Relationship between Functional Quality of Garlic and Soil Composition (마늘의 기능성 품질과 토양 성분 간의 관계)

  • This survey was conducted to investigate the functional quality characteristics of garlic based on different soil conditions (Pyungan, Maji, Anmi, Yuga, and Songjung soils). The Pyungan, Maji, and Anmi soils from the Danyang area showed high levels of pH, organic matter, available $P_2O_5$, and inorganic components. For the functional compositions of the garlic harvested from the different soil conditions, the Pyungan garlic contained the highest amounts of alliin and total fructan, with 9.2 and 193.3 mg/g, respectively. The Pyungan garlic also showed the highest amounts of total polyphenol and flavonoids, with 146.5 and 123.5 mg/100 g, respectively. Among the garlics from the different soils, the IC50 values by the DPPH assay ranged from 0.28 to 0.32 g/mL, and the $IC_{50}$ of the Pyungan garlic was 0.28 g/mL. The correlation coefficients between the functional quality of the garlic and the different soil compositions were analyzed. The quality of the garlic was positively affected by the pH and organic matter content (p < 0.01) of the soil. Since the Danyang garlic harvested from the Danyang soil had better functional qualities, these results suggest that the production of garlic in a suitable area for the ecotype is most effective.

Antioxidant Enzymes and Antimicrobial Activities in Sponge Gourds (수세미 오이의 항산화 효소 및 항균 활성 검증)

  • Luffa cylindrica Roem (sponge gourd) belongs to the Cucurbitaceae family and has been cultivated as an ornamental plant in Korea. Recently, its cultivation area has been increased with an increase in demand for it as an ingredient in cosmetics, herbal medicines, and health supplements. We analyzed inorganic components of sap collected from land race sponge gourds. We also measured antioxidant enzyme activities and antimicrobial activities of the plant, seed, and sap to examine functional properties of sponge gourd. The sap of the sponge gourd contained high levels of K, Ca, P, and Mg, with the most abundant mineral in the sap being K ($470mg{\cdot}L^{-1}$). The amounts of Ca and Mg were 2 and 1.7 times more than those found in cucumber (Cucumis sativus), respectively. Ascorbate peroxidase was more active than catalase and superoxide dismutase in various plant parts of sponge gourd. Antioxidant activities were much lower in stems than in other plant parts such as leaves, roots, flowers, fruits, seeds, and sap. In addition, sap showed a very low level of antimicrobial activity against two food-borne pathogens, Vibrio parahaemdyticus and Propionibacterium acne, and none against the other eight tested food-borne pathogens. Antimicrobial activities against Candida albicans and Malassezia furfur, which causes dermatitis, appeared to be higher in sap than in other parts of sponge gourd plants. Overall, the antimicrobial activity against Malassezia furfur appeared to be higher than against Candida albicans.

Proximate Composition, Amino acid, Fatty acid and Inorganic Matter of Apple Snail (우렁이의 생체부위별 일반성분, 아미노산, 무기질 및 지방산 분석)

  • This study was carried out to investigate the nutritive components of apple snail, Cipangopaludina chinensis malleata, with different parts such as shell, viscera and muscle. The average content of moisture, crude fat, crude protein, carbohydrate and ash in the muscle of apple snail were $74.8{\pm}1.2%,\;0.6{\pm}0.0%,\;12.7{\pm}1.0%,\;7.9{\pm}1.0%$ and $4.2{\pm}0.6%$ respectively. The shell of apple snail contained above 97% ash. Amino acid analysis showed that the major amino acids of muscle were in order of arginine (31.7%), alanine (21.2%) and glutamic acid (7.1%) among total 17 amino acids, while those of viscera were tyrosine (24.5%) and alanine (12.4%) and arginine (11.4%). On the other hand, the major minerals of muscle were P (8.12 mg%), Ca (42.27 mg%), and Mg (4.04 mg%), while those of shell were Ca (54.66 mg%), P (3.9 mg%), and Na (2.33 mg%). The saturated fatty acid in different pare of apple snail was shown to be 1.6% in muscle, 5.3% in viscera, and 4.2% shell. These results imply that apple snail can be used as a good nutritional source with high protein and low fat content.

Effect of Mercuric Chloride on the Contents of Mineral Nutrients in the Liver and Kidney of Rats (흰쥐의 간장(肝臟) 및 신장(腎臟) 무기질(無機質)에 미치는 수은(水銀)의 영향(影響))

  • The effect of changes in body weight, some blood components and some inorganic ions in liver and kidney, were studied on male rats receiving ad libitum on 5, 40, and 200 ppm of mercuric chloride solution during so days. The results obtained were summarized as follows ; 1. The total body weights were decreased in proportion to increment of mercury concentration. The internal organs weights i. e. , liver, kidney, spleen, and heart, were generally increased. Especially, the weight increment of kidney was the highest by intaking of mercuric chloride solution. 2. There were no significant changes in hematocrit values, activities of GOT and GPT in blood of rats receiving mercuric chloride. On the other hand, the plasma levels of cholesterol were significantly increased. The receiving of 200 ppm mercuric chloride solution to rats was resulted in the remarkable reduction of total protein levels and A/G ratio in plasma. 3. The markable rise occured in the accumulation of Hg, in both liver and kidney in proportion to supplying in rats while there was a tendency decreasing of Cu, Zn contents in liver, whereas there was a tendency increasing of Cu, Zn in kidney of rats.

Study on Physical and Chemical Properties of CaO-Al2O3 System Melting Compound (CaO-Al2O3계 용융화합물의 물리·화학적 특성에 관한 연구)

  • This study is aimed to identify the method to use the CaO-$Al_2O_3$ system of rapidly cooled steel making slag (RCSS) as the environment-friendly inorganic accelerating agent by analyzing its physical and chemical properties. The fraction of rapidly cooled steel making slag is distinguished from its fibrous, and the contents of CaO and $Fe_2O_3$ are inversely proportional across different fractions. In addition, as the content of CaO decreased and the content of $Fe_2O_3$ increased, the loss ignition tended to become negative (-) and the density increased. The pore distribution by mercury intrusion porosimetry is very low as compared to the slowly cooled steel-making slag, which indicates that the internal defect and the microspore rate are remarkably lowered by the rapid cooling. To analyze the major minerals the rapidly cooled steel-making slag, XRD, f-CaO quantification and SEM-EDAX analysis have been performed. The results shows that f-CaO does not exist, and the components are mainly consisted of $C_{12}A_7$ and reactive ${\beta}-C_2S$.

Quality and Volatile-Flavor Compound Characteristics of Hypsizigus marmoreus (느티만가닥 버섯의 품질 및 휘발성 향기 성분 특성)

  • Hypsizigus marmoreus is a wild mushroom commonly consumed in South Korea due to its beneficial effects on health. In the present study, the general chemical and inorganic-element composition, the total amino acid contents, and the volatile-flavor compounds of H. marmoreus were investigated for food uses. The proximate compositions consisted of 60.1% carbohydrate, 32.0% crude protein, 8.98% moisture, 5.0% ash, and 2.0% crude lipid. The minerals in H. marmoreus were found to be as follows; potassium (429.5 mg), phosphorus (101.9 mg), sodium (20.3 mg), magnesium (54.86 mg), calcium (2.7 mg), zinc (0.8 mg), iron (0.7 mg), manganese (0.2 mg), and copper (0.1 mg), based on 100 g of mushroom dry weight. Seventeen kinds of total amino acids were found in H. marmoreus, with the glutamine acid content being the highest (2,340 mg/100 g), followed by the asparagine, serine, arginine, and leucine contents. The volatile-flavor components of H. marmoreus were collected via simultaneous steam distillation extraction (SDE), and were analyzed via gas chromatography-massspectrophotometry (GC-MS). A total of 17 volatile-flavor compounds were identified, including eight aldehydes, seven alcohols, one acids, and one other compounds. The most abundant compound was 2,3,6-trimethy1 pyridine, which accounted for more than 40% of the total volatiles; other important compounds were 1-octen-3-o1, buty1hydroxytoluene (BHT), isoocty1 phthalate, 3-octanal, 1-undecanol, and 2-amylfuran. These results provide preliminary data for the development of H. marmoreus as an edible food material.

Characteristics of Pyrolysis Oils from Saccharina japonica in an Auger Reactor (Auger 반응기에서 제조한 다시마 유래 열분해오일의 특성)

  • Pyrolysis of Saccharina japonica in an Auger reactor was conducted by varying the temperature and the auger speed and then physicochemical properties of the S. japonica-derived pyrolysis oil were analyzed. The maximum yield of S. japonica-derived pyrolysis oil (32 wt%) was obtained at a pyrolysis temperature of $412^{\circ}C$ and an auger speed of 20 rpm. Due to low carbon content and high oxygen content in the pyrolysis oil, the higher heating value of S. japonica-derived pyrolysis oil was $23.6MJ\;kg^{-1}$, which was about 60% that of conventional hydrocarbon fuels. By GC/MS analysis, 1,4-Anhydro-d-galactitol, dianhydromannitol, 1-hydroxy 2-propanone and isosorbide were identified as the main chemical compounds of S. japonica-derived pyrolysis oil. The bio-char has low higher heating value ($13.0MJ\;kg^{-1}$) due to low carbon content and high oxygen content and contains a large amount of inorganic components and sulfur.

Effect of a Mixture of Extracts from Residues of Onion Left after Onion Harvesting and Purslane (Portulaca oleracea) on Productivity and Quality Characteristics of Organic Onions (양파 수확 후 잔재물과 쇠비름 추출물이 유기농 양파의 수확량 및 품질 특성에 미치는 영향)

  • This study assessed the effects of treatment with sap extract from onion residues postharvest and purslane on the quality and quantity of organic onions. At the bending stage, onions treated with the sap extract showed vigorous growth, with higher plant heights, more leaves, and longer sheath lengths than untreated onions. The onion yield was significantly increased when the plant was treated with extracted sap as compared with that of untreated plants (p<0.05). The bulb weight distribution of onions in the mixed onion and purslane treatment was also significantly increased (~300 g) as compared with that of the other treatment (p<0.05). Except for CaO and S, the mineral content of the onions produced from plants treated with the onion and purslane extract mixture was higher than those of onions in the other treatment. The hardness of onions produced from plants treated with the onion and purslane extract was significantly increased (8% and 20%, respectively) as compared with that of onions produced from plants treated with the onion extract only or no treatment (p<0.05). However, there was no significant difference in the sugar contents of the onions produced from extract-treated and nonextract-treated plants. Postharvest, the content of inorganic components (phosphate, calcium, sulfuric acid, and manganese) was higher in soil treated with the onion extract than in soil treated with the onion and purslane extract and non-treated soil. It can be concluded that residues left after onion harvests and purslane extract can be used as natural and environmentally friendly materials for the cultivation of organic onions.

Taste Compounds and Functionality of Flavoring Substances from Small Kingfish (소형 갈전갱이틀 이용한 풍미소재의 정미성분)

  • The flavor constituents and functionality of small kingfish were studied as affected by two stage enzyme hydrolysis (TSEH). Total free amino acid contents in water extract, autolytic extract and TSEH of small kingfish were 541.3 mg%, 8,245.3 mg% and 6,636.6 mg%, respectively. Major free amino acids in TSEH were hydroxyproline, glutamic acid, proline, leucine, phenylalanine, lysine, arginine. As for nucleotides and other bases, IMP, TMAO and total creatinine were principal components in TSEH. And the major inorganic ions in TSEH were Na, K, P, Cl and $PO_{4}$. Also TSEH of small kingfish revealed very higher Angiotensin-I converting enzyme inhibition effect than those of water and autolytic extract.

Variation of Fatty Acid Composition and Content in Domestic and Imported Solar-Salt by GC-MS (국산과 수입산 천일염의 지방산 분석)

  • BACKGROUND: Inorganic component is made up largely of salt, because the criteria are difficult to split into domestic and imported ingredients, organic examined the fatty acid composition is to see a possible use as a marker using gas chromatography-mass spectrometry (GC-MS). The 14 domestic samples and 8 imported samples were collected from China, India and other countries were investigated on item of 37 fatty acids. METHODS AND RESULTS: The major components were six species, myristic acid ($C_{14:0}$), palmitic acid ($C_{16:0}$), palmitoleic acid ($C_{16:1}$), stearic acid ($C_{18:0}$), oleic acid ($C_{18:2,n9}$), linoleic acid ($C_{18:2,n6}$) among detected twenty fatty acids including 9 unknowns. The content of palmitic acid were highest as 25.2 to 50.8% of total fatty acids contents. Domestic has seen the most amount of salt in the Taepyeong salts $250.8{\mu}g$/100g, imports $135.2{\mu}g$/100g salt in Chinese Weifang salts showed the lowest content. CONCLUSION(s): The total fatty acid content has seen the most amount of salt in 352.3 ug/100g Christmas island salts showed the lowest content of $164.0{\mu}g$/100g, as a result it is difficult to distinguish the domestic salts and imported by the composition of fatty acid.
