감마선 조사와 로즈마리 추출분말 병용처리가 즉석 햄버거 스테이크에 미치는 영향. II. 품질 개선 효과 (Effects of Combined Treatment of Gamma Irradiation and Addition of Rosemary Extract Powder on Ready-to-Eat Hamburger Steaks: II. Improvement in Quality)

  • 본 연구는 즉석 햄버거 스테이크의 감마선 조사(5, 10 및 20 k㏉) 또는 냉장저장에 의한 품질변화를 최소화하기 위해 로즈마리 추출분말(200, 500 ppm)을 병용 처리하여 지질 산화 및 색도 측정과 관능평가를 통해 그 효과를 평가하였다. 조사직후 조사구의 TBA값은 Control>Rosemary 200>BHA>Rosemary 500 순으로 나타났다. 감마선 조사에 의해 햄버거 스테이크의 지질 산화가 증가되고 관능적 품질은 감소되었으나, 로즈마리 추출분말을 첨가하였을 때 지질 산화가 억제되고 저장 중 관능적 특성이 향상되었다. 감마선 조사에 의해 즉석 햄버거 스테이크의 경도는 감소되었고, 적색도(a value)는 증가되었으나, 항산화제 첨가에 의한 영향은 없었다.

  • 본 연구는 즉석 햄버거 스테이크에 감마선 조사와 항산화제 및 항균제로 알려진 로즈마리의 추출분말의 병용처리 효과를 평가하였다. 이를 위해 로즈마리 추출분말을 0, 200, 500 ppm의 농도로 첨가한 즉석 햄버거 스테이크를 0, 5, 10 및 20 k㏉로 조사한 후 4개월 간 냉장(5$^{\circ}C$)저장하면서 미생물의 생육을 평가하였다. 또한 감마선 조사와 로즈마리 추출분말의 병용처리가 즉석 햄버거 스테이크의 저장성에 미치는 영향을 단기간 내에 파악하기 위해 가속저장(3$0^{\circ}C$) 시험을 병행하였다. 즉석 햄버거 스테이크의 초기 호기성 총균수는 약 5 log CFU/g이었으나, 감마선 조사에 의해 햄버거 스테이크의 저장 중 호기성 총균과 대장균군 수를 효과적으로 감소시켰다. 특히, 20 k㏉로 조사한 햄버거 스테이크에서는 저장 4개월까지 어떠한 미생물도 검출되지 않았다. 총균수가 $10^{6}$$10^{7}$ log CFU/g에 이르렀을 때를 저장한계로 보았을 때, 냉장 저장시 비조사구는 14일인 반면, 5 및 10 k㏉ 조사구는 각각 28∼42, 98∼112일이었다. 5 및 10 k㏉ 조사구에서 로즈마리 추출분말을 500 ppm의 농도로 첨가하였을 때 비첨가구에 비해 저장기간이 14일 연장되었다. 결과적으로, 가속저장 시험 시 감마선 조사에 의해 즉석 햄버거 스테이크의 저장성이 향상되었으나 로즈마리 추출분말 첨가에 의한 효과는 관찰되지 않았다. 그러나 냉장 저장 시에는 감마선 조사구(5 및 10 k㏉)에서 무첨가구에 비해 로즈마리 추출분말의 첨가 농도가 증가할수록 저장성이 증가하는 것으로 나타났다.

대구지역의 서양음식에 대한 수용도와 이용실태에 관한 연구 (A Study on Acceptance and Utility Practice of Western Cusine in Taegu)

  • The acceptance and dining behavior of Taegu residents for western foods were surveyed through the questionnaire to provide basic information for the diet improvement. The results were as follows: 1. The preliminary test showed that 19 western foods had high preference among them in the order of ice cream, fried chicken, fried potato, coffee, salad, pizza, soup, pork cutlet, hamburger sandwich, hamburger steak, potato croquette, curry rice, omelet rice, beef steak, spaghetti, com flakes, hashed rice, and omelet. Although a diversity was observed depending upon the age groups, the persons in their thirties generally had high preference on most western foods. 2. The recognition types of housewives to the western food were grouped into the merits of meal, disadvantages of meal, nutritive values, and cooking convenience. In order to have western food, 54.5% of the respondents went to restaurants, mainly family restaurant, however, the level of frequency was very low.

연근 첨가가 우육 햄버거 패티의 품질에 미치는 영향 (Effect of Lotus Root (Nelumbo nucifera) on the Quality of Beef Hamburger Patties)

  • In order to develop functional hamburger steak patties, various concentrations of lotus root (Nelumbo nucifera) were incorporated into them. The quality characteristics of the hamburger patties prepared after the addition of 5, 10, 15, 20 or 25% (w/w) lotus root were investigated. The moisture contents of the groups with lotus root were significantly higher than that of the control group. The crude fat and crude protein contents of the control group were higher than those of the other groups. No significant difference in the crude ash content was observed among the groups. The cooking loss rate, rate of reduction in diameter, and reduction in thickness of the groups with lotus root were significantly lower than those of the control group. Accroding to the results, lotus root inhibit cooking loss and help to keep moisture after cooking process. No significant difference in the L value was observed among the groups. The a and b values of the groups with lotus root were significantly decreased compared to those of the control group. No significant difference in hardness was observed among the groups. it suggest lotus root didn't affect the texture of hamburger patties. In the quantitative descriptive analysis, no significant difference in the color and fresh odor was observed among the groups. The groups with lotus root were softer than the control group. The groups with 10 to 25 % of lotus root showed higher juiciness and a sweeter taste than the control group. The preference of appearance, texture, flavor and overall acceptability of the groups with 10 to 25% lotus root were higher than those of the other groups, including the control group. In conclusion, lotus root can increase the acceptability of hamburger patties and 10-25% would appear to be the proper amount of it to use.

눈다랑어(Thunnus obesus)를 활용한 고령친화식품용 연화식 함박스테이크, 완탕 및 토마토스프의 개발 및 품질특성 (Development and Quality Characteristics of Softened Hamburger Steak, Wantang, and Tomato Soup for Senior-friendly Seafoods Using Bigeye Tuna Thunnus obesus)

  • This study was developed to prepare hamburger steak (HS), wantang soup (WS), and tomato soup (TS) for senior-friendly seafood's (SFS) using bigeye tuna Thunnus obesus, and to investigate their quality characteristics. All data were presented in the order of HS, WS, and TS. The hardness values were 298.9×1.03, 47.1×1.03 and 14.9 ×1.03 N/m2, respectively. The viscosity of TS was 2,856 mPa·s. The protein contents were 13.8, 11.7, and 9.7 g/100 g, respectively. The fat-soluble vitamins content were as follows: vitamin A 21.88, 5.03, and 23.72 ㎍RAE/100 g; vitamin D 1.15, ND, and 1.81 ㎍/100 g, respectively. The water soluble vitamins contents were as follows: vitamin C 47.22, 32.83 and 37.01 mg/100 g; vitamin B2 0.17, 0.11 and 0.10 mg/100 g; vitamin B3 34.87, 34.76 and 54.62 mgNE/100 g. The Ca contents were 15.9, 16.8, 28.9 mg/100 g, and the K contents were 383.8, 167.4, and 300.0 mg/100 g, respectively. The dietary fiber was 0.04, 0.07 and 0.08 g/100 g, respectively. Escherichia coli was not detected in any of the products. These results suggest that the products should be classified as follows, based on their appropriateness as SFS: HS, WS and TS.

조리실습교육에 대한 학습자의 요구도 조사 (Research on the Needs of Learners for Cooking Practice Education)

  • The study was aimed to estimate the degree of recognition of, satisfaction with and needs for cooking practice education. 300 female students of middle schools and high schools in Seoul, Kyung-gi, Inchon area were targeted fer the research, which has been conducted from January 1st to December 20th in 2003. The crosstab, the t-test, and the ANOVA analysis were processed as methods using SPSS. The study showed that most of students had experienced cooking exercises, and the degree of satisfaction of the high school group was higher than that of the middle school group. Both groups answered they wanted more time for the cooking practice classes and the middle school group had the greater necessity. The necessity far practice lessons of cooking traditional foods reaches n high level in both groups, All the students answered they liked both western and traditional foods, but preferred the traditional food to the western one. They also believed the traditional food was more healthy than the western one. In terms of the needs for cooking practice education, the middle school group wanted to learn how to cook cake, pie, steak potato chip, and hamburger, while the high school group wanted cake, pie, steak sandwich, and potato chip. As for the traditional food, the middle school group wanted to learn how to cook Naegmyun(cold noodles), fried rice, rice hash, dumpling soup, and knife-cut noodles. The high school group, however, picked knife-cut noodles, fried rice, iced noodles, rice hash, and rice-cake soup.

  • 고등어를 이용하여 어육냉동 steak을 만들어 이것의 가공조건을 구명하고 또한 대두단백질의 첨가가 제품품질에 미치는 효과에 대하여 검토하였다. 고등어 냉동 steak를 가공하기 위해서는 어육에 탄산수소나트륨 0.5%, 식염 1.0%, 중합인산염 0.2%, 글루탐산나트륨 0.2%, 설탕 2.0% 및 향신료로서 고춧가루 0.2%, 후추가루 0.4%, 마늘가루 0.2%와 nutmeg 0.2%를 첨가하여 고기갈이한 다음 $-3^{\circ}C{\sim}-5^{\circ}C$에서 2일간 조온저장 후 동결저장하는 것이 가장 좋았다. 또한 대두단백질을 5% 첨가하므로서 제품의 동결저장중 색조변화, 유리드립생성, 지방산패억제 및 텍스튜어의 개선효과가 있었으며 관능검사 결과로서도 고등어냉동 steak는 동결저장 90일동안 품질이 안정되게 유지되었다.

코로나19에 따른 초등학교 급식 메뉴 제공 빈도의 변화 (Changes in Serving Frequency of Elementary School Meal due to COVID-19 Pandemic in Korea)

  • The purpose of this study was to examine changes in serving frequency of elementary school meal before and after the COVID-19 pandemic. Number of menus provided in June and July of 2019 and 2020 were compared for 300 elementary schools in Korea. As a result, the serving frequency of la carte and dessert was increased after COVID-19. In addition, frequencies of main dishes such as pork cutlet, chicken, sweet and sour pork, hamburger steak, and so on using processed food were increased after COVID-19. Because of the longer serving time due to staggered serving, cook's working time for serving meals became longer. Therefore, it was judged that the number of servings of processed food was increased rather than the menu with a large amount of preprocessing work. Moreover, among desserts, fruits showed increased serving frequency. Serving frequencies for juice and dairy products were also increased. However, increased servings of juice and dairy products could increase sugar intake. Thus, a careful plan for menu composition is needed to provide balanced nutrients to students under emergency situations such as an infectious disease.

대구.경북 지역의 청국장 제품에 대한 기호도 및 이용실태 조사 (Study on Preference and Using Behavior of Chungkukjang Products in Daegu and Gyeongbuk Area)

  • Survey data from 654 adults (225 males, 429 females) were analyzed based on frequency, percentage, chi-square test, one-way ANOVA; and Duncan's multiple range test. The main results were based on the preference for chungkukjang_(CKJ) products using a 5-point Likert scale. According to the survey, traditional CKJ products received the highest score_(3.64) according to personal preference among all tested products. The responses to eight questions about CKJ products were also measured using a 5-point Likert scale. The question_ as to whether or not "CKJ has anticancer function" received the highest score_(4.24) while the "CKJ is good for hangover" scored the lowest. Regarding the preference for CKJ products, "good for health" (55.3%) and "unpleasant smell" (72.9%) were the most popular answers, Regarding the intention to eat CKJ food products, CKJ tofu was most often selected. Among the 11 items, CKJ tofu, CKJ steak, CKJ hamburger, CKJ ice cream; and CKJ vegetable salad were highly preferred foods. The percentage of respondents that expected "increasing" prospects for CKJ consumption was 55.2%, most likely because 76.9% of the respondents selected "healthy food". Regarding the reasons for decreasing prospects, 68.9% of the respondents chose "peculiar smell". In the same manner, 53.4% of adults replied that future quality improvement should "improve the smell".

대형 양식당 음식에 대한 미생물학적 위해분석 (Microbiological Hazard Analysis of Foods in Large Western-style Restaurants)

  • 본 연구는 대형 양식당을 대상으로 조리공정별 메뉴 분석 및 미생물 검사를 실시하여 대형접객업소의 HACCP plan 개발을 위한 기초 자료로 제공하고자 하였다. 이를 위해 대구지역 양식당 44개소의 메뉴를 수집하여 크게 3가지 조리공정으로 분류하였고, 각 공정별로 대표 메뉴를 선정하여 조리공정 흐름도를 작성하였다. 또한 대구지역 3개 대형 양식당을 대상으로 음식생산단계별 소요시간 및 온도를 측정하고, 일반세균, 대장균군과 식중독균에 대한 미생물학적 품질을 측정하였다. 연구결과를 요약하면 다음과 같다. 대형 양식당의 메뉴를 조리공정별로 분류하면 크게 가열공정, 비가열공정, 가열-비가열 혼합공정으로 구분된다. 이중 가열공정은 저장-가열 조리공정과 가열-냉각-저장-재가열 조리공정으로 나눌 수 있다. 가열공정의 대표 메뉴인 햄버거스테이크는 냉동저장-해동-가열조리 등의 순서로 생산되며, 내부온도 $82{\sim}86^{\circ}C$로 10분간 가열하여 제공할 때 일반세균 $10^2\;CFU/g$ 이하, 대장균군 및 식중독균 음성으로 미생물적 품질이 적합한 것으로 나타났다. 또한 저장-가열조리 되는 가니쉬 포테이토의 경우도 가열조리 후 미생물학적 품질이 적합한 것으로 나타났다. 가열-냉각-냉장저장-재가열의 순서로 생산되는 매쉬드 포테이토는 냉장저장 시 대장균군의 수치가 $10^2\;CFU/g$이상이었으나 재가열 조리 후 일반세균 $10^2\;CFU/g$이하, 대장균군 및 식중독균 음성으로 미생물적 품질이 적합한 것으로 나타났다. 비가열공정의 대표메뉴인 샐러드는 전처리 후 냉장보관 시 일반세균 $10^2{\sim}10^7\;CFU/g$, 대장균군 $10^2{\sim}10^6\;CFU/g$, 대장균이 검출되어 미생물적 품질이 낮은 것으로 나타났다. 그러므로 양식당에서 미생물학적 품질이 높은 음식을 제공하기 위해서는 조리 또는 재가열 공정 등의 가열공정에서는 가열온도를 철저히 지키고, 샐러드처럼 가열하지 않고 제공되는 메뉴는 씻기, 냉장저장 등 공정에서의 위생관리를 철저히 해야 하겠다. 이상의 결과를 바탕으로 향후 양식당의 HACCP 관리계획이 개발되어 식품 접객업소에서의 과학적인 위생관리를 철저히 하는 것이 필요하겠다.
