Objectives: This study aim to determine adolescent meal time, which provides the important context of parent-child sharing time. We divided mealtime into family meal and alone meal, and analyzed the time/space context of each meal time as well as the social determinations. Method: We employed adolescents age 10-18 who live with married patents and attends school at the present (n=5,128) from the original data of Korean Time Use Survey. Results: More adolescent were engaged in family meal rather than eating alone in daily bases. However, the trend show difference by day of week and academic grade; family meal are more prevalent in weekends rather than weekdays. As adolescent reaches high school age, the proportion of eating alone beats the proportion of family meal time. Most of the meal occur at home. Having meal outside was relatively scares, especially on weekdays. Tobit and logistic analysis reveal that, on weekday meal, less school hours, more time spent at the private academy, having family leisure event, and long mother's housework hours were positively associated with family meal time. In weekend model, father's education gradient was associated with family meal time, showing higher the father's education level, there were higher chance of having weekend family meal. As for the eating alone, relevant factors were similar with family meal but the directions were the opposite; having family leisure were negatively associated with alone meal, both weekdays and weekend. Long academy hours, meal preparing and leisure alone were positively associated eating alone. Overall, weekday meal time was strongly linked with adolescent daily schedules and time use, while for weekends meal, in both family meal and alone meal, the influence of parent factors were discovered. Conclusion: The results indicates that alone meal and the family meal are not exclusively related but seem to be complementary. Families tend to enjoy family meal yet, there are some necessary situation that adolescent need to be on their own. Increase in ready-made food industries, growing independence of children by age seem partly allow adolescent children to eat alone. Careful attentions may require for monitoring weekends meal situation and the family factor of adolescent in future studies.
This study was to calculate the minimum food expenditure by using OR linear program, and to determine the food plans for different income values based on the recommenced dietary allowances(RDA) for Koreans. VAX 11/780 system was used in this study. There were 6 family models-single man, single woman, married couple, couple with one child, couple with 2 children and couple with 2 children & grandmother. The market price quoted in this study was from July 1989 to June 1990 and the data file was made from RDA & food composition tables. After the minimum food expenditure was calculated from the computer, the low cost food plan was set. From the low cost food plan, we set the moderate cost food plan 25% above the low cost and the liberal food plan 50% above the low cost. One week menu was planned for different food plans. The low cost food plan could be used not only at the institutional levels and at home but also used at the national food policy making for scientific budget planning and for nutritionally well balanced diet. These food plans could control the use of time and efforts, too.
The purpose of this study was to investigate the preparation patterns of traditional fermented soybean products(jang) from the housewives living in Yangsan. 89.4% of the respondents used once a day, every meal and the frequency of eating was higher with getting older. 70% answered that the taste of their homemade doenjang was good, while only 2.5% were not be satisfied with their doenjang. According to the survey, 82.2% of the housewives used the meju made by the traditional method for jang preparation, of which perparation patterns showed remarkablely in the housewives living in the independent home. On the other hand, we could see that the amount of jang preparated one time in each home of Yangsan region was approximately 6∼10kg or 16∼20kg. The hard tasks of jang preparation were seasoning, storing and meju preparation. Especially, housewives living in the communal house had a difficulty in storing of jang. But most wants to continue to prepare jang by traditional method at home.
This study analyzed Kimchi eating culture in 178 households with female middle school children located in Incheon and Seosan areas, investigated the Kimchi eating patterns of female middle school students, and also analyzed the differences in value recognition for Kimchi between mothers and their female middle school students. Results showed that 23.0% of subject households answered eat Kimchi at every meal and the main reason for eating Kimchi in most households was good for taste. Most households made their own Kimchi, and only 12.3% of households bought Kimchi. Subject households preferred hot and spicy taste (34.8%) and pleasing taste (20.2%), and 44.4% of middle school children answered as eating Kimchi at every meal, and the source for information on Kimchi was home in 51.6% and mass media in 33.7%, suggesting the lack of school education. Both mothers and their female middle school students placed high value on Kimchi for its nutritional aspect and on Kimchi from the market for its convenience. Mothers showed significantly higher value (p<0.05) on the storage aspect of Kimchi compared to their middle school students, and female middle school students showed significantly higher value (p<0.05) on the value recognition for Kimchi as an international food compared to their mothers. Also, the value for hot pepper powder was high among other additional ingredients, and both mothers and middle school students had high values for Kimchi stew among other food dishes using Kimchi, and middle school students showed higher values (p<0.001) on foreign dishes using Kimchi such as Kimchi pizza and Kimchi spaghetti compared to the mothers group. Therefore, based on these results, the development of educational programs on Kimchi is needed not only at home but also at schools, by re-emphasizing the importance of value recognition for Klmchi in our food culture.
The purpose of this study was to provide basic information about efficient space use in the dining and bathing area through the analysis of service flowing. Four researchers observed the service flowing and the using behavior at those areas. The results of the study were as follows: Dining service was proceeded as resident moving, waiting, meal serving, dining, moving and arranging in order. The waiting stage was one of the problematic processes since the staffs made the residents wait to) long at a fixed position. The program right before the meal serving will be helpful for reducing tediousness of the elderly residents. Another problem was that the area was not big enough for the meal sowing. The legal regulation Is needed to prescnbe for the size of dining area per resident. The flowing of bathing service was proceeded as staff preparation, moving, waiting, undressing, bathing, drying, dressing, moving and arranging in order. There were more problems in the dressing area than in the bathing area. The elderly with stretcher or wheelchairs had difficulty in entering the narrow doorway. The dressing area was so crowded with the staffs, undressed elderly, dressed elderly, and other laundries. The division of dressing and undressing area is required to avoid the confusion of the users in the area.
A Survey was conducted to identify patrcis' eating behavior at the buffet styled restaurant during dinner time. The average frequency of taking food was 4.1±0.9 and this was statistically significant by age group. The frequency of taking food after satiety was 1.2±0.8. From the menu, 15 seafood items were the most popular which were chosen more than twice. The average of consumed food items was 24.9±8.9 out of 198. The average seafood items which were chosen by each individual was 5.8, desert items was 4.5, salad items with dressing was 4.2. The total weight of the consumed food was 954±365.1g. Mostly gruel, soup and saled chosen the first time. Alcholic beverages and drinks were chosen also first time. Seafood was chosen the 1.2 times and meat was chosen the first, second, and third time. Rice and soup. bread and noodles were chosen the second and third time. Desert was chosen the third time. The consumption of calories and nutrients were compared with the Korean Recommended Dietary Allowances. The average consumption of calories was 49.6% Korean RDAs, protein 71.4%, vitamin A 65.0%, thiamin 74.3%, riboflavin 71.8%, niacin 89.8%, ascorbic acid 72.7%, iron 68.1%, and calcium 108.3%. In one meal, the data shows over eating. The caloric consumption of desert was 275.5Kcal and seafood was 174.1Kcal. The protein consumption of seafood was 23.5g and meat was 7.5g. According to this research, customers have a lot of good chances to be exposed to the variety of food. This is desirable to correct the food habits with a experience. On the other hand, excessive food consumption is a problem. Therefore we suggest the provision of nutrition information about desirable order of eating a meal and the health problems due to overeating. We expect other research of nutritional evaluation in a meal in the different foodservice systems to be made in the future.
The purpose of this research is to get basic information needed for the development of special kimchi for the elementary school students. A questionnaire was used to investigate the consumption and attitude of the students when they having kimchi in the school meal service. The subjects consisted of 426 elementary school students(212 boys and 214 girls) in Seongnam. The collected data were analyzed by SAS package. The frequency of having kimchi was as follows. 52.1% of the students eat kimchi in every meal time, and 97.4% eat more than once a day. However, 54.0% of the students consume more than 5 pieces($2.5\times3.0 cm$) of kimchi per meal while 17.6% 1~2 pieces. They eat more kimchi at home than at school, and the main reason is that kimchi at home is 'more tasty'(79.1%), 'more safety'(29.1%) and 'less hot and salty'(19.2%). Baechu kimchi was found to be the most favorite one in the school meal service, followed by kkakdugi, yoelmu kimchi, chonggak kimchi, oi kimchi and nabak kimchi in order. Students wanted to added apples, pineapples, pears, oranges, shrimps, cucumbers and crab flavored fish paste to kimchi. Students' most favorite foods made with kimchi in the school meal service were Kimchi bokgumbab, Kimchi mandu, Kimchi jjigae, Kimchi jumukbab, Kimchi gimbab, Kimchi bokgum, Kimchi bibimbab, Kimchi hamburger and Kimchi dongas in order. Higher grade students and boys showed higher preference for the variation foods than lower grade students and girls.
In this study was made a survey of the dietary habit with too many likes and dislikes (one-sided dietary habit) of first grade primary school children on 1098 primary school children, in an attempt to provide data for an efficient nutrition management for children. The results of the survey were interpreted in term of the standard of education and the state of employment of the children's mothers, the standard of living, sex, the number of sibling, the order of birth, whether or not living together with grandmother, and the breast feeding period. From the results of this study it seems that the overprotection by mothers leads the children to one-sided dietary habit. The mothers listed the lack of nutrition knowledge and the lack of efforts for meal management as major reasons for that they failed to help their children form a good dietary habits.
This experiment was conducted from the latter part of June through the first part of October 1969 by picking up 30 among the patients hospitalized at the department of internal medicine of the Seoul National University Hospital, who were under low sodium diet fording. By applying 1,000mg sodium diet that the author invented for feeding, the result of measurement made daily on 24 hours urine sodium shows an average of 58.1 mEq/L (average 76.799mEq/24hr). This study has an aim to understand correctly and to interest in local food through making a survey of the university students related to food and cook living in Jeonju-si about the preferable local food and standard of selection, and through investigating and studying the university students' preference and identification of local food dividing the province into six ‘si’ and eight ‘gun’, and to utilize them as a basic materials of local food investigating the university students' consciousness on popularization. Researching the widely known food of the 23 kinds of 8 classes, the students entering in the 1st and the 2nd, 3rd and the 4th grade liked Jeonjubibimbap of rice meal, kongnamulgukbap of rice meal and soup, chueotang of soup, aguijjim of steamed dish of eojuk of gruel in order. From these results, there should be many chances to taste various foods at home as well as outside it to make the university students in Jeonbuk province have the educational chances, knowledges and chances about local foods, and habits to eat the food made in Jeonbuk province. And all of us should work hard to put in an advertise local foods positively, to develop the foods harmonizing the young person's appetites, and to succeed our food culture with processed foods.
