The Effect of Vinegar Fermentation on the Nutritional Quality of Lotus Flower Fermented Product

  • All the parts of lotus, including the seed, rhizome, leaf, stalk, petal, anther, pericarp, and fruit receptacle, have been used in traditional medicine system as a health beneficial supplement. However the most usually used from lotus plant is only the root. Therefore in this study, it will be discussed more the utilization of other parts of the lotus, namely the flower of lotus. The petals and stamens of lotus actually are also rich in bioactive components such as flavonoids and alkaloids, are used in the treatment of tissue inflammation, cancer, skin disease, and also for us as antidotes. One of the biotechnological process that can be used to improve the nutritional content, sensory, and also antioxidant activities is fermentation process. The final product desired from the fermentation process in this study is vinegar. The microbial strain powder used is Uinkin fermented powder with three variations of fermentation. The variations given in this study were initial sugar 32%, 24%, and 14% with the same fermentation temperature, $35^{\circ}C$ for 3 months. The results obtained showed that the pH value and sugar content of products during the fermentation process were decreasing during the fermentation process, with total polyphenol content of $283.7{\pm}97.6mg/100g\;QAE$, and total flavonoid content of $3.3{\pm}0.0mg/100g\;QAE$. For the DPPH radical scavenging ability of the fermentation product also increased in a concentration dependent manner, with ORAC activity of the product showed a high activity of $20.7{\pm}0.41{\mu}M$ TE. Therefore, fermentation process can be the one of method for improving the product. The efficiency of lotus flower vinegar fermentation can be reached with an initial sugar condition of 25% (sample B).

상엽추출물이 제2형 당뇨병 환자의 혈당, 당화혈색소 및 혈청지질에 미치는 영향 (Effect of Mulberry Leaf Extract Supplement on Blood Glucose, Glycated Hemoglobin and Serum Lipids in Type II Diabetic Patients)

  • 본 연구는 상엽추출물의 섭취가 당뇨병 환자의 혈당, 당화혈 색소 및 혈청지질에 미치는 영향을 조사하고, 체내 간기능에서의 안전성도 검증하기 위하여 당뇨병 환자에게 12주간 1,000 mg의 상엽 추출물을 섭취시켜 전 후 차이를 비교하였으며 그 결과는 다음과 같다. 상엽군은 체중이 실험 전 $58.6{\pm}9.2kg$에서 실험 후 $58.8{\pm}9.1kg$으로 변화를 보이지 않았으며, 허리둘레 및 엉덩이 둘레도 실험 전 후 거의 변화를 나타내지 않았으므로 상엽추출물의 섭취는 신체계측치에 영향을 미치지 않았다. 상엽군에서 수축기 혈압은 $127.1{\pm}18.9mmHg$에서 $128.7{\pm}21.0mmHg$로, 이완기 혈압은 $80.5{\pm}12.1mmHg$에서 $77.0{\pm}12.1mmHg$로 거의 변화를 나타내지 않음으로서 상엽추출물의 섭취는 당뇨병 환자의 혈압에 영향을 미치지 않았다. 상엽군에서 공복혈당은 $141.9{\pm}39.4mg/dL$에서 $135.8{\pm}41.4mg/dL$로, 당화혈색소는 $7.8{\pm}1.4%$에서 $7.0{\pm}0.6%$로 유의(p<0.05)하게 감소하였다. 그러나 위약군에서는 실험 전 후 공복혈당 및 당화혈색소에서 차이를 나타내지 않았다. 상엽추출물의 섭취가 12주간 이루어지면서 총콜레스테롤은 $188.4{\pm}21.9mg/dL$에서 $176.7{\pm}23.8mg/dL$로 감소하였고, LDL-콜레스테롤에서는 상엽군은 $116.9{\pm}29.3mg/dL$에서 $104.3{\pm}23.2mg/dL$로 유의 (p<0.05)하게 감소한 반면, 위 약군은 $121.3{\pm}24.3mg/dL$에서 $121.5{\pm}17.3mg/dL$로 변화가 없었다. 중성지 방은 상엽추출물의 섭취 후 $167.6{\pm}44.5mg/dL$에서 $123.2{\pm}29.3mg/dL$로 유의(p<0.01)하게 감소한데 반해 위 약군은 $152.0{\pm}55.9mg/dL$에서 $155.3{\pm}51.4mg/dL$로 오히려 약간의 증가를 보였다. 상엽섭취군의 공복혈당 및 당화혈색소 농도수준에 따라 그 변화를 살펴보면, 공복혈당 불량군은 실험 전 $188.2{\pm}45.2mg/dL$에서 상엽추출물 섭취 후 $161.3{\pm}25.3mg/dL$로 유의(p<0.05)하게 감소한 반면 공복혈당 양호군에서는 $119.3{\pm}22.4mg/dL$에서 $119.9{\pm}21.9mg/dL$로 변화를 보이지 않았다. 당화혈색소 불량군의 경우 실험 전 $8.7{\pm}0.7%$에서 실험 후 $7.8{\pm}0.8%$로 유의(p<0.05)하게 감소한 것에 반하여, 당화혈색소 양호군에서는 $6.7{\pm}1.2%$에서 $6.6{\pm}1.2%$로 변화가 없음을 확인할 수 있었다. 상엽추출물의 12주간 섭취 후 AST는 $24.8{\pm}3.5\;IU/L$에서 $31.8{\pm}8.7\;IU/L$로, ALT는 $26.4{\pm}4.6\;IU/L$에서 $32.8{\pm}7.8\;IU/L$로, $\gamma$-GTP는 $31.5{\pm}4.7mg/L$에서 $33.7{\pm}4.8mg/L$로 조금씩 증가하였으나 모두 정상범위의 수치였다.

상토에서 점토광물 일라이트 (illite) 처리에 따른 방울토마토 생육 효과 (Effect of the Clay Mineral Illite on the Growth of Cherry Tomato in the Bed Soil)

  • This study was initiated to investigate the physical and chemical properties of the clay mineral illite and its effect on the growth of cherry tomato (Hongjak) as affected by the forms and concentrations of illite using the bed soil in the glass house. The composition of illite was analyzed by SEM(scanning electron microscope). The cherry tomato was cultivated in the bed soil in the glass house at Chungbuk National University for 10 weeks of total duration. The application rates of illite used as particulate and powder forms were standard 1:20 (w/w), two times 1:10 (w/w), four times 1:5 (w/w) of standard application, respectively. The surface of illite used in the study appeared to be hexagonal sheet and it included K and the variety of other elements. The growth lengths of cherry tomato were 11-23% greater in the pots treated than in the untreated pots. Based on the analyses of the major cations, K, Ca, and Mg from the cherry tomato the amounts of K taken in the leaf and stem of the cherry tomato were 8-45% and 3-30% greater than untreated pots, respectively. The amount of Ca in the leaf and stem taken up by the cherry tomato were 6-39% and 11-40% greater than untreated pots, respectively. The amounts of Mg in the leaf and stem taken up by the cherry tomato were 17-62% and 19-54% greater than untreated pots, respectively. Based on the analysis for the amount of cations, such as K, Ca, and Mg taken up by cherry tomato in treated and untreated bed soil, it appears that the illite treatment enhanced the early growth of cherry tomato.

뽕잎 분말과 현미가루가 첨가된 pellet을 이용하여 제조한 뽕잎 팽화과자(뻥튀기)의 특성 (Properties of Puffed Mulberry-Rice Snack, Ppeongtuigi by Pellet with Mulberry Leaf and Brown Rice Flour)

  • 뽕잎 분말을 첨가하여 제조한 펠릿을 서로 다른 수분 함량(14, 16, 18%), 팽화온도(220, 230, 240$^{\circ}C$), 팽화시간(4, 5, 6초)에서 제조된 뻥튀기에 대한 특성을 조사하였다. 비체적은 수분 함량, 팽화온도, 팽화시간의 증가에 따라 증가되었고 파괴력은 팽화온도와 팽화시간의 증가에 따라 증가되었지만 수분 함량의 증가에 따라 감소되는 것으로 나타났다. 색도 중 L값은 팽화온도와 팽화시간의 증가에 따라 감소되었고 a값과 b값은 팽화온도와 팽화시간의 증가에 따라 증가된 것으로 나타났으며 모두 수분 함량과는 서로 상관이 없는 것으로 나타났다. 관능검사에서는 수분 함량 18%, 팽화온도 240$^{\circ}C$, 팽화시간 4초에서 제조된 뽕잎 뻥튀기가 제일 높게 나타났고 높은 수분 함량, 높은 팽화온도, 짧은 팽화시간에서 제조된 뽕잎 뻥튀기가 전체적 기호도가 좋은 것으로 나타났다. 이러한 결과로 볼 때 높은 수분 함량, 높은 팽화온도, 짧은 팽화시간 조건으로 품질 특성이 우수한 뽕잎 뻥튀기를 제조 할 수 있을 것으로 생각된다.

천연감미료(天然甘味料) 자원식물(資源植物) Hydrangea 및 Stevia의 개발(開發)에 관(關)한 조사연구(調査硏究) (Studies on the Development of Hydrangea and Stevia as a Natural Sweetening Products)

  • The result of the study about the cultivation, the constituents, the sweetenity, and the development of preparations of Stevia and Hydrangea are as follows: 1. Hydrangea thrived at $200{\sim}1,400m$ above the sea-level, and the good ones were brought up at $600{\sim}1,200m$. 2. The good ones which belonged to the genera of Hydrangea were produced in the damp, dark and cold place. 3. The growth and cultivated yield of Stevia was not significantly influenced by the acidity of the soil. 4. The best season was May and June for propagation of Stevia by cutting method. 5. The growth rate of Stevia and Hydrangea was really good in the sandy fertile soil, but in the mucotic soil it was not suitable. 6. The extraction and separation of phyllodulcin by solvent had many difficulties, because it was very soluble in water, ethanol, ether, petroleum ether, acetone and benzene, etc. 7. The solubility of stevioside on the solvent was as follows: It was very soluble in water and methanol, slightly soluble in ethanol and acetone, and insoluble in ether, petroleum ether and chloroform. 8. The alkaloid reaction by Mayer reagent in Hydrangea extract was positive. 9. The ashification rate of Stevia was 8.66% to 8.72% and that of Hydrangea 17.02% to 17.04%. 10. The tannin of Stevia leaf was 7.80% to 7.88% and its of Hydrangea decreased 9.46% to 6.08% by fermentation. 11. The percent rates in minimum concentration-occurring sweetness in sugar, glycyrrhiza methanol extract, Hydrangea water extract, Stevia leaf water extract, decoction of Stevia's leaf, decoction of Stevia's stem were as follows: 1.2, 0.1, 0.1, 0.2, 0.4, 0.01, 0.1, 0.6. and sweetenity ratios of those were 1, 12, 12, 6, 3, 64, 12, 2, 12. It was very meaningful to develop preparations of stevia as stevioside, micronized powder, water extract, methanol extract and compound teas and in Hydrangea, water extract, methanol extract, single tea, and compound teas were less meaningful. 13. The genera of Hydrangea which is natural species in Korea was positive in phyllodulcin-identification test, but it was not available to make the sweet tea because of having a little content.

삼채(Allium Hookeri)의 급여가 당뇨마우스의 당질 대사에 미치는 영향 (Effects of Allium Hookeri on Glucose Metabolism in Type II Diabetic Mice)

  • This study was conducted to verify the potential of Allium hookeri to control glucose metabolism in a diabetes model. We fed the experimental diets (AL, AR, Dex) supplemented with the powder of leaf, root, or dextrin as a positive control, respectively at 3% of diet to the diabetic mice (C57BLKS/J, db/db) for 8 weeks. Control mice were fed with the diet supplemented with cornstarch (Cont) at 3% level of diet. At 8th week of feeding the diets, we measured body weight, blood glucose, HbA1c, and plasma insulin levels and conducted an oral glucose tolerance test (OGTT) and staining insulin immunoreactive cells in islets of pancreas. AL group treated with the leaf of A. hookeri showed significantly lower blood glucose and HbA1c levels, higher plasma insulin levels, and increased density of insulin immunoreactive cells compared with the Cont group. During the OGTT, AL group showed lower blood glucose levels than the Cont group for 120 min. Based on these results, leaf of A. hookeri is considered to be effective in improving glucose tolerance by partially affecting insulin secretion and it may be used to prevent and treat diabetic disease.

뽕잎을 첨가한 닭고기 Patty의 품질특성에 관한 연구 (Quality Characteristics of Chicken Patties with added Mulberry Leaves Powder)

  • It has been known that the mulberry leaf is effective in many diseases. Nowadays, the pharmacological effects on diabetes mellitus of mulberry leaves have been confirmed and they are used for many aspects. And Mulberry leaves are also hewn to be effective in the prevention of diabetics, because of their rich amino acids and fibers. From the results of sensory evaluation, the addition of up to $0.5\%$ MLP(mulberry leaf patty), to the chicken patties induced no significant differences in texture, appearance, and color until $0.5\%$ adding of MLP. However, chicken patties with added $0\%$, and $0.25\%$ added of MLP were shown have the highest acceptability, so these levels were thought to be the proper addition amounts of MLP to the chicken patty. Brightness(L) of these patties was the highest in the $0\%$ group as (55.63) and decreased with increasing adding amount of MLP level. Redness(a) was decreased with increasing adding amount of MLP and appeared as ueenish. Yellowness(b) was the lowest in the $0\%$ MLP addition group as (13.31) and increased with increasing MLP level. Hardness was the highest in the chicken patty with $0.25\%$ added MLP, and the lowest value in the chicken patty with $0.5\%$ added MLP. Cohesiveness was the highest in $0\%$ added MLP added chicken patty and springiness was the highest in $0.5\%$ added MLP added chicken patty. But not significantly. Also Brittleness was similar among the various chicken patties with no significantly difference. As for the composition of fatty acids in the chicken patties with added MLP, saturated fatty acids were decreased and unsaturated fatty acids were increased with increasing MLP Especially, the contents of essential fatty acids showed a largely increasing tendency in the chicken patties with added MLP Linoleic acid, linolenic acid, and arachidonic acid were increased to $9.38mg\%,\;0.65mg\%\;and\;1.28mg\%$, respectively in chicken patty with $1.0\%$ added MLP.

부재료 첨가에 따른 갓김치의 항산화성 (Antioxidative Activity of Mustard Leaf Kimchi with Optional Ingredients)

  • 갓김치 제조시 필수적으로 첨가되는 주요 부재료별 갓김치의 항산화성 증진 효과와 이미 항산화성이 높다고 알려진 여러 가지 항산화성 특수 부재료의 첨가수준을 달리 하여 제조한 갓김치의 항산화성 증진 효과를 살펴보았다. 항산화 활성이 높은 특수 부재료를 선정하고 이들의 첨가를 달리하여 만든 갓김치의 항산화 특성을 살펴 본 결과는 다음과 같다. 1. 갓김치의 주요 부재료인 파, 마늘, 고춧가루, 생강 등이 갓김치의 항산화성 증진 효과에 미치는 영향을 살펴본 결과 고춧가루 첨가군>생강 첨가군>마늘 첨가군>파 첨가군의 순이었으며, 적갓 김치군에서의 항산화성이 돌산갓 김치군에서 더 높았다 2. 더덕, 부추, 우엉, 다시마, 미 역, 청각 등을 첨가한 돌산갓 김치와 적갓 김치는 첨가하지 않은 갓김치에 비하여 항산화성 증진 효과를 나타내었으며, 특히 더덕, 우엉, 청각을 첨가한 갓김치군의 항산화성 증진 효과가 비교적 높게 나타났다. 또한 첨가되는 특수 부재료의 양에 비례하여 항산화 활성이 증가하는 것으로 나타났으며 항산화성이 우수한 재료들을 조합하여 첨가한 군에서의 항산화성 증진 효과가 각각 첨가한 군보다 증가하는 것을 관찰할 수 있었다. 3. 돌산갓김치의 용매추출물의 항산화성을 살펴보았을 때 일반 갓김치보다는 더덕 또는 청각을 첨가한 김치군이, 더덕 또는 청각 첨가갓김치 보다는 더덕과 청각을 함께 첨가한 갓김치군이 보다 우수한 것으로 나타나 일관된 경향성을 보였다.

Effect of Continuous Treatment of Mixed Organic Fertilizer With Food Waste on the Growth of Lettuce

  • According to data from the Ministry of Environment, food waste accounted for 27% of the nation5 s household waste in 2020, and 4.67 million tons of food waste is being discharged per year. According to the Food Waste Direct Landfill Prohibition Act, food waste must be incinerated, composted, fodder, and decomposed before landfilling. The cost of incineration and landfilling of food waste is considerable. Therefore, through the process of turning food waste into fertilizer, we are going to investigate the limit of crop application and the change in the growth of crops during continuous use of food waste fertilizer. This study investigated the growth of lettuce such as shoot length, root length, leaf number, fresh weight, and dry weight after treating lettuce with food waste dry powder mixed fertilizer. The experiment was carried out continuously in 2021 (1st year) and 2022 (2nd year), and the treatment groups were set to No Treatment (NT), Chemical Fertilizer (CF), Mixed Fertilizer (MF×1), and Mixed Fertilizer×2 (MF×2), was repeated 3 times. As a result of the 1st year growth survey, there was no significant difference between NT and CF in the case of shoot length, but MF×1 and MF×2 were significantly decreased compared to NT. Root length was not significantly different in all treatment groups. As for the leaf number, there was no significant difference between NT and MF×1, but CF and MF×2 were significantly decreased compared to NT. In fresh weight, MF×1 and MF×2 were significantly decreased compared to NT, and in the case of dry weight, there was no significant difference between NT, MF×1, and MF×2. As a result of the 2nd year growth survey, there was a significant difference in CF and MF×2 in leaf number, but there was no significant difference in all treatment groups with respect to shoot length, root length, fresh weight, and dry weight. Through continuous additional research, it is necessary to confirm the change in soil composition and the growth of crops due to food waste fertilizer treatment.

옥촉서간(玉蜀黍幹), 송수피(松樹皮), 소맥(小麥), 리기다송엽(松葉), 잣나무엽(葉) 및 목분말(木粉末)을 이용(利用)한 합판(合板)의 접착증량(接着增量)에 관(關)한 연구(硏究) (The Utilization of Corn Stalk, Pine Bark, Pine Leaves, Wheat and Wood Flour as an Extender for Plywood Bonding)

  • 본연구(本硏究)의 목적(目的)은 현재(現在) 증량제(增量剤)로 사용(使用)하고 있는 도인소맥분(導人小麥粉)을 국내(国內)에서 값싸게 생산(生産)할 수 있는 다른 증량제(增量剤)로 대체(代替)키 위한 가능성(可能性)을 규명하는데 있다. 증량재료(増量材料)는 옥촉서간(玉蜀黍幹), 송수피(松樹皮), 소맥(小麥), 리기다송엽(松葉), 잣나무엽(葉) 및 목분말(木粉末)을 택(択)해서 $103{\pm}2^{\circ}C$에서 24시간(時間)동안 전건(全乾)시킨 다음 60~100mesh로 분쇄(粉碎)하였다. 증량방법(増量方法)에 있어서 요소수지(尿素樹脂)는 10, 20, 30, 50%로 증량(増量)하였으며 수용성석탄산수지(水溶性石炭酸樹脂)는 5, 10, 15, 20%로 증량(増量)하였다. 본연구(本硏究)에서 얻은 결론(結論)은 다음과 같이 요약(要約)할 수 있다. 1. 요소수지(尿素樹脂)에 있어서 상태접착력(常態接着力)은 소맥분(小麥粉)이 가장 양호(良好)하였다. 2. 요소수지(尿素樹脂)에 있어서 내수접착력(耐水接着力)은 10%와 20%증량(増量)의 경우 소맥분(小麥粉)보다 목분(木粉)이 더 양호(良好)하였으나 이들 사이의 유의적(有意的)인 차이(差異)는 없었다. 3. 석탄산수지(石炭酸樹脂)의 상태접착력(常態接着力)에 있어서 5%증량((増量)의 경우 잣나무엽분(葉粉)이 가장 양호(良好)하였으나 10, 15, 20% 증량((増量)의 경우는 소맥분(小麥粉)이 가장 양호(良好)하였다. 4. 석탄산수지(石炭酸樹脂)의 내수접착력(耐水接着力)에 있어서는 소맥분(小麥粉)이 가장 양호(良好)하였다. 5. 석탄산수지(石炭酸樹脂)의 상태(常態) 및 내수접착력(耐水接着力)에 있어서 15와 20%증량((増量)의 경우 옥촉서간(玉蜀黍幹)이 소맥분(小麥粉) 다음으로 양호(良好)한 결과(結果)를 나타내었다.
