Physicochemical and Cooking Characteristics of Non-waxy Soft Brown Rice (연질현미의 이화학적 및 취반 특성)

  • Purpose: To improve the cooking quality of brown rice, newly inbred soft rice cultivars were investigated. Methods: The physicochemical properties of brown rice flour and water absorption patterns and cooking characteristics of brown rice grain were compared to Ilmi white and brown rice. Results: General composition and total dietary fiber contents of five rices were significantly different with higher ash, protein, and total dietary fiber contents in soft brown rice than white rice. The hardness of raw rice grain was higher in Ilmi brown rice than in soft brown rice. The water absorption increased rapidly in 30 min of white rice and in 4-6 h of brown rices. The apparent amylose content of soft brown rice was lower than that of Ilmi rice. The initial pasting temperature and all viscosities were significantly different, but the trend was not similar. The textural properties of hardness and roughness were higher, but adhesiveness, cohesiveness, and stickiness were lower in Ilmi brown rice than white and soft brown rices. In sensory preference test, not only textural properties, hardness, adhesiveness, cohesiveness, stickiness, and roughness, but also color, glossiness, and roasted flavor were higher in soft brown rices. Especially soft brown rice B showed the best cooking quality among all rices. Conclusion: The results of the study suggested that soft brown rice is developed for cooking with high nutritional and functional quality.

Yield and Grain Quality of Early Maturing Rice Cultivars as Affected by Early Transplanting in Yeongnam Plain Area (영남 평야지 조생종 벼 조기재배가 수량 및 품질에 미치는 영향)

  • This study was conducted to evaluate an early-maturing rice cultivars adaptable to early transplanting cultivation in Yeongnam plain area. High temperature during the ripening stage of paddy rice under the early-transplanting cultivation in Yeongnam plain was to influence in several agronomic traits such as number of spikelet, ripening ratio, grain appearance of milled rice, and yield. 'Gounbyeo' and 'Junghwabyeo' were better than the others in grain appearance of milled rice and ripening ratio, but their yield potential were lower than that of the other varieties. Moreover, 'Gounbyeo' and 'Junghwabyeo' showed high ratio of broken rice. 'Unkwangbyeo' was the highest in yield and eating quality among the tested varieties, but also high percentage of white core and belly in milled rice. Therefore, in order to recommend those cultivars to farmers, it should be needed to establish an optimal cultivation method, such as transplanting density, fertilizer application, and harvesting time, etc. consequently, it should also be required to develop a new varieties with high ripening capability under high temperature condition.

Effect of Transplant and Harvest Time on Grain Quality of Rice in Reclaimed Paddy Field (간척지에서 이앙기 및 수확시기가 쌀의 품질 특성에 미치는 영향)

  • The yield and quality characteristics of three rice varieties(Seojinbyeo, Ilpumbyeo, and Chuchungbyeo) in reclaimed saline paddy field were investigated under different cultural practices, three transplanting times (May 15, May 30 and June 15) and four harvest times (40, 50, 60 and 70days after heading) in order to obtain basic information for the production of high quality rice. Brown rice yield of three rice varieties were significantly higher in early and medium than late season cultivation. The protein content of milled rice showed high interaction effect between transplanting time and harvest time. Palatability values of Seojinbyeo and Ilpumbyeo were significantly higher in late than medium season cultivation, but Chucheongbyeo did not show any difference in its palatability value by different transplanting time. The palatability values of three rice variety was the highest in the harvest at 40 days after heading. The grain yield of three rice varieties were higher in early and medium than late season cultivation, whereas palatability values of three rice varieties were significantly higher in the early and late season cultivation than medium season cultivation. The palatability value measured by rice taster showed a highly negative correlation(r=$0.43^{**}$) with cumulative air temperature during ripening period.

Changes in Water Content Affect the Post-Milling Quality of Paddy Rice Stored at Low Temperature

  • Purpose: In this study, the effect of milling on paddy rice stored at low temperature, the changes in grain temperature of bulk storage bags exposed at room temperature, the post-milling water content of paddy rice, the whiteness of rice, and the rate of pest incidence were investigated and data were analyzed. Methods: Changes in temperature inside the bulk storage bags kept at low temperature and grain temperature after exposure to room temperature were measured. Experiments were conducted for identifying the reasons of post-milling quality changes in paddy rice stored at low temperature. Results: It was determined that a short-term increase of water content in paddy rice was directly related to surface condensation, and that rice should be milled at least 72 h after removal from low-temperature storage, in order to completely eliminate surface condensation of paddy rice kept in bulk storage bags. It was observed that post-milling quality of rice changed, but water content was maintained at high levels for more than 18 d in rice that was milled when condensation occurred, regardless of paper or vinyl packaging. Rice whiteness rapidly decreased in rice that was milled when condensation occurred, regardless of packaging, while rice that was milled 72 h or more after removal from low temperature storage did not show any significant changes in whiteness. No pest incidence was observed up to 12 d after removal from low temperature storage, regardless of packaging. Starting at 18 d, after removal from low temperature storage, rice that was milled when condensation occurred, was affected by pests, while 24 d after removal from low temperature storage, all portions of rice were affected by pests. Conclusions: Our results suggest that changes in post-milling quality of rice could be significantly reduced by exposing paddy rice to room temperature for at least 72 h before milling, in order to allow the increase of grain temperature and prevent surface condensation.

Nutritional Components and Cooking Characteristics of High Quality Rice (고품질 쌀의 품종별 영양성분 및 취반 특성)

  • The objective of this study was to evaluate quality properties of high quality rice. Seven rice varieties, Dabo, Daebo, Samkwang, Sindongjin, Sukwang, Jinsumi, and Haiami, were investigated for proximate contents and physicochemical characteristics. Moisture content was highest in the Jinsumi (13.13%). Protein and lipid content was highest in the Haiami. The amylose content of the rice cultivars was 20.15~22.51%. The degree of amylopectin polymerization (DP) was analyzed, and in all cultivars, DP 13-24 content was found to be highest, at more than 53%, whereas DP ${\geq}37$ content was lowest, at less than 5.81%. With regard to free sugar, maltose content in rice was the highest (${\geq}46%$). Toyo value of rice was highest in Samkwang, Daebo, and Jimsumi. Palatability characteristics were highest in Daebo and Jimsumi. Thus, the results of this study suggested that Samkwang, Daebo, and Jinsumi can be effectively used as processed cooked rice, though further studies should be required regarding changes in the quality of rice after cooking.

Comparison of Rice Quality According to Agroclimatic Regions in Gyeoungbuk Province (경북 농업기후 지대별 쌀 품질 비교)

  • This study was carried out to provide the geographic information based on the distribution of rice qualities and palatability in Gyeoungbuk province of Korea. The rice grain quality and environmental factors were analyzed using 513 sampling sites based on different five-agroclimtic regions of Gyeoungbuk province during three years from 2002 to 2004. In rice grain quality characteristics, the average palatability was low in South eastern coastal and Tabaek semi alpine regions as $67.6\~68.3$ and the coefficient of variation (CV) was relatively high as $6.2\~7.4\%$. The average head rice rates were low in South and Central eastern coastal regions as $87.3\~88.2\%$ and CV was high as $8.2\~8.3\%$. The average protein content was high in Central eastern coastal regions as $8.0\%$ and CV was high as $8.2\~8.3\%$. In case of palatability, the variation was differed clearly between high and low agroclimatic regions; it means that it is possible to divide the same agroclimatic region of high CV into two or three areas by CV of palatability. As the results of subdividing each existing agroclimatic regions based on the palatability, the variation of grain quality characteristics was become lower than that of existing five-agroclimatic regions. Therefore, the re-establishing of agroclimatic region based on rice grain quality was very important for precise cultivation for rice.

The Sensory and Texture Characteristics of Inkyrice Cake in According to Concentrations of Squid Ink (오징어 먹물 첨가량에 따른 먹물떡의 기호도 및 품질 특성)

  • To make rice cake with squid ink, the squid ink dilulted in fifteen times was added to rice flour in the ratio of 0%, 2%. 4%, 6% and 8% respectively. Then, the squid inky rice cake was tested in physical function and chromaticity. Rheometer test was also included in this experiment. In physical function test, it showed that the inky rice cake with 6% and 8% ratio was the best in preference. In the chromaticity test, as the adding ratio of squid ink increases, the brightness decreased. The red and yellow brightness of 8% inky rice cake showed high. The results of rheometer test are as follows. In hardness, the inky rice cake with 2% adding ratio was high and the 6% inky rice cake was low. In cohesiveness, the 0% inky rice cake was high and the 8% inky rice cake was low. In gumminess, the 2% inky rice cake was high and the 6% inky rice cake was low. In brittleness, the 2% inky rice cake was high and the 6% inky rice cake was low. With correlation analysis, 1 could reach the following. The overall quality of inky rice cake was correlated with all test items except chewiness. The moistness was correlated with flavor, grain and chewiness. Also, the 8% inky rice cake was correlated with the inky rice cakes with the other adding ratios in all aspects of test. Futhermore, in the results of rheometer test. the hardness was correlated with the other three kinds of characteristics.

Agricultural Characteristics of an Early-maturing, Multiple Resistant and High Quality Rice variety Cheolweon109

  • The outbreaks of blast, bacterial blight and viral diseases have been increasing in early maturing rice cultivating areas in the central northern regions, recently. As the occurrence of sudden insects pests and disasters increases due to global climate warming, it is urgent to develop a variety of disaster-tolerant, high-quality varieties in response. This study was carried out to elucidate the characteristics of early-maturing, high-quality and multiple disease resistant rice variety, Cheolweon109 that was adapted to cultivation in the mid-mountainous regions of the central northern regions. Cheolweon109 was derived from a cross between Suweon546, medium maturing variety, and Sangju44 which is early maturing and resistant to blast, bacterial blight and rice stripe virus. The heading date of Cheolweon109 was July 30, 3 days later than Odae. The culm length of Cheolweon109 was 79 cm, which was about 5 cm taller than Odae, and the ripening ratio was 85.1%, which was 10% higher than that of Odae. This variety had 5.54 MT/ha of milled rice productivity, which was 99% of the Odae. Although Cheolweon109 was tall, it was strong against lodging. It was strong against bacterial blight (K1, K2, K3 race), rice stripe virus, and the pre-harvest sprouting which rate was 2.4%. The appearance of the grains of rice was clean, the glossiness was 70.6, and the head rice ratio was 95.3% high. Because Cheolweon109 had superior disease resistance, disaster resistance, and high quality than Odae, it was expected that can be used to expand the diversity of early maturing and high-quality rice varieties in central northern regions.

Comparison of Lipid Composition of Rice Varieties with the Different Sensory Quality (관능적 식미 특성이 다른 쌀 품종의 지질 조성 비교)

  • Lipid composition was compared among rice varities such Dongjin, Jinmi and Tamjin as high, medium and low sensory quality, respectively Total and purified lipid contents of Jinmi were 1.7~2.2 times higher than those of Dongjin and Tamjin, and the lipid contents had not showed a tendency in the rice varieties with different sensory quality Dongjin of high sensory quality had high contents as 9.2~13.5% of neutral lipid and 3.1~4.7% of phospholipid, and low content as 12.3~18.2% of glycolipid compared with Jinmi and Tamjin of medium and low sensory quality. The rice varieties had not showed a tendency as a difference of sensory quality in compositions of neutral and phospholipid. As the sensory quality increased in the rice varieties, monogalactosyl diglycerides, steryl glycosides had high contents as 0.4~19.24% and 14.4~17.1%, and esterified steryl glycosides, celebrosides and digalactosyl diglycerides had low contents 15.3~28.1%, 1.2~5.7% and 2.8~3.8%, respectively, in glycolipid. Fatty acid composition also had no tendency as a difference of sensory quality of the rice varities in compositions of neutral and phospholipid. Palmitic acid, however, had a high content as 0.4~22.6% and linoleic acid had a low content as 5.0~12.0% in fatty acid composition of glycolipid.
