혼합 인산염의 첨가가 어류연육의 기능적 성질에 미치는 영향 (Effects of Phosphate Complex on the Functional Properties of Fish Meat Paste)

  • 인산염의 첨가가 조기 및 갈치연육의 보수력 및 단백질의 용출성에 미치는 영향과 가열처리 후에 조기육을 원료로 가공한 어묵의 texture에 미치는 영향을 조사하기 위하여 인산염을 첨가하지 않은 대조구와 4종의 시판 복합 인산염을 첨가수준별로 사용 했을때의 기능적 성질을 분석 검토 하였다. 연육의 보수력 및 염용성 단백질량은 조기연육에는 인산염B(sodium poly-phosphate 50%. sodium Poly-Phosphate20%, sodium tetra meta-Phosphate 20%, sodium acid pyro-phosphates%, sodium ultra meta-phosphate 5%)를 갈치연육에는 인산염C(sodium poly-phosphate40%, sodium pyro-phosphate 30%, potassium pyro-phosphate 15%, sodium tetra meta-phosphate10%, sodium hexa meta-phosphates%)를 각각 0.4% 첨가한 경우가 가장효과적 이였고 그때의 염용성 단백질의 용출량은 조기연육이 954mg%, 갈치연육이 686mg%였다. 조기육을 원료로 하여 가공한 어묵의 적정가열 조건은 $85^{\circ}C$에서 45분간 가열한 것이 조직감이 양호 하였다. 한편 $121^{\circ}C$에서 10분간 가열한 경우는 C인산염이 다른 인산염에 비하여 어육 단백질의 열 안정성이 높은 것으로 나타났다.

DHA 함유 지질 추출소재로서 수산부산물의 검색 (Screening of by-products derived from marine food processing for extraction of DHA-contained lipid)

  • 수산부산물을 식품소재와 같이 효율적으로 이용하기 위한 일련의 기초 연구로서 DHA 함유 지질 추출소재로서 붕장어, 칼치의 내장 및 두부, 꽁치, 포클랜드산 및 뉴질랜드산 오징어의 내장 등과 같은 부산물에 대하여 검토하였다. 수산부산물의 건물당 지질함량은 $40.5{\sim}48.0%$이었고, 지질조성은 중성지질이 $92.1{\sim}99.0%$로 추출 소채에 관계없이 거의 대부분을 차지하였다. 중성지질은 트리글리세리드가 $50.0{\sim}69.9%$로 절반 이상을 차지하였고, 유리지방산이 $7.8{\sim}20.3%$, 스테롤류가 $3.5{\sim}13.9%$, 탄화수소가 $4.2{\sim}10.2%$ 및 디글리세리드가 $3.5{\sim}9.3%$를 차지하였으며, 모노글리세리드는 2% 내외 이었다. 수산부산물에서 추출한 총지질의 지방산조성 중 폴리엔산의 조성비는 포클랜드산 및 뉴질랜드산 오징어 내장유가 각각 41.0% 및 38.2%로 어류 부산물유의 $27.7{\sim}33.3%$에 비하여 높았다. DHA조성비는 뉴질랜드산 오징어 내장유가 21.1%로 가장 높았고, 다음으로 포클랜드산 오징어 내장유(16.3%), 갈치 부산물유(13.9%), 붕장어 부산물유(11.7%) 및 꽁치 부산물유(10.7%) 등의 순이었다. 총지질을 구성하는 주요 지방산은 지질 추출 소재인 부산물의 종류에 관계없이 16:0, 18:1n-9, 20:5n-3 및 22:6n-3 등이었다.

  • 인산염의 첨가가 조기 및 갈치연육의 보수력 및 단백질의 용출성에 미치는 영향과 가열처리 후에 조기육을 원료로 가공한 어묵의 texture에 미치는 영향을 조사하기 위하여 인산염을 첨가하지 않은 대조구와 4종의 시판 복합 인산염을 첨가수준별로 사용했을 때의 기능적 성질을 분석 검토하였다. 연육의 보수력 및 염용성 단백질량은 조기연육에는 인산염 B(sodium pol-phosphate 50%, sodium pyro-phosphate 20%, sodium tetra meta-phosphate 20%, sodium acid pyro-phosphate 5%, sodium ultra meta-phosphate 5%)를, 갈치연육에는 인산염 C(sodium poly-phosphate 40%, sodium pyro-phosphate 30%, potassium pyro-phosphate 15%, sodium tetra meta-phosphate 10%, hexa meta-phosphate 5%)를 각각 0.4% 첨가한 경우가 가장 효과적이었고 그 때의 염용성 단백질의 용출량은 조기연육이 954mg%, 갈치연육이 686mg%였다. 조기육을 원료로 하여 가공한 어묵의 적정 가열조건은 85$^{\circ}C$에서 45분간 가열한 것이 조직감이 양호하였다. 한편 121$^{\circ}C$에서 10분간 가열한 경우는 C 인산염이 다른 인산염에 비하여 어육 단백질의 열안 정성이 높은 것으로 나타났다.

무미와 단미로 특징되는 동경이에 대한 연구 (Study on Dongkyung-i Dog Characterized as Anury and Brachyury)

  • 최근 댕견으로 불리는 동경이에 대한 과학적 연구는 현재까지 거의 없는 실정이며, 본 연구는 동경이의 형태학적 특징을 조사하기 위하여 수행되었다. 연구 결과 동경이는 활동적이고 체격이 단단하고 사람과 친화적인 것을 알 수 있었다. 형태학적으로 평균 22.6kg의 체중을 보여 중형견으로 분류되었고 피모색은 주로 황갈색으로 짧은 털을 가지고 있었고 외관상 골반이 단단하고 꼬리가 없거나 매우 짧았다. 방사선학적 연구 결과 꼬리의 미추가 형성되지 않았거나 미약한 것을 알 수 있었다. 이러한 연구 결과로부터 한국 고유 품종의 하나인 동경이의 특징은 무미 또는 단미인 것을 알 수 있었다. 향후 혈통에 대한 유전학적 연구의 진행으로 한국 고유의 특성 있는 품종의 개발 가치가 있을 것으로 판단된다.

평안감사(平安監司) 환영도(歡迎圖)의 복식(服飾) 고찰(考察) (A Study on Dress and its Ornament seen on the Picture of Welcoming the Governor of Pyongan Province)

  • This article briefly researched the Picture of Welcoming the Governor of Pyongan Province painted by Kim Hong-do, penname Danwon(1745-1818?). The Picture was composed of three parts and its historical and pictorial back-ground were reviewed firstly. And later the dress and its ornament appearing on the Picture were studied. In the historical viewpoint of dress and its ornament, the Picture shown all sorts of dress from lower class maids and servants to higher officials-dignatories and governor, and dealt with nearly all dresses. In order to support and to make better understand the dresses of that age, some Korean literary works of the same period depicting the dress and its ornament were also selected. This article dealt with the dress and its ornament. especially that of 18th century of the Yi Dynasty, and comparatively studied for our folk painting with literary works. Also the picture enabled to make this study was an important data of our old dress and its ornament. This painting was considered as one of our cultural treasures. Several conclusions drawn out from this study as followings: 1) In male and female dress of lower class people; male dress was consist of trouser and coat, and coat, and over the coat SOCHANGYI were used. Female dress was basically consist of skirt and these were white color of their favourite. Mainly simple color was used for clothing and its dress style were CHAKSOO-HYONG (narrow sleeve style) which convenient for a work. 2) Yangban's dress was consist of trouser, coat and over the coat, usually DOPO(over-coat) were used and some case JICKRYONGPO (a sort of over-coat) or CHANGYI were also used. These were GWANGSOO-HYONG (wide sleeve style) of inconvenient for a work. 3) In head-gear, there was no difference of the higher and the lower. They usually used HEUC-KRIP (black Korean hat). The OCKJUNGJA, GONJAKMI (peacock tail), HOSOO (tiger beard), and YOUNGJA (chin strip) were used according to officials ranks as head-gear's oraments. 4) Local petty officials used ordinary dress and CHUPRI (warn-dress) were also used by them, and military officials used war-dress of tight sleeve. 5) The belting of over-coat are different in color according to official grade. The higher grade wore red-wide belt, but generally black narrow belt for ordinary officials. 6) All KISAING girl wore SAMHYEOIJANG upper coat. And their head ornament were black KARIMA for grown KISAING. SAYANG hair for DONGKI or maiden KISAING and BINYEO (an ornamental rod of women's hair) were inserted into the hair of rear down part of head. The water carring maid wore BANHYEOIJANG upper coat and no KARIMA were on head and their coat were gloomy color. Above mentioned are several conclusions, and there migh be a false or erroneous explanations of 18th century dress and its ornament, however I considered they were data for blank period of quite unknown.

정치망어장의 어도형성에 관한 기초연구 ( 3 ) - 어획자료의 통계적 분석 - (Fundamental Studies on the Migrating Course of Fish Around the Set Net ( 3 ) - Statistic Analysis for the Catch of Set Net -)

  • The authors analyzed the daily catch data which were obtained from two different regions at the Southern Sea in Korea, Neungpo, Geoje island and Yangwhagum, Namhae island, during three or four years in 1978, 1981-1985, in order to know the fishing characteristics of the set net fisheries. The favorable fishing season was summer in the southern sea. The total catches during one year were greatly affected by those several day when the dominant species of fish were caught in large quantities. The dominant species of fish at Neungpo were little horse mackerel, sand lance, sardine, hair tail, spanish mackerel and common mackerel, and those at Yangwhagun were anchovy, little horse mackerel, sardine, spanish mackerel and gizzard shad, in order of catch. Especially, the little horse mackerel and the sardine appeared to make up very big schools at both Neungpo and Yangwhagum. The occurrence seasons of the dominant species were different by the region, but generally those were earlier at western part than at eastern part of the Southern Sea in Korea.

우리나라 근해 어업의 잠재적 감척규모분석에 관한 연구 (Analyzing Potential Vessel Buyback Scale of Offshore Fisheries in Korea)

  • Fisheries buyback programs in Korea have been implemented since 1994, and their scales are estimated to be the present value of 930 billion won for the last 9 yens since 1994. The paper attempts to identify the patterns of each fish species, of which their yields can be steadily increased or significant]y decreased, and to evaluate its effective level and the optimal level for buyback programs by means of fishing capacity analysis. The paper distinguishes fish species, that there is no need to reduce the fishing efforts, such as anchovies, mackerels, squids, Spanish mackerels, and herrings, because MSY exceeds yields, from fish species to control overfishing such as file fish, yellow corvenias, young pollack, hair tail, snow crab, and pollack. The paper also suggests that 65% of the fishing efforts (total tonnages) should be cut back at the national aggregate level in order to restore fish stocks.

한.일 FTA체결에 따른 수산부문 영향 분석 (The Effect Analysis of Korea-Japan FTA on Fisheries Sector)

  • This paper focuses on the analysis of effects on fisheries sector following Korea-Japan Free Trade Agreement and the results are found as follows. In terms of national competitiveness, the RCA(Revealed comparative advantage) index shows that Korea is higher than Japan in most species items. And the calculation of TSI(Trade Specialization Index) finds that Korea is export specialized while Japan import specialized, showing that Korean fisheries sector is internationally more competitive than Japan. The tariffs on the marine products should be completely scrapped between Korea and Japan, export of marine products to Japan increases a mere 2%, while import from Japan 13.5%. In terms of value, annual export to Japan stands at 20,135thousand USD, while import from Japan at 12,137thousands USD, resulting in trade balance improvement of 8,000thousand USD in total. The tariff measures above is expected to have a positive effect on the related industry of marine products such as Oyster, Conger eel, Ark shells and Laver, but those involved in fisheries of Alaska pollack, Hair tail, Sea-bream(live fish), Red horsehead(frozen), Saury are expected to be negatively affected. Given the results of analysis above, the effects of FTA on the fisheries would be advantageous to Korea as a whole, but at the same time, the advantage and disadvantage sustained differs by fishery type and marine products. To that effect, negotiation strategies and countermeasures should be made, taking the results into account.

후경부에 발생한 광범위 골화를 동반한 모기질종 1예 (A Case of Pilomatricoma with Extensive Ossification Arising the Posterior Neck)

  • The pilomatricoma is a benign skin neoplasm arising from hair follicle matrix cells, and it comprises approximately 0.12% of all benign skin tumors. It occurs most commonly in head and neck. It usually tends to occur in childhood or school-age. Mainly, it exists in single subcutaneous or intradermal nodule and grows very slowly. The diagnosis is confirmed by histopathologic examination. Histopathologically, it is characterized by basaloid cells, enucleated shadow cells and calcifications in the shadow cell. However, it is rare to present extensive ossification in pilomatricoma. The treatment of choice is wide local excision. A 66-year-old man came to our clinic and he complained of two masses on right parotid tail and posterior neck. We performed excisional biopsy on posterior neck and partial parotidectomy. The pathology of former was pilomatricoma with extensive ossification. We report a rare unique case of pilomatricoma with brief review of literature.

한우송아지에서 소 바이러스성 설사병 바이러스 발생 (Outbreak of Bovine Viral Diarrhea Virus in Korean Indigenous Calf)

  • 25일령의 한우송아지가 10일 간의 호흡기질환과 출혈성 설사의 병역을 나타내다가 폐사하였다. 이 송아지는 다른 송아지들과 비교해보았을 때 극도로 위축되어 있었다. 꼬리와 회음부의 분변 흔적은 만성설사가 지속되었음을 말해주었다. 부검시 다양한 기관(조직)에서 반상출혈이 관찰되었다. 역전사 중합효소연쇄반응에 의하여 소 바이러스성 설사병 바이러스가 진단되었다. 이 증례는 계통발생분석에서 BVDV-2a 그룹에 속하는데, 이것은 고병원성인 미국 균주890 (U18059)과 유사하다. 본 증례는 BVDV-2가 한국에서 유행하고 있다는 증거를 제공한다. 이를 통해 우리는 BVDV-2의 발생을 재확인하였다.
