Development of Auto-aging System Built in Kimchi Refrigerator for Optimal Fermentation and Storage of Korean Cabbage Kimchi (배추김치의 최적발효 및 저장을 위한 김치냉장고의 자동숙성 시스템 개발)

  • In this study, we examined the conditions for an auto-aging system placed within a kimchi refrigerator for optimal fermentation, and to prolong the storage time of kimchi. Various characteristics of kimchi fermented at different temperatures ($5-23^{\circ}C$) were compared. We observed that the higher the fermentation temperature, the less desirable the overall acceptability of the product. To establish the time point in which to convert the fermentation mode to the storage mode, kimchi was stored at $-1^{\circ}C$ for 1 week once it reached the designated acidity (0.4, 0.6, and 0.8%). The results indicated that the lower the kimchi acidity, the higher the sensory score. The storage temperature of $-1^{\circ}C$ was not low enough to retard microorganism growth completely; however, the kimchi stored at $-2{\pm}0.5^{\circ}C$ became frozen. Accordingly, $15^{\circ}C$ and $-2{\pm}0.5^{\circ}C$ are suggested as the fermentation and storage temperatures for the kimchi refrigerator, respectively. A kimchi acidity of 0.4% can be used as an index for the time point to convert fermentation to storage. Subsequently, the time required for the fermentation course can be calculated based on this.

Comparison of the Quality Characteristics of Kimchi with Initial Auto-aging Condition During Storage (초기 숙성 조건을 달리한 배추김치의 저장기간에 따른 품질 특성 비교)

  • This study was conducted to investigate the effect of initial ripening condition placed within a kimchi refrigerator and this result will be used as basic data for the development of fermentation system of Kimchi refrigerator. Hardness significantly decreased as the storage period longer. Lactic acid and Lactobacillus spp. showed a large amount until 8 weeks, but one without initial ripening contained much lower. The content of lactic acid bacteria increased from 4.50 logCFU/mL to 6.70 ~ 7.47 logCFU/mL and decreased to 5.08 ~ 6.10 logCFU/mL according to storage period. Consumer preferred $15^{\circ}C/52h$ samples rather than others in two weeks. $15^{\circ}C/36h$ and $6^{\circ}C/113h$ samples were significantly preferred during the whole storage period. These results indicate that the initial fermentation conditions affect the taste and fermentation degree of kimchi during the storage period.

  • To evaluate the usability of a Kimchi refrigerator, we performed an evaluation test that consisted of an experiment and a post-hoc questionnaire survey. In this study, we focused on the older women who have less physical and cognitive ability than younger women. In physical usability, there was no significant difference between the older and the younger subject group. However, there was some significant statistical difference in the results of cognitive usability test. When the subjects debriefed their operations after finishing the experiment, the all subjects in the older group reported the difficulties in identifying the labels and icons in the control panel and in understanding operation sequences. Also, they couldn't learn and remember the operation procedures well. Based on the analysis of the video protocols, some causes of the problems were found and then several improvement ideas were suggested.

Comparison of Fermentation Properties of Winter Kimchi Stored for 6 Months in a Kimchi Refrigerator Under Ripening Mode or Storage Mode (김치냉장고의 숙성 후 저장 및 저온 저장 모드에서 6개월간 저장한 김장 김치의 발효특성 비교)

  • The purpose of this study is to determine long-term storage conditions for winter kimchi. Kimchi was stored in a kimchi refrigerator for 6 months with or without fermentation. Four different temperature systems used were as follows: 5 days at $10^{\circ}C$ followed by storage at $-2.5^{\circ}C$ (F1), 1 day at $15^{\circ}C$ followed by storage at $-2.5^{\circ}C$ (F2), storage at $-1^{\circ}C$ (S1), or at $-2.5^{\circ}C$ (S2). Time periods required for F1, F2, S1, or S2 kimchi to reach pH 4.4 and acidity 0.6% were 2, 8, 12, and 22 weeks, respectively. Lactobacillus spp. growth on F1 and F2 kimchi was faster and greater than that on S1 and S2 kimchi, revealing a maximum concentration of 8~9 verses 6.8 log CFU/mL, respectively. However, Leuconostoc spp. were fully grown (8~9 log CFU/mL) on all four kimchi samples regardless of temperature, even at $-2.5^{\circ}C$, although the times required to reach maximum growth were different. Growth of Lactobacillus and Leuconostoc spp. both decreased after reaching maximum levels, except for F1 kimchi. Sensory evaluation results for 3 month storage showed that F1 kimchi was the best among kimchi samples in terms of appearance, acidic taste, carbonated taste, crispiness, and moldy smell. For 6 months of storage, F1 and S1 kimchi were the most highly evaluated among the kimchi samples. Sensory evaluation result for S1 kimchi stored at $-1^{\circ}C$ was comparable to that of F1 kimchi due to fully grown Leuconostoc spp. Acidities of F1 and S1 kimchi after 6 months of storage were 0.8 and 0.7%, respectively. Taken together, fermentation of kimchi at $10^{\circ}C$ for 5 days followed by storage at $-2.5^{\circ}C$ for 6 months was optimal for high quality kimchi. Sensory properties of winter kimchi were significantly influenced by the degree of fermentation.

  • Various types of refrigerators become popular in the market such as a common refrigerator, kimchi refrigerator and wine cellar. It is required to develop a multi function refrigerator which has different purposes in each evaporator. In this study, the performance of a multi type refrigerator system, which consists of one machine room and three evaporators, was measured in a bench type multi refrigerator. The multi type refrigerator system was tested by varying the number of refrigerator cabinet, refrigerant charge amount, temperature condition. Based on experimental data, the multi type refrigerator showed better performance than the conventional refrigerator(single type) At the same external load condition, the COP of the multi type refrigerator was $1.22{\sim}1.29$, but the COP of the single type refrigerator was 1.0.

Effect of the Combination of Fermentation Temperature and Time on the Properties of Baechu Kimchi (발효 온도-시간 조합이 배추김치의 품질 특성에 미치는 영향)

  • In order to examine the effect of the combination of fermented temperature and time on Baechu kimchi in a kimchi refrigerator, Baechu kimchi was fermented at four different modes of the fermentation temperature and time for 16 weeks and analyzed the properties of Baechu kimchi. The pH, Baechu kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ and Baechu kimchi fermented at $5^{\circ}C$ for 6 days/stored at $-1^{\circ}C$, decreased rapidly during first week and then decreased very slowly. The hardness and the chewiness of Baechu kimchi fermented at high temperature were higher and the values were decreased when the fermentation continued. In sensory evaluation, carbonated flavor in Baechu kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ was the best after 4 weeks, and Baechu kimchi fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$ was the best after 8 weeks. The scores for sourness were the highest on 8 weeks and 12 weeks in kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ and fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$, respectively. The sensory scores for overall acceptability were the best on 4 weeks and 8 week in kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ and fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$, respectively. Total microbial count was increased as the temperature of fermentation increased. Counts of Leuconostoc spp. reached to the highest after 6 days and counts of Lactobacillus spp reached to the highest after 5 days in kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$. From these results, it was concluded that it required 4 weeks to eat most edible Baechu kimchi in kimchi refrigerator fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$, and 8 weeks to eat most edible Baechu kimchi in kimchi refrigerator fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$.

A Study on the Performance of a Domestic Small Multi Refrigerator According to a Capillary Tube Change (모세관 변경에 따른 가정용 소형 멀티 냉동시스템의 성능에 관한 연구)

  • This paper is an experimental study on the performance according to a capillary tube diameter and length in a domestic small multi refrigerator[kimchi refrigerator]. Pressure drop in a capillary tube is predicted by theoretical analysis and experimental method as the reduction of capillary tube diameter from 0.74 to 0.6 mm. The differences between experimental results and analytical results are mainly caused by friction factor in a capillary tube. Because there are no adequate equations used to calculate pressure drop of capillary tube diameter under 1.0mm. The empirical equations necessary for interpretation of capillary tube were derived from capillary tube test results data using curve fitting method. This study shows that the optimized designs of system, which is capillary tube length and refrigerant charge amount, are 2000mm, 83g at the capillary tube diameter 0.6mm and 3000mm, 73g at the capillary tube diameter 0.74mm. And capillary design tools and system matching techniques necessary for development of the kimchi refrigerator were also developed through this study.

Development of fermentation·storage mode for kimchi refrigerator to maintain the best quality of kimchi during storage (김치저장 중 최적의 맛 유지를 위한 김치냉장고 발효·보관 모드의 개발)

  • To maintain the best quality of kimchi during long-term storage, we developed a fermentation storage mode for the kimchi refrigerator. The optimal kimchi fermentation temperature was determined to be $6^{\circ}C$ with fermentation time of 4-7 days in winter and 3-5 days in spring and fall. Based on these results, the fermentation storage mode conditions were programmed to consist of a fermentation temperature of $6^{\circ}C$ and fermentation times of 111 h in winter and 58 h in spring/fall. When kimchi was stored under the developed fermentation storage mode conditions, the total acidity of kimchi was almost the same as that of the control kimchi (stored $-2-\;-1^{\circ}C$ for 12 weeks). However, the number of lactic acid bacteria (LAB) and Leuconostoc sp. in kimchi were higher ($10^1-10^2CFU/mL$) than those in the control kimchi during storage. In addition, kimchi fermented and stored under the fermentation storage mode clearly received higher scores for overall preference than the control kimchi.

Chinese College Students Perception and Preference of Korean Kimchi (김치에 대한 중국 남녀 대학생의 인식 및 기호도 조사)

  • The purposes of this study are to investigate perception and preference of Chinese college students for Korean Kimchi by a survey and sensory evaluation and to globalize and industrialize Kimchi in the world. A questionnaire survey was conducted on 588 students residing in Beijing. About 80% of all the participants knew what Kimchi was and 63.4% had eaten Kimchi before the survey . On thier first impression of Kimchi, 43.6% of respondents, answered the nationality of Kimchi is impression after eating Kimchi was 'good'. 51.4% of respondents, answered the nationality of Kimchi is 'Korea'. The most liked Kimchi is Baechu Kimchi, and they preferred the white stem of the Chinese cabbage. On their perception of Kimchi,'Kimchi is a good side dish with cooked rice' was totally received point. The most well-known cooking method of Kimchi turned out to be Kimchi Chigae. As the results of sensory evaluation on several types cabbage Kimchies at room temperature, the most preferred Kimchi by the students was two-day old and made out of 5g red pepper. And two-day old Kimchi lOg red pepper and 2g shangchai added was preferred, too. But the six-day old Kimchi was disliked. The two-day old Kimchi made out of lOg red pepper preserved in the refrigerator was the most-liked. The dishes using Kimchi as the main ingredient are listed according to the students preference as follows Kimchi Hundun, Kimchi Ddungchai, Kimchi Bokum, and Kimchi Ramen, and so on.

  • This research follows the previous research on Kimchi Culture for the Koreans in Commonwealth of Independent States(CIS) and the purpose of this research was to investigate the habits with Kimchi of the Koreans in CIS. The research was carried out with items of the preparation and the preservation of Kimchi. The results were summarized as follows : 1. Abut 95% of above 30 years old of the respondents prepared Kimchi for their family. But 51.9% of under 30 years old and the forth generation of the respondents got Kimchi without self preparation. 2. All the respondents argued that the procedure of Kimchi preparation of the present indifferent from that of the past. 3. 40.2% of the respondents used to take Kimchi after 2~3 days from the preparation and 29.1% used to take after 1~2 days. 52.8% of the respondents would like to eat the well-matured Kimchi and 45.2% to eat Kimchi which was immediately prepared. 4. The most popular container for keeping was the enamel pot and the most popular places for keeping was the refrigerator. The popular keeping containers were a wooden box(61.2%), a earthen vessel(20.1%), a plastic vessel(14.7%) and the popular keeping places were a underfloor(37.9%), veranda (25.0%), underearth(22.9%) in order.
