Effect of vacuum blending on antioxidant activities of apple juice and blueberry juice

  • The present study aimed to assess and compare the quality characteristics and antioxidant activities of apple juice and blueberry juice at hourly intervals over a period of time based on the presence or absence of vacuum blending (0 and 800 hPa) using a household blender. Measurement of the dissolved oxygen content revealed that the removal rates of dissolved oxygen were approximately 83% and 86% in the apple and blueberry juice samples, respectively, after vacuum blending. Moreover, compared with general blending, there was little change in the antioxidant property and degree of browning over time with vacuum blending. Furthermore, hourly assessments revealed that the decrease in the polyphenol and flavonoid contents in the apple and blueberry juice samples was significantly lesser with vacuum blending for 3, 6, and 12 h than with general blending. Assessment of the change in ferric reducing antioxidant power (FRAP) activity over time revealed that the rate of decrease in FRAP activity over time was lower with vacuum blending than with general blending for both juice samples. ABTS and DPPH radical scavenging assays performed to determine the change in free radical scavenging activity revealed inhibitory activity at 0, 3, 6, and 12 h and confirmed that vacuum blending resulted in long-lasting antioxidant activities in both apple and blueberry juice samples. Taken together, the present results confirmed that vacuum blending is associated with superior quality maintenance and antioxidant properties in comparison with general blending.

Quality and Antioxidant Properties of Bread Added with 'Fuji' Apple Juice ('후지' 사과즙을 첨가한 반죽 및 식빵의 품질 특성)

  • In this study, bread was prepared using various amount of 'Fuji' apple juice, and quality and antioxidant properties investigated. Bread was prepared with water, butter, yeast, salt, sugar, wheat flour, skim milk powder and 10, 20 and 30% (w/w) 'Fuji' apple juice. Leavening ability and pH of dough were also investigated. Volume, pH, specific volume, baking-loss rate, chromaticity and texture were investigated as quality properties, whereas the total polyphenol content, ABTS and DPPH radical scavenging activity as the antioxidant properties of bread containing various amount of apple juice. The pH and leavening ability of dough were observed to decrease with increasing amount of apple juice. In the quality properties of bread, pH, volume, specific volume, and baking-loss rate decreased. Regarding chromaticity and texture of bread prepared with increasing amount of 'Fuji' apple juice, L (bright) values at crust and crumb of bread decreased, while hardness, chewiness and gumminess increased. Total polyphenol content increased with increasing amount of apple juice, while DPPH and ABTS radical scavenging activities showed no significant differences. Consequently, these results support the possible use of apple juice for baking foods in food industry, as addition of apple juice enhances the quality and antioxidant properties of bread.

Study on the Content of ${NO_3}^-$ in Green Vegetable Juice by Different Sorts, Harvesting Time, Mixing Rate of Vegetable, Storage Condition and Manufacturers (채소 모재료의 종류, 수확시기별, 부위별 혼합비율, 저장조건 및 생산회사에 따른 녹즙의 ${NO_3}^-$ 함량차이)

  • After the consumption of green vegetable juice by Korean increase rapidly, the ${NO_3}^-$ intake through green vegetable juice have been ignored to consider for the calculation of daily ${NO_3}^-$ intake. It is necessary to collect the basic data on the ${NO_3}^-$ content in green vegetable juice by different sorts, harvesting time and mixing rate of vegetable, manufacturers and storage conditions for the next calculation of daily ${NO_3}^-$ intake for Korean. Followings are the research results from monitoring and laboratory experiment related with ${NO_3}^-$ and vitamine C in green vegetable juice. The ${NO_3}^-$ content of angelica plaant(tomorrow's leaf) and kale were higher in spring than those in summer and autumm. The highest value of ${NO_3}^-$ content in tomorrow's leaf and kale were 4.85 and 2.94 times higher compare to the lowest value. The average ${NO_3}^-$ content in the midribs of tomorrow's leaf and kale were 7.5 and 2.1 times higher than those in leafblades. It indicate the green vegetable juice made from leadblade of tomorrow's leaf and kale might be better compare to those from midrib in terms of ${NO_3}^-$ content. The content of ${NO_3}^-$ and vitamine C as affected by the timecourse after juice making were decreased rapidly compare to those by storage temperature in case of carrot, kale and cucumber juice. It show the positive comelation between the content of ${NO_3}^-$ and vitamine C in carrot, kale and cucumber juice regardless of room temperature(${NO_3}^-$) or cold temperature(${NO_3}^-$). The content of ${NO_3}^-$ and vitamine C of green vegetable juice by P company were the highest among the manufactuers. The lower content of ${NO_3}^-$ and vitamine C of green vegecable juice by TW company and GB company compare to P company is due to dilution with water to produce the juice. The content of ${NO_3}^-$ of green vegetable juice which were available in market showed 143ppm in carrot juice, 506ppm in tomorrow's leaf juice, 669ppm in wild water celery juice, 985ppm in kale juice, whereas the content of vitamine C were 43ppm in carrot juice, 289ppm in wild water celery juice, 353ppm in kale juice and 768ppm in tomorrow's leaf juice. It was calculated that people take 253mg by tomorrow's leaf juice, 335mg by wild water celery juice, 483mg by kale juice if they drink 500ml of green vegetable juice perday, and it suggest to excess 1.16, 1.53 and 2.21 times respectively only by green vegetable juice consumption.

Protective Effect of Angelica keiskei Juice and Oenanthe javanica DC Juice on Oxidative Stress (산화 스트레스에 대한 신선초 녹즙과 돌미나리 녹즙의 보호효과)

  • The objectives of the present study were to investigate the protective effects of Angelica keiskei juice and Oenanthe javanica juice against oxidative damage in LLC-$PK_1$ renal epithelial cells and to evaluate their free radical-scavenging activities. Both A. keiskei juice and O. javanica juice showed a strong in vitro antioxidant activities such as ${\alpha}$, ${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl (DPPH), nitric oxide (NO), $O_2{^-}$, and ${\cdot}OH$ radical-scavenging activities. The LLC-$PK_1$ cells showed significant lipid peroxidation and cell death due to oxidative stress when it was induced by 2, 2'-azobis (2-amidinopropane) dihydrochloride (AAPH), sodium nitroprusside (SNP), pyrogallol, and 3-morpholinosydnonimine (SIN-1). Treatment with both A. keiskei juice and O. javanica juice significantly increased cell viability and inhibited lipid peroxidation. These results suggest that A. keiskei juice and O. javanica juice are potential natural antioxidants.

Chemical Characteristics of Citron(Citrus junos) Juices (유자 착즙액의 화학적 특성)

  • It was aimed to study the chemical characteristics and volatile compounds of juices extracted by press (PE) and centrifugal extractors (CE). Citrons cut up cross direction were used as samples in PE. Proportion ratio of peel, flesh, and seed of citron were 43.9, 39.4 and 16.7%, respectively. Yield of juice increased with weight to 120g of citron fruit. pH, brix, pulp, oily materials, amino nitrogen and yield of juice extracted by CE were higher than those of juice by PE. Acidity and transmittance of juice extracted by PE were higher than those of juice by CE. Free sugars of citron juice were consisted of fructose, glucose and sucrose. Free sugar contents of juice by CE were twice as much as those of PE. Major volatile compounds of total steam distillation matters of citron juice extracted by PE were dl-limonene, ${\gamma}-terpinene\;{\beta}-farnesene$, sabinene, linalool, ${\beta}-myrcene$ and terpinolene, while those by CE were dl-limonene, ${\gamma}-terpinene$, sabinene, ${\beta}-myrcene,\;{\alpha}-pinene$, linalool and terpinolene. dl-Limonene and ${\gamma}-terpinene$ consisted of $73{\sim}83%$ of total volatile compounds. dl-Limonene of juice by CE increased about 6% that of juice by PE. ${\beta}-Farnesene$ were observed trace in juice by CE but presented in 7% in juice by PE. The results would suggested that chemical characteristics and volatile compounds of citron juice seemed to depend on extraction methods.

Improvement of Kimchi Juice Fermentation by Combined method for Chinese Cabbage Waste Utilization (폐기물 활용을 위한 종합적 처리방법의 김치쥬스 발효 향상)

  • The effective fermentation methods of Kimchi juice for utilization of outer layer of Chinese cabbage, an waste of Kimchi industry were studied. The Kimchi juice prepared with brining and grinding the waste of Chinese cabbage and addition of spices was fermented at $25^{\circ}C$. Addition of 5$^{\circ}C$15% fermented Kimchi juice of pH 5.4 at initial stage and pH 4.4 at middle state resulted in a significant increase in fermentation rate and solid content after 12 hours of fermentation. The combined method of enzymatic hydrolysis(0.1% viscozyme) of the brined and ground cabbage and addition of 2.0% NaCl, 1.0% sucrose and 10% fermented juice of pH 5.4 first and 4.4 during fermentation, respectively resulted in more rapid fermentation. The solid concentration was 5 times higher than control at maximum point and acidic and total flavor intensity were also significantly high.

Effect of Ginger Juice on the Quality Characteristics and Acceptability of Yackwa (생강즙이 약과의 품질특성과 기호도에 미치는 영향)

  • This study was undertaken for the purpose of investigating the properties of Yackwa added by different levels of ginger juice with 3 different kinds of ginger (small, medium, and large) produced in Susan and Bongdong. There were differences in content of moisture and ash. Susan large ginger showed me highest level of moisture. By the sensory evaluation, Yackwa added by 5 g (2% of wheat flour, w/w) of Susan (small) and Bongdong ginger juice showed higher preference man those of other levels. However, Yackwa made with Susan large ginger juice showed preferable when 10 g (4% of wheat flour, w/w) was added. Textural characteristics by rheometer measurement and color were influenced by adding different levels of ginger juice. Sensory evaluation for the color of Yackwa made with Susan and Bongdong ginger juice showed a high positive correlation with L, a, and b values in instrumental test.

Two Cases of Korean Traditional Treatment of Functional Dyspepsia of Gastric Dysmotility Complicated by Bile Juice Reflux (담즙 역류가 동반된 위 운동성 장애의 기능성 소화불량증에 대한 한방치료 경험 2례)

  • Objectives: The aim of this study was to determine the therapeutic effects of a traditional Korean treatment on the symptom improvement and loss of bile juice in cases of functional dyspepsia of gastric dysmotility complicated by bile juice reflux. Methods: Dyspeptic symptoms, gastric motility (electrogastrography and bowel sound analysis), and gastric mucosa (gastroendoscopy) were evaluated. The treatment consisted of Banwhasashim-tang (extract) used as a herbal drug. Both ST36 electrical stimulation and simple immersion stimulation of CV11, 12, and 13 in the abdomen were also applied. Results: Dyspeptic symptoms, including a foreign body sensation in the throat, indigestion, and upper abdominal pain, were all relieved by the treatment and gastric myoelectrical activity and gastric pyloric function were improved. Bile juice disappeared from the gastric mucosa. Conclusion: The traditional Korean treatment was effective at relieving dyspeptic symptoms and bile juice reflux by improving the pyloric sphincter function.

Effect of $\beta$-Carotene on Enzymatic Browning of Chlorogenic Acid and Tyrosine (베타-카로틴이 클로로젠산과 타이로신의 효소적 갈변화에 미치는 영향 연구)

  • The browning rate of potato juice alone and potato juice with added carrot juice or water(1:1 by volume) were studied. As the amount of carrot juice added was increased, the browning rate proportionally decreased: from 1.86 of potato juice alone to 0.36 for the potato juice and carrot juice mixture(l:1). This inhibitory effect of carrot juice on browning led us to assume that $\beta$-carotene, the major constituent of carrot carotenoids, may be involved in impeding the browning reaction of potato juice. Therefore, model system of enzymatic browning, consisting of chi orogenic acid/tyrosine and $\beta$-carotene/carrot carotenoids, were studied. The results shows the browning rates of chlorogenic acid alone and chlorogenic acid with added $\beta$-carotene. The initial browning rate of chlorogenic acid was faster($\delta$L= 1.1/min.)than that of chlorogenic acid with added $\beta$-carotene($\delta$L=0.6/min.).

Clarification of Fruit Juice by the Use of Polygalacturonase and Gelatin (Polygalacturonase와 젤라틴을 병용한 과실쥬스의 청징화)

  • The effect of gelatin concentration, pH of fruit juice and other factors for the enzymatic clarification of fruit juice by the use of polygalacturonase was studied. The proper addition of gelatin was much effected on clarification by polygalacturonase and optimum concentrations of gelatin for the enzymatic clarification of Zugaru juice, Magnolia Gold juice, Golden Delicious juice, Jonagold juice, Jonathan juice, Campbell Early juice were 0.04, 0.01% 0.02%, 0.06% 0.01%, and 0.04%, respectively. Optimum pH for the clarification by the use of polygalacturonase and gelatin was $3.2{\sim}3.5$ contrary to optimum pH 4.8 of polygalacturonase for the hydrolysis of pectic acid. At the reaction temperature of $45^{\circ}C$ and polygalacturonase concentration of 0.01mg/ml, fruit juices were completely clarified by optimum addition of gelatin for 60min.
