Dairy Dietary Calcium and Osteoporosis - An Overview

  • The osteoporosis is a disease characterized by lower bone mineral content, deterioration of bone tissue and a reduction in the protein and mineral matrix of the bone. The bone becomes more porous leading to increased bone fragility and risk of fracture, particularly of the hip, spine and wrist. Osteoporosis can result in disfigurement, lowered self·esteem, reduction or loss of mobility, and decreased independence. Adequate calcium intake through milk and milk products in childhood and adolescence is a decisive marker for obtaining a maximum bone mass (peak adult bone mass) and f3r the prevention of osteoporosis. Calcium is one of the most critical nutrients associated with the osteoporosis. Dietary calcium is of great significance for healthy skeletal growth and development. The bone mineral content and bone mineral density of young adults is directly related to the calcium intake through milk and dairy products. Milk and milk products are the important sources of calcium as the richness and bioavailability of this nutrient is very high as compared to other food products. If enough calcium is not supplemented through diet, calcium from the bone will be depleted to maintain the blood plasma calcium level. The article focuses on the various issues related to osteoporosis manifestation and the role of dietary calcium especially calcium derived from dairy products.

Effect of High Calcium Diet on the Zinc and Copper Balance in Korean Female Adolescents (청소년기 여자에서 고칼슘 섭취가 아연과 구리 평형에 미치는 영향)

  • Intakes and excretions of zinc and copper were determined for 8 female adolescents (aged 16.4$\pm$0.5 y; body mass index 20.4$\pm$1.3kg/$m^2$; body fat 33.3$\pm$2.5%; bone mineral density of lumbar spine in L2-L4; 0.96$\pm$0.08g/$\textrm{cm}^2$) when they consumed diets basal and high in calcium for 6 days each. All subjects consumed a basal Ca diet containing 800 mg, Korean RDA level of the subjects, and a high Ca diet containing 1200mg, RDA plus 2 SDs of calcium intake. The diets provided 58% of energy intake as carbohydrate, 25% as fat, and 17% as protein. Food, urine and fecal samples were collected during the last 3 days of each feeding period and were assayed. Mean daily intakes on the basal and high calcium diets, respectively, were 6.57 and 6.37 mg for zinc and 910 and 812 $\mu\textrm{g}$for copper. Fecal excretion of copper and zinc in relation to intake was significantly greater on the high calcium than on the basal calcium diet. Hence, apparent absorption rate was significantly lowered from 98.7% on the basal calcium diet to 97.9% on the high calcium diet for zinc from 66.3% to 56.4% for copper, respectively. Urinary loss of copper was not detectable but that of zinc was 0.38mg on the basal diet and 0.47mg on the high calcium diet. Copper retention was 899$\pm$105$\mu\textrm{g}$/day on the basal calcium diet and 792$\pm$20.8$\mu\textrm{g}$/day on the high calcium diet, and zinc retention was 3.95$\pm$0.91mg/day and 3.11$\pm$0.89mg/day. Thus, copper and zinc retention was significantly decreased on the high calcium diet (p<0.05). Summarizing the results, apparent absorption and retention of zinc and copper were significantly decreased by calcium supplementation. Therefore, it is suggested that interactions among minerals should be considered in determining RDA.

  • The inhibition rate of bacteria growth per molecular weight was higher according as the molecular weight increased, the rate was the highest at the molecular weight 200,000. Microcapsule of ionized calcium was able to be produced by molecular weight 15,000, 30,000, 50,000 and 200,000 of chitosan which was dried for 48 hours after melting it in 2% of acetic acid, adding ionized calcium and controlling pH 1.2. The size of ionized calcium microcapsule was between 200 and $300\;{\mu}m$, the solvency, concentration and the content showed big difference by the molecular weight of chitosan. The inhibition rate of bacteria growth of microcapsule designated high in Gram positive, which was high in S. aureus, S. epidermidis and Bacillus subtilis, low in S. mutans, high in C. albicans in fungi, low in A. niger. The inhibition rate of bacteria growth of chitosan was comparatively high in Gram positive, low in S. mutans and it showed high numerical value in C. albicans of fungi. The rate recorded good result at molecular weight 200,000 relatively, there was no difference according to the molecular weight. The inhibition rate of bacteria growth according to the concentration of the microcapsule increased differently between $1.000{\sim}10,000\;{\mu}g/ml$, it showed antibacterial activity close to the inhibition rate of growth of chitosan rather than ionized calcium. The minimum inhibitory concentration marked the highest in the mixture of chitosan and ionized calcium for all kind of bacteria generally, there was a little difference between yeast and fungi.

Calcium and Milk Intake of Elementary School Students from School Foodservices - Focus on the Gyeongsangbukdo Province - (초등학교 급식 식단과 우유를 통한 칼슘 섭취 실태 - 경상북도 일부지역을 중심으로 -)

  • The calcium intake of elementary school students residing in Gyeongsangbukdo province from their school foodservice and milk program was evaluated. A total of 252 subjects (50.4% boys and 49.6% girls) were examined. A significant percentage of the total subjects (32.9%) reported skipping breakfast once or more per week, with the major reasons for skipping breakfast being a lack of time and appetite. A majority of the to-tal subjects (78.2%) participated in the school milk program. The type of milk consumed by the subjects was mainly white milk, with a milk intake mostly between one and two cups. Participants in the school milk program consumed over the recommended nutrient intake (RNI) of calcium, but non-participants consumed only 48.1% of the RNI (P<0.001). The calcium intake rate according to food cooking methods, from highest to lowest was in the order bap, twigim, jeon, jjim, and gui. Although the food intake rate of guk was low, the calcium intake rate by RNI was the highest for guk. On the other hand, the food intake rate of bap and kimchi was high, but their calcium intake rate by RNI was relatively low. These results show that non-participants in the school milk program are significantly deficient in calcium. Therefore, to improve the calcium nutrition for children, school lunch menus containing high calcium need to be developed and children should be encouraged to enter a school milk program.

The cross-sectional relationship between dietary calcium intake and metabolic syndrome among men and women aged 40 or older in rural areas of Korea

  • BACKGROUND/OBJECTIVES: Studies conducted in Western populations have suggested that dietary calcium may protect against metabolic abnormalities, but there is little evidence of this effect in Asians, who have relatively low calcium intake. We evaluated the cross-sectional relationship between dietary calcium and metabolic syndrome among Korean men and women aged 40 years and over. SUBJECTS/METHODS: A total of 6,375 subjects aged 40 years and over and were recruited between January 2005 and February 2010 from the baseline study of the Multi-Rural Communities Cohort Study in Rural Communities (MRCohort). A food frequency questionnaire was used to collect dietary information. Metabolic syndrome was defined using the modified criteria published in the Third Report of the National Cholesterol Education Program Adult Treatment Panel. RESULTS: Calcium intake was related inversely to metabolic syndrome in women (P-value = 0.0091), but not in men (P = 0.1842). Among metabolic components, high waist circumference (WC) (P = 0.0426) and high blood glucose (P = 0.0027) in women and hypertriglyceridemia (P = 0.0017) in men were inversely correlated with calcium intake. Excluding those who used calcium or multinutrient supplements did not attenuate the relationship between dietary calcium and metabolic abnormalities. CONCLUSION: Dietary calcium intake from foods may be inversely related to metabolic syndrome, WC, and blood glucose among women in rural areas of Korea.

Effect of Calcium and Boron Intakes on Calcium Balance Status in Ovariectomized Rats (난소절제 흰쥐에 있어 칼슘과 보론 섭취수준이 칼슘 평형상태에 미치는 영향)

  • This study was conducted to investigate the effect of calcium and boron intakes on calcium utilization in ovariectomized (OVX) rats. Rats were divided into 9 groups and fed diets containing various levels of calcium $(0.1\%,\;0.5\%,\;1.5\%)$ and boron (0.5 ppm, 50 ppm, 100 ppm) for 4 weeks. The half of rats in each group were ovariectomized and the others were sham-operated. Rats were fed same diets for 8 weeks after operation. Feed intake and weight gain were significantly increased as the dietary calcium was increased and those of OVX group were higher than in sham-operated group. Feed efficiency ratio was significantly higher in OVX group than that in sham-operated one. With boron supplementation, serum calcium level was significantly increased in low-calcium group, but decreased in adequate/high-calcium group. In calcium balance, calcium intake was significantly increased with increasing levels of calcium and boron and higher in OVX group than that in sham-operated one. With increasing calcium intake, fecal and urinary calcium excretions were significantly increased. Urinary calcium excretion was significantly decreased with increment of boron intake. Apparent calcium absorption of adequate-calcium OVX group was the highest among the groups. Daily calcium retention was significantly increased as the dietary calcium was increased and that of high-calcium OVX group was higher than high-calcium sham-operated group. According to these results, the boron supplementation increased the calcium intake and decreased the urinary calcium excretion. Therefore, it could be suggested that the boron supplementation may be complementary to calcium nutrition and useful for bone health.

Metabolism of Calcium in the Oocyte Maturation of Rat (흰쥐의 난자성숙에 있어서의 칼슘의 대사)

  • The present experiments aimed to investigate the metabolism of calcium during oocyte maturation in rat. The concentration of free calcium and calmodulin in oocytes was measured respectively by using of fluo-3/AM and FITC with microscope fluorescence spectrometer. The ultrastructural localization of calcium precipitates in oocytes was observed with the transmission electron microscope. Cumulus-free immature oocytes(GV-oocyte) were cultured in vitro through 15 hours. The free calcium concentration in GV oocyte was $55.9{\pm}3.5nM$. In calcium-containing medium, the free calcium concentration was increased in germinal vesicle breakdown(GVBD) oocyte($64.2{\pm}7.3nM$). In normal medium after calcium chelator treatment ($10{\mu}M$ BAPTA/AM), the free calcium contents were slightly lower than those in control group. In calcium-free medium, the free calcium content was drastically increased in GVBD($72.7{\pm}3.4nM$) and metaphase I - anaphase I ($88.0{\pm}3.4nM$) oocyte. In maturation rate of oocytes, GVBD rate was high in control group($82.9{\pm}6.55%$) and calcium chelator treatment group($91.2{\pm}4.4%$), but in calcium-free medium group, it was low and then the oocyte was degenerated without polar body formation. Relative content of calmodulin in oocyte was significantly(P<0.001) increased in metaphase I - anaphase I than in GV and GVBD oocyte. The calcium precipitates were observed in mitochondria and cytoplasm of GV oocyte but that were not observed in mitochondria of GVBD and metaphase I - anaphase I oocyte. And then the calcium precipitates reappeared in mitochondria of metaphase II oocyte. The above results indicate that changes in free calcium and calmodulin concentration of oocyte occur according to the maturational stages and the extracellular calcium is required during oocyte maturation. Also change of calcium localization in oocyte occurs according to the maturational stages.

Effects of Calcium Lactate and Chungkukjang on Calcium Status in Rat

  • Effects of dietary calcium lactate (CaL-A) and Chungkukjang (Korean native fermented soybean) on bone mass, calcium status, body weight, serum glucose and cholesterol levels in young male rats were investigated. Chungkukjang was fermented by mixing 4 types of Bacillus sp., and then dried at 45$^{\circ}C$. Calcium lactate was prepared from the ash of black snail. The rats were fed a commercial rat diet for 1 week and then the experimental diets for 4 weeks. Animals were divided into four dietary groups: one calcium-deficient diet (Ca-De) and one of three with calcium supplemented diets (5 g calcium/kg diet) with either calcium phosphate (Ca-P), CaL-A, or CaL-A + Chuntkukjang (CaL-AC). Calcium supplemented diets contained 39 g Ca-P/kg diet and 28 g/kg of calcium lactate in the CaL-A and CaL-AC diets. Body weight gains during the 4 weeks in the Ca-P, CaL-A, CaL-AC and Ca-De groups were 130.45 g,112.50 g, 143.40 g and 10.20 g, respectively. Feed consumption of the groups from high to low was CaL-AC > Ca-P > CaL-A > Ca-De. The Ca-De group had low femur weights and low serum calcium concentrations, while they were comparatively high in CaL-AC, Ca-P and CaL-A groups. The Ca-De groups excreted less calcium in urine than did the other rats, probably due to increased absorption of the mineral in Ca-P, CaL-A and CaL-AC groups. Microscopic observations revealed that there were many regularly spaced holes in the femur of Ca-De group, while there were much smaller regularly spaced holes in Ca-P group. However, no holes in femur were observed in the CaL-A and CaL-AC groups. Bone surfaces were especially smooth and clean in the CaL-AC group. Serum concentrations of glucose and total cholesterol were remarkably lower in the CaL-AC group than in the other supplemented groups. These results suggest that calcium from CaL-A has higher bioavailability than from Ca-P, and dietary Chungkukjang may have a beneficial effect on calcium metabolism.

Effect of Source and Intake Level of Calcium on Serum and Femur in Aged Female Rats (칼슘급원과 섭취수준이 노령 암컷흰쥐의 혈청 및 대퇴골에 미치는 영향)

  • This study was performed to investigate the effect of dietary dried anchovy and non-fat dried milk on serum and femur Ten months old female rats were divieded into 6 groups(ST, A-middle, A-high, M-middle, M-high, A+M), and fed the diet containing different level of food calcium for 8 weeks. The results obtained were summerized as follow: 1. The rats' weight gain were not significantly different from the fed groups, but food intake were significantly higher or lower level in the group of A-high than the other groups. 2. Serum calcium concentration was significantly increased in the A-middle group, the M-high group were significantly decreased. Serum phosphorous contents of M-high group were increased significantly higher than ST group. The serum magnesium contents were increased significantly higher than in the A-middle group. Serum iron contents of other experimental groups were significantly higher than ST group. All experimental groups were significantly lower copper contents in serum than ST group. 3. The more rats took dried anchovy and non-fat dried milk, the longer the length of femur. But this trend is not statistically difference. In the breaking force of left femur, most of all experimental group were stronger than ST group. 4. The calcium, phosphorous contents of ash, dry, wet weight of right femur in A+M group were higher than any other groups.

High-velocity impact of large caliber tungsten projectiles on ordinary Portland and calcium aluminate cement based HPSFRC and SIFCON slabs -Part I: experimental investigations

  • Impact experiments have been carried out on concrete slabs. The first group was traditionally manufactured, densely reinforced concrete targets, and the next were ordinary Portland and calcium aluminate cement based HPSFRC (High performance steel fiber reinforced concrete) and SIFCON (Slurry infiltrated concrete) targets. All specimens were hit by anti-armor tungsten projectiles at a muzzle velocity of over 4 Mach causing destructive perforation. In Part I of this article, production and experimental procedures are described. The first group of specimens were ordinary CEM I 42.5 R cement based targets including only dense reinforcement. In the second and third groups, specimens were produced using CEM I 42.5 R cement and Calcium Aluminate Cement (CAC40) with ordinary reinforcement and steel fibers 2 percent in volume. In the fourth group, SIFCON specimens including 12 percent of steel fibers without reinforcement were tested. A high-speed camera was used to capture impact and residual velocities of the projectile. Sample tests were performed to obtain mechanical properties of the materials. In the companion Part II of this study, numerical investigations and simulations performed will be presented. Few studies exist that examine high-velocity impact effects on CAC40 based HPSFRC targets, so this investigation gives an insight for comparison of their behavior with Portland cement based and SIFCON specimens.
