근섬유간 지질의 산패에 관한 비교연구 (Comparison of Intramuscular Lipid Oxidation in Porcine Muscle)

  • 골격근의 longissimus dorsi근(white muscle) 및 soleus근(red muscle)과 심장근(cardiac muscle)의 근섬유간 지질의 산패량과 각종 영향인자의 첨가효과를 비교하였다. 얻어진 결과는 다음과 같다. 지질의 산패량은 white muscle>red muscle>cardiac muscle의 순이었으나, 지질함량으로 보정된 산패량에는 white muscle과 red muscle사이에 차이가 없으며, 따라서 지질 산패량은 근육의 지질함량에만 지배받는 것으로 나타났다. 미오글로빈은 근섬유의 산패에 대하여 현저한 촉진작용을 나타내었으나, 근섬유의 함량차이(white muscle 1%, red muscle 5%)에 의한 차이는 관찰되지 않았다. 산패 억제기능의 아질산염과 산패 촉진기능의 식염이 적정량 함유된 건조 육제품이 진공포장된 경우 지질 산패량은 전 유통기간에 걸쳐 품질저하의 주요원인이 되지 않았다.

식이중의 Vitamin A와 E가 Adriamycin을 투여한 흰쥐의 심근손상의 원인인 과산화작용에 미치는 영향 (Effect of Dietary Vitamin A and E Peroxidative Deterioration of Heart in Adriamycin-Treated Rats)

  • The present study was designed to evaluate the protective effects of dietary vitamin A or E. and of combination of vitamins A and E on peroxidative deterioration of heart in adriamycin-treated rats. Male Sprague-Dawley rats were assigned to 5 groups according to the dietary supplementation of vitamin A or E Except control rats a dose of 2mg ADR/kg of B. W was injected to these animals intraperitoneally on the same day every week. Adriamycin treatment significantly decreased the weight gain of experimental rats compared with that of control rats, But this decrement was not modified by dietary supplementation of vitamin A or E. Lipid peroxide values of plasma were elevated by ADR treatment. The combined use of ADR and dietary vitamin A or E significantly reduced these values, The interaction between vitamins A and E seemed to be present in the lipid peroxide value of plasma. Catalase and superoxide dismutase(SOD) activities in rat heart were decrased by ADR treatment but glutathione peroxidase(GSH-Px) activity was elevated. Dietary supplmen-tation of vitamin A or E enhanced the heart catalase and SOD activities. except only vitamin A-supplemented group. GSH-Px activity of rat heart tended to be decreased by dietary supple-mentation of vitamin A or E. With ADR treatment polyunsaturated fatty acids such as archido-nic acid(20:4) and docosahexaenoic acid(22:6) were decreased in rat heart. However dietary supplementation of vitamins A and E reduced this decrease. The retinol and tocopherol contents of rat plasma were decreased by ADR treatment. Dietary vitamin A or E influence vitamin A or E content of plasma. The interaction between dietary vitamins A and E was observed in vitamin A or E level of rat plasma.

영암어라인의 품질에 대한 건조풍속의 영향 (Effect of Drying Air Velocity on the Quality of Salted and Dried Mullet Roe)

  • 영암어란의 제조방버은 건조기간이 긴 자연건조법으로 제조조건에 따라서 품질이 다르고 저장중 산화, 변색 및 단백질의 열화가 일어나 품질이 저하하였다. 본연구는 좋은 품질의 영암어란을 제조하기 위한 조건들의 확립을 위하여 품속에 따른 구성아미노산 함량과 산가, 과산화물가, TBA가의 변화로 최적풍속을 찾고 특성곡선을 구하였다. 엄장농도 5%, 바르는 참기름량은 3.0g/day에서 양호한 품질을 유지하기 위한 최적풍속으로 60% RH와 $20^{\circ}C$에서 2m/sec로 확정하였다. 영암어란의 제조에서 전통건조 방법의 건조기간은 20일이었으나 본 실험의 2m/sec 풍속에서 7일로 단축되었으며 이때의 건조특성곡선은 항율건조기가 없었고 감율건조기만 있었다.

미강지방질의 산패에 따라 생성된 산화 지방실이 유리아미노산의 변화에 미치는 영향 (Changes in Free Amino Acids by Lipid Deterioration in the Biological System of Rice Bran)

  • 상대습도 65%, 온도 $35^{\circ}C$의 저장 조건하에서 지방질의 가수분해를 촉진 시킨 미강과 상대습도 70-90% 온도 $25-30^{\circ}C$의 공기중에 방치하여 가수분해와 산화를 동시에 촉진시킨 미강을 시료로 지방질의 산화에 따라 생성된 산화 생성물이 단백질의 변패에 미치는 영향을 유리아미노산 함량의 경시적인 변화로써 살펴 보았다. 산소농도를 제한한 system에서는 자장초기에 유리아미노산의 함량이 증가하다가 지방질의 산화가 진행되면서 감소하기 시작하였고, 이러한 감소현상은 공기중에 방치한 실험군에서는 저장 초기부터 일어나기 시작하여 산화가 급격하게 진행된 저장 말기에는 그 감소 현상이 현저하였다. 이들 아미노산의 감소와 지방질의 산패정도를 통계처리한 결과, 유리아미노산 중 serine, glutamic acid, proline, methionine, lysine, histidine, 그리고 arginine 등의 함량 감소는 지방질의 산패에 의한 현저한 영향을 받았다(p<0.05).

  • Lipid peroxidation induces functional deterioration of cell membrane and induces cell death in extreme cases. These phenomena are known to be related generally to the change of physical properties of lipid membrane such as decreased lipid order or increased water penetration. Even though the electric property of lipid membrane is important, there has been no report about the change of electric properties after lipid peroxidation. Herein, we demonstrate the molecular energy band change in red blood cell membrane through peroxidation by air-based atmospheric pressure DBD plasma treatment. Ion-induced secondary electron emission coefficient (${\gamma}$ value) was measured by using home-made gamma-focused ion beam (${\gamma}$-FIB) system and electron energy band was calculated based on the quantum mechanical Auger neutralization theory. The oxidized lipids showed higher gamma values and lower electron work functions, which implies the change of surface charging or electrical conductance. This result suggests that modified electrical properties should play a role in cell signaling under oxidative stress.

N-3계 지방산과 단백질 수준이 나이가 다른 흰쥐에서 신장 기능에 미치는 영향 (Effect of N-3 Fatty Acids and Dietary Protein Levels on Renal Function in Rats of Different Ages)

  • This study was performed to investigate the effect of n-3 fatty acids and dietary protein levels on renal function. Fifteen-month old male Sprague-Dawley rats were divided into 4 diet groups. Two-month old rats were used as a control group. The experimental diets contained either a% or 25% casein and lipid levels of the diets were 20% by weight. For the control group, the lipid was composed of beef tallow and corn oil on a 1:1 basis, and fish oil was comprised 75% of the fat mixture for the fish oil group. Rats were fed the diets ad libitum for 8 weeks. GFR and urinary protein excretion were higher in high protein groups, while fish oil exhibited no effects. Renal medulla TXB$_2$and PGE$_2$ concentrations tended to be higher in high protein groups and lower in fish oil groups. Light microscopic examinations showed that glomerulosclerosis, tubular atrophy, tubular cast, interstitial inflammation and interstitial fibrosis fended to be higher in aged rats and in high protein groups and lower in fish oil groups. Serum levels of total lipid, triglyceride and total cholesterol were higher in aged rats and lower in fish oil groups while serum HDL-cholesterol level was higher in young rats and in fish oil groups. However, dietary protein level had no effect on serum lipid levels. Serum TBARS concentration was higher in aged rats and in fish oil groups. In conclusion, fish oil caused changes in serum lipid concentrations and eicosanoids metabolism. The effect of fish oil on renal function was less obvious than dietary protein. However, fish oil seemed to be effective in lessening deterioration of renal function due to aging and/or high protein diets through changes in lipid and eicosanoids metabolism.

자열(煮熱) 새우의 건조방법(乾燥方法) 및 저장중(貯藏中) 지질(脂質)의 산화(酸化)와 유효성(有效性) Lysine의 변화(變化) (Changes in Available Lysine and Lipid Peroxydation During Drying and Storage of Bioled Shrimp)

  • 수산식품의 품질보존에서 문제시되고 있는 지질의 산화생성들이 단백질의 영양학적 변화에 미치는 영향을 검토하기 위하여 새우를 시료로하여 건조과정과 저장중에 생성되는 지질의 산화생성물과 유효성 lysine간의 반응과 갈변반응에 미치는 영향을 실험한 결과는다음과 같다. 새우를 5%식염수에서 자숙한 후 $30{\pm}5^{\circ}C$에서 30시간 열풍건조 및 천일건조하였을 때 과산화물값은 열풍건조한 시료에서 12시간후, 천일건조한 시료에서는 18시간후에 증가하여 저장 15일경에 최고도에 달하였다. TBA값은 건조과정중에 급격히 증가하였으며 저장 25일경부터는 서서히 감소하였다. 유효성 lysine은 건조과정중 지질이 산화됨에 따라 감소되었으며, 특히 감소현상은 건조초기에 현저하였다. 지질이 산화됨에 따라 갈변색소는 증가하는 경향을 나타내었으나, 큰 차이는 없었다. 이상의 결과로부터 새우는 건조과정에서 지질이 산화됨에 따라 유효성 lysine의 량이 감소됨을 알 수 있었으나 건조방법에 의하여서는 큰 차이가 없었다.

황색종 연초 건조중 탈수경과 및 풍속차가 건조엽의 특성에 미치는 영향 (Effect of Leaf Dehydration Process and Air Flow Capacity of Curing Facility on Physical Properties and Composition of Leaves During Flue-curing)

  • The effect of leaf dehydration process and air flow capacity of bulk curing on physical properties and composition of cured leaves was studied, respectively, during flue- curing. Cured leaves from excessive moisture during yellowing stage and those from rapid dehydration Process inevitably during later stages, tend towards lower equilibrium moisture contents, higher shatter index, hither protein nitrogen, and leaf scalding or deterioration of Beaves with redish cast. Early dehydration at the yellowing stage re suited in increasing of p Bamitic, stearic, linoleic, and linolenic acid contents, but showed reduction of brightness difference between upper and lower surface of the cured leaves, Leaf surface lipid decreased with the progress of curing stages, more conspicuously during later stage. Lowering air flow capacity of fan by 50oye during stem drying stage resulted in increasing of leaf surface lipid and 25oye decreasing of electric power consumption , but curing period and kerosene consumption were not affected.

Composition, Structure, and Bioactive Components in Milk Fat Globule Membrane

  • A unique biophysical membrane which surrounds the milk fat globules is called the milk fat globule membrane (MFGM). Various researches were studied about origin, composition, structure and bioactive components of MFGM. Bioactive protein components of MFGM play an important beneficiary function such as defense mechanism in new born. Among the bioactive lipid components from MFGM phospholipids showed health enhancing functions. The phospholipids also help in the production of certain dairy product from deterioration. MFGM phospholipids also showed antioxidant activity in some dairy products such as butter and ghee produced from milk of buffalo. Based on the beneficial effects, researchers developed MFGM as functional ingredients in various food products. This current review focuses on health enhancing function of MFGM and its components in various dairy products.

홍삼의 품질개선을 위한 감마선 이용 (Application of Gamma Irradiation for Quality Improvement of Red Ginseng)

  • Gamma irradiation was applied to red ginseng for improving its quality. Irradiation at 5~7 kGy was effective for sterilizing all contaminated microorganisms of red ginseng. At the dose levels, no significant shanges in physicochemical properties (color, saponin, lipid rancidity and fatty acids etc.) were observed even after 6 months storage. Gamma irradiation was also effective for the improving hygienic quality of packed red ginseng with high moisture content (up to 20%), without any quality deterioration.
