식습관 개선을 위한 온라인 코칭프로그램의 개발 및 효과성 검증 (The Effects of Online Coaching Program on Improving Eating Habit Behaviors)

  • 본 연구의 목적은 습관행동 변화과정 모형(탁진국, 권혜란, 김혜영 등, 2019)을 기반으로 하여, 식습관 개선 성공 요인(최경화, 김혜영, 한석빈, 탁진국, 2020)과 선행 연구에서 습관 개선에 효과를 나타낸 방법들을 토대로 식습관 개선을 위한 온라인 코칭 프로그램을 개발하여 실시하고, 그 효과를 검증하는 데 있다. 식습관 개선을 희망하며 수도권에 거주 중인 19세 이상 성인 중 전화인터뷰를 통해 선정된 20명을 실험 및 통제집단으로 나누어 일대일 코칭을 진행하였다. 최종분석에는 17명의 자료가 사용되었으며, 프로그램 사전과 사후에 체중, 식습관, 식이행동, 식이효능감, 자기조절, 삶의 만족을 측정하여 분석하였다. 온라인 코칭프로그램의 효과성을 검증하기 위하여 프로그램 실시 사전, 사후의 시점과 집단 간의 상호작용효과를 분석한 결과, 자기조절과 삶의 만족을 제외한 체중, 식습관, 식이행동, 식이효능감에서 시점과 집단 간에 유의미한 결과가 나타나 프로그램 효과가 검증되었다. 즉, 통제집단에 비하여 실험집단에서 체중, 식습관, 식이행동, 식이효능감에서 유의미한 변화가 있었다. 이상의 연구 결과를 중심으로 본 연구의 의의 및 실무적 시사점, 제한점, 그리고 후속 연구를 위한 제언 등에 관해 논의하였다.

A Study of the Anthropometric Indices and Eating Habits of Female College Students

  • A study was conducted to investigate the anthropometric indices, fat distribution, eating habits and levels of daily physical activity based on the body mass index (BMI ; kg/㎡) of 180 female college students. This stady was based on survey 2001 using a questionnaire. The results are as follow ; The mean age, height, weight and BMI were 20.41 ${\pm}$ 1.82 years, 161.86 ${\pm}$ 4.51cm, 53.49 ${\pm}$ 7.02kg, and 20.43 ${\pm}$ 2.65kg/㎡, respectively. The group with BMI of under 20 (the lean group) comprised 48.9% : the group with BMI of 20 to 25 (the normal group) comprised 44.4% and the group with BMI of over 25 (the obese group) comprised 6.7% of the subjects. Even though the lean and the normal groups were determined according to BMI. 12.5% of the lean group and 31.3% of the normal group had more than 25% body fat. Of the students, 11.5% of the lean group, 25.0% of the normal group and 58.3% of the obese group had of more than 0.8 waist/Hip Ratio (WHR). The medical problems suffered by the subjects were constipation (24.4%), gastroenteritis (20.6%), anemia(15.0%) and edema(13.3%), which was a result of their eating habits. Out of all the subjects, 27.2% ingested their meals irregularly, 74.4% skipped breakfast, and 92.4% of the lean group, 89.2% of the normal group and 81.8% of the obese group ingested snacks on a daily basis. Their favorite types of snacks were cookies breads and cakes (33.7%), spicy sliced rice cakes pork sausage and boiled fish cakes (18.5%), fruits (15.2%), juices and sodas (13.5%) and hamburgers and pizzas (3.9%). Their consumption of high calorie and processed foods was high, Of the subjects, 38.9% ate out daily. 45.1% had tried weight loss. Those with large upper bodies comprised 11.5%, large intermediate bodies 18.5% and large lower bodies 69.0%. Most of the students were dissatisfied with their body snaps. Of the subjects, 95.1% exercised irregularly. Daily physical activity tended to increase significantly with an increase in BMI : the lean group's average energy consumption was 1509.40㎉ the normal group's was 1792.21㎉ and the obese group's was 2334.63㎉, which were below the recommended value. This study suggests that the maintenance of an ideal weight, the improvement of eating habits and adequate exercise are needed for female college students to improve their health and nutritional status.   • 충북지역 65세 이상 노인들의 조리실습을 병행한 영양교육의 효과를 연구한 결과에서 위생, 식습관, 영양지식, 만족도 모든 항목에서 1, 2차연구에 지속적으로 참여한 지역 (괴산, 보은, 진천)이 위생, 식습관, 영양지식, 만족도 점수 모두 유의적 (p < 0.001)으로 높은 것으로 나타났다. 고령사회에서 65세 이상 인구가 20%이상인 초고령 사회로 빠르게 진입하고 있는 우리나라 농촌지역에서는 고령층의 식생활 향상을 통한 건강증진 및 질병예방을 위한 효과적인 영양교육이 필수적이라 사료된다.

  • Objectives: To understand relations general characteristics, lifestyle habits including smoking, alcohol habit, exercise, eating habit and menopausal symptoms measurement indicators during treatment for hot flush in menopausal women. Methods: The participants were 159 women (45~60 yr) who were not currently on hormone therapy, and had reached hot flash scores of 10 or higher. The evaluating indexes of this trial are hot flush score, hot flush visual analogue scale(VAS), Hot flush consistence time, sweating visual analogue scale(VAS), Menopause Rating Scale(MRS), Menopause-specific quality of life questionnaire(MENQOL), Kupperman's Index. Results: 1. When the participants divided according to body mass index(BMI), overweight group showed a high score in all indicators. Therefore, obesity can aggravate the symptoms of menopause. 2. When the participants divided according to drinking habits, Hot flush consistence time of non-alcohol group showed a statistically significant difference. However, the sample size is uneven. Additional studies will be needed. 3. When the participants divided according to eating habits, Hot flush consistence time of regular group showed a statistically significant difference. However, the sample size uneven. Additional studies will be needed. 4. When the participants was divided depending on whether exercise, non-exercise group showed a high score in all indicators. Thus, exercise will be able to improve menopausal symptoms. Conclusions: Improvement of obesity and exercise will be able to improve menopausal symptoms.

중학교 재량활동 중 실시한 영양교육의 효과 평가 (Effects of Nutritional Education Program through Discretional Activities in Middle School Students)

  • The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.

A Study on Perceived Weight, Eating Habits, and Unhealthy Weight Control Behavior in Korean Adolescents

  • This study compared actual weight with perceived weight, described the prevalence of unhealthy weight control behavior, determined the differences in psychological and personal variables between participants that reported unhealthy weight control behavior and those who did not, and examined the relationship of eating habits to unhealthy weight control behavior for Korean adolescents. The study population consisted of a nationally representative sample of middle and high school students who completed the Fifth Korea Youth Risk Behavior Web-based Survey (KYRBWS): Fifth in 2009. Among the 75,066 participants of KYRBWS, 35,473 (n = 18,851 girls and 16,622 boys) were eligible for a research focused on unhealthy weight control behavior. The results of this research were as follows: First, there were considerable discrepancies (45.1% of girls and 32.8% of boys) between the perceived weight and the actual weight. Second, overall, unhealthy weight control behavior was more prevalent in girls and fasting was the most commonly reported behavior. Third, participants that reported unhealthy weight control behavior scored significantly lower on scaled measures of happiness, health, academic achievement, and economic status; in addition, they scored higher on stress measures. Fourth, girls and boys shared common protective factors of having breakfast and vegetables more often, perceiving their weight as underweight rather than overweight, and having a correct weight conception. Protective factors unique to girls were having lunch and dinner more often. Girls and boys shared common risk factors of the consumption of soda, fast food, instant noodles, and snacks more often, while consumption of fruit more often was a risk factor only for girls. The improvement of protective factors and minimization of risk factors through Home Economics classes (and other classes relevant to health) may mitigate unhealthy weight control behavior of adolescents.

초등학교 재량활동을 통한 영양교육 효과 - 4, 5, 6학년 영양지식과 식생활습관 개선을 중심으로 - (Effects of Nutrition Education through Discretional Activities in Elementary School - Focused on improving nutrition knowledge and dietary habits in 4th-, 5th- and 6th -grade students -)

  • In the present study, in order to improve elementary students’ nutrition knowledge and form correct eating habits, dietitian in charge executed nutrition education for 4th-, 5th- and 6th-grade students at Namchang Elementary School in Suwon, Gyeonggi-do using various educational media for five weeks and two sessions a week (a total of 10 sessions) through discretional activity classes. As for change in nutritional knowledge after nutrition education, 4th-grade students showed improvement by 24.3points(p<0.001), 5th-grade ones by 18.0(p<0.001), and 6th-grade ones by 16.7(p<0.001). With regard to change in dietary habits after education, no effect was observed in the improvement of dietary life but the score of dietary habits was improved as a whole. Nutritional knowledge and dietary habits were in a positive correlation with each other before education(r=0.406, p<0.001), but in no correlation after education. Nutritional knowledge and dietary habit practice plan were in a positive correlation after education(r=0.310, p<0.01). With regard to nutritional knowledge after nutrition education by children’s body type measured using Rohrer Index, knowledge increased significantly in normal children(p<0.001), obese children(p<0.001) and highly obese children(p<0.05) but not in slim children. the effect of education was not significant for children’s dietary habits. Practice plan showed significant changes in all of children(p<0.001). This suggests that nutrition education should be executed from early age. It is necessary to define the goals of systematic nutrition education fit for children’s level and to develop various education programs and teaching materials.

포커스 그룹 인터뷰를 이용한 젊은 성인 여성의 식생활 실태 및 관련 요인 - 사회인지론에 근거하여 - (Perception on Optimal Diet, Diet Problems and Factors Related to Optimal Diet Among Young Adult Women Using Focus Group Interviews - Based on Social Cognitive Theory -)

  • Objectives: Study purpose was to investigate perception on diet, diet problems and related factors among young adult women using focus group interviews (FGI) based on the Social Cognitive Theory (SCT). Methods: Eight groups of FGI were conducted with 47 female undergraduate or graduate students. Guide for FGI included questions regarding perception on optimal diet, diet problems and cognitive, behavioral, and environmental factors of SCT. FGI were video, audio-taped, transcribed and analyzed by themes and sub-themes. Results: Subjects showed irregular eating habits (skipping breakfast, irregular meal time) and selection of unhealthy foods as the main diet problems. Regarding cognitive factors related to optimal diet, subjects mentioned positive outcome expectations (e.g., health promotion, skin health, improvement in eating habits, etc.) and negative outcome expectations (e.g., annoying, hungry, expensive, taste). Factors that promoted optimal diet were mainly received from information from mobile or internet and access to menu or recipes. Factors that prevented optimal diet included influence from friends, lack of time and cooking skills. Behavioral factors for optimal diet included behavioral capability regarding snacks, healthy eating and smart food selection. Subjects mentioned mass media (mobile, internet, TV) as the influential physical environment, and significant others (parents, friends, grandparents) as the influential social environment in optimal diet. For education topics, subjects wanted to learn about healthy meals, basic nutrition, disease and nutrition, and weight control. They wanted to learn those aspects by using mobile or internet, lectures (cooking classes), campaign and events. Conclusions: Study results might be used for planning education regarding optimal diet for young adult women. Education programs need to focus on increasing positive outcome expectations (e.g., health) and behavioral capability for healthy eating and food selection, reducing negative outcome expectations (e.g., cost, taste) and barriers, making supportive environments for optimal diet, and incorporating topics and methods found in this study.

학령후기 아동의 자기효능감과 건강증진행위와의 관련요인 연구 (A Study on the Factors Related to Self-Efficacy and Health Promotion Behavior of the Late School-Aged Children)

  • To study the factors related to self-efficacy and health promotion behavior of the late school-aged children, the questionnaire survey was conducted on 285 students from elementary schools in Daegu metropolitan city from September 3 to september 14, 2012. Correlation analysis showed that there was significantly normal correlation between self-efficacy and health promotion behavior of elementary school students and in correlation according to each sub-area, exercise area showed the highest correlation, followed by stress area, self-realization area, personal relations area, eating habits area, and responsibility for health area. It is considered that the level of health promotion behavior in the areas of low stress management and responsibility for health found in the results of the study will be able to be higher if schools and homes prepare so as to enhance the students' belief in health promotion behavior with mental stability by developing the programs for the improvement of eating habits in the group with low self-efficacy and especially, recognizing the necessity of stress management.

Students' dietary habits, food service satisfaction, and attitude toward school meals enhance meal consumption in school food service

  • BACKGROUND/OBJECTIVES: This study aimed to compare student consumption of school meals by school level, to identify the influencing factors of school meal consumption, and to assess improvement needs of school food service among students. SUBJECTS/METHODS: A total of 1,441 elementary, middle, and high school students attending 58 schools in Gyeonggi-do, South Korea participated in the survey in 2015. A questionnaire and informed consent forms for students and legal guardians were sent home and completed responses were returned to the researcher. RESULTS: Approximately 58% of the students perceived the portion sizes of school meals as appropriate and 76.1% consumed almost all or all of the meals served. More elementary and middle school students than high school students consumed almost all or all of the meals (P < 0.001). A regression analysis revealed that the students with a higher dietary behavior score (P < 0.001), higher satisfaction with food service (P < 0.001), a higher environmental protection practice score (P < 0.05), and more positive attitudes toward school meals (P < 0.01) consumed significantly more meals. The provision of foods that taste good and reflecting student opinions on menus were the most important factors for increasing school meal consumption. CONCLUSIONS: To increase consumption of school meals, food service staff should provide students with quality meals and engage students in school food service. Nutrition education that emphasizes healthy eating behaviors and cafeteria environment modification that applies strategies based on behavioral economics can encourage students to consume more school meals.
