  • Korea used to be a country where individuals ate diets high in vegetables and rice, but in recent years, it has become a country where western-style diets are increasingly popular. Consequently, the age for chronicle disease, including obesity and diabetes, has become lower. The purpose of this study was to compare the dietary habits of kindergarten children between lacto-ovo vegetarian and non-vegetarian families. The data were collected from the children(n=300) at Sahmyook University Kindergarten. The results showed that non-vegetarians had higher intakes of cookies, cakes, processed foods, ice cream, and fast foods, while vegetarian children consumed high amounts of vegetables, fruits, and kimchi. The non-vegetarian children tended to have irregular meals, and ate high-fat meats such as kalbi and samgyupsal. However, the results show it is important that many children among both vegetarian and non-vegetarian families should be encouraged to have appropriate essential nutrients, because a high percentage of children in both groups appeared to have low intakes of energy, vitamin $B_2$, vitamin C, calcium, zinc, iron, etc.

  • The objective of this study was to investigate effects of dietary level of CLA and the duration of feeding CLAcontaining diets on reproductive performance in sows and piglet growth rate. Tallow (3% in gestation diet and 5% in lactation diet, respectively) was incorporated as a fat source in control diet, and each 50% (dietary CLA level of 0.75% in gestation diet, and 1.50% in lactation diet, respectively) or 100% (dietary CLA level of 1.50% in gestation diet, and 2.50% in lactation diet, respectively) of tallow was replaced by a commercial CLA preparation containing 50% CLA isomers. Diets containing CLA were fed either from d 15 premating to weaning or d 74 post-mating to weaning. The level of dietary CLA and feeding duration did not affect litter size. High dietary level of CLA, however, decreased piglet weights at birth (p<0.01) and tended to decrease backfat thickness of sows at weaning. Longterm feeding of CLA-containing diets decreased piglet weights at weaning (p<0.05) and backfat thickness of sows at weaning (p<0.05). CLA supplemented in sow diet was transferred to fetus and piglets during pregnancy and nursing period, respectively. CLA contents of femoral muscle of piglets were 2.08 to 2.57 mg per g of fat at birth, and 2.36 to 4.47 mg at 10 days of age in CLA groups, while CLA was not detected in the control group. In conclusion, dietary supplementation of CLA tended to lower backfat thickness of sow and piglets' weight at birth or weaning, but did not affect total litter size. Dietary CLA was transferred efficiently during prenatal and postnatal periods of time through the placenta and milk, respectively.

  • This study aimed to assess the effects of neutral detergent fiber (NDF) from rice straw on blood metabolites and productivity of dairy cows in the tropics. Eight Holstein ${\times}$ indigenous (75-87.5% Holstein) were randomly allocated to dietary treatments according to a double $4{\times}4$ Latin square design. Contents of roughage NDF from rice straw were 12.8, 14.8, 16.8 and 18.8% dry matter (DM) and concentrate NDF content was 10.2% DM, so that levels of dietary NDF were 23, 25, 27 and 29% DM. Dietary treatments were isonitrogenous and isocaloric diets. The average maximum and minimum temperature humidity index during the experimental period were 85.6 and 76.9, respectively. Plasma glucose (p<0.05), dry matter intake and 4% fat corrected milk (p<0.01) decreased with increasing contents of roughage NDF from rice straw, while rectal temperature, serum urea, cortisol, low density lipoprotein-cholesterol (p<0.05), serum total protein and ${\beta}$-hydroxybutyrate (p<0.01) increased. Serum triglyceride, total cholesterol and high density lipoprotein-cholesterol were not affected (p>0.05). Decreased rectal temperature and concentrations of serum cortisol were associated with decreasing levels of ${\beta}$-hydroxybutyrate and serum urea, but with increased concentrations of plasma glucose, DMI and 4% fat corrected milk indicating that lactating cows fed lower fiber diets were in lower oxidative stress. Therefore higher intake and metabolic efficiency in dairy cows fed diets lower in roughage NDF from rice straw would be of an advantage in productive systems under tropical conditions.

  • To study effects of methanol extract of prosomillet on lopid metabolism , five groups of male Sprang-Dawley rats weighing 116$\pm$9 g were fed test diets for four weeks. The five diets consisted of one low fat(5% w/w) diet containing starch as carbohydrate source(normal) and four high fat diets(15% w/w) containing 40.5%(w/w)sucrose(control) and additional 80% nethanol extractof prosomillet at the levels of 0.3% and 1%(w/w) or prosomillet powder at the level of 20%(w/w). Serum level of total cholesterol was a little higher but that of triglyceride was 41% lower in 20% (w/w) prosomillet powder group than in the control group. The cholesterol levels of two Liver cholesterol levels were lower and phospolipid levels higher in all three prosomillet powder group . Fecal excretionof bile acid was most increased in the prosomillet powder group among all five test groups. Acitivity of liver microsomal 3-hydroxy-3-methylglutaryl coenzyme A (HMG CoA) reductase was significantly lower in 0.3% methanol extract fed group than the control and also appeared to be reduced in 1% extract fed one, wherease those of 20 cholesterol 7$\alpha$-hydroxylase were not different among the five groups. Activities of liver cytosilic glucose-6-phosphate dehydrogenase(G6PDH) and malic enzyme were decreased in 0.3% prosomillet methanol extract and 20% powder groups. The results indicate that in addition to fiber, certain active components in prosomillet have potential to exert hypolipidemic effects via regulating hepatic cholesterogenesis and lipogenesis.

  • The purpose of this present study was to investigate the effects of long-term treadmill running and aged garlic extract supplementation on weight, adipose tissue mass, lipid profiles and oxidative stress after exhaustion in high fat diet-induced obese rats. Thirty male Sprague-Dawley rats (3 weeks old) were used as subjects. High fat diets were fed to all subjects for 6 weeks in order to induce obesity. The subjects were divided into five groups - N (normal diet group), HD (high fat diet group), E (exercise group), EA (exercise with AGE diet group) and A (AGE diet group). Aerobic exercise was performed through treadmill running and AGE at a dosage of 2.86 kg/g was administered to rats 30 min before every exercise for 4 weeks. After 4 weeks, all groups completed acute treadmill running (speed increasing gradually to 25 m/min, 15% uphill grade) until exhaustion. Immediately after exhaustive treadmill exercise, the weight, adipose tissue mass, lipid profiles and oxidative stress of the rats were assayed. At the end of 6 weeks of high fat diets, body weight and body weight gain were significantly higher in the high fat diet groups than in the normal diet group (p<0.001). At the end of treadmill exercise with AGE intake for 4 weeks, body weight gain, visceral and epididymal fat of the E and EA groups were significantly decreased compared to other groups (p<0.05). There were no significant differences in gastrocnemius and soleus. T-C, HDL-C, TG and LDL-C were not significant in any of the groups. TBARS was significantly lower in the A group than in the E group (p<0.05). These results indicated that body weight gain, visceral and epididymal fat decreased in the E and EA groups, and TBARS levels were lower in the A group than the E group. Regular aerobic exercise intervention with AGE supplementation may also modify the adipose weight and improve the oxidant stress in obese rats.

The absorption rates of protein, fat, carbohydrate, calcium, phospherus, thiamine and riboflavin in each diet were observed. The results obtained were summarized as follows: 1. The absorption rates of protein and fat in the rice diet were 88.t % and 71.3.%. 2. The absorption rates of protein and fat in the general mixed diet were 83.4% and 86.4%. 3. The absorption rates of protein and fat in the high animal protein diet were 86.8% and 82.4%. 4. The nitrogen balances in the rice, the general mixed and the high animal protein diet groups were +5.7g, +2.3g and +4.0g respectively. 5. The absorption rates of carbohydrate in each diet were all above 95 % and so seemed to be almost completely absorbed except the cellulose in the diets. 6. The calory utilization rates in each diet were all above 93 %. 7. The minimum absorption rates of protein, fat and calory were 83.8%, 63.3%, and 89.7% in the rice diet, 80.0%, 80.9% and 85.9%, in the general mixed diet and 83.6%, 75.7% and. 89.3 % in the high animal protein diet respectively. Therefore, it is assumed that these data might be significant in practical use. 8. The protein absorption rates of the rice diet (88.1 %) was better than that of the general mixed diet (83.4 %). 9. The fat absorption rates of the general mixed diet and the high animal protein diet (86.4% and 82.4%) were signficantly better than that of the rice diet (71.3%). 10. The calcium absorption rates of each diet, rice diet, the general mixed diet and the high animal protein diet were 41.6%, 36.0%, and 27.7%, respectively. 11. The phosphorus absorption rates of each diet were 51.4%, 56.0% and 52.3%, respectively.12. The phosphorus absorption rate seemed better than that of calcium. 13. The thiamine absorption rates of each diet seemed 27.0 %, 42.9 % and 29.5 %, respectively. 14. The riboflavin absorption rates of each diet seemed above 30.6%, 27.1%, and 39.3% respectively. 15. The excretion amounts of thiamine or riboflavin were much more than the amounts ingested of the both vitamins. Therefore, the certain amount of both vitamins seemed to synthesize in the intestine.

  • In patients with functional gastrointestinal disorders, dietary factors have an important effect on the development or worsening of gastrointestinal symptoms. Therefore, nutritional advice is often needed for the treatment of these patients. Although no firm conclusions can be drawn from current studies, the use of low-fat diets can be recommended in patients with functional dyspepsia. Constipation can be treated with a high-fiber diet. There are few studies in irritable bowel syndrome patients with diarrhea. The diet recommendations must be applied to each patient depending on symptoms.

  • Dietary protein is the most expensive component in flounder feed because of the high protein requirement of this species. The non-protein energy sources may also influence the protein utilization of fish. The inclusion of adequate levels of non-protein energy sources in diets can minimize use of protein as an energy source. Protein sparing effect by fat and carbohydrate has been studied in other fish. • This study was performed to investigate the effect of soy isoflavone on plasma nitrite concentration and the antioxidant enzyme activities of erythrocyte and the liver using adult male rats fed high fat diet. Seven-week old male Sprague Dawley rats were divided into three groups and fed high fat diet (15% beef tallow, 1 % cholesterol; control: IF0) or high fat diets containing isoflavone 80 ppm (IF80) or 320 ppm (IF320) for 10 weeks. Plasma nitrite concentration as a vasodilator, and antioxidant enzyme activities in erythrocytes and the liver were measured. Plasma nitrite concentration was increased by 45% and 35%, respectively, in IF80 and IF320 than in IF0 group. Erythrocyte catalase, glutathione peroxidase (GPx) and glutathione reductase (GR) activities increased by 31 %, 30% and 40% in IF320 compared to IF0 group. Especially, erythrocyte GR activity increased by 61 % in IF80 group. However, catalase activity in the liver was decreased in IF80 group. GPx and GR activities in the liver were not differ among groups. The results suggest that soy isoflavone have the protective effect against risk factors related with cardiovascular disease by improving vasodilator factor, nitrite, and antioxidant enzyme activities in blood. • The objective of this study was to observe the effect of dietary calcium(Ca) level on colonic mucosal levels of cell proliferation, 1, 2-diacylglycerol(DAG), TXB2, PGE2 and phospholipid fatty acid composition which have been known as biomarkers for colon cancer. One hundred male Sprague Dawley rats, at 7 weeks of age, were divided into two fat type groups. Each group of which was further divided into two Ca level groups. Each rt was intramuscularly injected with 1, 2,-dimenthylhydrazine(DMH) for 6 weeks (total dose of 180mg/kg body weight) and simultaneously fed one of four experimental diets containing 15% dietary fat(corn oil or perilla oil )and 0.3% or 1.0% Ca by weight for 20 weeks. Compared to corn oil, perilla oil significantly reduced cell proliferation by decreasing labeling index, proliferating zone, crypt length in colonic mucosa and colonic mucosa and colonic mucosal levels of DAG, TXB2 . PGE2 and phospolipid (PL) arachidonic acid distribution. The effect of Ca on biomarketrs was different depending on the type of dietary fat comsumed . Ca effect of Ca on biomarkers was different depending on the type of dietary fat comsumed. Ca effect was not significantly shown in the PO group, but it was significant in the CO group in which high Ca(1.0%) decreased the levels of levels of PL-C20 : 4(%), DAG and PGE2 . However , high Ca supplementation had shown only the trends of improving cell proliferation. Overall , high dietary Ca significantly reduced cell proliferation by inhibiting the synthesis of eicosanoid and DAG with reduced distribution of PL-C20 : 4 , which may have resulted in lower activation of PKC through reduced signal transduction. Since a high level of dietary Ca was more effective in reducing the risk factor against colon cancer in corn oil fed rats, it could be suggested that a higher amount of dietary Ca be consumed , especially when more vegetable oil rich in linoleic acid is included in the diet.
