The Microbiological Assessment of a University Foodservice Establishment, and Hazard Analysis for Quality Control of Fried Fish Cake Soup Preparation (대학 급식시설의 위생 실태조사 및 품질관리를 위한 연구 - 제 1 보 : 오뎅국을 중심으로 -)

  • A sanitary quality of a university foodservice establishment was assessed in terms of time and temperature, pH and Aw, and microbiological evaluation. Critical control points during various phases in product flow of fried fish cake soup were identified using hazard analysis concept. The results are summarized as follows : 1) Time and temperature data indicated that phases of holding ingredients at room temperature after cooking, and hot - holding of soup before assembly were critical. 2) pH and Aw values were in favorable for microbial growth. 3) Microbiological data indicated that microbial quality of ingredients was in poor condition. A holding practice of cooked ingredients at room temperature might provide the chance for microbial contamination and multiplication. Hot - holding time and temperature of soup should be strictly controlled to assure the food safety, since the microbial quality of serving food can be directly influenced by the hot - holding temperature of soup. 4) Microbiological test results for food containers, equipments, working surfaces, and supplies indicated that sanitary conditions of earthenware, gloves, wiping cloths and cutting board should be improved promptly. 5) Critical control points identified were : ingredients, pre - preparation, post - preparation, and holding before assembly and service. 6) Guidelines for the effective quality control program for this operation were suggested.

Evaluation of HACCP system implementation in meat packaging industry (식육포장처리업의 HACCP 운용실태 분석)

  • The purpose of this study was to determine food safety practices and procedures based on Hazard Analysis Critical Control Point (HACCP) system and to suggest more effective method of HACCP implementation in meat packaging industry in Korea. We used the non-compliance rate of each evaluation item to compare the weak points of prerequisite requirements and HACCP. The prerequisite items related to facility, equipment, and tools showed inadequate level of requirements or unsanitary conditions for proper HACCP operation. A lack of understanding of sanitation standard operation procedures was identified as a fundamental barrier to HACCP implementation. High rate of non-compliance in HACCP items compared to prerequisite requirements signify that small businesses have potential difficulties of applying HACCP due to lack of technical expertise, financial resources for prerequisite requirements, and available personnel to prepare and operate HACCP plan. Also we suggest to revise and minimize current critical control points (CCPs). Time-temperature control of cold-storage rooms for carcasses and final products could be performed by control points of prerequisite requirements. As the occurrence frequency getting lower, metal detector should be replaced by intensified training of sanitary handling and safety procedure. This will be more effective and preventive measures against physical contaminants including metal particles. In conclusion, control point of prerequisite requirement may replace CCP in the plant with simple processing line and no heating process such as meat packaging industry.

  • Predictive food microbiology(PFM) is an emerging area of food microbiology since the later 1980’s. It does apply mathematical models to predict the responses of microorganism to specified environmental variables. Although, at present, PFM models do not completely developed, models can provide very useful information for microbiological responses in HACCP(Hazard Analysis Critical Control Point) system and Risk Assessment. This study illustrates the possible use of PFM models(PMP: Pathogen Modeling Program win5.1) with milk in several elements in the HACCP system, such as conduction of hazard analysis and determination of CCP(Critical Control Points) and CL(Critical Limits). The factors likely to affect the growth of the pathogens in milk involved storage fixed factors were pH 6.7, Aw 0.993 and NaCl 1.3%. PMPwin5.1 calculated generation time, lag phase duration, time to level of infective dose for pathogens across a range of storage (Critical Control Points) and CL(Critical Limits). Microbiological Evaluation for HACCP System Application of Green Vegetable Juice Containing Lactic Acid Bacteria (유산균을 함유한 녹즙의 HACCP 시스템 적용을 위한 미생물학적 위해도 평가)

  • This research performed to evaluate a production processes reporting by the HACCP system of green vegetable juice products, containing lactic acid bacteria, stage of processing raw materials agricultural products and production facilities of general bacteria and pathogenic micro organism. General bacteria are found from four samples of storage of agricultural products at process stage and water was detected 8.67~14.67 CFU/ml. However, all samples were detected less than 105 CFU/ml as a legal standards after the process of UV sterilization. For the outcome of experiment of E.coli, E.coli O157:H7, B.cereus, L.moonocytogenes, Salmonella spp, Staph.aureus as the food poisoning bacterial, E.coli was detected until UV pre-step process in storage process and B.cereus was detected partly till 1st washing. Since all bacterial, Yeast and Mold are detected in main materials, pre-control method is a necessary to establish for decreasing with a number of initial bacteria of main materials and it is considered to establish the effective ways of washing and sterilization such as production facilities for cross contamination prevention of bacteria and Sthaphylococcus. Based on above results, the process of UV sterilization should be managed with CCP as an important process to reduce or eliminate the general and food poisoning bacterial of green vegetable juice products, including lactic acid bacteria. Therefore, it is considered to need an exhaustive HACCP plan such as control manual of UV sterilization, solution method, verification, education and training and record management.

  • The purpose of this study is to develope a HACCP model for Korean traditional cookies. Prerequisite program and HACCP plan were proposed and analyzed for Yugwa. After analysing hazards of raw material and manufacturing processes, CCP, CL and control methods were presented. Pathogenic microorganisms were detected at the Korean traditional cookies plant. It gave a clue that general sanitation control procedures should be implemented for safe traditional cookie products. Hazard analysis of raw materials and processing of Korean traditional cookies, determination of critical control points and critical limits at the plant lead to present a model of HACCP plan. Implementation of HACCP can be carried out using a HACCP model. Critical control point of Yugwa production were determined as frying process. Biological and chemical hazards were presented for CCP determination.

  • Aquifer storage transfer and recovery (ASTR) is a type of managed aquifer recharge which entails injecting water into a storage well and recovering it from a different well. It has effects of natural purification when injected water passes through aquifer medium, and can be a good way of supplying water especially in a region with poor surface water quality. This study is about an on-going effort to introduce ASTR as a solution to source water problems in coastal areas. A pilot study is being conducted in the delta of the Nakdong River. A proactive management system is incorporated to ensure the water qulity in the process of drinking water process. The system is based on the Hazard Analysis and Critical Control Point (HACCP) which is a tool originated from the food industry in order to assess hazards and establish control systems for the safety of food product. In this paper, we analyze hazardous events which can occur in the entire water supply system using ASTR as a first step to the incorporation of HACCP to drinking water production process.

  • 외식, 단체급식의 증가 등으로 인하여 식중독의 발생이 날로 대형화, 다양화되어 갈 것으로 전망됨에 따라 식품에 대한 철저한 위생관리가 요구되고 있다.식품의 안전성을 확보하기 위한 위생관리 제도로 국제적으로 인식되고 있는 HACCP(hazard analysis critical control point)란 식품원료의 생산단계에서부터 시작하여 제조.가공, 보존, 유통.판매를 통하여 최종적으로 소비자가 섭취할 때까지의 모든 단계에서 발생할 우려가 있는 생물학적, 화학적, 물리적 위해요소에 대해 조사.분석하고, 각 위해요소에 대한 방지 방법을 구축하여 계획적으로 감시.관리함으로써 제품의 안전성을 사전에 확보하고자 하는 체계적인 관리방법이다. HACCP 계획은 위해요소 분석, 중요관리점 결정, 한계기준 설정, 모니터링 방법 확립, 개선조치 방법 확립, 검증절차 확립, 기록 유지 및 문서화 방법 확립의 과정을 거쳐개발되며, 최종제품을 검사하는 기존의 사후 관리적 방식과는 달리 HACCP는 중요관리점을 확인하고 모니터링 함으로써 최종제품의 위생안전성을 담보하는 예방적 관리방법이다. 1960년대 미국 항공우주국(NASA)에서 우주비행사들의 우주식에 대한 안전성을 확보하기 위한 연구에서 시작된 HACCP는 현재 세계 각국에서 식품의 안전성을 보증하는 과학적이고 체계적인 관리제도로 평가받고 있다.

위해요소 중점 관리기법(HACCP)에 의한 신선 편의식품의 미생물 안전성 확보

  • 신선 채소류 편의식품에 관련된 병원성 세균으로는 Listeria monocy togenes, Yersinia enterocolytica,A eromonas hydrophila 등이 포함된다. 이들 제품은 미생물(병원성 및 비병원성)을 감소시키거나 사멸시키기 위해 별도의 살균 또는 항균제재를 사용하지 않기 때문에 초기 원료에 존재하거나 혹은 가공 및 유통 과정에서 오염된 미생물이 제품에 그대로 존재할 수 있다. 따라서 이들 제품에서는 병원성 세균이 발견될 수도 있으며, 특히 냉장유통 중 온도조절이 불완전할 경우 그 가능성이 더욱 높아지므로 신선 편의식 채소류 제품에 대해서는 보다 철저한 위생관리가 필요하다. 이러한 측면에서 위해 요소 중점관리기법(Hazard Analysis Critical Control Point, HACCP)을 적용하면 미생물학적 안전성을 확보할수 있다. HACCP이란 특정 제품의 수확에서 소비까지 전 공정에 대해 위해 요소를 검토하고, 이를 조절하기 위한 특별한 수단을 규정하는 관리기법이다. 본 연구에서는 HACCP의 7가지 기본 원칙을 정리하여 실제 대파(green onion)의 최소가공 과정에 적용함으로서 미생물학적 안전성을 확보하고자 시도한 사례를 중심으로 검토하였다.

Studies on the revision and enactment of the law of cook (조리사에 관한 법 개정 및 제정에 관한 연구)

  • We investigated the unequivalence of Food Sanitation law, School Foodservice law and recent reports studied about hazard analysis critical control point(HACCP) system. We also found out that cook's duties were expressed several times in the standard job classification in Korea national statistical office based by the international labor organization(ILO) since 1963, but not ever in the Food Sanitation law and School Foodservice law. Based on these investigations We propose clear expression of cook's duties in the Food Sanitation law and School Foodservice law, and enactment of regulation or law of Cook to reduce any possible food poisonings. However these proposals need to be studied and improved in many different ways for the revision and enactment of the law of cook.
