A Survey of Mycotoxins In Commerical Foods and Fate of Mycotoxins During Food Processing

  • The natural occurrence of mycotoxins in food and foodstuffs and the fate of mycotoxins during food processing were investigated. Aflatoxins and /or Fusarium mycotoxins(nivalenol, deoxynivalenol and zearalenone) were detected in commercial samples of various foods and foodstuffs collected at Tokyo markets. It was found that the mycotoxins were decomposed at high temperature, but some remained after heating at usual temperatures for an ordinary period for domestic cooking(boiling, deep-frying of grilling). Industrial food manufacturing processes were relatively effective for removing mycotoxins.

Effects of Various Cooking and Re-heating Methods on Cholesterol Oxidation Products of Beef Loin

  • The objective of this study was to define the effects of various cooking and re-heating methods (pan roasting, steaming, oven grilling and micro-waving) on the cholesterol and formation of cholesterol oxidation products in beef loin during storage at $4^{\circ}C$. Raw samples showed lower total cholesterol content than cooked products sampled during storage for 6 d. The following cholesterol oxidation products (COPs) were separated by gas chromatography: $7{\beta}$-hydroxy cholesterol, $20{\alpha}$-hydroxy cholesterol, 25-hydroxy cholesterol, cholestane-$3{\beta}$, $5{\alpha}$, $6{\beta}$ triol (triol), ${\alpha}$-epoxide and 7-ketocholesterol. Total amounts of COPs/cholesterol at 0 d were 0.74, 0.63, 0.76, 1.23 and 0.83% for the raw sample, pan roasting, steaming, oven grilling and micro waving methods, respectively. After 6 d storage almost of the samples had higher content of total COPs than at 0 and 3 d; the lowest (0.55%) COPs was found in the steaming cooking and re-heating method. The highest (5.96%) of COPs was found in the pan roasting cooking and re-heating method after 6 d storage. In conclusion, the concentration of total cholesterol and cholesterol oxidation of beef loin were increased as a consequence of cooking and re-heating methods. Steaming and micro-waving methods showed the lowest of cholesterol oxidation products under refrigerated storage for 6 d. However, each cooking and re-heating method had its own distinctive cooking effects.

  • 본 연구는 암의 예방에 관한 효과적인 영양프로그램을 계획하기 위해 한국의 젊은 부모들이 현재 가지고 있는 식사와 암에 대한 개념들을 조사하였다. 10살 미만의 자녀를 가진 1명이상 가진 부모 14명을 In-depth 인터뷰 하였다. 대부분 조사대상자들은 식사 또는 식품이 암의 발병에 연관 있음을 인식하고 있었으나 몇몇 조사대상자들은 식사 또는 식품이 암의 발병 위험율을 감소 시킬수 있다고 믿고 있었다. 그들은 또한 육류, Smoked meat, cured meat, Processed food, 지방은 발병 위험율을 증가시키고 채소와 과일은 감소시킨다고 믿고 있었다. 조리법 중 grilling 또는 barbecuing은 암의 발병위험율을 증가 시키는 요인으로 인식되었다. 몇몇 조사대상자들은 특정한 영양소(Zn,Se)또는 식품들(된장, 버섯, 마늘, 인삼 등)이 발병률을 감소시킨다고 믿고 있었다. 대부분 조사대상자들은 20대와 30대가 암의 예방을 위해 중요한 시기라고 인식하고 있었으며 신문, 잡지, 라디오, TV가 건강과 영양에 대한 정보를 얻는 중요한 매체이었다.

일부 서울지역 대학식당의 메뉴분석 (Evaluation of Meals Students Consumed in College Foodservice)

  • A survey was conducted in 591 college students using 8 different cafeterias serving 31 meals. The information was obtained about the name and amount of dishes they consumed from the menu offered by college foodservice. Mean nutrient contents per meal in offered menu were higher than 1/3 of RDA for their age, sex in offered menu. The mean energy content was 466kcal from rice, 113kcal from soup, 141kcal from side dish and 21kcal from kimchi. When side dishes were classified by cooking methods, side dishes using grilling, frying, roasting methods had high energy content and fat percent above 200kcal, 40% per dish. By main ingredients, side dishes with animal food were higher energy than with plant food. Students consumed 94% of the energy provided in offered menu. When compared to proportion of foods consumed by sex, there was 43% of female and 22% of male consumed less than half in soup and 31% of female and 12% of male in kimchi. The most prevalent menu patterns of subjects included rice, soup, 2 side dishes, kimchi and were the same in both sexes. Mean energy intakes per meal were 989kcal for males and 842kcal for females which were enough to meet 1/3 of RDA for their age and sex. Most nutrient intake except fat and vitamin B1 were higher in set menu than in cafeteria. Nutrient adequacy ratio(NAR) were above 0.9 except calcium and vitamin A. The mean energy intake was 542kcal from rice, 70kcal from soup, 164kcal from side dish and 20kcal from kimchi. In conclusion, intake of most of the nutrients of students obtained from males in college foodservice were sufficient but calcium intake was insufficient and fat content was above 20% of energy. High fat consumption was due to side dishes from frying, grilling, roasting with animal food. To provide desirable meals in college foodservice, use of fat in cooking must be decreased.

경기 지역 초등학생들의 수산물 섭취 경험 및 기호도 조사 (A Study on the Eating Experience and Preferences for Seafood in Elementary School Students in Gyeonggi-do Area)

  • The purpose of this study was to compare the eating experience and preferences for seafood among elementary school students in Gyeonggi-do. A survey was carried out on 383 elementary school students. As for the eating experience of seafood, the students were aware of and had eaten 'Scomber japonics (Go-deung-eo) (96.3%)', 'Anadara broughtonii (Jo-gea) (95.8%)', 'Ommastrephes sloani pacificus (O-jing-eo) (98.7%)', 'Panulirus japonicus (Sea-ou) (98.4%)', 'Porphyra tenera (Gim) (99.5%)', 'Shrimp, soused (81.2%)', 'Eo-muk (98.7%)', and 'Anchovy, dried (98.7%)'. As for the preferences for seafood, 'like (67.6%)', 'fair (21.5%)', and 'dislike (7.3%)' were observed. Concerning the frequency of seafood consumption, 4th grade students showed higher frequency of '1~2/week' compared to others (p<0.05). 6th grade students showed higher frequency of '3~4/week' compared to others (p<0.05). In terms of preferable cooking methods for seafood, 'grilling (35.0%)', 'soup (23.0%)', and 'raw fish (19.8%)' were observed. Boys showed a higher preference for 'grilling', 'frying' and 'raw fish' compared to the girls (p<0.05). Girls showed a higher preference for 'soup', 'braising' and 'steaming' compared to the boys (p<0.05). As for the seafood intake by eating place, 'home (60.1%)', 'eating-out (18.3%)', and 'school lunch menus (12.8%)' were observed in that order. Therefore, in order to increase the consumption and intake of seafood, students should attempt to achieve proper intake though information of nutrition and consistent nutritional education.

Influence of Cooking, Storage Period, and Re-heating on Production of Cholesterol Oxides in Chicken Meat

  • The objective of present study was to investigate the effect of cooking and their combinations with re-heating methods on the formation of cholesterol oxidation products (COPs) in stored chicken thigh meat. Pan roasting, steaming, oven grilling, charcoal grilling, and microwaving were used for cooking. Re-heating of samples was done using the same cooking methods or microwaving after 3 and 6 d of refrigerated storage. Cooking and re-heating resulted in reduction of crude fat and cholesterol contents of chicken thigh meat depending on storage period before re-heating. Cooking and storage period had no influence on the total amount of COPs. The highest total amount of COPs was observed in meat samples cooked by steaming and reheated by microwaving after 6 d of storage, which showed similar value to raw chicken meat stored for 6 days. However, different re-heating methods formed different types of COPs depending on storage period before re-heating. The high amount (p<0.05) of 25-hydroxycholesterol or ${\alpha}-epoxide$ was detected in meat samples reheated by steaming or microwaving at 3 or 6 d of storage after steamed cooking, respectively. As a result, the combination of steaming and re-heating with microwaving could increase the total amount of COPs in chicken thigh meat and different cooking/re-heating methods could form different types of COPs, even though no significant difference in the total amount of COPs depending on storage period.

Impact of Cooking, Storage, and Reheating Conditions on the Formation of Cholesterol Oxidation Products in Pork Loin

  • This study investigates the effect of cooking, storage, and reheating conditions on the formation of cholesterol oxidation products (COPs) in pork loin. Samples of pork loin procured 24 h postmortem were initially processed and assessed for total fat and cholesterol content. The cooking methods evaluated were pan roasting, steaming, oven grilling, and microwaving. Cooked pork loin samples were stored at 4℃ and reheated after 3 and 6 d of storage using the original method of preparation or alternately, microwaving. Fat content increased significantly with cooking as a result of the loss in moisture but cholesterol content remained unchanged. Pan roasting and microwave cooking caused a significantly higher production of COPs, as with the process of reheating using microwave, pan roasting, and oven grilling methods. The major COPs found in pork loin were cholestanetriol, 20-hydroxycholesterol, and 25-hydroxycholesterol, whose concentrations varied according to the different cooking and reheating methods used. Moreover, the aerobic storage of cooked pork loin under a refrigerated condition also increased the formation of cholesterol oxides on reheating.

한국 음식과 일본 음식의 조미료 사용법 비교 (The Differences Between Korean and Japanese Ways of Seasonings)

  • In this paper, the differences between Korean and Japanese ways of seasonings are studied. The main results are summarized as follows: (1) Shouyu and Miso which are Japanese equivalents of soy sauce and bean paste of Korean foods are used in variety of different seasonings with some other ingredients while Korean counter parts are used only to add salty tastes. (2) Shouyu and Miso lose their flavors after considerable time of heating, while Korean soy sauce and bean pastes increase their tastes after heating. (3) Mirin adds sweety taste and glaze and Sake makes food soft or hard according to the moment of being added during cooking. (4) In Korean foods soy sauce, bean paste and red pepper paste are on the basis of tastes, Dashi is used in almost every Japanese food. (5) Seasoned vegetables of Korean food are prepared only with spices of green onion, garlic and sesame oil while seasoned fishes or vegetables are mixed with Shoyu or salt and vinegar in Japanese food. (6) In making Zorim, Korean traditional sauces are added from the beginning of heating. But in making Nimono, sugar, salt, vinegar, Shoyu and artificial taste are added in order during heating. (7) In grilling, main food for grilling in Korea is meat, which is prepared with a variety of spices such as soy sauce or/and red pepper pastes, garlic, green onion, sesame oil, sesame powder, pepper and sugar while mainly fishes are grilled with salt, occasionally with Shoyu or Miso in Japanese food. (8) Pan frying fishes are taken with soy sauce with vinegar in Korea but Tepura are eaten with Tentsuyu in Japan.

기계학습을 이용한 한우고기 품질 분석 (Analysis of Meat Quality for Hanwoo Beef using Machine Learning)

  • 최근 빅데이터 기반의 기계학습(Machine learning) 분석이 유전자 분석을 비롯한 다양한 축산분야에 활발하게 접목되어 주목할 만한 결과들을 도출하고 있다. 본 연구에서는 다양한 환경에서 수집된 한우고기 데이터를 기반으로 한우고기 품질에 영향을 미치는 육색, 수소이온농도, 보수력, 전단력, 가열감량에 대한 통계적 특성을 찾고, 이를 기반으로 기계학습의 선형 회귀(Linear regression) 및 회귀 트리(Regression tree) 방안을 이용하여 한우고기의 품질을 예측하는 방안을 제안하였다. 특히 통계적 분석을 통해 한우고기의 식감에 큰 영향을 주는 보수력의 경우 육색이 가장 큰 영향을 주고, 전단력, 가열감량의 경우 수소이온농도가 가장 큰 영향을 주는 요소인 것을 확인하였다. 제안 연구를 통해서 빅데이터 기반 기계학습 방안이 한우고기 품질 연구에 적용 가능함을 확인할 수 있었다. 또한 본 연구의 결과는 한우고기 품질 예측 및 품질 향상 연구에도 유용하게 활용될 수 있다.

가열기구에 따른 조리방법이 돼지고기의 품질특성에 미치는 영향 (Effect of Cooking Methods with Various Heating Apparatus on the Quality Characteristics of Pork)

  • 본 연구에서는 돼지고기 삼겹살과 목살의 가열처리방법에 따른 새로 개발된 PCM 처리와 이중팬을 제작하여 사용하였으며, 기존의 가열조리방법과 비교하여 이화학적 특성과 관능특성을 비교하였다. 돼지고기 삼겹살과 목살의 수분함량은 찌기처리구에서 60.2%, 67.2%로 높게 나타났으며, 조지방은 삼겹살은 숯불처리구에서 33.2%, 목살은 전기그릴처리구에서 16.0%로 가장 높았다(p<0.05). 조단백질의 경우, 삼겹살은 스팀처리구가 18.4%로 높았고, 삶기처리구는 15.4%로 유의적으로 낮았다. 또한, 목살은 전기그릴처리구에서 25.2%로 유의적으로 높게 나타났다(p<0.05). 보수력과 가장 관계가 깊은 가열감량은 삼겹살과 목살 모두에서 숯불구이처리구 40.18%, 36.98%로 유의적으로 높았고, 전단력에서 삼겹살은 오븐처리구에서 $2.76kg/cm^2$으로 목살은 이중 팬처리구에서 $3.67kg/cm^2$으로 가장 낮았다(p<0.05). 육색 시험결과 L값은 삶기처리구에서 65.16, 59.72로 가장 높았고(p<0.05) b 값의 경우, 삼겹살은 삶기처리구에서 2.32로 가장 낮았다(p<0.05). 관능평가 결과 전체적인 기호도 항목에서 삼겹살의 경우, 전기그릴처리구에서 7.56점으로 높았다. 목살은 팬구이처리구에서 7.22점으로 가장 높았으며, 반면, 삶기처리구에서 5.88점으로 가장 낮았다(p<0.05).
