An Analytic Study on the Rice Cakes Needed for Aneestral Worship Rites in the Court of Choson Dynasty (조선시대(朝鮮時代) 宮中(궁중) 제정(祭亭)의 제찬용(祭饌用) 병류(餠類)에 관(關)한 연구(硏究))

  • In recent years, Korean traditional culture has been reviewed in many ways. And Great efforts have been made to form a culture suitable for the Koreans. With these tendencies, the interest in Korean traditional foods has been greater. So this paper is intended to identify and analyze the kinds, materials and cooking processes of the rice cakes needed for ancestral worship rites in the court of Choson Dynasty. The work is centered around the Tae-sang-ji written by Lee kun-myong in 1873-the 10th year since king kojong's coming to the throne. And we study such literatures on foods and cooking processes as Kyugon-si-ui-bang, Yo-rok, Jungbo-Sallim-Kyungjae, Kyuhap-Chongso, Si-ui-jon-so and so on. The results are compared and analyzed. Cooking processes and materials of Korean rice cakes in Choson Dynasty were various and had traditional characteristics. Rice cakes necessarily needed for various rites were called pyun especially when they were used for ancestral worship. And many different kinds of Pyun were used according to seasons. There were nineteen kinds of rice cakes used for ancestral worship in the court: Gu-i-Byung, Bun-ja-Byung, Baek-Byung and so on. The six; Gu-i-Byung, Bun-ja-Byung, Sam-sik-Byung, Yi-sik-Byung, Baek-Byung and Huk Byung were essential for the great rites at Jong-myo and Young-nyung-Jeon and so they were highly thought of. Main materials of these six were rice, glutinousrice, sorghum and wheat flour. Cooking processes of the rice cakes above mentioned can be classified into frying, beating, boiling, steaming, etc. Powder for covering rice cakes was made of bean, pine nut, sesame and red bean, of which bean was made the greatest use of. If was very wise of them to use these kinds of powder, for they supply protein and lipid of which rice cakes are destitute and they also add colors and good tastes to rice cakes. But Korean traditional rice cakes are less used as the thought of rites has changed and various kinds of desserts have been developed. And yet there is no denying the fact that even now rice cakes play a great role in traditional formalities.

  • $D{\acute{o}}ck$ (Korean rice cake) is a peculiar food of Korea made of grain. By means of cooking from, it is defined as 'Pulvberzed food of grain' $D{\acute{o}}ck$ was one of the daily food, but development of boild rice had narrowed it's use to the food of festive days and ceremonies. $D{\acute{o}}ck$ is used as a main food of all Kinds of ceremonies from one's birth to death, such as the Three seven day(a baby's twenty-first day of life), one hunderdth day, birthday, wedding, both brithday, funeral and sacrifical rites, vocational ceremonies, such as a sacrifice to spirits and a srevics for a big catch of fish. It is also used as a present and seasonal food. A large variety of $D{\acute{o}}ck$ is available and its recipe is scientific and reasonable. In this treatise, the Kinds of $D{\acute{o}}ck$ and the frequency of them, the material, the recipe, the measuring unit of material, cooking kitchen utensils and the cooking terms are studied from the books published in Korea from 1670 to 1943. 1. $D{\acute{o}}ck$ was classified as Tcbin $D{\acute{o}}ck$(steamed), Chin $D{\acute{o}}ck$(strikn), Chijin $D{\acute{o}}ck$(fried) and Salmun $D{\acute{o}}ck$(boiled), according to its way of cooking. 2. There were 122 Kinds of $D{\acute{o}}ck$, 57 were Tchin $D{\acute{o}}ck$, 35 Chin $D{\acute{o}}ck$, 20 Chijin $D{\acute{o}}ck$, and 10 Salmun $D{\acute{o}}ck$. 3. There were 34 Kinds of measuring units. Of them, 13 for volume, 4 for weight, 9 for quantity, 4 for length and 4 for the rest. 4. There were 55 Kinds of cooking Kitchen utensils but now many of them are not used because of mechanization or automation of tools of living. 5. There were 143 Kinds of cooking terms. Of them 49 for the preparing process, 25 for the mixing process, 27 for well-forming process 10 for process of getting ready to cook, 14 for heating process, 10 for cutting process, 5 for dishin process and 3 for process of soaking in sugar or honey.

Inhibitory Activity of Korean Ginseng on Lipolytic Action of Toxohormone-L from Cancerous Ascites Fluid (고려인삼이 암독소의 지방분해작용에 미치는 저해활성)

  • A substance that inhibit the lipolytic action of Toxohormone-L was a crude acidic polysaccharide isolated from Korean red and white ginseng. The total inhibitory activities (units) of PGI and PG4 fraction in white ginseng and those of PG,, PG4 and PG43 fraction in red ginseng were higher than other fractions in vitro test. Each water extract of ginseng was effective against the lipolysis induced by the Toxohormone-L at the concentration over 10~100$\mu$l/ml. The total inhibitory activities (units) were highest at the concentration of 100ug/ml and 1,000ug/ml in the 4-year and 5-year old white ginseng root respectively, while, it was higher in the 6-year old ginseng than other ages regardless of the reaction concentration In the red ginseng. The inhibitory effect of ginsenos1de - Rb2 on the lipolysis by Toxohormone-L was higher than other ginsenosides at the concentration of 100 $\mu$g to 500 $\mu$g/ml of reaction mixture, and total inhibitory activities (units) of ginsenoside -Rb2 were also higher than other treatments.

Changes of Fatty Acid Composition in Shank During Heating Time and Frozen Storage (사태의 가열시간 및 냉동저장에 따른 지방산 조성 변화)

  • This study was carried out to investigate changes of the lipid contents and the fatty acid composition in shank during heating time and frozen storage. 1. The total lipid contents of raw shank were about 3.57% and decreased stepwise during heating time 30, 60, 90 min and frozen storage(24hrs) The contents of neutral lipid, glycolipid and phospholipid were 70.71%, 6.36%, and 22.93% in raw shank, and neutral lipid contents were decreased, whereas Phospholipid contents were increased according to heating tide. In frozen storage, neutral lipid and glycolipid contents were increased, while phospholipid contents were decreased. 2. Lipids of shank possessed about 8 kinds of fatty acid as the constituent by gas-liquid chromatography analysis. The main fatty acids were oleic acid, palmitic acistearic acid and linoleic acid: the fatty acids of total lipids in raw shank were 43.48% of oleic acid, 23.13% of palmitic acid,12.00% of stearic acid and 6.75% of linoleic acid. Also the fatty acids were 43.32% of oleic acid, 23.26% of palmitic acid, 9.30% of stearic acid 2.15% of linoleic acid in neutral lipid, 22.63% of oleic acid, 8.44% of palmitic acid, 11.98% of stearic acid, 27.01% of linoleic acidin glycolipid, 39.38% of oleic acid, 15.89% of palmitic acid, 15.55% of stearic acid, 17.49% of linoleic acid in phospholipid. 3. The fatty acid pattern of total lipid, neutral lipid, glycolipid and phospholipid was not any changes, whereas there was a difference in the fatty acid contents: palmitic acid and stearic acid of total lipid were decreased in the 30 min and 60 min heating but increased in 90min heating, and linoleic acid of neutral lipid was increased stepwise during heating time and frozen storage. Also palmiict acid of glycolipid was increased gradually and linoleic acid in heating time 30, 60 min was higher than 90 min and frozen storage. Among fatty acids in phoapholipid, oleic acid was increased during heating time, while decreased in frozen storage, and linoleic acid was not any change but linolanic acid was increased. UFA/SFA of phospholipid was the highest when heating time was 60 min. From above results, it was found that when heating time was 60 min beneficial nutritionally, comparing with changes of fatty acid composition according to the heating time aid frozen storage.

Effect of soaking time in syrup on the sensory characteristics and texture of Yackwa (집청시간이 약과의 기호 및 texture에 미치는 영향)

  • The purpose of this research is to study comparatively what the effects will be to the sensory characteristics and texture of Yackwa when the soaking time in syrup varies from 5 minutes, 1 hour, 2 hours, 3 hours, 5 hours and 12 hours. Evaluation was conducted through sensory evaluation and instrumental test by Instron. In results obtained were as follows. 1. In sensory evaluation, color of Yackwas by 1 hour or 2 hours soaking in syrup were better than other sample. Shape of Yackwas by 2 hours or 3 hours soaking in syrup were better than other sample. As the soaking time increased softness of Yackwa tended to increase. Otherwise as the soaking time decreased, fracturability tended to be good. In taste, Yackwa by 1 hour soaking in syrup was the best. 2. Instron measurement indicated that Hardness, Springiness and Chewiness tended to decrease as the soaking time in syrup increased. But Cohesiveness did rot have much effect the soaking time in syrup. 3. Softness and Fracturability of Yackwa had significant relationship with Hardness ana Springiness. Therefore Hardness and Springiness represented the texture of Yackwa. In view of the above results, it came to the conclusion that Yackwa by soaking time in syrup for 1 hour or 2 hours could give the best results among the groups studied.

Rheological Properties of Wheat Flour Dough and Qualities of Bread Prepared with Dietary Fiber Purified from Ascidian(Halocynthia roretzi) Tunic (멍게껍질로부터 정제된 섬유소 첨가 빵반죽의 물리적 및 제빵의 품질특성)

  • The rheological properties of wheat flour dough and qualities of bread prepared with 0, 10, and 20% of dietary fiber slurry extracted and purified from ascidian (Halocynthia roretzi) tunic were investigated. Water absorption of the dough increased with the increase of dietary fiber slurry. Both arrival and development time of the dough with 10 and 20% dietary fiber slurry added were shorter than those of the control. An increase in the added amount of the dietary fiber slurry resulted in an increase of weakness. The dough's extensibility and resistance to extension were decreased, and the ratio of resistance to extensibility (R/E) decreased with the increase in the dietary fiber slurry. The maximum viscosity gradually decreased with the increase in the amount of dietary fiber slurry, while the temperature of gelatinization was not changed. Both loaf and specific volume of bread were slightly decreased with an increase in the amount of dietary fiber slurry. Overall preference scores by sensory evaluation and the quality characteristics of the bread with up to 20% dietary fiber slurry added was not significantly different from those of the control(p<0.05). The results indicated that the addition of the dietary fiber from ascidian tunic retarded staling and improved the shelf-life of the bread by enhancing the water holding capacity.

A Comparison of Characteristics of Minerals and Phytate between Korean and Imported Wheat Varieties (한국산 소맥과 수입 소맥의 무기질 특성과 phytate 비교)

  • A Comparative study was performed among five Korean wheat(Greu, Eunpa, Tapdong, Allgreu, Woori) and three imported wheat(Dark Northern Spring, Austrian Standard Wheat, Western White) to investigate the characteristics of minerals and phytate from Korean wheat varieties. Ash contents of kernel was higher in Korean wheat than in imported wheat and related to ash contents and darkness of flour. More contents of Fe, P, and Mg from Korean wheat grains and Fe from Korean wheat flours were observed in comparison to imported wheat varieties. Fe concentration in Korean flour show high, indicating Fe was distributed at endosperm layer of kernels and not eliminated with milling. In addition, phytate affecting availability of minerals was determined from kernels and flours. Even though Korean wheat kernels had more phytate than that of imported wheat kernels, it is believed that most of phytate was removed with milling and there was no major difference between Korean and imported wheat flours. We also observed that the content of phosphate closely parallels the content of phytate from both the flours and kernels.

The food Choices and Dietary Preferences of College Women (여대생(女大生)의 음식(飮食) 선택(選擇) 및 기호(嗜好) 성향(性向))

  • To investigate the food choices and Dietary Preferences of College Women the number of dishes sold and the sales of the midmeal at the Student Cafeteria, Ewha Womans University were recorded for the fiscal year of 1974; and the observations were made on two consecutive days (June 3rd and 4th, 1974)on what a person has chosen which and how many dishes. The relationship between the number of the consecutive days and the number of foods chosen were treated as Chi square analysis. The results of the food choices and dietary preferences of College Women were as follows: 1. Breads and rice cakes, vegetable dishes, milk and milk products, rice dishes, soups, meat, fish, poultry and eggs, Kimchis and one dish meal were chosen highly; and beverages, stews, and soybeans and soybean products were chosen negligibly. 2. One dish meals, vegetable dishes, meat, fish, poultry and eggs, milk and milk products showed the highest sales volume during the year; rice dishes, breads and rice cakes were the second highest in sales amount; fried foods, snacks and Kimchis showed the range of $3{\sim}6%$ of the total sales; and the beverages, stews, soybean and soybean products were the lowest in sales amount. 3. Seasonal differences were noticed on some dishes. Breads add rice cakes, milk and milk products showed the high selections from March to November and the low, during December to February. Stews, Kimchis, beverages were kept low except sudden rise on February. One dish meal and rice dishes showed almost same level during the year but on February the slight increase were noticed; even level were kept on meat group except the increase to $13{\sim}16%$ on July and December. Fried foods were kept on similar level during the year except the increase on June. Snacks and fruits showed low selections on March, April, November and December and higher at summer. Vegetables, soups, soybean and soybean products showed no different fluctuations in selections during the year. 4. Rolls, salads, milk, hamburgers, fried vegetables, rice with mired vegetables(Bi-bim-bab), and Nang-myun were the single dishes chosen most frequently. 5. There is significant relationship at 0.05 level between the consecutive days and the number of foods chosen. It is concluded that about 50% of the population has taken one item of dishes. The popular combinations were one dish meal and soup or Kimchi; noodles and salads or fried vegetables. It is suggested to set up choice menus with the daily variations, cyclical variations and with the invariable ones; and to recommend one dish meal, breads, partial meals for school lunch; and to study to improve one dish meal, vegetable dishes and fried foods, which are new and inexpensive products. It is also suggested that the feeding of the college students should have to lead the people to the goal that the nutrition education is desired.

A Study on Nutrition Knowledge, Dietary Habits, Health related Life Style and Health Condition of College Students in Chuncheon (춘천지역 대학생의 영양지식, 식습관, 건강관련 생활습관 및 건강상태에 관한 연구)

  • The purpose of this study was to investigate nutrition knowledge, dietary habits, health related life style and health condition of 247 male and 244 female students at K University in Chuncheon. The results of the survey are summarized as follows: The average nutrition knowledge score and dietary habit score were 10.79 and 19.38 for male, and 10.89 and 19.48 for female, respectively. The percentage of those who smoked, drank and exercised regularly were 32.0%, 93.9%, 47.0% for male, and 6.1%, 91.8%, 24.6% for female, respectively. The health scores of the female (43.02) were significantly lower than those of the male (46.26) (p<0.001). On female students, significant correlation was found between dietary habits score and health score (p<0.01). College students are in early stage of adult life and their dietary habits, health related life style and health condition will be continued to their later life. This study may provide basic information on the eating habits and health related life styles of college students.

Correlation Between Social Distancing Levels and Nighttime Light (NTL) during COVID-19 Pandemic in Seoul, South Korea Based on The Day-Night Band (DNB) Onboard The Suomi National Polar-Orbiting Partnership (S-NPP) Satellite (코로나19 팬데믹 기간의 서울의 사회적 거리두기 단계 변화와 The Suomi National Polar-Orbiting Partnership (S-NPP) 위성 영상을 이용한 Nighttime Light (NTL) 간의 상관관계)

  • In order to reduce the spread of infection due to COVID-19, South Korea has established a four-step social distancing standard and implemented it by changing the steps based on the rate of confirmed cases. The implementation of social distancing brought about a change in the amount of activity of citizens by limiting social contact such as movement and gathering of people. One of the data that can intuitively confirm this is Night Time Light (NTL). NTL is a variable that can measure the size of the national economy measured using lights captured by satellites, and can be used to understand people's social activities during the night. The NTL visible data is obtained via the Visible Infrared Imaging Radiometer Suite (VIIRS) Day-Night Band (DNB) onboard the Suomi National Polar-orbiting Partnership (S-NPP) satellite. 1023 of Suomi data from 1 January 2019 until 26 October 2021 were collected to generate time series of NTL radiance change over Seoul to analyze the correlation with social distancing policy. The results show that implementing the level of social distancing generally decreased the NTL radiance both in spatial disparities and temporal patterns. The higher level of policy, limiting human activities combined with the low number of people who have been vaccinated and the closure of various facilities. Because of social distancing, the differences in human activities affected the nighttime light during the COVID-19 pandemic, especially in Seoul, South Korea. Therefore, this study can be used as a reference for the government in evaluating and improving policies related to efforts reducing the transmission of COVID-19.
