  • 본 연구는 호텔 미쉐린가이드 레스토랑의 선택속성이 고객행동의도 간의 영향 관계와 호텔 브랜드이미지를 변수를 투입함으로서 조절효과가 있는지에 대한 영향관계를 규명하고자 하였다. 최근 서울지역 호텔 내에 입점하고 있는 호텔 미쉐린 레스토랑을 경험해본 고객을 대상으로 편의표본추출을 사용하였으며, 2020년 7월 1일부터 부터 약 60일간 진행되었다. 선행연구를 통해 구성된 설문도구는 서울지역 호텔 내의 위탁 운영 중인 미쉐린 레스토랑을 경험해본 고객을 대상으로 배포하였으며, 수집된 유효표본 287부를 SPSS 22.0을 사용하여 통계처리 하였다. 본 연구의 실증분석결과 선택속성의 요인 중 물리적환경, 음식품질, 서비스품질, 편리성은 고객행동의도 간에 유의한 정(+)의 영향이 있는 것으로 나타났으나, 가격공정성은 영향관계가 없는 것으로 나타났다. 마지막으로 선택속성과 고객행동의도 간의 상호작용변수를 투입함으로서 물리적환경과 서비스품질 변수에 조절효과가 있음을 발견하였다.

  • This study informs us what has influence on a decision that a customer using a hotel restaurant makes on a menu. Also, you can know how long it takes to decide what they are going to eat, how prompt and different they are. When the customers order food, they are getting very careful about their decisions. According to the study results, sometimes they are influenced by the person whom they accompany with. The most important factors to make customers choose one dish from a wide range of menu are taste of food, food sanitation, price, freshness of food materials. An atmosphere of a restaurant or its reputation, service of employees are key factors, too. You need change to reflect desire of a customer, and problems of a restaurant must be checked thoroughly. Many different kinds of food must be developed and managed thoroughly.

  • This research aimed to assess the relationships between restaurant production strategies, service systems, and business performance. The sample included 202 questionnaires collected from exclusive high-end hotels located in the Seoul area of Korea. The questionnaires were analyzed using SPSS 12.0. The hypotheses were verified by applying frequency analysis, reliability analysis, factor analysis, correlation analysis, and regression analysis. The results are summarized as follows. First, it was found that the F&B production strategies of the hotel restaurants had a positive (+) effect on business performance. Second, the F&B production strategies positively influenced the service system, and the service system had an effect on business performance.

호텔레스토랑 종사원의 감성지능이 조직몰입과 고객지향성에 미치는 영향관계에 대한 연구 (The Influence of Hotel Restaurant Employee's Emotional Intelligence on Organizational Commitment and Customer Orientation)

  • This study was performed to verify the importance of emotional aspect for hotel employees to derive the organizational commitment and customer orientation. Present study estimated the emotional intelligence as four factors: self emotion, other emotion, emotional utilization, and emotional regulation. Online survey method was used and distributed the questionnaires to hotel employees who are working for restaurants. A total of 300 questionnaires were distributed and 257 participants were employed for statistical analysis using SPSS 21.0 and AMOS 21.0 for Windows. As results, two factors(emotional utilization and emotional regulation) were significant antecedents of organizational commitment, and three factors(self emotion, other emotion, and emotional utilization) were critical predictors of customer orientation. In addition, organizational commitment has significantly influenced the customer orientation. According to the results of this study, hotel restaurant managers or hotel company need to understand the importance of the emotional intelligence for providing better service to their customers as well as improving the organizational commitment. These results will contribute to develop advanced marketing strategics for hotel restaurants employees who have many connections with customers in a hotel.

호텔레스토랑 조리직무의 평가에 관한 연구 (A Study on the Performance Evaluation of Cook in Hotel Restaurant)

  • The purpose of this study looks for the directions to improve the performance evaluation of cook by examining the perceptions for performance of cook by supervisors in hotel restaurant. In order for this purpose, this study focuss on two areas: (1) the significant differences of each hotel type on the perceptions of each performance evaluation item, (2) the significant differences of each kitchen type on the perceptions of each performance evaluation item in terms of two different types of hotel. To examine (1) and (2), this study uses Student t test and anova analysis. The findings from this study have both theoretical and practical implications. Implications of these findings are discussed.

  • 호텔 기업은 경영 방법 및 판매 이익을 향상시키기 위해서는 서비스를 개선해야만 달성할 수 있으며, 호텔 및 외식업 시장의 관리 시스템에 대한 부족한 것들과 비교되는 부분들이 많은 실정이다. 그 분석 결과에 대한 내용은 다음과 같습니다. 자유스럽고 열린 호텔 기업 문화는 외부 환경 변화에 유연하고 탄력적으로 대처하며 좋은 기업 문화는 직원, 고객, 원가, 재고 관리에 효율적인 결과를 창출한다. 호텔 레스토랑 성향은 효과적인 서비스 질, 경영 관리에 중점을 두고 호텔 경영 방식은 다른 서비스 질과 품질 및 조직성과 영향을 미치는 것으로 분석되었다. 추후에 호텔 경영 방식에 따라 경쟁 우위 확보를 강화해야 기업이 살아남는 방법 중의 하나이다. 호텔 기업에 대한 다양한 연구가 계속되고 결과가 호텔 경영진이나 종사자들에게 도움을 줄 것으로 기대한다.

  • 호텔 레스토랑의 경우, 이용하는 목적에 따라 선택하는 업종이나 메뉴에 큰 영향을 받으며 호텔의 특성을 규명하여 그에 맞는 전략을 세우는 것이 필수적인 사항이다. 따라서 본 연구의 목적은 같은 성향을 가지고 있는 고객이라도 방문목적이나 호텔이 가지고 있는 이미지, 그 특성에 따라 선호하는 메뉴가 달라지는 것을 규명하고, 전략적인 메뉴관리의 기초데이터를 제공하는 것이다. 조사방법은 특 1급 호텔의 이태리 레스토랑을 대상으로 하여 고객층, 이용목적 등의 특성을 규명하고, 각 호텔들의 메뉴 매출 자료를 토대로 선호메뉴를 분석하여 그 호텔특성에 따른 선호메뉴를 분석하였다. 그 결과 비즈니스와 식사목적의 방문이 많은 편인 호텔들은 일반 알라카트 메뉴들이 강세를 보였으며, 특히 가족식사인 경우 세트메뉴의 선호도가 높았다. 테마파크 주변의 호텔은 이벤트 메뉴가 활성화 되어 있으며 그 선호도 또한 높은 것으로 나타났다. 본 연구자료는 메뉴선택에 대한 정확한 이해를 바탕으로 고객이 요구하는 메뉴를 제공함으로써 이익 증대를 가져올 뿐만 아니라 고객의 만족에 크게 기여할 수 있는 기초자료로서의 역할을 할 것이다.

  • Effect of Menu Calorie Labels on Menu Sales and Consumer's Recognition at a Korean Restaurant in a Hotel The role of calorie information is to help consumers make healthier food choices. However, calorie information is generally unavailable in restaurants. Even in high-end hotel restaurants, which try to provide high quality foods and service, calorie labeling is not mandatory. Therefore, the purpose of this study was to evaluate the effect of calorie labeling on menu sales and consumer's recognition at a Korean restaurant in Kangwonland hotel. The calorie contents of 10 dishes sold in the restaurant were calculated using the food composition table. After making a new menu plate displaying calorie information, the new menu plate and old menu plate were provided every other week for 4 weeks. When we compared the sales between the periods of calorie labeled and calorie unlabeled, sales of 4 items among the 5 food items providing less than 1000 kcal, increased, however the 3 items among the menu providing more than 1000 kcal decreased. As the survey results of total 405 consumers (male n = 232, female n = 173) showed the new menu plate, 68.2% of subjects recognized calorie labeling on the menu plate. Among the subjects who recognized calorie labeling, 58.3% answered that calorie information affected their food choices. And most of them answered that they chose lower calorie foods based on the information provided. The results suggest that displaying calorie information on the menu plate at a Korean restaurant was effective in changing consumer's food choices.

  • In the present situation of national economy crisis, known as IMF, the hotel and tourist industry are undergoing financial difficulties. Particularly the hotel food and beverage business has experienced a significant reduction in sales. The results of the case study of the wheat noodle restaurant of the A hotel prompt for a change in business style and management. After researching menu, business records and other factors, it was recommended to open a new korean style restaurant in place of the current one. It was also recommended to include noodle dishes into menu in order to keep old customers. Besides, these changes, considering the fact that the noodle restaurant typically has a peak hour at lunch time, and the Korea one at dinner, will be quite practically useful in proper personal management in the service aspect.

The Causality Analysis of the Impact of a Hotel Chief's Competency on Job Satisfaction and Customer Orientation : Focusing on Control Impact of Organization Concentration

  • Purpose - The purpose is to identify a structural effect relationship among a hotel chef's personal competency, job satisfaction and customer orientation. Moreover, this research tries to provide implications regarding effective human resource management strategies based on competency to strengthen job satisfaction and customer orientation by testifying the effect relationship of job satisfaction with the relationship between personal competency and guest orientation. Research design, data, methodology By targeting chefs working in five starred hotels in Seoul, the surveys have been distributed from April 1st of 2017 to April 20th of 2017 (approximately 20 days). Out of 300 distributed surveys, 250 were collected, and 246 were used, excepting 4, unhonestly answered. Results - It has been analyzed that a hotel chef's personal competency, self-control ability, customer orientation competency, interpersonal relation competency, gumption, and professional competency has a significant effect on job satisfaction, however, it has been identified that gumption has no impact on job satisfaction. Job satisfaction has a significant impact on customer orientation. Lastly, there is a control effect on job satisfaction and customer orientation by organizational commitment Conclusions - It is able to propose the solutions to improve customer orientation, job satisfaction and organizational commitment of a hotel chef and the ways for human resource management.
