  • The purpose of this study was to investigate the quality attributes and importance that affects their satisfaction with respect to lunchboxes amongst children from low-income families in Korea. In case of $1-3^{rd}$-grade elementary school, 57.1% received lunch box through the community child center, while 45.2%, 68.5% and 80.7% of $4-6^{th}$-elementary school, middle school, and high school students received the lunch box from home, respectively. Typically, in 40.2% of all grades, the time to eat the meal was within 1~2 hours of delivery, and 34.0% consumed the lunch within 2~6 hours of delivery. With respect to intake of the contents of lunchboxes, 72.0% of the participants answered that they ate 80% of the lunchboxes delivered and 24.9% only ate 50% of the content of lunchboxes. The largest leftover were vegetables (26.9%), and the reason for leaving food was 'do not like to eat (36.1%)' followed by 'no taste (32.6%)'. Regarding improvements in delivery lunchboxes, elementary school students selected 'taste', while middle school and high school students selected 'variety of menu'. The 'nutrition (3.69 point)' of the lunchboxes was the highest satisfaction and the 'variety of menu (3.34 point)' was the lowest. In all grades, 'nutrition' and 'hygiene' were considered to be important as quality attributes of the delivery lunchboxes, and satisfaction was also high. On the other hand, in the $1-3^{rd}$-grade elementary school, 'variety of menu' and 'amount of side dish' were important but satisfaction was low. The $4-6^{th}$-grade elementary school, middle school and high school students stated that 'taste' and 'variety of menu' were important, but satisfaction was low.

  • This study investigated the demand of nutrition education programs among preschooler's parents. Focus group interview was conducted four times with 29 parents of preschool children. Most subjects appeared to have interest in nutrition education; 'very interested' (58.6%), 'somewhat interested' (20.7%). Sources of nutrition information were 'internet' (35.1%), 'books' (21.6%), 'newspaper or magazines' (13.5%), 'family or relatives' (13.5%), 'media' (8.1%), 'preschool' (5.4%) and 'hospital or public health center' (2.7%) in order. The most frequently mentioned health problems related to dietary behavior were atopy and obesity. Major concerns for children's dietary behavior was picky eating habits, and having questions for how to deal with this problem. Most subjects had trouble with obtaining an adequate amount of dietary supplements for their children. Nutrition education for parents about food labeling and information on processed foods was in demand. Preferred methods of nutrition education for children were playing games with stickers, gardening vegetables, and participating in cooking. Attitudes toward computer-assisted education materials, one of the methods of nutrition education, appeared to be ambivalent. Some preschool parents showed negative attitudes towards exposing their children to electronic devices at an early age, whereas others showed positive attitudes. Subjects were interested in meal-planning and ways to balance nutrients for their child. Parents preferred attending professional lectures to receive reading materials or searching websites as an adult nutrition education method. Results of this study have implications on providing basic information for developing nutrition education programs for preschoolers and their parents. Future research should focus on developing nutrition education programs for both preschools and the home.

  • This descriptive study was made to evaluate the dietary habits contributing to cancer prevention of 319 health college students. Data collection form included questions about demographic characteristics and 33 statements which evaluate dietary habits contributing to cancer prevention. Among the students, 56.1% consumed fast food outside the home/dormitory twice a week or more and 47% never exercised. Moreover, 63.9% of the students reported that their dietary habits changed negatively and 69% stated that their fruit and vegetable consumption decreased after starting the health college. The students mostly paid attention to preserving food and water consumption while they paid least attention to maintaining healthy weight and whole grain consumption. Female students, those who paid attention to the amount and calorie of the food they consumed, students who did not consume fast food, and students who exercised twice a week or three times a week had better dietary habits contributing to cancer prevention (p<0.05). According to these results we recommend that interventions which will reduce fast food consumption and increase fruit and vegetable consumption and exercising in university students should be implemented. For this purpose, appropriate conditions for preparing and preserving healthy food should be provided as well as increasing the frequency of vegetable containing meals and providing fruits and salads in every meal at school cafeterias.

  • This study was performed to investigate how milk supplementation can benefit the elderly by increasing bone density but possibly harming the iron status concomitantly. Forty one elderly subjects over 65 years of age(male : 9, female : 32) participated. All subjects were apparently healthy, home staying and attending meal service for lunch at the welfare center. They were from low income area of Puchon city. One cup of milk per day was served for 10 months. The mean intake of calcium was significantly increased for females after milk supplementation. Males showed significantly increased means of triceps skinfold thickness, suprailiac skinfold thickness and waist circumference. Females showed significantly increased measurements fo three kinds of skinfold thickness, waist circumference, and hip circumference. There were no significant change in the mean bone density of lumbar spine$(L_2~L_4)$, femoral neck, ward's triangle and torchanter, but the proportion of osteopenia estimated by the T score of lumbar spine bone density was lowered from 50.0% to 34.6% for females. The mean Hb level was significantly for males. The proportion of anemia estimated by Hb(<12g/dl), Hct(<36%) and serum ferritin(<15mg/ml) were increased from 17.2% to 51.7%, from 20.7% to 44.8% and from 10.3% to 17.2%, respectively for females. It looks like milk supplementation can effect the intakes of several nutrients considered to be commonly deficient in the Korean diet fo elderly people, increase some anthropometric measurements, and decrease the proportion of osteopenia. However it can have adverse effects on iron status of females.

  • Objectives : To obtain necessary fundamental data for the development of oral health improvement programs for senior citizens in the manner of investigating the Status of their oral health. Methods : Data were collected from 346 senior citizens aged 65 years or older who had lived in Seoul and Gyeonggido province, Republic of Korea. This study was conducted for 3 months from April 2011 to June 2011. Excluding those obtained from 34 respondents who gave inadequate responses to given questions, the data from 312 respondents were analyzed. Results : 1. The number of senior citizens who chose 'Sometimes' to as an answer to the question about the self-perception of their own oral conditions such as mastication, swallowing, gingiva hemorrhage, dry mouth, and/or oral malodor was the largest. As an answer to the question about the presence of interpersonal avoidance, 'No' accounted for the largest proportion. The number of respondents choosing gingiva treatment regarding the perception of the necessity for medical interventions was the largest. 2. In regard to the knowledge of oral health care, the percentage of correct answers was the highest for 'I brush my tooth before each meal' ($0.69{\pm}0.156$), while the lowest percentage of correct answers was seen for 'Gingival diseases can be improved by medications' ($0.33{\pm}0.472$). Conclusions : Based upon the above mentioned results, the author conclude that developing relevant national programs and support policies at a national level as well as implementing proactive and systematic home-visiting oral health programs at the levels of local autonomous entities or communities will lead to significant improvements in senior citizens' oral health and QoL (quality of life).
