Comparison of the antioxidant and physiological activities of grape seed extracts prepared with different drying methods (건조방법에 따른 포도씨의 항산화 활성의 변화)

  • The physiological activities of 70% ethanol extracts of grape seed (GS) prepared by freeze-drying (GSFD), infrared drying (GSIR), hot-air drying (GSHD), or sun-drying (GSSD) were investigated. The moisture contents of GSFD, GSIR, GSHD and GSSD powders were 4.53, 6.71, 6.91 and 5.55% respectively. Hunter's color value analysis revealed that the $L^*$ value of GSIR was lower, and the $a^*$ and $b^*$ values of GSIR were higher, than those of GSFD, GSHD, and GSSD. The total polyphenol and proanthocyanidin contents of GSFD were significantly higher than those of the other extracts. The flavonoid related substance contents were in the order of GSFD (7.68 g/100g) = GSSD (7.59 g/100g) = GSHD (7.33 g/100g) > GSIR (6.45 g/100g). The electron donating abilities of $500{\mu}g/mL$ solutions of GSFD, GSIR, GSHD and GSSD were 88.71, 52.62, 65.20, and 65.22%, respectively, while their reducing powers ($OD_{700}$) were 1.633, 1.097, 1.217 and 1.054 absorbance units, respectively. Additionally, the same trend was observed for the ABTS radical-scavenging abilities of the extracts as that observed for their electron-donating abilities and reducing powers. These results suggest that GSFD is the best method for preparing GS extracts with enhanced antioxidant activities, and that GS extracts may be used as a natural antioxidant material for use in health foods.

The Characteristics of Cookie and Muffin Made with Soybean Paste Powder and Sun-Dried Salt (천일염 된장분말을 첨가한 쿠키와 머핀의 특성연구)

  • Recipes for cookies and muffins made with soybean paste and sun-dried salt were established and characteristics of the foods were investigated. On Hunter's color scale, 'L' values decreased and brightness was lowered as additive levels increased, whereas the 'a' value(redness) increased and the 'b' value(yellowness) decreased. The hardness of a control muffin was 1843 g and this increased as additive levels rose. Cookies showed the same tendency. Elasticity was not proportional to paste content whereas crispness increased as additive levels increased. Sensory evaluations of cookies and muffins with different soybean paste contents(0-8%, w/v) showed that additive at 1% (w/v) was best and additive at 8%(w/v) was unacceptable. All products scored poorly 48 h after preparation; freshness needs to be investigated further.

Cooking Quality Characteristics of Cooked Rice of $YenipSambab$ with Pigmented Rice (유색미 첨가가 연잎쌈밥용 밥의 품질 특성에 미치는 영향)

  • The quality characteristics of yenipsambab prepared using various amounts of red, green, and black pigmented rice (0, 10, 20, and 30% added) were investigated. The pH of the cooked rice of yenipsambab decreased significantly as the amounts of pigmented rice increased. The Hunter's color L value decreased, but the b value increased with increasing amounts of pigmented rice. Moreover, the addition of 10-30% pigmented rice resulted in increased hardness, adhesiveness, cohesiveness, springiness, chewiness, and brittleness compared to the control. Finally, the results of the sensory evaluation and acceptance test showed that the cooked rice containing 10-20% pigmented rice had the highest scores. This study will help in the development of new rice products that are good for the health.

Effect of Irradiation Temperature on Physicochemical and Sensory Properties of Tarakjuk (Milk Porridge) (방사선 조사 온도가 타락죽의 이화학적 및 관능적 품질 특성에 미치는 영향)

  • This study was conducted to evaluate the effects of irradiation temperature on the physicochemical and sensory properties of Tarakjuk, milk porridge. Tarakjuk was gamma-irradiated at different temperatures of $25^{\circ}C$ (in room), $4^{\circ}C$ (in ice), and $-20^{\circ}C$ (in dry ice) at a dose of 10 kGy, and then autoclaved at $120^{\circ}C$ for 15 min for comparison. pH and Hunter's color value of Tarakjuk were not changed by irradiation regardless of the temperature. However, the TBA (2-thiobarbituric acid) value decreased as irradiation temperature was decreased. The viscosity of Tarakjuk irradiated in dry ice was significantly higher than that irradiated at room temperature and in ice (p<0.05). For the sensory evaluation, there were no significant differences in overall acceptability between non-treated Tarakjuk and that irradiated in dry ice. Flavor pattern analysis using an electronic nose with a SAW (surface acoustic wave) sensor determined that the main peaks at retention times 3.88 and 7.34 sec were related with off-flavor induced by irradiation and unique flavor of Tarakjuk, respectively. These results indicated that irradiation at freezing temperature improved quality deterioration of Tarakjuk by gamma irradiation. However, sensory quality of Tarakjuk irradiated at freezing temperature was still lower than that of non-irradiated Tarakjuk. Therefore, further research is needed to improve the quality of Tarakjuk using combined treatment such as addition of antioxidants and vacuum packaging method.

Effects of Rain-shelter Types on Growth and Fruit Quality of Red Pepper (Capsicum annuum L. var. 'Keummaru') Cultivation in Paddy (고추 논재배 시 비가림형태가 생육 및 과실 품질에 미치는 영향)

  • This study was carried out to investigate the effects of rain-shelter types on growth, and fruit quality of red pepper (Capsicum annuum, 'Kemmaru') cultured in paddy. Applied rain-shelter types were outfield (control), simple rain-shelter plastic house with 2 rows (2R), simple rain-shelter plastic house with 4 rows (4R), and perfect plastic house (House). The plant height was the highest in Houses treatment. There was no difference in leaf length and width among the rain-shelter treatments. The fresh and dry weight of red pepper was high in order of House > 4R > 2R > Control. The ASTA value is irregular tendency among the treatments. Hunter's color value 'a' and 'b' was not different from among the treatments. Phytophthora blight, powdery mildew, bacterial spot were not occurred in all of treatments, and Anthracnose was only occurred in control. Mite, Microcephalothrips abdominalis, and Bemisia tabaci were not occurred in all of treatments, and aphid, Helicoverpa assulta, and virus were occurred all of treatments as same degree. Our results will provide rain-shelter cultivation of red pepper can be increase dry yield and decrease disease and insects.

Quality Characteristics and Antioxidant Activities of Black Rice Muffins Added with Chito-Oligosaccharide (키토올리고당 첨가 흑미 머핀의 품질특성 및 항산화성)

  • The purpose of this study was to investigate the quality characteristics and antioxidant activity of black rice muffins prepared with various concentrations of chito-oligosaccharide(0, 0.5, 1.0, 1.5, 2.0%). The the weight of the groups with chito-oligosaccharide was higher than that of the control group, but the height, volume, and specific volume of the groups with chito-oligosaccharide were lower than those of the control group. The moisture contents increased with the addition of chito-oligosaccharide. The pH decreased significantly with the addition of chito-oligosaccharide. The L value of Hunter's color decreased, but the a and b value increased significantly with the addition of chito-oligosaccharide. The muffin without the chito-oligosaccharide was the highest hardness. The textural properties revealed the cohesiveness, chewiness, and brittleness of groups with chito-oligosaccharide increased significantly with the addition of chito-oligosaccharide. Antioxidant activities of muffins increased as the amount of chito-oligosaccharide increased.

Effect of Feeding Rye Silage on Growth Performance, Blood and Carcass Characteristics in Finishing Pigs (호맥 사일리지의 급여가 비육돈의 생산성, 혈액 성상 및 도체 특성에 미치는 효과)

  • This study was conducted to evaluate the effects of feeding rye silage on growth performance, blood and carcass characteristics in finishing pigs. The total of eighteen $(Landrace{\times}Yorkshire{\times}Duroc)$ pigs $(94.03\pm0.71kg)$ were used in a 28-days assay. Dietary treatments included 1) CON(commercial diet ME 3,350 kcal/kg and crude fiber $2.84\%$), 2) T1(ME 3,294kcal/kg and crude fiber $2.99\%$ diet with rye silage $1.66\%$) and 3) T2(ME 3,237kcal/kg and crude fiber $3.15\%$ with rye silage $3.32\%$). In growth performance, total feed intake, basal feed intake and average daily feed intake were significantly higher in T1 and T2 treatments than CON treatment(P<0.05). Cortisol concentration in blood of pigs fed rye silage was significantly decreased compare to pigs fed CON diet(p<0.05). In meat quality characteristics, the hunter's $L^*$ value and marbling of pork were the highest in T2 treatment among treatments (P<0.05). Fatty acid composition in lean meat, the composition of palmitic and arachidic acid were significantly Higher in CON than others(P<0.05), also, palmitoleic acid was highest in T2 treatment among treatments(P<0.05). In fats those, palmitic and arachidic acid were the highest in CON treatment than those of other treatments(P<0.05). Digestibility of dry matter and nitrogen in pigs fed T1 and T2 diets were greater than that of pigs fed CON diet(p<0.05). Propionic acid concentration of fecal was the highest in T1 treatment among treatments(P<0.05). In conclusion, feed intake, the hunter's $L^*$ value, meat color of sensory evaluation and marbling of pork were affected by $3.32\%$ rye silage feeding.

Antioxidant Activity and Quality Characteristics of Soy Milk Mayonnaise Containing Soybean Paste Powder (된장분말을 첨가한 두유마요네즈의 항산화성 및 품질특성)

  • In this study, antioxidant activity and quality characteristics of egg yolk mayonnaise and soy milk mayonnaise containing soybean paste powder were assessed. The mayonnaise with egg yolk as an emulsifier is E group according to the amount of soybean paste powder addition of 0% (E1), 3% (E2), 6% (E3) and mayonnaise with soy milk as an emulsifier is S group with soybean paste powder addition of 0% (S1), 3% (S2), 6% (S3). Total phenol content and electron donating ability of mayonnaise were increased as the amount of the soybean paste powder increased. L value of Hunter's color was decreased, but a value and b value were increased as the amount of the soybean paste powder increased. Soy milk mayonnaise showed very low cholesterol content than egg yolk mayonnaise. In sensory evaluation, S2 received the highest scores for flavor, overall taste and preference. Base on these results, soybean paste powder showed significant antioxidant activity in mayonnaise and cholesterol content was successfully decreased in soy milk mayonnaise compared to egg yolk mayonnaise. The soy milk mayonnaise with soybean paste powder will be a possible model to introduce our traditional food to the worldwide food item, such as mayonnaise.

Textural and Sensory Characteristics of Gamma Irradiated Porridges (감마선 조사된 시판 분말죽의 물성 및 관능특성)

  • Effect of gamma irradiation on porridge viscosity was studied. Vegetable, beef and pine nut dry flour porridges were irradiated at 0, 2.5, 5, 7.5 and 10 kGy, and rheological characteristics and sensory qualities of irradiated porridge were evaluated. Hunter color lightness were decreased, while redness were increased in dry flour porridge with the increase of irradiation dose. Firmness, consistency, cohesiveness and viscosity of dry flour porridge were significantly decreased with the increase of irradiation dose (p<0.05). Vegetable, beef and pine nut dry flour porridges at dose of 10 kGy reduced the viscosity with 93%, 71% and 55%, respectively Irradiation greatly reduced the viscosity of porridges, probably by starch depolymerization. Irradiation increased the total solids and thus, can improve the calorie up to 30 ㎉. Gamma irradiation was effective in enhancing calorie value of porridge due to reduction of viscosity. As a result of sensory evaluation, overall acceptability and the quality characteristics of irradiated porridges (up to S kGy) were not significantly different from those of the control (p<0.05). In the vegetable porridge, the irradiated porridge at dose of 2.5 kGy was a significantly better overall acceptability than the non-irradiated porridge (p<0.05).

Physicochemical and Organoleptic Characteristics of Short Grain Rice, Long Grain Rice and Puffed Rice Powder Added Takju during Fermentation (단립종쌀, 장립종쌀 및 팽화미분을 첨가한 탁주의 양조 중 이화학적 및 관능적 특성 평가)

  • The pH, acidity, protein, color, reducing sugar, total sugar, alcohol and organoleptic characteristics of Takju containing 100% short grain rice (100 S), 100% long grain rice (100 L), 50 S+50% puffed rice powder (50 P) and 50 L+50 P were examined. After a drastic decrease during the initial stage of fermentation, the pH gradually increased except 100 L. Protein peaked at day 1 and decreased. A higher protein was noticed in puffed samples than in rice samples (p < 0.05). The Hunter "L" value decreased after a rise during the beginning of fermentation. Puffed samples showed higher reducing sugar than rice at day 0. Total sugar was similar to reducing sugar. A drastic increase in alcohol concentration was detected at day 2. Higher alcohol was observed in short grain than long grain and also in puffed samples than in rice (p < 0.05). A significant difference between 100 S and 100 L was observed in a sensory evaluation (p < 0.01); while no preference was detected.
