A Study on the Job Attitude of Cook at Deluxe Hotel in Kyongju(II) - An Analysis on Development of Technics, Cook and Food Industry - (경주지역 특급호텔에 종사하는 조리사들의 직무에 대한 실태와 의식조사 연구(II) -조리사들의 조리기술과 조리사 및 외식산업의 발전에 관한 견해-)

  • A survey was conducted to get information on the job attitude of cooks working for deluxe hotels at Bomun, Kyongju. Total 203 cooks participated the survey and the results were as follows: They believed that the most important factor for good cooking is the deep attention. Although 51% of the cooks estimated their level of expertise as average, 64% of them believed that their level of cooking is higher than those of other areas. They indicated that an important factor to be a good cook is a sincere attitude but not an academic background or knowledge. However, they believed that their insufficient knowledge on cooking is the greatest hinderance for improvement of cooking skill. For promotion, the ability of cooking and human relationship were indicated as important factors. Cooks for Korean dishes had the best prospect, while Western cooking had relatively lower prospect among them. For the improvement of hotel cooking department, a recruitment of superior manpower, adjustment of hotel policy, expanded study opportunity, and proper arrangement of equipments were suggested in order.

The Effects of Growth Needs and Job-esteem on Customer Orientation: The mediating Role of Psychological Ownership (호텔직원의 성장욕구와 직업존중감이 고객지향성에 미치는 영향: 심리적 주인의식의 매개효과를 중심으로)

  • The purpose of this study is to research service industry employees performance in Seoul's deluxe hotels can improve based on aspects of growth needs in professional development, job esteem, and customer orientation. How growth needs and job-esteem affect employees' customer orientation is important to try and discover the mediating effect that the employees' psychological ownership contributes to the relationship between growth needs, job-esteem, and customer orientation. According to the results, growth needs and job-esteem effect to customer orientation and an employees' psychological ownership has a mediating effect between growth needs, job-esteem and customer orientation. Based on these findings, critical theoretical and practical implications, as well as future research suggestions, have been provided for hotel managers to aid in employee management.

Economic Performance: Leading Sector, Economic Structure and Competitiveness of Export Commodities

  • Purpose: The purpose of this study is for the leading sector, a pattern of shifting structure of the economic sector, and community export competitiveness on the economy Malinau Regency. Research design, data, and methodology: The type of data used is secondary data with a quantitative approach of 2009-2018. The study data used Location Quotient (LQ), Shift Share Analysis (SSA), and Revealed Comparative Advantage (RCA) analysis tools. Results: There are 6 leading sectors: agriculture; electricity, gas, and clean water; building and construction; trade, hotels, and restaurants. That has been classified has changed the economic structure of the Malinau Regency from the secondary sector to the tertiary and primary sectors in 10 years. While, community export competitiveness of the Malinau Regency through RCA Analysis, see if the export products of coal and excavation (types A, B, C) are shown to have a higher comparative advantage with comparative advantage. This shows that only a few commodities that can provide the good performance of export. Conclusions: Analysis of economic growth in the Malinau Regency after regional autonomy shows that there has been a shift in the economic structure of the economy which is dominated by the structure of the primary sector.

Experimental Study on the Performance Improvement of a Simultaneous Heating and Cooling Heat Pump in the Cooling-main Operating Mode (냉방주체 운전모드에서 동시냉난방 열펌프 성능향상에 관한 실험적 연구)

  • The cooling load in winter is significant in buildings and hotels because of the usage of office equipments and the improved wall insulation. Hence, a multi~heat pump is required to cover heating and cooling simultaneously for each indoor unit. In this study, the operating characteristics and performance of a simultaneous heating and cooling heat pump in the cooling-main operating mode were investigated experimentally. The system adopted a variable speed compressor using R410A with four indoor units and one outdoor unit. In the cooling-main mode, the heating capacity decreased due to reduction of flow rate to the indoor unit under heating mode operation. The EEV opening was adjusted to increase flow rate to the indoor unit under heating mode operation. The total capacity and COP in the cooling-main mode increased by 20.5% and 29.2%, respectively, compared with those in the cooling-only mode.

Paradoxical Leadership and Proactive Work Behavior: The Role of Psychological Safety in the Hotel Industry

  • This study aims to identify the influence of paradoxical leadership on proactive work behavior mediated through psychological safety in the hotel industry. This study employs survey data of five-star deluxe hotels in South Korea using convenience sampling. The number of 270 cases was used for analysis and the hypotheses were analyzed with structural equation modeling and AMOS 20. Paradoxical leadership includes five sub-variables of self-centeredness with other-centeredness (SO) distance and closeness (DC), uniformly and individualization (UI), work requirements and flexibility (RF), and decision control and autonomy (CA). The results indicate that DC, UI, and CA positively influence psychological safety. Further, RF and CA make a positive impact on proactive work. Psychological safety fully mediates the effect of DC and UI on proactive work behavior and partially mediates the effect of CA on it. The findings of this study suggest that the impact of paradoxical leadership on proactive work behavior can be strengthened when this relationship is accompanied with psychological safety and other mediation variables for the relationship need to be further investigated. This study suggests how hotel managers enhance the level of proactive work behavior by training themselves to be paradoxical leaders and making psychologically safe environment.

A Study on Spatial Structures of Suwon in the Japanese Colonial Period (일제강점기 수원의 도시공간구조에 관한 연구)

  • After opening Suwon railway station in 1905, a new road was constructed between Suwon station and Paldalmun(the South gate). It was the starting point to change urban structures of Suwon and shape the new city scape. In 1914, administrative districts of Suwon were reorganized. Suwon-myeon (township, a subdivision of Suwon-gun) was promoted to Suwon-eup(town) in 1931. Suwon-eup expanded its territory and changed the address system from 'li(里)' system to Japanese address system, 'Jeong(町)' in 1936. From 1920s, road system was changed and transformed Suwon's urban structures. A straight road was built from Jongro intersection to Janganmun(the north gate) in 1928. Another straight road was constructed between Suwon station to Padamun in the early 1930s. Public office buildings used the Hwa Seong HaengGung(華城行宮) and some of building moved to new location with new buildings. Main buildings of most schools in Suwon were reconstructed since 1930s. Commercial buildings and stores were sprung up and had their own characteristics by region. Around Suwon station, there are more hotels and restaurants than other areas. Rearranging administrative areas, developing road system and new buildings transformed Suwon's spatial structures. Constructing new roads formed a straight road passing through Suwon. After reorganizing administrative areas, this road turned to be the central axis of Suwon. Buildings in new style on the axis made the modern cityscape in Suwon.

Comparison of forecasting performance of time series models for the wholesale price of dried red peppers: focused on ARX and EGARCH

  • Dried red peppers are a staple agricultural product used in Korean cuisine and as such, are an important aspect of agricultural producers' income. Correctly forecasting both their supply and demand situations and price is very important in terms of the producers' income and consumer price stability. The primary objective of this study was to compare the performance of time series forecasting models for dried red peppers in Korea. In this study, three models (an autoregressive model with exogenous variables [ARX], AR-exponential generalized autoregressive conditional heteroscedasticity [EGARCH], and ARX-EGARCH) are presented for forecasting the wholesale price of dried red peppers. As a result of the analysis, it was shown that the ARX model and ARX-EGARCH model, each of which adopt both the rolling window and the adding approach and use the agricultural cooperatives price as the exogenous variable, showed a better forecasting performance compared to the autoregressive model (AR)-EGARCH model. Based on the estimation methods and results, there was no significant difference in the accuracy of the estimation between the rolling window and adding approach. In the case of dried red peppers, there is limitation in building the price forecasting models with a market-structured approach. In this regard, estimating a forecasting model using only price data and identifying the forecast performance can be expected to complement the current pricing forecast model which relies on market shipments.

Physiological Responses of the Chicken Grunt Parapristipoma trilineatum to High Water Temperature Stress (사육수의 고수온 스트레스가 벤자리(Parapristipoma trilineatum)에 미치는 생리학적 영향)

  • We investigated the effects of water temperature on physiological parameters in the chicken grunt Parapristipoma trilineatum. At high temperature, the aspartate aminotransferase (AST) and the alanine aminotransferase (ALT) levels were increased, suggesting that high temperature induced hepatic damage. In addition, total protein (TP) was high at high water temperatures, which were considered stressful in the breeding environment. At high water temperatures, triglycerides (TG) were low due to increased metabolic activity, which decreased the blood TG levels as TG were used as an energy source. There was no significant difference in the plasma osmolality or the blood ion concentrations with water temperature. In generally, lysozyme, a factor in innate immunity, increased with water temperature. However, lysozyme activity tended to decrease with increasing water temperature, but the difference was not significant. These results suggested that the decrease of biophylaxis at high temperature was affect the growth or survival of the population.

  • The development of technology based on digital technology has made 'hyper connectivity' between different services a reality, and an example of this is the reinforcement of non-face-to-face services. The non-face-to-face service is a service provided by service providers and customers using information and communication and technology without direct contact. Recently, it has expanded to the hotel industry, which is highly dependent on human resources, centering on the restaurant business. Therefore, this study attempted to identify the case of the "R" hotel in the Gangwon region, which is introducing and operating a kiosk, and to confirm the matters to be considered, the system operation method, and expected effects, etc. for hotels that intend to operate it in the future. It is difficult to affirm that the introduction of KIOSK directly reduced labor costs or increased service efficiency, but it seems meaningful that it has improved the convenience of users. In future research, practical research is needed on the impact of the system on management activities in relation to the introduction of KIOSK.

  • Purpose - The quality of the hotel depends on the Oriental arts established. Customers tend to believe that high prices reflect the offered services. This research expounds on the effects of Oriental interior designs in the hospitality industry in enhancing hotel profitability, opportunities for development, and the growth of urban hotels. Research design, Data, and methodology - This study conducted the comprehensive literature analysis to obtain suitable contents about the effect of Oriental Art for Urban Hotel Business Plan. the literature analysis method systematically assesses the value of qualitative data. Resources are organized into groups using a coding frame. Result - The adoption of the Oriental arts in the interior designs in the hotel industry will lead to customer attraction, improved competitive advantage, customer loyalty, and the preservation of the societal values of culture. Therefore, the marketing practitioners should adopt oriental arts as an integral aspect of interior designs to enhance customer satisfaction Conclusion - Marketing practitioners also use the oriental arts to enhance customers' willingness to pay. This is because oriental arts serve as the cues that enable the consumers to feel that the hotel's products are of quality. When oriental arts are used in interior hotel designs, the customer's willingness to pay increases. Thus the firm's relationships with customers are boosted.
