Changes in the Riboflavin Content of Spinach Salad and Sesame Leaf Salad with Various Cooking and Holding Process in Foodservice Institutions (단체급식소에서 제공되는 시금치 나물과 깻잎 나물의 생산단계 및 보관단계에 따른 리보플라빈 함량 변화(II))

  • The retention rate of riboflavin in two cooked vegetable salads (spinach salad and sesame leaf salad) were examined at every cooking stage, holding temperature and holding time, with various cooking methods, and a better food preparation method developed. The riboflavin contents of the samples were analyzed by HPLC, with fluoresence detection. The changes in the pH and water contents of the samples were measured during the holding stage at various temperatures and times. There were significant differences in the riboflavin contents during the various preparation and cooking processes, such as trimming, washing, boiling and parching etc. The retention rates of the riboflavin with the various holding methods and cooking temperature were also significantly different. The boiling process caused large losses of riboflavin: in the cases of spinach salad and sesame leaf salad these were 78% and 52% respectively. The pH and water contents showed faster change during 0-6 hours than during 6-12 hours.

Leaf Injury Induced by Temperature Drop Shock in Gesneriaceae and Acanthaceae Plants (Gesneriaceae와 Acnathaceae과 식물에서 급격한 엽온저하에 의해 발생하는 엽상해)

  • Leaf spots in Saintpaulia leaves are caused by temperature drop shock (TDS). This TDS-mediated leaf injury has not been reported in other plants besides Saintpaulia. To investigate how many and what kinds of plants are susceptible to temperature drop shock, Gesneriaceae and Acanthaceae plants were treated with TDS (from $30^{\circ}C$ to $15^{\circ}C$ or $5^{\circ}C$). Yellow or brown spots were found in 26 species or cultivars of 10 genuses of Gesneriaceae plants and in 8 species or cultivars of 7 genuses of Acanthaceae plants. Morphologically and anatomically no similarity was observed among the plants susceptible to TDS. Some plants have very thin and hard leaves, whereas other plants have thick and soft leaves. In spite of this non-similarity, the injury was restricted only to palisade cells as those of Saintpaulia leaves. Also the rapid and irreversible reduction of chlorophyll fluorescence was observed soon after TDS treatment in those plants. These results indicate that leaf injury induced by TDS is a more widespread leaf injury than has previously been thought.

Agronomic Characteristics as Affected by Polyethlene Film Mulching and Sowing Date in Vegetable Perilla (잎들깨 멀칭재배 및 파종기에 따른 생육특성)

  • In case of a semi-forcing culture for vegetable perilla, the following research results on the effect of black polyethylene mulching, the optimum sowing season, and the seedling stand improvement method were drawn. Soil temperature was higher and the emergence was faster in a black polyethylene mulching culture than in a non-mulching culture. However, the mature was late, the main stem were larger, and the seed yield, as well as the leaf yield, was greater in a mulching culture than in a non-mulching culture. Considering growth and chilling injury, the stable sowing season of vegetable perilla was judged to be the early in January. The covering materials for improvement of the seedling stand can be a non-woven fabric and hyaline polyethylene. However, the non-woven fabric seemed to be quite suitable in view of the stability and convenience of control after the emergence of perilla.

Study on the Content of ${NO_3}^-$ in Green Vegetable Juice by Different Sorts, Harvesting Time, Mixing Rate of Vegetable, Storage Condition and Manufacturers (채소 모재료의 종류, 수확시기별, 부위별 혼합비율, 저장조건 및 생산회사에 따른 녹즙의 ${NO_3}^-$ 함량차이)

  • After the consumption of green vegetable juice by Korean increase rapidly, the ${NO_3}^-$ intake through green vegetable juice have been ignored to consider for the calculation of daily ${NO_3}^-$ intake. It is necessary to collect the basic data on the ${NO_3}^-$ content in green vegetable juice by different sorts, harvesting time and mixing rate of vegetable, manufacturers and storage conditions for the next calculation of daily ${NO_3}^-$ intake for Korean. Followings are the research results from monitoring and laboratory experiment related with ${NO_3}^-$ and vitamine C in green vegetable juice. The ${NO_3}^-$ content of angelica plaant(tomorrow's leaf) and kale were higher in spring than those in summer and autumm. The highest value of ${NO_3}^-$ content in tomorrow's leaf and kale were 4.85 and 2.94 times higher compare to the lowest value. The average ${NO_3}^-$ content in the midribs of tomorrow's leaf and kale were 7.5 and 2.1 times higher than those in leafblades. It indicate the green vegetable juice made from leadblade of tomorrow's leaf and kale might be better compare to those from midrib in terms of ${NO_3}^-$ content. The content of ${NO_3}^-$ and vitamine C as affected by the timecourse after juice making were decreased rapidly compare to those by storage temperature in case of carrot, kale and cucumber juice. It show the positive comelation between the content of ${NO_3}^-$ and vitamine C in carrot, kale and cucumber juice regardless of room temperature(${NO_3}^-$) or cold temperature(${NO_3}^-$). The content of ${NO_3}^-$ and vitamine C of green vegetable juice by P company were the highest among the manufactuers. The lower content of ${NO_3}^-$ and vitamine C of green vegecable juice by TW company and GB company compare to P company is due to dilution with water to produce the juice. The content of ${NO_3}^-$ of green vegetable juice which were available in market showed 143ppm in carrot juice, 506ppm in tomorrow's leaf juice, 669ppm in wild water celery juice, 985ppm in kale juice, whereas the content of vitamine C were 43ppm in carrot juice, 289ppm in wild water celery juice, 353ppm in kale juice and 768ppm in tomorrow's leaf juice. It was calculated that people take 253mg by tomorrow's leaf juice, 335mg by wild water celery juice, 483mg by kale juice if they drink 500ml of green vegetable juice perday, and it suggest to excess 1.16, 1.53 and 2.21 times respectively only by green vegetable juice consumption.

A Study on the Relationship Between Vegetable Preference and Physical Status -Especially Relate to Dental Caries- (유아의 야채류기호도와 체위와의 상관성에 관한 연구-충치율을 중심으로-)

  • This study attempted to investigate the relationships between vegetable preference and physical status. The subjects were 127 kindergarten children living Kwang-ju. In this study, vegetable preference and health status of the children were investigated by response of thier mothers through questionnaires. Also, rate of dental caries and anthropometric measures were obtained by examination. The results are summarized as follows; 1) Anthropometric mesures of the subjects were higher than those of Korean standards for children. 2) The mean hedonic score for vegetable preference in subjects was 2.6. The difference in vegetable preference between male and femal was not significant except for a squash item. 3) Vegetable prefernce has a significant correlation with the def. tooth rate. Especially preference of spinach, wild sesame leaf, and cucumber were negatively related to the def. tooth rate. 4) Vegetable preference and anthropometric measures did not show any significant correlation. 5) Children who ate sweets for snacks frequently disliked vegetable and showed high rate of dental caries significantly(p<0.001). Children who had anorexia and constipation disliked vegetables significantly (p<0.01). Children who complained diarrhea symptom showed significant high rte of dental caries(p<0.01). From the results above, as the negative relationship between vegetable preference and def. tooth rate was found, many cooking methods of vegetables should be studied and nutrition education should be oriented to recommend an increased intake of vegetables by children.

Antimicrobial and Antioxidant Activities in Different Parts and Cultivars of Broccoli (브로콜리 품종 및 부위에 따른 항균활성과 항산화 효과)

  • The antimicrobial and antioxidant activities of different cultivars and parts of broccoli were investigated. The screening of antimicrobial activities for the floret and leaf extracts of 11 cultivars against selected gram positive (Staphylococcus aureus and Listeria monocytogenes) and gram negative bacteria (Escherichia coli O157:H7 and Salmonella enteritidis) were conducted. The AMG cultivar showed the highest antimicrobial activity against S. aureus with the floret and leaf extracts (12.83 and 13.00 mm). Antibacterial activity against L. monocytogenes was strongest with floret extract of NJ cultivar (13.58 mm) and leaf extract of YDR cultivar (13.92 mm). Moreover, the size of inhibition zone against L. monocytogenes was bigger than those of 4 kinds of pathogenic bacteria. Both floret and leaf extracts of Grd cultivar showed the highest antimicrobial activity against E. coli O157: H7, but there was no difference between floret and leaf extracts. Floret extract o f NJ cultivar and leaf extract of NY and 0c cultivars were effective against S. enteritidis whereas leaf extract exhibited better antimicrobial effect than floret extract. These results showed that floret extract of NJ and leaf extract of 0c had the highest antioxidant activity which was 39.90 and 43.64%, respectively. The antioxidant activity of leaf extract was 1.5 times higher than that of floret extract. All cultivars except NJ showed that electron donating ability of leaf extract was higher than that of floret extract.

Comparison of Nutritional Compositions and Antioxidant Activities of Building Blocks in Shinseoncho and Kale Green Vegetable Juices

  • Shinseoncho and kale were divided into stem [shinseoncho stems (SS) and kale stems (KS)] and leaf parts [shinseoncho leaves (SL) and kale leaves (KL)] and made into green vegetable juices for analyses of nutritional compositions and antioxidant activities. Higher values of total acidity were observed in SL (0.736%) and KL (0.841%) than in SS (0.417%) and KS (0.335%) (p<0.05). Neutral sugar content showed higher values in SS (21.740 mg/mL) and SL (18.657 mg/mL) when compared with KS (1.497 mg/mL) and KL (1.452 mg/mL) (p<0.05). Protein content showed the highest value in SL (7.610 mg/mL) (p<0.05), while SS (0.403 mg/mL) and KS (0.403 mg/mL) showed similar lower values. Total polyphenol contents of SL (423.139 ${\mu}g/mL$) was significantly higher value (p<0.05) than those of other samples, which occurred in the following order: SL>KL (218.494 ${\mu}g/mL$) KS (107.269 ${\mu}g/mL$)>SS (75.894 ${\mu}g/mL$). KL exerted the highest DPPH radical scavenging activity (84.834%) (p<0.05), which occurred in the following order: KL>SL (63.473%)>KS (52.894%)>SS (35.443%). ABTS radical scavenging activity showed that SL (66.088%) and KL (38.511%) had higher scavenging activities, whereas SS (7.695%) and KS (9.609%) demonstrated to be lower activities (p<0.05). In general, leaf parts had much higher antioxidant activities as well as total polyphenol contents than those of the stem parts. In conclusion, shinseoncho and kale, particularly their leaf parts, offer antioxidant properties in green vegetable juices and the consumption of them may be beneficial as a nutrition source and in health protection.

Fluctuations in Phenolic Content and Antioxidant Capacity of Green Vegetable Juices during Refrigerated Storage

  • Shinseoncho and kale were made into green vegetable juices by building block [shinsenocho branch (SB), shinsenocho leaf (SL), kale branch (KB), and kale leaf (KL)]. Fluctuations in their phenolic contents and antioxidant capacities were analyzed during refrigerated storage at $4^{\circ}C$ for 28 days. Total polyphenolic contents of leaf parts showed a decreasing tendency after 4 days (SL) or 7 days (KL), whereas branch parts showed fluctuating values during the entire storage period. The 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging capacity was rapidly decreased in SB and in SL at 28 days (P<0.001), whereas KL showed a slightly increasing tendency after 14 days. For the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging capacity, SL showed a sharp fall at 28 days (P<0.001), and KL showed a decreasing tendency after 14 days (P<0.001). SB showed a steady decrease during the entire storage period and KB indicated a nearly zero (0.97%) at 28 days. Pearson's coefficients for the correlation between antioxidant capacities measured by the ABTS and DPPH assays, and the total polyphenolic contents were determined. The results showed that the ABTS assay (r=0.934, P<0.001) was more strongly positively correlated with the total phenolic contents than the DPPH assay (r=0.630, P<0.001). In conclusion, when considering all building blocks, green vegetable juices, including kale and shinseoncho may have kept antioxidant capacities for up to 14 days under refrigeration, and the ABTS assay better reflects a positive correlation with the total phenolic contents when compared to the DPPH assay.

A Study on Vegetable Intakes and Dietary Habits of Middle School Students in Chungnam (충남지역 중학생의 채소 섭취실태와 식습관에 관한 연구)

  • The purpose of this study was to provide basic data for nutritional education for juveniles' desirable vegetable intake by analyzing their vegetable intake, dietary habit and nutrient intakes according to gender of middle school students in Chungnam. The average age of the subjects was 15.0, height was 162.5 cm, weight was 53.5 kg and their average BMI was $20.1kg/m^2$. The frequency of eating supper in girls was lower than that in boys. Many respondents answered that a meal-time was 10~20 minutes. Without gender difference, more than 90% respondents thought that vegetables were good for health. As for the preference of vegetable, subjects responded, "I am in the middle", "I like them", "I dislike them", "I like them very much", and "I dislike them very much" in order, without gender difference. The frequent eaten leaf vegetable was Chinese cabbage, the frequent eaten fruit vegetable was cucumber, and the frequent eaten root vegetable was radish. The favorite leaf vegetable was lettuce, the favorite fruit vegetable was corn, and the favorite root vegetable was sweet potato. The preference degrees of taro and ginger were very low. The reasons why they liked a vegetable were that it was delicious and they ate it at home often. In addition, the reason why they disliked vegetables was that they are untasty in flavor or texture and it showed that many students had a prejudice that vegetables were untasty. The intakes of plant protein, dietary fiber, ash and INQs of dietary fiber, calcium, vitamin C, folate, vitamin E in the group with high preference of vegetables were significantly higher than those of low preference group. The study results indicate that intake frequency and preference of root vegetables in juveniles are low and the major reasons of these results are taste and eating experience of vegetables. In addition, the intake amounts of dietary fiber and folate are poor in the subjects with low preference of vegetables. Therefore, families and schools should make efforts that juveniles can recognize the importance of vegetable intake and select various vegetables properly through the development of cooking methods and systematic nutrition education.

Effects of Vernalization, Temperature, and Soil Drying Periods on the Growth and Yield of Chinese Cabbage (춘화, 온도와 토양건조 기간에 따른 배추의 생장 및 수량)

  • This study was carried out to determine the effects of vernalization, temperature, and soil water deficit (SD) on mesophyll cells, growth, and yield of Chinese cabbage (Brassica campestris L). The palisade parenchyma and spongy tissues of Chinese cabbage were observed under full irrigation and two weeks of SD treatment. These cells were severely collapsed by four weeks SD treatment. The SD treatment had the greatest influence on the growth of Chinese cabbage among the tested treatment factors (vernalization, temperature, and SD), growth significantly decreased by severe drought treatment (four weeks SD treatment). In addition, the relative growth rate, unit leaf rate, leaf area ratio, specific leaf area, and leaf weight ratio were significantly affected by SD treatment; however, other individual factors and their combined treatments did not influence the analyzed growth parameters. The yield under vernalization after high temperature and full irrigation treatments was 3,056 kg/10 a, which was the greatest among all the tested treatments, while four-week SD treatment significantly reduced the yield. Head formation of Chinese cabbage was not altered under SD treatment, and vernalization treatments did not induce bolting. Our results indicated that collapsing mesophyll cells and reduced growth and yield were induced by SD treatment. Thus we suggest that optimal irrigation system should be install to avoid or overcome crippling drought conditions in the open field.
