Three highbush blueberries (Vaccinium corymbosum cvs. Bluecrop, Coville, and Northland) grown in an open field and in a rain shelter were compared to evaluate the potential benefits of rain-sheltering systems on growth and fruit quality. Shrubs grown in rain shelter flowered 5-14 days earlier and were in full bloom earlier than those in the open field. All three cultivars set fruit by nearly 90% of flowers when they were grown in the open field, but was markedly reduced when they were grown in the rain shelter, to approximately 50% for 'Bluecrop' and 'Coville'. Fruit sets ratio of 'Northland' grown in the in the rain shelter was 14.5. Fruit from greenhouse-grown 'Northland' were larger, heavier, and had more seeds per berry. Soluble sugar content (SSC) of fruits varied both with the cultivars and growing conditions. SSC of fruits grown in the greenhouse was higher in 'Bluecrop' compared to that grown in the field, but this pattern was reversed in 'Northland'. Titratable acid was significantly higher in fruits from rain shelter-grown shrubs of both 'Bluecrop' and 'Northland' than in fruits from open field-grown shrubs (P < 0.05), although there was no difference in TA with respect to growing conditions for 'Coville'. The number of seed per fruit, fruit length and diameter, weight, SSC, and TA were similar in 'Coville' shrubs grown in the open field and the rain shelter. Fruit firmness of 'Bluecrop', 'Coville', and 'Northland' was higher in the rain shelter than in the open field. 'Coville' and 'Northland' fruits harvested in the open field had higher blue chroma than those harvested in the rain shelter. However, this pattern was reversed for 'Bluecrop'. On the whole, sheltering from rain affected most fruit characteristics of the three cultivars differently. Therefore, suitable blueberry cultivars for the rain shelter should be chosen by purpose.
Quality characteristics of Satsuma mandarin (Citrus unshiu Marc. var. okitsu) harvested in early December according to production areas and sea level altitude of Cheju were investigated. Soluble solids and flesh ratio were $9.06{\sim}12.98,\;77.32{\sim}81.27%$ on citrus fruits harvested in orchards located below 100 m sea level (lower area), and were $10.16{\sim}12.26,\;75.00{\sim}81.55%$ in orchards 150 m sea level altitude (higher area), respectively. Acid content of citrus juice was $0.83{\sim}1.21%$ in fruits harvested in lower area, and was $0.94{\sim}1.34%$ in higher area except Hankyung-myun area. The differences of soluble solids and acid contents by harvesting periods for 10 days were 0.91 and 0.82 for soluble solids; 0.15 and 0.13% for acid contents, respectively. In proportion to late harvesting, Brix/acid ratio and fruit quality were improving. Soluble solids of fruits harvested from lower area were higher than those of fruits from higher area, but acid contents were lower in fruits from lower area than in fruits from higher area. In sensory evaluation on fruit appearence, the differences between two altitudes were not clear, but panelists marked higher points on fruits harvested in main production areas, Seogwipo-si and Namwon-eup which are southern areas. Fruit quality harvested in Seogwipo-si areas showed better quality than fruits from other harvested areas.

Acid content of citrus juice was 0.95%-1.26% in fruits harvested inlower area, and was 1.02%-1.39% in higher area. In proportion to late harvesting , Brix/acid ratio and fruits quality was improved. Soluble solids of fruits harvested in higher area were higher than those of fruits from higher area, but acid contents were on the contrary . In sensory evaluation on fruit appearance, the differences between two altitudes were not clear.
A significant difference in table grape quality was found between harvest seasons, producers and cultivars. In general, 'Kyoho' grapes showed much greater difference in fruit quality than 'Campbell Early'. The ratio of 'Campbell Early' grapes with poor quality (below quality standard within grades), was higher in fruit harvested early in the season, mainly because of immature fruit harvest. In 'Kyoho', poor quality of fruit seemed to be derived from the deviation of cultural practice between producers. Major factors responsible for poor quality in both cultivars includes harvest of unripe cluster, poor sorting and grading, berry abscission, and poor coloration. It is recommended to introduce a new quality standards considering the market condition in 'Kyoho' or a fresh-cut technology of grape berries for niche market.
In this study, we evaluated the changes of fruit quality indices during fruit development and ripening in Korean new pear cultivar 'Changjo', developed from a cross between 'Tama' and '81-1-27' ('Danbae' ${\times}$ 'Okusankichi') in 1995 and named in 2009, to determine appropriate harvest time and to enhance the market quality and broaden the cultivation area. The fruits of 'Changjo' pears harvested from 132 days after full bloom (DAFB) to 160 DAFB. Fruit growth and quality indices were monitored at 1 week interval by measuring fruit weight, length, diameter, firmness, and taste related quality indices. The calculated fruit fresh weight increased continuously with fruit development and reached to an average of 594g on Sep. 20 (160 DAFB). The ratio of length to diameter declines as fruit maturation progress, resulting in 0.898 for ripe fruit stage as a round oblate shape. Flesh firmness of 'Changjo' pears showed over 30N until 153 DAFB and then decreased abruptly with fruit ripening, reaching a final level of about 26.44N on 160 DAFB. Starch content of fruit sap was also decreased abruptly after 146 DAFB which decreased almost half of the fruits harvested at 139 DAFB. In parallel with the decrease of flesh firmness, ethanol insoluble solids (EIS) content decreased sharply with fruit ripens, only 50% of EIS was detected on the fruits harvested on 160 DAFB when compared to that of the fruits harvested on 139 DAFB (Aug. 30). The maximum value of soluble solids contents was observed in the fruits harvested on 153 DAFB, resulting in $14.2^{\circ}Brix$. The changes of skin color difference $a^*$ which means loss of green color occurred only after 139 DAFB, coincide with the decrease of SPAD value of the fruit skin. The sugars of the 80% ethanol soluble fraction consisted mainly of fructose, sorbitol, glucose and sucrose, also increased during maturation and ripening. Fructose and sucrose contents were larger than those of glucose and sorbitol in flesh tissues. These results were explained that stored starch is converted to soluble sugars during fruit maturation, mainly in fructose and sucrose increasing the sweetness of this cultivar. Total polyphenols were increased up to middle of fruit maturation (146 DAFB) and then decreased continuously until the end of fruit maturation. Consequently, our results suggested that the commercial harvest time of 'Changjo' pears should not be passed 153 DAFB and late harvest of this cultivar would not good for quality maintenance during shelf-life. As a result of the post-harvest low-temperature acclimation experiment during the short-term transportation period, fruits harvested at 146 DAFB tended to maintain higher firmness after 14 days of simulated marketing at $25^{\circ}C$ compared to fruits harvested at 153 DAFB regardless of temperature set. And, the slower the rate of decrease to the final transport temperature of $5^{\circ}C$, the higher the incidence of internal browning and ethylene production. Therefore, in order to suppress the physiological disorder and to maintain the fruit quality when exporting to Southeast Asia in the 'Chanjo' pears, it is desirable to lower the temperature of the fruits within a short time after harvest and to set the harvest time before 146 days after full bloom.
This study was performed to investigate the physicochemical properties of Korean Citrus sudachi fruit which were harvested at different harvesting time(every 20 days from Sep. 3 to Nov. 8) and region(Seogwipo and Cheju city area). The average weight of Citrus sudachi fruit harvested from Seogwipo area was as twice as that of Cheju area at the same period. The moisture content in fruit peel increased by ripening of fruit, but that of fruit juice showed no difference. The content of reducing sugar in fruit peel and fruit juice increased 2 times from Sep. 3 to Nov. 8. The content of crude fiber decreased both in fruit peel and fruit juice as progression of ripening. Crude protein and ash contents decreased in fruit peel but revealed no differences in the fruit juice during the same period. pH decreased in fruit peel and juice with its ripening. The content of vitamin C decreased by ripening of fruit. The transmittance which is important quality factor in fruit juice increased from Sep. 20 to Oct. 13. The content of free sugar increased about 2 times in fruit peel from Sep. 3 to Nov. 8 and showed 4 times increase in fruit juice at the same period. In the composition ratio of mineral, Ca and K were abundant in the fruit peel, but only K was the most abundant mineral in fruit juice than any others.
In this study, we evaluated the changes of fruit quality indices during fruit development and ripening in Korean new pear cultivar 'Wonhwang' and 'Whasan' to determine appropriate harvest time and to enhance the marketability. The fruit of each cultivar harvested from 100 days after full bloom (DAFB) to 135 and 150 DAFB in 'Wonhwang' and 'Whasan', respectively. The fruit growth of both cultivars showed a typical single sigmoidal pattern. Flesh firmness of two cultivars decreased continuously with fruit development and ripening, reaching a final level of about 2.6 kgF at harvest stage. The starch content of fruit sap was much higher in the fruits of early development stage than the later stage of fruit ripening. In 'Wonhwang' pears, the starch level decreased coincide with fruit ripening (130 DAFB), while that of 'Whasan' decreased from very early stage of fruit development (120 DAFB), 30 days before full ripe. 'Whasan' pear showed much lower acidity level of about 0.13% during fruit development and ripening period compared with that of 'Wonhwang'. Therefore, the ratio of soluble solids to total acidity (TSS/acid) increased gradually with fruit development and ripening, reaching a final level of 80 and 98 in 'Wonhwang' and 'Whasan', respectively. There were no climateric rise of fruit respiration during fruit ripening periods in two oriental pear cultivar. The changes of skin color difference including hunter vale $a^*$ which means loss of green color occurred only after onset of ripening in two cultivars.

BACKGROUND: The productivity and quality of blueberry (Vaccinium ashei Reade) greatly depend on the number of fruits in a plant. Especially, fruit set more than appropriate number negatively affects productivity and marketability due to the increased number of small fruits and delayed harvest time. This study was conducted to investigate proper timing and concentration for applying chemical blossom thinners such as ammonium thiosulfate (ATS) and UREA. METHODS AND RESULTS: ATS at 1.25% and 1.50%, and UREA at 6% and 8% were applied in four developmental stages, bud swell, pink bud, full bloom and petal fall. Fruit thinning rate was calculated based on the number of fruits harvested divided by that of flowers before applying blossom thinners. Ratios of leaf to flower and leaf to fruit were calculated based on the number of fully developed leaves in 25 days after full blossom divided by that of flowers or fruits, respectively. Chemical injury of leaves was investigated by calculating the number of leaves with chemical injury divided by the total number of leaves. Fruit thinning rates were 48% and 66% for UREA treatments at 6% and 8%, respectively, and 49% and 62% for ATS treatments at 1.25% and 1.50%, respectively, in the full bloom stage. In the petal fall stage, fruit thinning rates were 18% and 24% for UREA treatments at 6% and 8%, respectively, and 49% and 35% for ATS treatments at 1.25% and 1.50%, respectively. Leaf to fruit ratio (L/FR) increased by 109% and 188% compared to leaf to flower ratio in ATS treatments at 1.25% and 1.50%, respectively, and L/FR increased 93 and 196% in UREA treatments at 6% and 8%, respectively, in the full bloom stage. In the petal fall stage, leaf to fruit ratio increased by 60% to 100% in ATS treatments, but did not significantly differ from the control in UREA treatments. Fruit harvest was delayed in all treatments of all developmental stages except for 1.5% ATS and 6% UREA treatments at the petal fall stage, whose fruit harvest was two or three days faster than the control. CONCLUSION: The application of ATS and UREA for blossom thinning should be in the petal fall and full bloom stages for early and late harvest, respectively. Considering chemical injury, integrated harvesting and fruit size, however, it is appropriate to apply ATS at 1.5% in the petal fall stage to increase fruit productivity and quality in blueberry.
Two red pepper(Capsicum annuum L.) cultivars, 'Geumtap' and 'Bugang', were cultivated at main producing areas in Korea and harvested four times in 1998 and 1999. Length, weight, dry matter ratio and color of red peppers were measured at each harvest. The relations between external characteristics with regional climatic elements such as total accumulated air temperature, total amount of precipitation and duration of sunshine during the fruit growing periods were compared. Length and fruit weight decreased by delayed harvest. These characteristics were shown significant difference according to cultivars, but not to growing year. Dry matter ratio had a tendency to increase at the 3rd and 4th harvest. The red color as measured a${\times}$L values of pepper powder, increased with being later in harvesting, but the trend was uncertain. In fruit growth, fruit length showed a positive correlation with total accumulated air temperature in later growth period of fruits(from 1st to 20th day before harvesting), and fruit weight had relationships with accumulated air temperature and total amount of precipitation in later growth period of fruit. There was no relation between dry matter ratio and climate elements. The red color was shown high correlations with total amount of precipitation and duration of sunshine. There was highest coefficient of determination($r^2$) in all external characteristics.
Factors affecting fruit conformation of 'Fuji' apples (Malus domestica Borkh.) were investigated through correlation study of fruit weight, seed numbers, and seed weight in relation to fruit conformation indices. Apples were harvested from two orchards in 'Andong' and 'Youngyang' areas at commercial maturity and grouped by fruit weight. Average number of seeds and seed weight were 8.9 and 0.64 g in 'Andong' orchard, while 6.3 and 0.47 g in 'Youngyang' orchard, respectively. When pooled data from the both orchards were analyzed, correlation of fruit weight with seed weight was significantly positive, whereas that with seed number was not significant. Fruit shape index determined by length/diameter ratio was positively correlated with fruit weight, while relationship of the shape index with seed number or with seed weight was not significant. Asymmetry index tended to be low in apples from the 'Andong' orchard in which higher seed numbers and seed weight were observed. The asymmetry index showed highly negative correlations with seed numbers and with seed weight.
