Starter Cultures for Kimchi Fermentation

  • Kimchi is a traditional Korean vegetable product that is naturally fermented by various microorganisms present in the raw materials. Among these microorganisms, lactic acid bacteria dominate the fermentation process. Natural fermentation with unsterilized raw materials leads to the growth of various lactic acid bacteria, resulting in variations in the taste and quality of kimchi, which may make it difficult to produce industrial-scale kimchi with consistent quality. The use of starter cultures has been considered as an alternative for the industrial production of standardized kimchi, and recent trends suggest that the demand for starter cultures is on the rise. However, several factors should be carefully considered for the successful application of starter cultures for kimchi fermentation. In this review, we summarize recent studies on kimchi starter cultures, describe practical problems in the application of industrial-scale kimchi production, and discuss the directions for further studies.

저장 기간에 따른 콜라비 김치의 품질 특성 (Quality Characteristics of Kohlrabi Kimchi during Storage)

  • In the present study, kohlrabi-kimchi was prepared for assessment of changes in sensory qualities and measurement of changes in quality characteristics according to the storage period for the purpose of using kohlrabi as an ingredient of Kimchi. Examination of the physicochemical properties of kohlrabi-kimchi according to the storage period showed that the acidity increased steadily throughout the storage period, while soluble-solids content, pH and hardness decreased as the storage period elapsed. Meanwhile, the L value increased and then it decreased as the storage period elapsed, but, the a value increased and the b value gradually decreased after day 14 of storage. Reducing sugars increased up to day 10 of storage, and then they decreased slowly after day 15 of storage. Measurement of changes in lactic acid bacteria in kohlrabi-kimchi according to the storage period showed bacterial growth showing typical tendencies of Kimchi with a rapid increase on day 5 of storage and a decrease thereafter. Assessment of sensory qualities of kohlrabi-kimchi according to the storage period showed that the highest scores for appearance and sourness, odor, texture, and overall scores were obtained on day 15 of storage. Based on the above results, it was determined that the optimal maturity period of kohlrabi-kimchi is day 15 of storage.

유청칼슘 첨가가 김치의 품질특성에 미치는 영향 (Effect of Whey Calcium on the Quality Characteristics of Kimchi)

  • 유청칼슘을 0.5%, 1.0% 및 1.5%씩 첨가하여 만든 김치를 1$0^{\circ}C$에서 숙성시키면서 pH, 적정산도, 환원당 함량, 총균수 및 유산균수를 측정한 결과는 다음과 같았다. 김치의 담금 직후부터 유청칼슘을 첨가한 시험구가 대조구보다 높은 pH를 유지하였다. 숙성 5일까지는 시험구간에 적정산도의 차이가 거의 나타나지 않았으나 그 이후에는 유청칼슘을 첨가한 시험구의 적정산도가 대조구보다 모두 높았다. 특히 유청칼슘의 첨가량이 많을수록 적정산도가 높았다. 유청칼슘을 첨가한 시험구는 김치 담금시부터 총균수 및 유산균가 많았으며, 유청칼슘의 첨가량이 많을수록 총균수 및 유산균수가 더 많았다.

삼채뿌리를 첨가한 김치의 품질 특성 (Quality Characteristics of Kimchi Added with Allium hookeri Root)

  • 본 연구에서는 기능성 소재로 알려진 삼채를 이용하여 삼채뿌리 첨가 김치를 제조하였고, 품질 특성을 살펴보았다. 삼채뿌리 5%, 10% 및 20%를 첨가하여 $4^{\circ}C$에서 56일 동안 저장하면서 숙성기간별 pH, 산도, 염도, 환원당 함량, 미생물의 변화 및 관능특성을 살펴보았다. 삼채뿌리의 일반성분과 무기질 함량을 측정한 결과 조지방과 탄수화물 및 칼륨이 다른 양파과 채소에 비해 많이 들어있는 것으로 나타나 알칼리성 식품원료로서의 이용 가능성을 가지고 있는 것으로 사료된다. 삼채뿌리 첨가 김치의 pH 측정 결과, 14일까지 일반배추김치에 비해 서서히 감소하는 경향을 나타내었으며 삼채뿌리를 첨가한 김치의 pH가 전반적으로 높게 나타났다. 산도의 측정결과 pH의 변화와 유사한 경향을 나타내었으며 삼채김치의 염도는 2.20%의 수준을 유지하였다. 환원당 함량의 측정 결과 삼채뿌리 첨가량이 증가할수록 환원당 함량이 증가하는 경향을 나타내었다. 숙성 중 총 균수 및 젖산균수 변화는 숙성 초기에 급격히 증가한 후 서서히 증가하는 경향을 보였으며, 시료 간 큰 차이를 나타내지 않았다. 관능적 특성을 살펴보면 외관, 맛, 전반적인 기호도에서 삼채뿌리 10% 첨가 김치의 평가가 가장 우수하였다.

절임배추 및 김치 양념의 저장기간 중 품질 특성 변화 (Changes in quality characteristics of salted Kimchi cabbage and kimchi paste during storage)

  • 절임배추와 양념으로 구성된 제품에 대한 품질 특성 정보를 제고하고, 버무린 형태로 저장된 김치와 절임배추와 양념을 분리 저장한 후 버무린 김치의 품질 특성의 차이를 확인하기 위해 $4^{\circ}C$에서 저장하면서 1주 간격으로 품질특성을 분석하였다. 절임배추의 산도 및 일반세균수 변화 결과, 염수 침지에 따른 절임배추의 품질유지 효과가 나타났으며, 외관 및 관능적 품질 특성 결과를 토대로 염수 침지하지 않은 절임배추의 저장한계는 1주, 염수침지한 절임배추의 저장한계는 2주 이내임을 알 수 있었다. 특히, 염수량이 많을수록 품질 유지에 더욱 효과적이었으며 관능적 특성에서도 다소 높은 점수를 받았다. 양념은 저장 8주 동안 산도가 증가하는 경향을 보였으나 미생물학적 및 관능적 품질특성에는 큰 변화가 없었다. 0일차에 제조하여 $4^{\circ}C$에서 저장한 김치와 $4^{\circ}C$에서 각각 저장된 절임배추와 양념을 이용하여 매주 제조한 김치의 품질 특성을 분석한 결과, 0일차에 제조하여 저장한 김치보다 저장된 절임배추와 양념으로 매주 제조한 김치의 pH가 높고, 산도가 낮아 발효 지연효과가 있는 것으로 나타났다. 특히 3주차 저장된 절임배추와 양념으로 제조한 김치의 경우 신냄새, 신맛 등의 지표에서 김치형태로 저장된 것보다 유의적으로 낮은 점수를 받았다. 전반적인 기호도에서도 분리 저장 후 제조한 김치에서 높은 점수를 받았으나 유의적인 차이는 확인되지 않았다. 이상의 결과, 절임배추와 양념으로 제품화할 경우 절임배추는 품질유지를 위해 염수에 침지하여 포장하는 방법이 효과적이며, 분리 저장된 절임배추와 김치 양념을 혼합하여 김치로 제조하여도 처음부터 김치 형태로 제조하여 저장한 것과 비교하여 발효가 지연되면서 관능적으로도 문제가 없어 김치의 가식기간을 연장할 수 있는 방법이 될 것으로 생각된다.

국내 유통 김치의 계절별 품질특성 변화 (Seasonal Change in the Quality Characteristics of Commercial Kimchi)

  • This study evaluated the physicochemical and microbial quality characteristic of seasonal commercial kimchi for hygienic safety levels. The pH of seasonal commercial kimchi was 3.84-6.36 and the titratable acidity and salinity of the samples were 0.21-1.16 and 1.19-1.54%, respectively. The content of nitrate and nitrite in the commercial kimchi were lower in the spring and summer, which was affected by acidic condition of the kimchi depending on fermentation. Heavy metal contents in commercial kimchi are not an issue because they were detected only at very low levels. The total aerobic bacteria and coliforms counts ranged from 5.25 to 8.44 Log CFU/g and 0.00 to 5.08 Log CFU/g, respectively. The total aerobic bacteria and coliforms were detected more in summer than in the other seasons. E. coli was detected in three of the samples tested. Food-borne pathogens were not detected in any of the samples except for B. cereus. B. cereus was detected in the fall in more than 70% of samples. These results suggest that commercial kimchi distributed in the fall maintain the quality properties and the microbiological safety of kimchi compared to the other seasons. Therefore, further studies as an effective distribution system for the particular seasons will be needed to guarantee the hygienic safety levels of commercial kimchi required by the consumers.

꿩육수와 콩즙을 첨가한 배추김치의 품질특성 (Effect of Pheasant and Soybean Extracts on The Characteristics of Quality of Baechu Kimchi)

  • Application of pheasant and soybean extracts to improve the quality of baechu kimchi was attempted. Pheasant and soybean extracts at various combinatory concentrations were added into baechu kimchi and fermented for 24 days at $10^{\circ}C$. Assay was performed on salinity, acidity, bacterial growth, sensory evaluations, and physical properties. The pH decreased, and acidity increased by fermentation time. The optimum pH 4.2 was reached within $12{\sim}15\;days$, and optimum acidity was reached within $6{\sim}9\;days$. The number of lactic acid bacteria was increased by fermentation time. Score of intensity characteristics in color. crispness carbonated taste, and overall quality were higher for the pheasant and soybean extracts added baechu kimchi(B) than for the control product(S). The result of L and a value of baechu kimchi were Higher in treatment than in control as fermentation time increased. The hardness of baechu kimchi with pheasant and soybean extracts(B) were higher than those of control(S).

스테비오사이드 함유 감미료 첨가 김치의 품질특성 (Quality Characteristics of Kimchi with Added Stevioside-containing Sweetener)

  • The effects of stevioside-containing sweetener (SCS) on kimchi quality were evaluated by investigating acid production, growth of lactic acid bacteria, sensory properties, and several volatile odor component (VOC)s of SCS-added kimchi. The concentrations of SCS added to kimchi instead of 1% white sugar were 0.165, 0.33, 0.66, and 1.32% (w/w). The pH of kimchi with higher amounts of added SCS generally increased, and the acidity of kimchi with higher amounts of added SCS generally decreased. Addition of higher amounts of SCS generally inhibited the growth of lactic acid bacteria in kimchi. Scores of overall acceptability for 0.33 or 0.66% SCS-added kimchi were significantly higher than those for other samples (p<0.05), whereas those for 1.32% SCS-added kimchi were significantly lower than those for other samples (p<0.05). The optimum concentration of SCS added to kimchi appears to be 0.33%. Among major VOCs identified in kimchi, the concentrations of seven components including ethanol generally decreased with addition of higher amounts of SCS, whereas that of diallyl disulfide was not changed markedly. The major VOCs contributing to desirable sensory properties of kimchi were likely dimethyl disulfide and diallyl sulfide.

초기 진공조건이 유연포장 김치의 품질변화에 미치는 영향 (Effect of Vacuumizing Conditions on Quality Changes of Flexible Package Kimchi)

  • 고차단성 포장재를 이용하여 김치를 각기 다르게 진공포장한 후 $10^{\circ}C$$0^{\circ}C$의 저온조건에 저장하면서 진공도 차이에 따른 pH, 산도, 색상, 젖산균수 등의 변화를 측정하고 관능검사를 병행하여 진공포장이 김치 품질에 미치는 영향을 살펴보았다. 전체적으로 진공도 차이는 저장중 김치의 pH와 적정 산도, 색상, Leuconostoc과 Lactobacilli를 포함한 젖산균수, 관능검사 결과 등에 거의 영향을 미치지 않았다. 이로부터 저온 유통되는 소포장 김치의 품질보존을 위해서는 고도의 진공포장이 아닌 포장재 내부의 head space를 제거하는 수준으로도 충분히 효과적임을 확인할 수 있었다.

Preparation of Kimchi Containing Bifidobacterim animalis DY-64

  • Aero-tolerant microorganisms were isolated from healthy Koreans over the age of 95 years. The microorganisms were then identified based on their morphological and biochemical characteristics and 16S rDNA sequences. The growth properties of the isolated strains were investigated in kimchi. The characteristics of kimchi containing the microorganisms were studied microscopically, physicochemically, and organoleptically. Among 7 aero-tolerant strains, a strain with a 16S rDNA sequence exhibiting 99% homology with Bifidobacterim animalis strain B83 was selected and named B. animalis DY-64. The new strain showed a better acid resistance and salt resistance (p<0.05) than B. animalis ATCC 25527. After 15 days of fermentation in kimchi, the viability of B. animalis DY-64 was about 10%, and the kimchi had a better overall edible quality than conventional kimchi. Thus, it was found that the application of B. animalis DY-64 to kimchi preparation produced a good overall edible quality.
