  • This study is aiming to suggest baseline date for the establishment of policy alternative to make healthy consumption life of the elderly through investigating and analyzing actual condition of consumption related with the awareness of health functional food such as purchase behavior and consumer's problems about health functional food. Under the assumption that the vitalization of health functional food market will become an important market in the present and in the future, the fundamental marketing information about elder consumers is more important than any other information that is essential for successful marketing to domestic corporations and senior policy experts. In addition, there was a fundamental significance to provide necessary basic data for health promotion of the elderly by offering information about rights and interests of elder consumers who are members of vulnerable social group or right choice of purchasing or intake. The limitations of this study are as follows. First, the subjects were selected who live in Gangwon-do with the age of 60 and over due to the limitation of sampling, and that might be shown local characteristics. Therefore, the study result could not be generalized on behalf of all elderly in Korea and it is difficult to apply the result to more segmented market. To solve this problem, studies containing sampling by regional groups might be needed.

Analysis and Improvement of the Chrysanthemum Festivals for the Revitalization of Regional Economy

  • This study is to analyze the current state, trend, and preference of the three chrysanthemum festivals representing South Korea that are hosted by local governments, and it is to be used as the basic data for preparing effective plans for the chrysanthemum festivals. The study was conducted from April 20, 2013 to November 25, 2017, and literature review, online search, interviews with persons in charge, field survey, and questionnaire survey were performed. As a result of the field survey, all three festivals had their space structures divided, themes decided and space images depicted based on chrysanthemum sculptures. The landmarks of the city, cultural assets, or great figures were selected to the main theme of the major chrysanthemum sculptures. The sculptures were decorated realistically for users to easily recognize the image. The main chrysanthemum sculptures tended to be introduced repeatedly. As results of the current state of visit and preference, it was found that the number of visitors has increased every year, along with revisits. The satisfaction and the preference for the festival were evaluated positively, and the chrysanthemum festival has become a local festival representing autumn, and a resource for vitalization of the regional economy. However, as a result of the survey, insufficient parking space and resting place, change of image of the sculptures, experience programs, and food shall be improved in order to increase the users satisfaction.

Study on Vitalization Awareness of Traditional Markets - Focus on Participation in Management Activation Education of Traditional Market Traders - (전통시장 활성화 인식도에 관한 연구 - 전통시장 상인의 경영활성화 교육 참여 여부를 중심으로 -)

  • This study aimed to provide insight into methods for activating management of traditional markets by understanding differences in merchant perception according to whether or not the merchant has participated in management activation education. Analysis of merchants' levels of perception of market activation found that educated merchants had a higher perception of pre-post modernization satisfaction, promotion of traditional market revitalization projects, and post-support changes in sales. In a co-marketing context, educated merchants showed significant differences in onnuri gift certificates, bargain sales, festivals and events, and advertisement promotions. With regards to perception of management performances, educated merchants showed statistically significant higher responses for items such as satisfaction with the current vendor, increased sales, and increased customer awareness. The results in this study may be incorporated into the policy-making processes of the government or local governments in order to revitalize traditional markets, and merchant education for activation of management is deemed to be continuously necessary.

  • The 6th industrialization of agriculture, which promotes the virtuous cycle of creating new value with through the convergence integration of agriculture and contributing to the vitalization of local economy etc. Accordingly, the purpose of this research is to provide implication for the efficiency, vitalization of domestic 6th industrialization per regions Analysis is use of the "2015~2016 Food Agriculture 6th Industrialization Basic Reality Survey Research" report data. As an analytical method DEA(Data Envelopment Analysis), Tobit model were used for results. The following are the summary of hypothesis test. First, 6th industrialization of agriculture identify improve income growth and increase efficiency, Second, Efficiency influence factor analysis shows have a minus (-) relation that yearly rural population increase rate, and secondary industry participation rate. Third, 6th industrialization recognition of the business is plus(+) relation influenced. Through this research, There may be a limit of research data and qualitative factor etc, explanatory power, but it is meaningful in the sense that objective implication was drawn for the enhancement of the 6th industrialization per regions.
