The movement and transformation of the food and drink and its transpiration (수곡(水穀)의 운화(運化)와 배출 -"황제내경(黃帝内经)"을 중심으로-)

  • Accroding to "Hwangjenaegyeong(黃帝內經)", when the food and drink[水穀] enter the mouth, they divided into two different things with solid food[食] and liquid food[飮], then transformed and absorbed into Jeong(精), Gi(氣), and Jinaek(津液) and spread to the entire body. The movement and transformation[運化] of the food and drink in the body can be distinctly described with the circulation of the Yeonggi(營氣) Wigi(衛氣) and metabolism of Jinaek. The leftover food[糟粕] which is not transformed into Jinaek, not delivered to the Jangbu(藏府) like Gan(肝), Shim(心), Bi(脾) and Pe(肺), brought to the Daejang(大腸) and transported through the baekmun(魄門). Or some of them are verified at the Hoejang(廻腸) and brought to the Banggwang(膀胱) through the Hacho(下焦) then transpired them outside the body. The distinguishing mark of the movement and transformation of the food and drink and its transpiration in the "Hwangjenaegyeong" is that the Sin(腎) of five jangs is exclude from the process of the movement and transformation and the process is explained with the fluid like Gi and Jinaek. From the "Nangyeong(難經)", developing of Myeongmun(命門) theory, the importance of the Sin in the delivering process of the food and drink is remarkably highlighted; however in the late period of Chosun dynasty(朝鮮), Seokgok Igyujun(石谷 李奎晙) denied the temporary theory of Myongmun and asserted the original interpretation recovery of "Hwangjenaegyeong".

Menu Development and Application for Rural Elderly of Gangwon and Chungnam Areas at Agricultural Off-season (강원, 충남지역의 농한기 농촌 노인의 급식식단 개발과 적용)

  • Meal menus were developed and applied for rural elderly of Gangwon and Chungnam areas at agricultural off-season. Amounts of the major nutrients of carbohydrate, protein, lipid, and calorie considered in the menu based on the dietary reference intakes(DRI) of the elderly aged over 65 years were 97.5g, 22.5g, 13.3g, and 600kcal, respectively. In Chungnam, softness and overall acceptance of rice in menu 4, consisted of cereals and rice, kimchi stew with tuna, pan-fried bulgogi mushroom, seasoned dropwort carrot, kimchi, and banana, scored the highest values of 8.5 out of 9.0point hedonic scale (p<0.05). In Gangwon, soup and side dish of menu 3 (rice, frozen pollack pot stew, meatball fried in egg, seasoned sea lettuce, and banana) scored significantly the highest of all (p<0.05). Overall acceptance of all the menus were high over 7.8 without significance in Chungnam. Overall acceptance of the menu 3 scored significantly the highest with value of 8.5 and menu 4 (rice, spicy chicken soup, seasoned bean sprouts, broiled brown seaweed trunk, kimchi, tomato) had significantly the lowest value with value of 7.8 in Gangwon(p<0.05). The total leftover volume of menu 4 was significantly the highest with score of 56g and the menu 4 showed the highest unit cost of 2,900won in Chungnam. However, the total leftover volume of all menus did not show significance ranging from 9g to 19g in Gangwon.

  • Changes of chemical componts and populations of total bacteria and lactic acid bacteria were examined during a month-long storage of sweet potatoes crushed and sealed up with polyethylene film at $7-8^{\circ}C$. 1. Changes of starch, total protein, volatile acid and ammonia-nitrogen contents were li 2. In a three days, pH down and increase of non-volatile acid content were notable, populations of total bacteria and lactic acid bacteria were maximum. 3. Vitamic C and soluble sugar contents tended to be reduced during the storage and the leftover were 75-85% and 41-45% respectively. 4. ${\beta}$-Amylase activity decreased gradually and vanished 15-30days. 5. Variations of chemical compontents of the samples inoculated lactic acid bacteria were larger than non- treated to some extent. 6. As above results, mainly homo lactic acid fermentation was done in this storage condition.

A Study on Plate Waste and Nutrient Intake of School Lunches in Elementary School (초등학교급식에서 제공된 음식의 잔식량과 영양섭취 실태에 관한 연구)

  • The purposes of this study were to (a) measure plate waste of school lunches, (b) evaluate the nutrients actually consumed by students in elementary school foodservice. The survey was conducted between May 11 and July 1, 1998 through the practical measurement and questionnaires. Statistical data analysis was completed using SAS program for descriptive analysis and T-test. The results were summarized as follows: 1. The mean plate waste of menu group were soup, vegetable side dishes, kimchi, and meat side dish in order. 2. There was little difference between estimation and weighing of plate waste. 3. The satisfaction of children with school lunches were significantly higher for boys(73.55%) than for girls(71.13%). The highest level of the satisfaction was meat side dishes among boys and girls. 4. The majority reasons for leaving leftover were 'too big portion' and 'food is not tasty'. 5. There was significant negative correlation between plate waste and student's satisfaction. In summary, increased satisfaction with school lunches in most menus resulted in decreased plate waste rate. 6. Comparison of $\frac{1}{3}$ RDA, energy, vitamin A and calcium were below recommended allowances for boys while energy vitamin A, calcium and iron were for girls. In general, the nutrient intake was more adequate for boys than girls because of the girl's lower allowances.

The Influence of Seafood Education on Students' Preferences and Perceptions of Seafood Menu Items Provided by School Foodservice (수산물에 관한 교육경험에 따른 학교 급식에서 제공되는 수산물 음식의 기호도와 인식의 차이)

  • This study was performed to investigate the influence of seafood education on students' preferences and perceptions towards seafood menu items provided by school foodservice. The 62 representative menu items were selected from the complete menus provided by 10 high schools located in the Daegu Kyungpook area. Five hundred students were surveyed and 484 questionnaires were analyzed. The preference ($3.25{\pm}0.92$) of seafood menu items was not sufficiently high. The preference order of seafood menu items was rice > noodle > deep fry > grill> stir fry > seasoned dish > soup/stew > steam > pan fry > braise > fermented fish. Conversely, the most frequently provided menu items were soup/stew (31.34%), braise (18.06%), stir fry (15.61%), and seasoned dish (14.83%); the results showed no significant correlation between students' preference and the frequency with which the items were provided. Seafood education positively influenced the students' preference (p<0.001) and perceptions of the seafood acceptability (p<0.01), nutritional value (p<0.05), menu variety (p<0.05), diversity of cooking methods (p<0.001), cleanliness (p<0.001), and leftover amounts (p<0.01). However, more than half the students participating in this study have never received any type of education on seafood. Therefore, a practical program for seafood education should be developed to promote seafood consumption among young students.

  • The purpose of this study was to know the conscious of eating habit of housewife. The data were collected from 250 housewives who were the age group of 20-60's in Sang-Ju. The survey was taken place from May to June in 2000. The result showed that there were significant differences in eating habit's consciousness according to housewife's age group: 1. As the age goes up, the housewife had less consideration herself when they purchased food and decided cooking method. 2. As the age goes down, the order in having meal was depended on conditions. But as the age goes up, they considered the order as important thing like followings; eating together, eating separately according to the sex, male first, senior first, housewives lastly. 3. The survey showed that there was distinction depending on sex in meal as age goes up. And The subject was conscious that the delicious and valuable meal served to male, senior and child before. 4. Regardless of senior, the consciousness for the skipping meal was high as the age goes down. 5. As the age goes up, female and seniors showed that leftover was not so good. 6. The consciousness that housewives were responsible for preparing the meal was high as the age goes up, but they had further difficulty in preparing meal as the age goes down. 7. In considering that male and senior should be participated in the kitchen work, they had high consciousness as the age goes down. 8. About role of cooking, the consciousness was hish in case of male as the age goes down, in case of female and housewife were high as the age goes up. 9. As the age goes up, The consciousness was high that Female must buy the food. 10. As the age goes up, they had high consciousness in considering that the meaning of meal was related to survival, that noodle and bread were not meal. And the consciousness about that eating out was not good for health was high as the age goes up.

Effects of Feeding Dried Leftover Food on Productivity of Growing and Finishing Pigs (건조 남은음식물 급여가 육성돈과 비육돈의 생산성에 미치는 효과)

  • These studies were conducted to investigate the effects of feeding dried leftover food (DLF) on growth, feed conversion and carcass characteristics of growing and finishing pigs. In experiment 1, seventy-five three-way cross-hybrids ($Yorkshire{\times}Landrace{\times}Duroc$) pigs weighing approximately 22 kg of body weight on average were assigned to five treatments in a completely randomized design. Each treatment had three replications with five pigs per replication. All pigs were fed experimental diets for 60 days. In experiment 2, seventy-five three-way cross-hybrids pigs weighing approximately 70 kg of body weight were fed experimental diets for 49 days. Each treatment had three replications with five pigs per replication. The treatments included 1) group offered control diet without DLF, 2) group offered diet containing DLF at 25%, 3) group offered diet containing DLF at 50%, 4) group offerred diet containing DLF at 25% with 10% higher protein level and 5) group offerred diet containing DLF at 50% and 20% higher protein level. Average daily gain of growing pigs was highest in control group among all the treatment groups except group offered diet containing DLF at 25% with no significant difference (P>0.05). Feed intake of DLF-offered groups were lower than that of control group while feed intake of groups fed diets containing DLF at 50% with 20% higher protein level was significantly higher (P<0.05) than that of control group. Feed conversion of growing pigs was not significantly different amont treatments although it seemed to be slightly improved in groups fed diets containing DLF at 25%. Average daily gain of finishing pigs fed diets containing DLF was significantly lower than that of control group. However there was no significant differences in average daily gain between groups fed diets containing DLF at 25% with 10% higher protein level and control group (P>0.05). Feed intakes were significantly decreased in DLF-fed groups compared to control group while there was no significant differences in feed intake between groups fed diets containing DLF with 10% and 20% higher protein levels and control group (P>0.05). Feed conversion was lowest in groups fed diets containing DLF at 25% with 10% higher protein level. However, there were no significant differences in feed conversion between groups fed diets containing DLF at 25% with 10% higher protein level and control group. Feed conversion of groups fed diets containing DLF at 50% was significantly higher than that of control group (P<0.05). Carcass weight was decreased with increasing levels of DLF in the diets. There were no significant differences in dressing percentage, backfat thickness and carcass grade among treatments. Feed cost per 1 kg body weight gain of finishing pigs was lowest in groups fed diets containing DLF at 25% with 10% higher protein level.

Importance and Satisfaction Analysis of Delivery Lunchboxes for Children from Low-Income Families in Korea (취약계층 아동의 배달도시락에 대한 중요도-만족도 분석)

  • The purpose of this study was to investigate the quality attributes and importance that affects their satisfaction with respect to lunchboxes amongst children from low-income families in Korea. In case of $1-3^{rd}$-grade elementary school, 57.1% received lunch box through the community child center, while 45.2%, 68.5% and 80.7% of $4-6^{th}$-elementary school, middle school, and high school students received the lunch box from home, respectively. Typically, in 40.2% of all grades, the time to eat the meal was within 1~2 hours of delivery, and 34.0% consumed the lunch within 2~6 hours of delivery. With respect to intake of the contents of lunchboxes, 72.0% of the participants answered that they ate 80% of the lunchboxes delivered and 24.9% only ate 50% of the content of lunchboxes. The largest leftover were vegetables (26.9%), and the reason for leaving food was 'do not like to eat (36.1%)' followed by 'no taste (32.6%)'. Regarding improvements in delivery lunchboxes, elementary school students selected 'taste', while middle school and high school students selected 'variety of menu'. The 'nutrition (3.69 point)' of the lunchboxes was the highest satisfaction and the 'variety of menu (3.34 point)' was the lowest. In all grades, 'nutrition' and 'hygiene' were considered to be important as quality attributes of the delivery lunchboxes, and satisfaction was also high. On the other hand, in the $1-3^{rd}$-grade elementary school, 'variety of menu' and 'amount of side dish' were important but satisfaction was low. The $4-6^{th}$-grade elementary school, middle school and high school students stated that 'taste' and 'variety of menu' were important, but satisfaction was low.

Herbivory effects and growth rate of invasive species, Pomacea canaliculata on different macrophytes species

  • Wetland ecosystems act as natural freshwater purification systems, but their rich biodiversity is being threatened with the introduction of the non-native freshwater snail, Pomacea canaliculata. This study was conducted to measure the herbivory effects and growth rate of P. canaliculata on common macrophytes: Ipomoea aquatica, Ipomoea batatas, Pandanus amaryllifolius and Cucurma longa. In separate experiments, the macrophyte species were served as the snails' food as individual species and simultaneously. In the individual treatment, the growth pattern and rate were based on the snails' weight (mg/snail/day; n = 9) while the individual feeding consumption (mg/snail/day) was calculated from the leftover food. In the simultaneous treatment, the herbivory effects were evaluated as the feeding preference (%) from observations every two hours, while the total feeding consumption (mg) was calculated based on the food remaining after a 12-hour experiment (3 replicates: total n = 27). The results indicated that the growth pattern was significant for snails grazing on I. aquatica but not when other macrophyte species were eaten. The individual feeding consumption was higher when using I. aquatica than P. amaryllifolius but the growth rate for snails grazing on I. aquatica and P. amaryllifolius did not differ significantly. Meanwhile, the consumption of C. longa deterred the snails' growth rate. Although the snails consumed all the macrophytes in the individual experiment, when given the species simultaneously, the feeding preference and total feeding consumption were directed significantly more toward I. aquatica than P. amaryfollius and C. longa. We conclude that P. canaliculata is a generalist feeder given a limited choice of food but tends to show a strong feeding preference after being introduced to more food choices. These findings indicate that the introduction of P. canaliculata into wetland ecosystems may increase the herbivory effects on macrophytes, making these ecosystems vulnerable to the impact of eutrophication and biodiversity reduction.

Gravity, Magnetic and VLF Explorations in the Seokdae Landfill, Pusan (부산시 석대 매립지에서의 중력, 자력, VLF탐사)

  • Gravity, magnetic and VLF surveys were carried out to investigate the dimension, nature and stability of the waste materials filled in the Seokdae landfill, Pusan. The Seokdae landfill, which is located in a former valley, was used as a dump for mainly domestic-type waste materials for 6 years from 1987. The landfill site is classfied into A, B, C and D areas according to the sequence of dumping period. The Bouguer gravity anomaly map shows maximum variation of 3.1 mgals on the landfill and its general appearance has close relation with the thickness of waste filled. The local variation of anomaly, however, reflect the degree of compactness of waste materials which may be affected by the nature of waste and dumping time. In the case of area A, where dumping process was terminated at the very last stage, most part show negative anomaly compared to other areas. We think that the composition of the waste materials in the area A is high in leftover food and paper trash and they are still in uncompacted condition. In area B, the general trend of variation of gravity anomaly is appeared to be high anomaly in northern part and decrease to the southern part. This is well matched with the prelandfill topography of the landfill site. The southern part of area B is located in the center of valley and its present surface is comparatively rugged, which may be due to the differential settlement of deep burried waste. The thickness of waste in area C is relatively thin, but the gravity anomaly appears to be low. Considering the present condition of surface, it can be inferred that low density wastes such as leftover food were mainly filled in this area. Area D, as in the case of area B, shows gravity anomaly that has close relation with the prelandfill topography. Magnetic data show the variation of total field intensity varies in the range of 46600~51000 nT, and reach maximum anomaly of 4400 nT. The overall pattern of magnetic anomaly well reflects the distribution of magnetic materials in the landfill. The result of VLF survey reveals several low resistivity zones, which may serve as underground passages for contaminant flow, in the area C located near the small Village.
