한국농민의 영양상태와 관련변인간의 관계분석 (A Study on Nutritional Status of the Korean Farmers and Analysis of Relationship between Related Variables)

  • General purpose of the study was to understend nutritional status of the Korean farmers and thus provide rural nutrition intervention programs with more useful in formation and data. The data for the study was collected two times from the 603 sample farm households in 1982 and 1987. The main results of the study were as follows ; 1) Food intake of the Korean farmers was highly dependent upon vegetable foods especially on cereals and gains. However the unbalanced food intake pattern was gradually improved as consumption of vegetable foods was decreased from 992.8 grams per person per day in 1982 to 946.4g in 1987 and that of animal foods increased from 54.2g to 91.4g . 2) In mean value analysis on nutrient intake of the farmeres intakes of energy and protein were nearly reached to Recommended Dietary Allowances(RDA) level; intakes of calcium vitamin A and riboflavin were quite deficient whereas iron thiamin niacin and ascorbic acid were well over. From 1982 to 1987 intakes of all nutrients except energy were increased. 3) In distribution analysis on nutrient intake coefficient of variation(CV) of all nutrients except iron was increased. skewness(SK) the coefficients of calcium iron vitamin A riboflavin and ascorbic acid were decreased Kurtosis (Ku) of iron and vitamin A was increased. On the whole distributions of nutrient intake of the farmers were changed in undesirable ways although the mean values of the nutrient intake were improved 4) In relationship analysis among 115 relationships 76 relationships were consistent between 1982 and 1987. Of 76 consistent relationships only 10 relationship were significant at 5% level such as the protein intake level and the balance of food intake calcium intake level and the age etc.

일부 농촌지역 부인의 영양실태 및 혈액성상에 관한 연구 (A Survey of Nutrition and Blood Contents of Rural Women in Korea)

  • The nutritional survey and blood sampling was conducted from May 23 to 27, 1971, in order to investigate the state of the nutritional intake in relation to blood contents of rural women. This survey covered a total of 47 women residing in Youngam-gun, Cholla-namdo, Korea. The daily diet of these subjects was observed by 24-hour recall method and weighing method for 3 days and hemoglobin (Hb), hematocrit(Hct), mean corpuscular hemoglobin concentration (MCHC), serum protein, serum albumin, A/G ratio, serum iron, total iron binding capacity (TIBC), transferrin saturation (TS), serum cholesterol and blood specific gravity (SG) were measured. The results were summarized as follows ; The rate of intake of vegetable foods was high, especially cereals, and that of animal foods was low, especially eggs and milk and milk products. The daily intake of niacin was sufficient, and the intakes of energy and iron were also tend to be adequate. On the contrary, the intakes of vitamin A, $B_2$ and C, calcium and protein were insufficient. The mean red blood cell number was $410.8{\pm}26.4{\times}10^{4}/mm^{3},$ the mean values of Hb, Hct and MCHC were $12.5{\pm}0.9gm%$, $37.5{\pm}2.4%$ and $33.2{\pm}0.5%$ thus the anemic prevalences were 21.3%, 12.8% and 93.6% comparing with the anemic criteria of WHO. The levels of serum protein and serum albumin were $7.1{\pm}0.4gm\;%$ and $4.3{\pm}0.3gm\;%$so the A/G ratio was indicated $1.6{\pm}0.2.$. The levels of serum iron and TIBC were $91.9{\pm}27.5{\mu}g/100ml and $297.5{\pm}31.4{\mu}g/100ml,$ so TS was calculated $31.2{\pm}9.7\;%$. The mean value of SG was $1.044{\pm}0.002,$ and the level of serum cholesterol was $164.3{\pm}25.4mg/dl$. In the relation between each of bloood content, Hb showed positive correlation not only with Hct but also protein at the level of significance of 1 per cent and 5 per cent, and protein also showed a positive correlation with serum cholesterol at the 1 per cent level of significance. In the relation between the nutrient intake and blood contents, vitamin C intake showed a positive correlation with Hb, serum protein and serum iron at the level of significance of 1 per cent, iron intake also showed a positive correlation with serum iron and serum cholesterol at the same significant level, and protein intake showed a positive correlation with serum iron at the at the level of significance of 5 per cent.

유아의 우유군의 섭취가 식이의 다양성과 영양소 섭취의 적정도에 미치는 영향 (The Effects of Milk Group Intake to Dietary Diversity Score and Nutrient Adequacy Ratio among Toddler)

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. 일부 여대생의 영양소 섭취상태, 빈혈 지표 및 혈청 지질간의 상관성에 관한 연구 (Relationship among Nutrient Intake, Indices of Anemia and Serum Lipids in Korean College Women)

  • This study was conducted to evaluate nutrient intake, indices of anemia, serum lipids, and their correlations in 40 Korean female college students aged 21 to 25 years. Fasting blood samples were collected in October. 1997 Nutrient intake was investigated by 24-hour recall method for three days. Anthropometric measurements, blood pressure, iron status and serum lipids of the subjects were determined. The mean values for age. height, weight, BMI and blood pressure of the subjects were 22.1 years, 160.6cm, 54.4kg and 109.1/66.9mmHg, respectively. According to the body composition analysis, total body water, % body fat, lean body mass and WHR were 26.7L. 29.5%, 36.5kg and 0.8, respectively. Average daily intake of energy was 1,858.4kcal. Protein, phosphorus, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than the Korean recommended dietary allowence(RDA), whereas calcium, iron, vitamin A intakes were tower than that. Hemoglobin(Hb), hematocrit(Hct), serum iron(SI) and total iron binding capacity(TIBC) were measured and transferrin saturation (TS%) was calculated from serum. The mean values for Hb, Hct, SI, TIBC and TS were 13.6$\mu\textrm{g}$/㎗, 41.6%,97.8$\mu\textrm{g}$/㎗, 319.6$\mu\textrm{g}$/㎗ and 31.9%, respectively. The Prevalence rates of iron deficiency assessed by Hb and Hct were found to be 10% and 2.5%, respectively. However, when assessed with TIBC, the prevalence rate of iron deficiency was increased to 32.5%. The mean values for serum triglyceride(TG), total cholesterol(TC), HDL-Chol, LDL-Chol concentrations and atherogenic index(AI) were 154.7mg/㎗, 80.0mg/㎗, 47.4mg/㎗, 91.3mg/㎗ and 2.6, respectively. Correlations among indices of anemia. there were positive correlations between Hb and Hct, between SI and TS : negative correlations between TIBC and TS or SI. Correlations among serum lipids, there were positive correlations between TC and TG or LDL-cholesterol. Energy intakes were correlated positively with TIBC(p<0.05), and vitamin C intakes negatively correlated with Hb(P<0.05). And vitamin A intakes were negatively correlated with TG(p<0.01). TC(p<0.05) and LDL-Chol(p<0.01). Hb negatively correlated with TG(P<0.05). Body weights(p<0.05), lean body mass(p<0.05) and total body water(p<0.01) werenegatively correlated with Hb. BMI and WHR correlated with TG and TC(p<0.01). These results indicated that subjects with higher energy intake and overweight had a tendency to have iron deficiency. Increases in BMI and WHR were related to increases in serum lipids levels and decreases in TIBC. The results also showed that serum lipids were decreased when vitamin A and iron intakes were sufficient.

정상 남자 아동과 비만 남자 아동의 철 영양상태에 관한 연구 (A Study on Nutritional Status of Iron in Korean Normal and Obese Male Elementary School Students)

  • The purpose of this study was to compare the food behavior and nutrient intakes, and the analysis of constituent parts of blood related to iron nutrition conditions and to investigate the correlation between iron nutrition conditions and obesity. Each subject was assigned to one of such as normal(n=55) and obese groups(n=60) according to their obesity index. Their nutritional status, serum iron status were evaluated based in 24-hr dietary recalls, questionnaire and blood analysis. The mean age of the normal group(10.76 years) and that of the obese group(10.95 years) made little difference. The height(p<0.05), weight(p<0.001), and obesity index(p<0.001) in the obese group were higher than those of the normal group in every respect. The 63.55% of the subject of this study gave an answer 'They eat breakfast daily', and the frequency of eating breakfast made little difference. The average intakes of energy were 1669.44 kcal(84.19% of EER) in the obese group and 1673.59 kcal(86.72% of EER) in the normal group respectively, which made little difference between two groups. The intake of nutrients such as calcium and folate was as insufficient as below 75% of RI. The heme iron intake of the obese group was low that of the normal group(p<0.05). Among the major 20 iron resources the iron intake through animal food intake were 1.43 mg(12.00%) in the obese group and 1.93 mg(17.72%) in the normal group respectively. The rating of iron condition in the blood showed that the number of red blood cell(p<0.01), the hemoglobin(p<0.001), and hematocrit(p<0.01) of the obese group were lower than those of the normal group. These results suggest that there should be the right choice of food according to its bioavailability and nutritive guidance to appropriate food behavior, in addition to increasing iron intake to improve iron nutrition conditions of obese male elementary school students.

부천시 저소득층 초등학교 5학년 어린들의 영양소 섭취 및 철분 영양 상태 (Nutritional Status of 5th Grade School Children Residing in Low-Income Area of Pucheon City)

  • The purpose of this study was to determine the proportion of 5th grade school children with iron depletion or iron depleted anemia with simultaneously assessing their general nutritional status. The anthropometric measurements, nutrient intake, and biochemical status of iron were measured for 261 school children from 5th grade residing in low income area of Pucheon. The mean height and weight of male were 138.7cm and 33.6kg respectively and were significantly lower than those of female. Mean fat percent, triceps skinfolds thickness and arm circumference were 21.4$\%$, 13.7mm and 22.2cm for female and were significantly higher than 19.1$\%$, 11.4mm, 21.4cm of male respectively. The intake on vitamin A and calcium were 46.4$\%$ and 47.7$\%$ of RDA for male and 36.6$\%$ and 44.9$\%$ for male respectively. The energy intake, carbohydrate, thiamin, niacin, ascorbic acid of male were significantly higher than those of female respectively. The mean daily intake of iron were 7.5mg for male and 7.3mg for female and were not significantly different. The mean biochemical indices of iron nutritional status were not significantly different between male and female expect free erythrocyte protoporphyrin(FEP) and FEP : hemoglobin ratio. The proportion of male assessed by serum iron(<70$\mu\textrm{g}$/㎗), Hb($\%$), FEP(<70$\mu\textrm{g}$/㎗RBC) were 25.4$\%$, 8.4$\%$. 0.8$\%$, 1.8$\%$ respectively and 23.2$\%$, 8.4$\%$, 3.4$\%$, 1.0$\%$ for female respectively.

경기도 일부 도시 및 농촌지역 여고생의 영양섭취, 식행동, 체형인식 및 철분영양상태 비교연구 (Comparison of Nutrient Intake, Dietary Behavior, Perception of Body Image and Iron Nutritional Status among Female High School Students of Urban and Rural Areas in Kyunggi-do)

  • This study was undertaken to investigate the nutrient intake, dietary behavior, perception of body image and iron deficiency of high school adolescent girls. The subjects were 463 high school girls in Inchon. This cross-sectional survey was conducted by questionnaires and data were analysed by SAS program. Nutrient intakes collected from 3 day-retails were analyzed by the Computer Aided Nutritional Analysis Program. The following anthropometric measurements were made on all participants height, weight, body fat (%), skinfold thirkness, subscapular skinfold thickness, mid-upper arm circumference and waist-hip circumference. Blood samples were obtained and analyzed for iron nutritional status. The mean obesity index of rural students were highest among students. However, over 18% of the urban and rural students belonged to the low-weight group. Proportions of skipping meals were most high in urban vocational students and the main reason was lack of time for meal. Most nutrient intakes of the students were below the RDA, in particular calcium, iron, vitamin A and vitamin B$_2$. Most of the students were concerned with body image and weight control. Also they were not satisfied with their body image. The mean fell hemoglobin and transferrin saturation of rural students were lowest among students. The total binding capacity of urban vocational student\ulcorner were Invest among students. Prevalence of iron deficiency was most high in urban general students when judged by Hb, MCV and serum ferritin. In conclusion, this study indicates that nutrient intake in the female high school students was considerably lower than RDA. They should also be notified that severe weight control is very harmful for health. And they had lower self -satisfaction for their body image and undesirable flood habits. Therefore, prefer nutrition education is required to maintain desirable flood habits and improve their iron status in female high school students.

임신 쥐의 철 과잉섭취가 조직의 산화적 스트레스에 미치는 영향 (Effects of Iron Overload during Pregnancy on Oxidative Stress in Maternal Rats)

  • 본 연구는 임신기 동안 어미쥐의 철 섭취 수준이 모체의 철 대사지표와 산화적 스트레스 및 임신의 결과에 미치는 영향을 검토하기 위해 비임신쥐를 대조군으로 하여 수행하였다. 10주령 200 g 이상 된 암컷과 수컷 흰쥐를 1 : 1로 교배시켜 임신을 확인한 후, 비임신쥐 (대조군)와 임신쥐 (실험군)에게 식이 중 철 수준이 정상수준 (AIN-93G diet 수준, 35 mg Fe/kg diet), 고수준 (정상의 10배, 350 mg Fe/kg diet) 및 과잉수준 (정상의 30배, 1,050 mg Fe/kg diet)의 3가지 실험식이를 급여하였다. 임신 19일째 되는 날, 비임신쥐와 임신 쥐를 희생시켜 분석한 결과는 다음과 같다. 체중의 증가나 식이섭취량은 철 섭취 수준의 영향을 받지 않았고, 임신의 결과로서 태아의 수, 태아체중 및 태반무게도 철 섭취 수준의 영향은 받지 않았다. 헤모글로빈, 헤마토크릿, 혈청 철 농도 등의 혈액지표들은 철 섭취 수준의 영향은 받지 않았으나 임신에 의한 감소 경향을 보였다. 임신쥐의 철 섭취 수준의 증가에 따라 간과 지라 조직의 철 함량이 유의적으로 증가하였다. 또한 임신쥐의 간에서 페리틴 단백질 수준이 철 섭취의 증가에 따라 현저히 증가하였다. 산화적 손상지표인 지질과산화물 (MDA)은 철 섭취수준의 영향을 받지 않았고, 단백질 산화물 (protein carbonyls)은 비임신쥐와 임신쥐에서 모두 철 과잉 섭취군의 경우 유의적으로 증가하였다. 항산화효소 중에서는 철 과잉섭취군에서 간의 GPx 활성이 유의적으로 감소하였다. 결론적으로, 임신기 동안 어미쥐의 철 섭취수준의 증가는 어미쥐의 혈액지표와 임신의 결과에는 유의적인 영향을 미치지 않았지만, 간 조직 내 철 함량과 페리틴 단백질 수준을 유의적으로 증가시켰으며, 간 조직에서 단백질 산화물인 protein carbonyl 농도를 증가시키고, 항산화효소 중 특히 GPx의 활성 감소를 초래하였다. 또한 간 조직에서 세포사멸을 억제하는 중요한 인자인 Bcl-2 단백질 수준이 임신쥐에서 철 섭취의 증가에 따라 유의적으로 감소하였다. 이러한 영향이 철을 정상 수준의 10배 섭취한 군에서는 약하게 나타났으나, 30배 과잉으로 철을 섭취한 군에서는 유의적으로 차이를 보였다. 이 결과는 임신시 철 과잉 섭취의 해로운 영향이 지금까지 철 대사의 측정도구로 삼아왔던 혈액지표의 변화 보다는 체내에서 일어나는 조직의 산화적 스트레스의 증가나 조직 내 철의 축적 등에 보다 더 민감하게 반영됨을 알 수 있었다. 따라서, 철 과잉 섭취가 모체 뿐만 아니라 태생 조직의 산화적 스트레스에도 영향을 줄 수 있음을 시사하였다.

급식교와 비급식교 아동의 성장발달 및 철분영양상태 비교 (A Comparison of Anthropometry and Iron Status in Children Provided with and without Natinoal School Lunch Program)

  • This study was designed to assess the iron nutritional status and growth development of children provided with and without the national school -lunch program(NLSP). The subjects consisted of 590 elementary school children (313 boys, 277 girls) in the 2nd, 4th and 6th grades provided with (n=390) and without (n=200) NSLP. anthropometric measurements were taken for body weight, height, triceps skinfold thickness and body fat percentage. Nutrient intakes were assessed by a modified 24 -hour recall method. Fastinig blood samples were obtained and analyzed for hemoglobin concentration, hematocrit, serum iron and total iron binding capacity. The results obtained are summarized as follows. No significant differences between children provided with and without NSLP were found in height and body weight, but triceps skinfold thickness and body fat(%) were significantly higher in children without NSLP than in those with NSLP. There was no significant difference in hemoglobin concentration and hematocrit between children provided with and without NSLP. However, serum iron concentration and transferrin saturation were higher in the children provided with NSLP(81.9$\mu\textrm{g}$/dl and 22.8%) than in the children without NSLP(73.1$\mu\textrm{g}$/dl and 20.9%). When comparing iron and vitamin C intakes , iron intake was significantly higher in children provided with school-lunch, but vitamin C intake was significantly higher in children provided without school-lunch. Percentages of iron -deficient anemia in underweight, normal and obese children when judged by total iron binding capacity were 14.9%, 12.5% and 25.8% respectively.

부산지역 학령전 아동의 식이섬유섭취 상태평가 (An Assessment of Dietary Fiber Intake in Preschool Children in Busan)

  • To assess the dietary fiber intake of preschool children in Busan and to evaluate the relationship between of the intake of dietary fiber and nutrient intake. Nutrient intake using 24 hour recall, and total dietary fiber (TDF) intake based on tables of TDF of common Korean floods developed by the modified Prosky Method, were estimated for 176 preschool children. The mean daily intakes of TDF, and TDF after adjusting energy intake, were 10.20 g and 7.69 g/1,000 kcal, respectively. The mean daily intakes of TDF for children aged 1-3 and 4-6 years were 9.20 g and 11.08 g, respectively. The range of TDF intake was 1.86 to 22.16 g. The major sources of TDF were cereals (31.0%), vegetables (18.9%) and fruits (11.9%). The TDF intake showed positive correlations with nutrient adequacy ratios (NAR) of iron and Vitamin $B_1$, (p < 0.05, p < 0.05). The TDF intake per 1,000 kcal showed negative correlations with the NARs of protein, calcium, phosphate, iron, Vitamin A, vitamin $B_1$, Vitamin $B_2$, and niacin (p < 0.001, p < 0.001, p < 0.001, p < 0.05, p < 0.001, p < 0.001, p < 0.001, p < 0.001) and with the mean adequacy ratio (MAR, p < 0.001). When children were stratified into quartiles ($Q_1-Q_4$) on the basis of their fiber intake per 1,000 kcal, their NARs for calcium, phosphate, iron, Vitamin A, Vitamin $B_1, Vitamin $B_2$ and niacin (p < 0.05, p < 0.05, p < 0.001, p < 0.05, p < 0.05, p < 0.001, p < 0.001), and their MAR (p < 0.001) were significantly lower in the children with higher fiber intake per 1,000 kcal (the upper quartile). The NARs fur calcium (0.63), iron (0.60), Vitamin A (0.66), Vitamin $B_2$(0.74), niacin (0.64), Vitamin C (0.65) and the MAR (0.74) were lower than 0.75 in the children with fiber intakes of more than 9.25 g per 1,000 local (0,), the highest fiber intake per 1,000 kcal. Based on these results, the mean TDF intake of children was higher than the age (yr)+5g , the minimum recommended level for American children. Meals with a fiber intake of more than 9.25 g per 1,000 local ($Q_4$) could cause a decreased nutritional status for minerals and vitamins. The result of this study could contribute to the establishment of Recommended Dietary Allowances (RDA) for dietary fiber for Korean Preschool children.
