Objectives: The purpose of this study was to analyze correlation thresholds and assessment for salty taste and high-salt dietary behaviors by age. Methods: A total of 524 subjects including 100 each of elementary school students, middle school students, college students, and elderly as well as 124 adults were surveyed for detection and recognition thresholds, salty taste assessments, and high-salt dietary behaviors. Results: Elementary students had a lower detection threshold (p<0.05) and recognition threshold (p<0.01) than did the other groups. Salty taste assessments were lowest among elementary students, followed by middle school students, while college students, adults, and elderly had higher assessment score (p<0.001). Elementary students had significantly lower scores for high-salt dietary behavior than did middle school students, college students, adults and elderly (p<0.001). Middle school students had higher scores for high-salt dietary behavior than did elementary school students and elderly (p<0.001) but no meaningful difference was found in dietary behavior scores between college students, adults, and elderly. There were positive correlations between high-salt dietary behavior and detection thresholds (p<0.001), recognition thresholds (p<0.001), and salty taste assessment (p<0.001). High-salt dietary behavior was more positively correlated with salty taste assessment than detection and recognition thresholds for salty taste. Conclusions: This study suggested that salty taste assessments were positively associated with scores for the detection and recognition thresholds and high-salt dietary behavior.
The purpose of this study was to compare regional differences in salty taste assessments, nutrition knowledge, dietary attitudes and dietary behaviors associated with high-salt diets in four national regions in Korea (Region 1: Seoul, Sokcho, Region 2: Buyeo, Jecheon, Gong Ju, Region 3: Daegu, Gyeongsan, Region 4: Jeon Ju). Subjects were 860 persons who participated in sodium reduction campaign. The result of the salty taste assessment by region was not significantly different. The nutrition knowledge score of subjects in Region 1 was the highest. Dietary attitude scores that showed preference for high-salt diets of Region 2 and Region 4 subjects were higher than those of Regions 1 and 3 subjects (p < 0.001). Dietary behavior scores were not significantly different among regions. The correlation between sodium intake and salty taste assessment was significant (p < 0.01). Older subjects who had high blood pressure levels and lower nutrition knowledge were more likely to have high sodium intakes. Even though the salty taste assessment and dietary behavior scores by region were not significantly different, the salty taste assessment scores had a significant negative correlation with nutrition knowledge and had a significant positive correlation with dietary attitude and dietary behavior in terms of preference for high-salt diets. Therefore, nationwide education regarding salt intake reduction and health and a campaign to encourage favorable attitudes and behavioral changes regarding consumption of a no-salt / low-salt diet is needed.
본 연구는 초중등학생들을 대상으로 싱겁게 먹기 행동변화단계별로 짠맛 미각판정치, 짜게 먹는 식태도 및 식행동의 차이를 분석하고 추후 이들을 위한 싱겁게 먹기 영양교육을 위한 기초자료로 제공하고자 하였다. 싱겁게 먹기 행동변화단계별 비교 결과, "싱겁게 먹으려고 생각해 본적이 없다" (고려전단계, n = 492)와 "앞으로 6개월 이내 싱겁게 먹으려고 생각하고 있다 (고려단계, n = 686)"는 학생들이 "싱겁게 먹기를 실천하고 있다 (행동단계, n = 351)"와 "싱겁게 먹은 지 6개월이 지났다 (유지단계, n = 60)"는 학생들보다 짠맛 미각판정치가 유의하게 높았다 (p < 0.001). 짠맛 선호도는 유지단계 학생들의 경우 고려전과 고려단계의 학생들보다 가장 낮은 두 염도에 대한 선호도가 더 높았으며 (p < 0.001, p < 0.001), 높은 두 염도에 대한 선호도는 더 낮은 것으로 나타났다 (p < 0.001, p < 0.001). 또한 싱겁게 먹기 행동단계별 짜게 먹는 식태도와 식행동 점수는 고려전단계 학생들이 가장 높은 점수를 보였고, 유지단계 학생들이 가장 낮은 점수를 나타내었으며, 각 단계 간에 모두 유의한 차이를 나타내었다 (p < 0.001, p < 0.001). 이상의 결과, 싱겁게 먹기 행동변화단계에서 고려전과 고려단계 학생들의 짠맛 미각판정치, 짜게 먹는 식태도와 식행동 점수가 행동단계나 유지단계의 학생들보다 모두 유의하게 높은 것으로 나타났다. 따라서 나트륨 저감화 교육을 실시할 때 학생들의 싱겁게 먹기 행동변화단계를 먼저 파악하여 행동변화단계에 맞는 행동수정전략을 적용하는 것이 필요함을 시사한다.
The purpose of this study was to investigate the sodium intake of office workers using 24-hour urine analysis and to analyze the correlation matrix between variables. The sodium intake of the subjects (n = 137), based on a 24-hr sodium excretion period, was male (n = 56) 6072.4 mg and female (n = 81) 5,168.2 mg. Urinary sodium excretion showed significant positive correlation with BMI, frequency of eating out, expenditure of eating out, salty taste assessment and high-salt dietary behavior. Analysis of urinary sodium excretion showed significant positive correlation with intake frequencies of cabbage kimchi, broiled fish, feast noodle and rice with leaf wraps. Based on the results of multiple regression, urinary sodium excretion was found to be related to intake frequencies of cabbage kimchi, broiled fish, rice with leaf wraps and high score of high-salt dietary behavior.
본 연구는 대구시 8개 병원과 사업체에 근무하는 직장인 251명을 대상으로 교육집단 166명, 비교육집단 85명으로 나누어 5주간 저염화 영양교육 프로그램을 운영하고 그 효과를 평가하였으며, 그 결과를 요약하면 다음과 같다. 1) 저염화 교육프로그램 실시 결과 교육전 두 집단간의 짠맛에 대한 미각판정치에 차이가 없었으나, 교육 후 교육집단의 경우 미각판정치가 유의하게 감소하였다 (p < 0.001). 또 한 교육 후 영양지식, 짜게 먹는 식태도 및 식행동이 비교육 집단에서는 유의한 차이가 없었으나 교육집단에서는 모두 유의하게 개선되었다 (p < 0.001). 2) 교육집단에서 24시간 소변 수집을 통한 나트륨 섭취량은 교육 전에 비해 교육 후 감소하였으나, 통계적으로 유의하지는 않았다. 3) 외식 빈도가 잦을수록, 외식비가 높을수록 짜게 먹는 경향이 있는 것으로 나타났으며, 미각판정치와 짜게 먹는 식행동 및 식태도간 유의한 상관관계를 나타내었다. 또한 짜게 먹는 식태도와 나트륨 섭취량간에 유의한 상관관계를 나타내어 식태도가 나쁠수록 나트륨 섭취량이 높은 것으로 나타났다.
Hypertension is among the most common and important risk factors for stroke, heart attack, and heart failure which is considered to be the leading cause of death in Korea. The prevalence rate of hypertension in Korea is 27.9%, according to the 2006 Korea National Health and Nutrition Survey. Since non-pharmacologic nutrition education is recommended as the first step in the management of hypertension, evaluation of nutrition program is needed to form strategies for improving patients' dietary adherence. This study was designed to evaluate the overall effectiveness of a hypertension nutrition education program (HNEP) for reducing the salt intake, at a public health center located in Gyunggi-province. The HNEP was offered for 16 weeks from May to September in 2007. Nutrition education activities included cooking classes, food preparation demonstrations, physical fitness programs, salty taste preference test sessions, games, case-study presentations, planning and evaluation of menus, etc. Forty patients participated fully in the program which had 47 female enrollees. Data about nutrient intake (24-hour recall), nutrition knowledge, food behavior were collected before (baseline) and after the program. Changes after program completion indicated the following: 1) diastolic blood pressure was decreased (p < 0.05), 2) sodium (salt) intake was also decreased (p < 0.01), especially baseline high salt intake group, 3) nutrition knowledge was improved (p<0.001), 4) dietary behaviors for maintaining a low salt diet was improved (p < 0.001), 5) participants preferred cooking class from nutrition education methods. As a conclusion, it appears that a nutrition education program for hypertensive female elderly for reducing the salt intake might effectively decrease blood pressure and salt intake. It also improves nutrition knowledge, dietary behavior, and finally adherence to a recommendable low-sodium diet.
This study compares salt-related dietary patterns according to sodium intake. A survey was conducted with 257 college students(130 male and 127 female students) in the Busan area. Dish Frequency Questionnaire 70(DFQ 70) was used to quantitatively estimate sodium intake. A short dish frequency questionnaire(DFQ 15) was used to screen subjects with high or low- salt intake. The sodium intake of male students based on DFQ 70 was significantly higher than that of female students(p<0.05). Sodium intake has significant negative effects on systolic and diastolic blood pressure(p<0.05). In the high-salt intake(HS) group, classified by DFQ 15, the number of male students was significantly higher than that of female students(p<0.01). The systolic blood pressure of the HS group was significantly higher than that of the low-salt intake(LS) group(p<0.05). Salt-related dietary behavior score and eating habit score for the HS group were significantly higher than those for the LS group(p<0.01). The sodium intake of the HS group based on DFQ 70 was significantly higher than that of the LS group(p<0.01). In these results, college students in Busan area showed high blood pressure and high sodium intake compared to Korean DRIs. The results indicate a need for various education programs to help college students practice a low-sodium diet.
This study was done to explore the effect of Korean women's salt usage behavior on their sodium intake and excretion according to aging. Dietary sodium intake and salt usage behavior were analyzed to compare the difference between young and middle-aged women. One hundred fifty six young women and 77 middle-aged women without hypertension or any current medication were recruited. Body mass index, waist hip ratio, blood pressure were measured from each subject. Salt usage behaviors were surveyed with questionnaire, sodium intake with 24-hr recall method, and sodium excretion with spot urine. Middle-aged women were more obese than young women according to body mass index and waist hip ratio. Blood pressure was significantly higher for the middle-aged. Young women consumed more fats and middle-aged women more carbohydrates. Middle-aged women consumed more sodium and potassium, and excreted more sodium. Among questionnaire items, kimchi, soup or pot stew, or salted vegetables were found to be related with high sodium diet. Salted vegetables and salted nuts and potato chips were significantly correlated with young women's high sodium diet, while soy sauce on fried food, kimchi, salted vegetables accounted for middle-aged women's high sodium diet. With these results, we concluded that middle-aged women consumed more carbohydrates, less fat, and more sodium and potassium than young women. Middle-aged women frequently choose kimchi, soup or pot stew, or salted vegetables, and they contribute to high sodium intake. We recommend to choose low-salt kimchi, less soup or pot stew, and more fresh vegetables for lower sodium diet.
본 연구는 경기지역 대학생 218명(남 95명; 여 123명)을 대상으로 DFQ를 이용하여 나트륨 섭취량을 조사하고 관련된 식행동을 비교, 평가하였다. 수축기와 이완기혈압, DFQ-15 점수와 DFQ-125에 의한 나트륨 섭취량(남 6094.2 mg; 여자 4760.7 mg)은 모두 남자에서 더 높았다(p<0.01). 전체대상자를 DFQ-15에 의해 고염과 저염 섭취군으로 분류한 결과, 두 집단의 혈압에는 차이가 없었으나 여자에서는 저염군의 수축기와 이완기혈압이 높았는데(p<0.05), 이는 여자 저염군에서 유의하게 높은 BMI 때문으로 생각된다. 고염 식태도 점수와 나트륨 섭취량은 고염군에서 매우 높았다(p<0.001). 식습관 비교 결과, 매일 단백질 음식을 먹거나 골고루 먹는 식습관 빈도는 저염군에서 높았으며(p<0.05), 튀김, 볶음요리 및 지방이 많은 육류를 자주 먹거나 식사시 소금과 간장을 더 넣는 부정적 식습관 빈도는 고염군에서 더 높았다(p<0.05). 고염군은 조린 음식 및 중식, 일식을 좋아하고 된장국을 자주 먹으며 튀김, 생선회는 간장에 듬뿍 적셔 먹는 고염 식태도 빈도가 높았으며, 식탁에서 소금을 잘 넣지 않는 저염 식행동 빈도는 낮았다(p<0.05). 나트륨 섭취량을 기준으로 분류한 고염군은 볶음밥 등 별미밥과 조린 음식을 좋아하고 식사 전 습관적으로 소금을 더 넣는 고염 식태도 문항 점수가 높았고, 라면 국물을 남기거나 식탁에서 소금을 추가로 잘 넣지 않는 저염 식행동 문항 점수는 낮았다(p<0.05). 한편, 전체대상자에서 식품구매 시 영양표시를 확인하는 군의 고염 식태도 점수, DFQ-15 점수, 나트륨 섭취량은 비확인군에 비하여 모두 유의하게 낮았으며 저염 식행동 점수는 높았다(p<0.01). 특히, 영양표시 비확인군의 나트륨 섭취량(5669.1 mg)은 확인군(4241.9 mg)의 133.6%에 달해 영양표시 확인여부가 고염섭취의 위험요인인 것으로 생각된다. 남, 여 각 집단과 전체대상자에서 자신이 짜게 먹는 것을 선호한다고 스스로 평가한 군이 그렇지않다고 한 군에 비하여 고염 식태도 점수는 높고 저염 식행동 점수는 낮았다(p<0.001). 하지만 여학생에서는 짜게 먹는 것을 선호한다고 답한 군의 나트륨 섭취가 매우 높은 반면, 남학생에서는 싱겁게 먹는 것을 선호한다고 답한 군의 나트륨 섭취가 매우 높아(p<0.05), 주관적으로 판단한 음식 간의 선호도가 실제 나트륨 섭취 수준을 잘 반영하지 못하는 것으로 나타났다. 결론적으로, 남학생은 나트륨 섭취량이 여학생보다 높고 충분섭취량의 406.3%에 달해 고염 섭취의 위험군이라 할 수 있었다. 고염군의 식행동 특성에는 지방 함량이 높고 조린 음식을 좋아하고 식탁에서 소금 간을 자주하는 반면, 균형식을 실천하는 비율은 낮았다. 따라서 대학생 특히, 남학생을 위한 고혈압 영양교육에는 소금 감량에 관한 내용 외에도 기본적인 식품영양 지식과 올바른 식습관의 중요성 등에 관한 내용이 포함되어야 할 것으로 사료된다.
The purpose of this study was to investigate dietary behavior and nutritional knowledge related to sodium intake in high school students. A questionnaire survey was conducted in 400 high school students (200 boys) in Incheon, Korea. Survey data were analyzed according to gender and degree of obesity. The distribution of the degree of obesity was the highest in 231 normal weight individuals (57.8%), followed by 89 underweight (22.3%), 41 overweight (10.3%), and 39 obese (9.8%). The sodium-related undesirable dietary behavior score was 2.9 points out of 5 points. The detailed dietary behavior scores of 'I eat kimchi when I eat instant noodles or noodles' and 'I like dried fish with salt' were significantly higher in boys than in girls (p<0.05). It was found that boys consumed more frequently high sodium foods, such as pizza, hamburger, and hotdog than girls. According to the degree of obesity, the underweight group consumed more kimchi fried rice and potato chips frequently than the other groups (p<0.05). Preference for salty taste was not significantly different among the groups by gender and degree of obesity. Sodium-related nutritional knowledge score was 5.3 points out of 10 and which was significantly higher in girls or normal weight group than in boys or obesity group. These results suggest that nutritional education on sodium intake is needed because the nutritional knowledge of adolescents is relatively low. Moreover, intensive nutritional guidance is required, especially in boys or adolescents with undesirable degree of obesity.
